manu’s menu for mum

salmon with sorrel butter sauce • by Manu Feildel

remove the salmon from the refrigerator and allow it to come to room temperature.

meanwhile, to make the sorrel butter, place the eschalot, wine, vermouth and stock in a saucepan and bring to the boil over medium heat. simmer for 10–12 minutes or until reduced by half, then add the cream and simmer for 6–8 minutes or until reduced by half again. reduce the heat to low, then whisk in the butter, one piece at a time, until the sauce is thick and emulsified. add the sorrel, stir until just wilted, then remove from the heat and season to taste with salt, pepper and a dash of lemon juice.

heat the olive oil in a large frying pan over medium heat. cook the salmon, skin-side down first, for 4 minutes or until the skin is golden and crisp; do not move the fish during this time or the skin may stick to the pan and tear. reduce the heat to low, turn the fish and cook for another 2–3 minutes or until cooked but still pink in the middle. remove from the pan and leave to stand for 5 minutes.

to serve, divide the salmon among serving plates, then top with the sorrel butter sauce and a grind of black pepper.
