The Tomorrow’s Hope Crisis Counseling Center in Paris was honored Tuesday morning by city proclamation on its 20th anniversary. Paris Mayor Carlton Gerrell read the proclamation to Executive Director Cheryl Conner, along with the center’s first director Dee Keeling and other staff members. In the proclamation, Gerrell recounted the center’s his-tory and urged all citizens of Henry Co. to “pay special tribute to this organization on the occasion of their 20th anniversary.”

Coffee Ice Cream Cookie Cups1 tube (16-1/2 ounces) refrigerated chocolate chip cookie dough2 cups coffee ice creamWhipped cream and chocolate syrup1/3 cup English toffee bits or almond brickle chipsPreheat oven to 350°. Let dough stand at room temperature 5-10 minutes to soften. Cut into 12 slices; press onto bottoms and up the sides of greased muffin cups. Bake 12-14 minutes or until golden brown. Cool slightly on a wire rack. Spoon ice cream into each cup. Cover and freeze 1-2 hours or until firm. Remove cups from pan. Garnish with whipped cream and chocolate syrup. Sprinkle with toffee bits.

Parmesan Chicken Slider Bake24 ounces frozen breaded chicken tenders1 package (12 ounces) Hawaiian sweet rolls1 package (7-1/2 ounces) sliced provolone and mozzarella cheese blend1 jar (24 ounces) marinara sauceTOPPING:1/2 cup butter, cubed1 teaspoon garlic powder1 teaspoon crushed red pepper flakes1/4 cup grated Parmesan cheese2 tablespoons minced fresh basilPreheat oven to 375°. Prepare chicken tenders according to package directions. Meanwhile, without separating rolls, cut horizontally in half; arrange roll bottoms in a greased 13x9-in. baking dish. Spread half of cheese slices over roll bottoms. Bake until cheese is melted, 3-5 minutes. Layer rolls with half of sauce, chicken tenders, remaining sauce and remaining cheese slices. Replace top halves of rolls. For topping, microwave butter, garlic powder and red pepper flakes, covered, on high, stirring occasionally, until butter is melted. Pour over rolls; sprinkle with Parmesan cheese. Bake, uncovered, until golden brown and heated through, 20-25 minutes. Sprinkle with basil before serving.
