Eileen left the family business and moved with her husband Frank and two sons Quinn and Cassidy to Johnson, Vermont back in 2002, shortly after the launch of Vanilla Coke. This past May, Eileen graduated from Johnson State College with a Masters degree in Education, but her journey to that degree was not a traditional one. A 1985 graduate from Pomfret Prep school at age 16, Eileen decided she wasn’t ready for college and decided to work as a waitress at the Golden Lamb Buttery in Brooklyn and travel. After a few trips overseas and across the US, and many visits to cafes in the process, Eileen convinced her parents and brothers to help her open the Vanilla Bean in 1989. After moving to Vermont, Eileen started a special- ty food business making organic kettle corn to sell in stores – at that time, the popular sweet, salty pop- corn could only be found at fairs and festivals. She came up with several flavors including maple and chipotle and grew a thriving business producing it by hand. She was beginning to look into automated production when her path suddenly changed course. Although Eileen had an extensive background in the food business, she had also been pursuing a par- allel course in the healing arts. She attended massage therapy school during a one year hiatus from the Vanilla Bean in 1995, and soon began exploring the use of tuning forks therapeutically in the part time massage practice she maintained after her training. Fascinated by the outcomes produced by the appli- cation of acoustic frequencies on the body, Eileen continued this practice, which she calls “sound bal- ancing”, part time even as she was growing her pop- corn business. She found the sound to be particularly effective in relieving people’s pain and also anxiety and other emotional stress. Through the portfolio produced in this one semester course, Eileen earned enough credits to enter Johnson State College as a senior. hose of you who have been long time cus-tomers of the Bean may remember Eileen“Bean” Jessurun, younger sister of Barry and

Brian and founding partner and namesake of theVanilla Bean. Eileen left the family business andmoved with her husband Frank and two sons Quinnand Cassidy to Johnson, Vermont back in 2002,shortly after the launch of Vanilla Coke.

This past May, Eileen graduated from JohnsonState College with a Masters degree in Education, buther journey to that degree was not a traditional one.A 1985 graduate from Pomfret Prep school at age 16,Eileen decided she wasn’t ready for college anddecided to work as a waitress at the Golden LambButtery in Brooklyn and travel. After a few tripsoverseas and across the US, and many visits to cafesin the process, Eileen convinced her parents andbrothers to help her open the Vanilla Bean in 1989.

The majorityof the shows are on Saturday night and start at 8:00 PM.Our Open Mic night is on the first Friday of each month.During shows, a theatre curtain separates the listeningroom from the tiled dining room and kitchen in an effort tokeep the music in and the kitchen noise out.

The Artwork Galleryhe Café displays artwork by local artists year round.Some shows have openings and some do not. Most

of the artwork displayed is for sale and often prices arelisted with the piece or on a list located in the room. Onehundred percent of the sale price goes to the artist.

6% Connecticut Sales Tax. The prices listed on themenu are exactly what you pay. Our prices may seem tobe inflated; however, a $8.50 menu item is actually$8.02 + $.48 sales tax. Furthermore, this practice makesit easier for the customer, especially if that customer isa child who has exact change for a cookie. What yousee is exactly what you pay - what could be simpler?

2. Not Market Standard Pricing - We are nottrying to fool the customer into thinking that $8.95 isless expensive than $9.00. We find this type of pricinginsulting to our customers. However, the reason it isused so extensively around the nation is that it workseffectively. We don’t like that practice, and we also liketo believe that our clientele is not so easily fooled.

3. No Pennies, Dimes or Nickels - Because ourprices include tax and we do not price in the standardway, we do not have to use pennies, dimes or nickels.This is a service to both the customer and to us. conducted thesis research - “Exploring the Effects ofAudible Sound on the Body and its Biofield”. The biofield is composed of theveritable electromagnetic energy of the body and the putative (as yet unproven)subtle energy that surrounds and interpenetrates the body. Eileen’s research hasshown that it is this system that interfaces and responds to the sound inputs. Herthesis won an Academic Excellence award and gained national and internationalrecognition, resulting in the opportunity to engage in joint research this summerwith global authorities and leading edge researchers on the human biofield.

This fall, she will be teaching a 1 credit course on Sound Healing at JohnsonState College, which has a unique undergraduate program in Wellness andAlternative Medicine. This course, which will explore the use of sound in bothalternative and conventional medicine, is the first of its kind in a public collegein the US.
