efore Katharine McPhee won America’s heart on American Idol in 2006 (and ended up coming in second just behind Taylor Hicks), she wasn’t happy with what she saw in the mirror and battled bulimia. Now, at age 30, she balances her love of eating with hardcore workouts. Here’s how the svelte star stays camera-ready, and why she doesn’t let cravings get the best of her.

Have you always been active?No! I was a skinny kid. Then I went through puberty and my body changed. I went through a period where the
idea of working out made me [sick]. Then I got a per-sonal trainer and slowly but surely, that changed. I go
through phases now, but seriously, I cannot imagine not working out.
wHat’s your favorite workout?SoulCycle, working with a trainer, kickboxing—I like
to beat the crap out of myself, basically. I also love to eat. Sometimes, I’m selfishly just working out so I can eat more.
any secrets for staying HealtHy on set?For me, it’s easy to stay healthy on set. I thrive with the structure. I’m so busy and I love what I’m doing. I don’t have time to be like, ‘When’s my next meal?’ It’s so much harder off set, but I allow myself to have the things I crave. It’s all in moderation.
wHat outdoor activities do you enjoy?I live down the street from Runyon Canyon. I go early mornings and it’s fine. Nobody cares [who I am]—L.A. is cool like that. You wear a hat, sunglasses and just go. You put your head down and you run up that hill.
wHen your energy’s flagging, How do you revive?Red wine. It picks me up, that sugar.

While working makes it difficult to keep her fridge fully stocked,
there are three things McPhee tries to keep on hand at all times:
lemons, eggs and olive oil. She extols the
antioxidant properties of lemons, and often grates
zest over pasta and salads. Her trick: “Freeze
them first.” She also loves eggs and olive oil for their versatility. “It’s
easy to make scrambled eggs and toast,” she has said, “even for dinner.”
