Having devoted nearly 30 years to maintaining and restoring the house and its parkland, one of our greatest pleasures is welcoming guests to enjoy them, too.Each time we see the look of amazement on the faces of first-time visitors to Carlton, it serves as a joyful reminder of how special a place this is. Discovering all its historic charms and eccentricities, its grand state rooms and elegant

bedrooms, its wide open spaces, lake and woodland, visitors experience a sense of awe and wonder which we delight in sharing. Yet, we like to think Carlton’s most unique quality is its welcome. Enjoy immersing your guests in the atmosphere of Carltons’ extraordinary state rooms, meet for pre-dinner drinks in the Bow drawing room or in front of a roaring fire in the Armoury. Enjoy the smiles on your guests’ faces as you open the doors into the venetian room with its gilded

high ceilings, grand fire place and table set with the family silver candelabras like a scene from a period costume drama. In fact, only recently the highly-proclaimed costume drama “victoria” was partly filmed in this very room and can often be spotted as the setting for films and Tv series alike.

Following dinner, retire to one of the house bedrooms and dream of days gone by and what might have been.

B E E R & B B QCome along and learn to brew and, of course, taste real beer. Carlton Towers Brewery “Little Black Dog” will teach you all about making fabulous beer

and lager in the microbrewery here at Carlton. Following which you will enjoy a barbeque and taste some of the beers produced on site.

Courses can be half or full day to suit your needs. You can barbeque in the vineyard or down by the lake - or why not use our log cabin in the woods as your base? Ideal if on the rare occasion it rains in Yorkshire, a log fire and wonderful cosy cabin are all that’s needed to make a perfect team building or reward day.

Suitable for private parties, stag nights, or simply for getting friends together. Maximum 40 people split into two groups for the brewing. BBQ menus are available upon request.

and learn about growing vines in the northern climate. Taste the very best in English wine production and have lunch in the vineyard, weather permitting of course, this is north Yorkshire after all.

Following your time in the vineyard, move into our wonderful school of food and wine and learn to prepare some classic regional wine dishes from around the world, see how wines have been produced over millennia to enhance the enjoyment of the food of the region, tasting some incredible wines. In the evening, gather with your fellow guests to sample the product of your hard work in the kitchen with of course

the wines to match. Debate the merits of the wines and food and wines in general and as the evening goes on, put the world to rights in this totally unique environment that is Carlton Towers.

The following morning after a leisurely breakfast of bacon, sausage and eggs all produced by the estate, spend the morning exploring the estate and vineyard. All the wine experiences can be tailored to suit your groups preference, be it French, Italian, Spanish or new World, do give us a call and we would be delighted to discuss your preferences.

Come along to the Carlton Towers, Cooks at Carlton and spend the day learning to separate your sour dough from you Spelt, your Rye from your Brioche. Work under the tutorage of a master baker, in the original kitchens hear at Carlton. Whilst waiting for your dough to rise, relax with a cup of tea in the Housekeeper’s Sitting Room or take a walk in the park to see our woodland pigs, Wensleydale sheep,

or Belted galloway Cattle. Stroll through the walled vineyard calling in to the micro-brewery for a refreshing glass of ale. Does life get any better?

Situated on the ground floor overlooking the park, you will spend an evening strolling through the exquisitely preserved original kitchen, creamery, butler’s pantry and game larder. An elegant and cosy housekeeper’s sitting room and the stunning Duchess’s dining room are perfect rooms to settle down for the rest of the evening. Delicious dishes will be served together

with specially selected wines, beers and perry, to perfectly accompany the regional cuisine of your choice. Your main dish will be prepared for you in the large kitchen by one of our chefsafter which you may mingle, nip back to your bedroom with your favourite tipple or just relax and catch up on all the news with colleagues and friends.

S H O OT A DAY / C O O k A DAYCarlton Towers has built a reputation for a fine traditional partridge shoot even winning the prestigious purdey silver award for conservation.

With our wild grey, partridge breeding programme, sustainability is key to our game rearing. This two-day package is the ultimate reward for a hard-working team or just a few friends looking for a unique experience. Day one is an experience straight from the script of Downton Abbey. A traditional Edwardian game shoot for partridge over high hedges, a testing exercise for even the most experienced guns.

Or for those who do not wish to shoot game, we can provide a wonderful clay pigeon sporting layout to simulate the experience as that of the live game.

Following your day in the fresh air, drinks and dinner will be served in the house in the traditional manner after which you can retire to one of our beautiful bedrooms. The next morning following a hearty breakfast, our game keeper and chefs will teach you how to dress and cook marvellous game dishes in the original kitchens of this magnificent house. Truly an experience to remember.

the most spectacular display of wild bluebells in the spring and a spectacular collection of edible plants, nuts, fruit and fungi.

When Lisa Cutcliffe, our expert forager, first explored the park and woods she was so excited by the extraordinary diversity and availability of food.Come along and spend a day with Lisa learning how to spot a chanterelle from a shaggy ink cap or borage from lovage. Then enjoy cooking over an open fire in the woods next to our gorgeous log cabin, an ideal shelter for those less adventurous.Suitable for parties up to 20 people, minimum 8 people.
