Apple dumplings with ice creamIngredients: 3 cups all-purpose flour1 teaspoon salt1 cup shortening1/3-½ cup cold water8 medium tart apples, peeled and cored8 tablespoons butter10 teaspoons cinnamon-sugar, dividedSauce:1& ½ cups packed brown sugar1 cup water½ cup butter, cubed
Vanilla ice cream
In a large bowl, combine flour and salt: cut in shortening until crumbly. Gradually add water, tossing with fork until dough forms a ball. Divide into 8 portions and roll into balls. Cover and refrigerate at least 30 minutes at least 30 minutes
Preheat oven to 350 degrees. Roll each ball between two lightly floured sheets of wax paper into about a 7 inch square. Sprinkle inside of pastry with cinnamon sugar. Place one apple on each square. Place one tablespoon butter and one teaspoon of cinnamon-sugar in the center of each apple. Gently bring up the corners of the pastry to the center; pinch edges to seal. Place in a greased 13x9 baking dish. Sprinkle the remaining cinnamon sugar on top of each dumpling.
In medium saucepan, combine 1 & ½ cups packed brown sugar, water and ½ cup butter. Bring to a boil, stirring until well blended. Pour over apples
Bake 55-60 minutes or until apples are tender and pastry is golden brown, basting occasionally with the sauce from the bottom of the baking dish. Serve warm with vanilla ice cream.
