A Destination Wine Shop in New York’s Thriving Downtown Located at 230 Murray Street, in the Pedestrian Breezeway between Murray and Vesey Streets, Vintry Fine Wines is a wine shop that defies and defines expectations at first glance. A Range That Respects Both Tradition and Modernity Inside the store, each bottle is displayed in a distinct space on custom-designed leather shelving. In effect, each wine or spirit is allotted an equally proportioned visual showcase, its own space to tell a story. A unifying theme of the selections is a respect for tradition, but this concept becomes part of a compelling conversation between the best of old and new. The fine wines of France, including impeccably stored collectibles from Burgundy, Bordeaux and Champagne, sit in close proximity to “Cult California” classics, Italian upstarts and fine new world producers from around the world. The range of Champagne offerings at Vintry, including grower, vintage and difficult-to-find, low-production cuvées, has been called one of the most extensive and exclusive in New York City.

A Selection Process That Begins in the VineyardWhen choosing bottles, the approach is to seek out producers whose wines are honest, accurate expressions of a harvest, especially those made by sustainable, organic and biodynamic wine growing methods. Around the world, there has been a sort of quiet revolution with these methods because they can produce “terroir driven” wines of higher quality. There’s no interest in wines that have been manipulated, designed or industrially manufactured. High scores from wine publications carry little weight. Wines of character that reflect a respect for their place of origin are preferred, whether from an up-and-coming young Australia producer or from an historic, storied Spanish bodega. This thinking extends to Vintry’s carefully edited spirits section, where classic and artisanal liquors are crafted by producers from around the world, from single malt Scotch to rye produced in New York. A Family Success Story Helps Revitalize New York’s Downtown AreaVintry Fine Wines is owned by HPH Restaurant Group, a hospitality group founded in 2008 that owns over 10 restaurants in lower Manhattan, including Pier A Harbor House, Harry’s Café & Steak, Bacchanal, Le District and The Dead Rabbit. Champagne

The Most Storied Sparkling Wine in the WorldDom PérignonIn 1668, the young Benedictine monk Dom Pérignon took over managing the vineyards and cellar of the abbey at Hautvillers. On the northern slopes of the Marne, the abbey’s vineyards were among the most choice in Champagne, and they thrived in his care. He boldly proclaimed an ambition to create “the best wine in the world.” Soon, what was known as “Father Pérignon’s wine” had a reputation for quality that became news at the Royal Court of King Louis XIV at Versailles. This was the beginning of the history of the most storied sparkling wine in the world: Champagne.

Vintages are Musical Works Composed by Nature Richard Geoffroy came from a Côte des Blancs family of wine growers many generations old. Named Dom Pérignon Chef de Cave in 1996, Richard decides when to declare a vintage. The premier vintage of this legendary cuvée was 1921. Always a vintage wine, Dom Pérignon is not made in years deemed insufficient. Dom Pérignon is always a blend (assemblage), whether it’s Dom Pérignon cuvée, DP Blanc or DP Rosé. Chardonnay and Pinot Noir provide aromatic and flavor contrasts that create the critical character of tension. The core of the blend is formed by fruit from Champagne’s eight historic Grands Crus: Aÿ, Bouzy, Verzenay, Mailly, Chouilly, Cramant, Avize, Le Mesnil, along with the renowned Premier Cru Hautvillers. When necessary, Dom Pérignon can select grapes from all 17 Grands Crus of Champagne. The goal is to express the terroir and character of the vintage, so

the winemaking philosophy is minimalist. The wine’s intensity is based on precision, not power. With profound complexity based on slow aging, all Dom Pérignon cuvées, including the Blanc and Rosé, are known for their impressive aging potential. In recent years, Oenotheque and P2 bottlings have been released. Since 2014, Dom Pérignon has named its late-release Champagnes P2 or Plenitude. Left on the lees, these Champagnes evolve in stages which produce “windows of opportunity or plenitudes,” when the Champagne can be disgorged, resulting in a unique expression of the vintage. Richard explained, “I have always compared vintages to musical works composed by nature: as Chef de Cave, my role is then to take up my instrument and play. This harmonious dialogue between the unique style of Dom Pérignon and the personality expressed by each vintage is the key to revealing the wine’s intimate soul.”

Champagne

Salon’s GardenIn 1911, Eugène-Aimé, a Champagne lover who had become beguiled by the terroir of Le Mesnil, created the house of Salon. The first vintage was 1905. This Champagne is made from grapes grown on a one-hectare parcel owned by Salon (“Salon’s garden”) and from nineteen smaller parcels within Mesnil-sur-Oger that were selected by Eugène-Aimé at the beginning of the century. Headed by Eugène-Aimé until his death in 1943, the house was left to his nephew. In 1988, the family-owned house of Champagne Laurent-Perrier became majority shareholder of Champagne Salon. Today, Didier Depond leads the famed house. He said Salon Champagne shows, “Freshness, a clean character, elegance and precision.

A Grand Vin with BubblesNot surprisingly, the viticulture and winemaking methods are artisanal, painstaking and time honored. Grapes are picked and sorted by hand before crush at le Mesnil-sur-Oger, using a traditional press used only for Salon. Only juice from the first pressing is used. Only the harvest from exceptional years goes into production, when the grapes contain the ideal combination of ripeness and acidity, which happens only every two to three years, on average. First fermentation is in stainless steel tank, where temperature can be controlled. The wines are aged in bottle an average ten years, to gain complexity and finesse. There is about twelve years of stock in the chalk cellars at le Mesnil-sur-Oger. Salon Champagne is a grand vin with bubbles.

One of the Wine World’s Rare Gems Champagne Salon Even among the greatest producers in Champagne, Salon is unique. From the beginning, it has been a singular vision of perfection. One man, Eugène-Aimé Salon, from one region, the Côte de Blancs, made a wine from one cru, le Mesnil-sur-Oger, from one variety, Chardonnay, from one vintage. There was—and is—no blending. Salon is one of the wine world’s rare gems. In the 20th Century, only thirty-seven vintages were declared and average production for each vintage was 60,000 bottles.

Champagne

A Family Estate and A Region Are RevitalizedUntil 1950, yearly production at Bérèche et Fils was miniscule: the family vineyard in Ludes was 2.5 hectares. Nine and a half hectares of vines have been added, in Montagne de Reims, Petite Montagne, Vallée de la Marne and within the village of Mailly. Viticulture is organic (biologique) with cover crops planted between the rows. Since 2007, biodynamic farming is being tested. One of Champagne’s most prominent young winegrowers is Raphaël Bérèche, who has helped revitalize his family estate since he began working in 2004. Raphaël and his brother Vincent are refining their wine growing and winemaking. Though labor intensive, more of the wines are now aged under cork rather than capsule because the brothers feel the aromas and textures are better.

Dosage levels have become more precise, and the cuvées show greater definition. Disgorging is entirely by hand, and the added liqueur is traditional. In 2009, Raphaël teamed with Aurélien Laherte to form Terres et Vins de Champagne, an organization of wine growers. Their yearly tasting has become one of the most highly anticipated events in Champagne.

Champagne as Fine WineA fellow grower has observed that Raphaël has brought a new dimension, a focus on Champagne as a fine wine rather than as just Champagne. One of Raphaël’s best sites is a chalky mid-slope parcel of old vines in Ludes. “It demonstrates that there’s much more minerality in the mid-slope of a premier cru than at the base of the slope in a grand cru. Each year, this gives a true picture of the terroir,” Raphaël noted.

An Example of Change in ChampagneBérèche et Fils Created in 1847, Champagne Bérèche et Fils is a family producer that exemplifies the dramatic change that has swept through Champagne over the past two decades. The sharply delineated, historic roles of wine grower and producer, typically family growers and large Grand Marque houses, have changed. Growers who strictly sold grapes to big companies now vinify and bottle their own wines. Today’s younger wine drinkers are finding the clean, fresh style of “grower Champagne” or “farmer fizz” compelling and terroir-driven.

Named for the Last Chapter of Homer’s The OdysseyChapter 24 VineyardsMark Tarlov began Chapter 24 Vineyards in 2012. The project is named for the last part of Homer’s epic poem, The Odyssey. Once again, Tarlov, former owner of Evening Land Vineyards, has applied considerable skills from being a successful Hollywood film producer to assemble an all-star cast for this project. Renowned Burgundy vigneron Louis-Michel Liger-Belair was hired as consultant along with winemaker Mike D. Etzel, son of Michael Etzel, winemaker at Beaux Frères. Later, Max Marriott, who worked for Louis-Michel in Burgundy, took over as winemaker for Chapter 24 Vineyards. He completed the 2013 vintage and directed winemaking for the 2014 vintage. Etzel has remained as winemaker for the tiny production, high-end Pinot Noir named Double Zero, available direct from the cellar. Ryan Hannaford, former vineyard manager at Seven Springs Vineyard, joined the team as viticulturist to assist with grower liaison and the biodynamic management of leased vineyards.

Selected Vineyards and Miniscule ProductionFruit sources for Chapter 24 include 29 selected vineyards in the Willamette Valley in all six AVAs, including Patricia Green Estate, Hyland Estates, Shea Vineyard, Lachini Vineyard and Nysa Vineyard, together comprising 70 blocks and parcels. The Last Chapter is the flagship wine, made from multiple vineyards with volcanic and sedimentary soils. The Flood is a blend of four vineyards, all with sedimentary soils. The Fire is a blend from vineyards rich in volcanic soils. The product of barrel and parcel selections, production for the three wines is miniscule: about 800 cases of Last Chapter and around 1400 cases each of The Flood and The Fire.

Pinot Noir, the Drink of the Thinking ClassTarlov expounded, “Oregon is America’s most elegant terroir for Pinot Noir, which is the drink of the thinking class.” During winemaking, a proprietary infusion technique is used, similar to a method used by legendary Henri Jayer, to promote a soft extraction during maceration. Liger-Belair brings a real Burgundian sensibility to the team, making wines with a character he has called “quiet. It’s a flavor without the noise that comes from fruit that has been harvested too early.”

An All-Star Team and Pristine TerroirThis blue chip estate benefits from an all-star team and pristine terroir. Given these resources, Bryant Family Vineyard wines are world class. Don and Bettina Bryant look after their property with the same care and fastidious attention to detail as a generations-old family would a top First Growth Château. Michel Rolland is Consulting Enologist. Vineyard Manager David Abreu has over twelve years of experience with the estate’s vines. Winemaker Marc Gagnon has experience at Screaming Eagle and Craggy Range in New Zealand. On or near Pritchard Hill and Howell Mountain, estate vineyards Bryant Family Vineyard, Lucia Howell Mountain, Madrona Vineyard and Thorevilos Vineyard are among the best terroir in the Napa Valley. With rocky, volcanic, loamy, and tufa/volcanic clay soils, respectively, these vineyards are well exposed. The first two are cool climate, high elevation sites; the latter two are hillside sites that impart structure, minerality and intensity. Yearly production is around 4,000 cases.

A Custom Winery Designed for Quality ControlThe modern, gravity-fed winery drafted by renowned architect Gyo Obata in 2002 was designed for complete control of the winemaking process. A custom bottling room can bottle wines on the day determined optimal by the winemaker before storage in an adjoining 8,000 square foot cave to ensure correct conditions for provenance until shipping. On recent changes to the winery, Don Bryant explained, “One of the changes we’re doing now is putting in concrete tanks. I don’t believe in having a whole lot of risk. Make it small, because if things aren’t right you don’t ruin the entire year. I’m very careful about that. I like trying to see what new things we can do to improve the wine, but I don’t want it all in one tank.” On winemaker Marc Gagnon, Bettina elaborated, “Marc is not only an extremely talented winemaker with all the requisite skills, he understands the importance of aesthetics and the emotional experience that comes from drinking an exceptional bottle of wine.”

Over the years, vintages have presented different challenges, and knowledge of specific vineyards has continued to evolve. In the end, the vineyards have taught restraint. As with conducting great music, the goal is to let each wine speak of its place of origin. If these thoughts sound familiar to those often expressed by wine growers in Rioja, Burgundy, the Rhône, or another of the world’s great wine regions, this is no accident. For Donelan Family Wines, the journey is a long pursuit of learning, fellowship, pleasure and fun.

Wines from Unique Sites and MicroclimatesJoe Donelan earned an MBA at Iona College and had a nearly twenty-year career at a paper company before he bought a winery. Sommelier Michael Fahey of Toppers Restaurant in Nantucket was a good friend and mentor. Obsidian Vineyard in Knights Valley is a cool climate site

rich in obsidian rock. Richards Family Vineyard in the Schultz Valley has cool, rocky soils that were once a lavender farm. Kobler Family Vineyard, in Russian River’s Green Valley, is on an elevated east-west ridge, with cool afternoon and night temperatures, and frequent fog. Walker Vine Hill in Russian River Valley has hills that encircle it, blocking cold air while trapping warmth to aid ripeness, and Gold Ridge loam soils that are the vestige of an ancient sandstone seabed. This low-vigor soil easily ranks with California’s finest for wine growing, especially for Pinot Noir and Syrah. Joe elaborated, “Wines should engage. A great bottle expresses its terroir through its unique flavor and aroma, which are attributed to the growing environment of the grapes. I like all my wines to have balance, structure and acidity. Our wines are made in the vineyards from unique sites and microclimates.”

The Vineyards Have Taught RestraintDonelan FamilyThis small, boutique, family winery in Sonoma County produces Chardonnay, Pinot Noir, Syrah, Grenache and Roussanne. In 2000, the winery was founded as Pax Wine Cellars and the name was changed in 2008. The Donelans believe that the best wines are not made but discovered. Great terroir, which trumps all variables, is combined with fruit from the best sites, conscientious winemaking and extensive blending.

History of a Treasured Estate The wines found a healthy market in Great Britain. King Charles II had Haut-Brion in his cellar in 1660. Samuel Pepys wrote a rave in 1663. After a period of disrepair, Haut-Brion was purchased in 1935 by American investment banker Clarence Dillon and it has maintained a sterling reputation ever since. Dillon’s great-grandson, Prince Robert of Luxembourg, runs the estate with Jean-Philippe Delmas, named Directeur Générale in 2003. Jean-Philippe took over from his father, Jean-Bernard, an innovative manager and winemaker who succeeded his father, George, in 1960. In 1961, stainless steel fermentation tanks were introduced. A new cuverie was built in 1991. A clonal selection program has continued since the 1970s.

Wines Produced Like Handmade Gems The vineyard is planted to 40% Cabernet Sauvignon, 37% Merlot and 18% Cabernet Franc, in gravely, quartz-rich soil atop clay and limestone subsoil. White wine is made from a

parcel which is 63% Semillon and 37% Sauvignon Blanc. Yearly production is small by First Growth standards: about 20,000 cases, between the Grand Vin and a second wine, Clarence de Haut-Brion. For Haut-Brion Blanc, less than 800 cases are produced in most years. In 2009, a second white wine was added, La Clarté de Haut-Brion. For the reds, fermentation takes place in stainless steel vats, before the wine is aged at least 22 months in new oak barrels and bottled without filtration. For whites, fermentation is in new oak barrels, before 12-15 months on the lees in barrel and bottling.

A Grand Vin’s Distinct Character Haut-Brion shows an extraordinary profile, with cigar box, dark currant fruit, smoky spice and cassis characters. Structured yet suave tannins and deep, earthy bass notes are distinct markers of this wine. Merlot lends the wine a voluptuous roundness. Widely regarded as an extraordinary wine, Haut-Brion is like other great First Growths in its ability to age for decades.

The Oldest First GrowthChâteau Haut-BrionWithin the sprawling suburbs of the town of Bordeaux in Pessac-Léognan appellation, is an estate with a profoundly rich history. Haut-Brion was the first named First Growth Château in the official 1855 Classification and the estate’s vines were planted a century before First Growths in the Médoc. Many Cuvées and Old VinesProduction is divided between 75% red and 25% white wines, made from the domaine’s select holdings of what wine growers compare to gold. Almost all vines are over forty years old, a traditional Burgundian, conservative definition of “old vines.” Wines are from Pernand-Vergelesses, Aloxe-Corton, Savigny-les-Beaune, Pommard, Beaune and Volnay appellations, ranging from Bourgogne Blanc and Rouge up to Grands Crus Corton Charlemagne, Corton Perrières, Corton Bressandes and Corton Clos du Roi. In Pernand-Vergelesses appellation, parcels are farmed within the exceptional climats of Ile des Vergelesses, Les Fichots, Clos Berthet and Sous Fretille.

Respect for Climat TypicityViticulture is implemented to have as low an impact on the environment as possible, or lutte raisonnée. Treatments and spraying are kept to a minimum and the soil is turned

over. Harvesting and sorting is by hand and grapes go through another triage on a sorting table. Red wines are completely de-stemmed before fermentation in large stainless steel vats with temperature control. There is a five-day cold maceration with pigéage (punching down of the cap) twice a day. For the whites, a bladder press is used and the juice settles for one day before barrel fermentation and a weekly batonnage (stirring of the lees) until malolactic fermentation begins. For percentage of new oak barrels used for aging, it’s around 25% for village wines up to 35% for Corton Charlemagne. With elegance and restraint, these wines show a traditional Burgundy vigneron’s focus on wine growing and respect for typicity of climats. “The 2013 whites are agreeable, charming, with great energy and excellent terroir definition. The growing season was a real challenge from hail and rain, but the wines show freshness and exuberance, and will reward mid-term cellaring,” said Christine.

A Burgundy Family Domaine’s Basket of FruitsDomaine Dubreuil-Fontaine In some ways, Domaine Dubreuil-Fontaine, in the hillside village of Pernand-Vergelesses and below the legendary hill of Corton, is a typical Burgundy family domaine. In some ways, it’s not so typical. Christine Gruere-Dubreuil runs the property. She represents the fifth generation at the domaine started in 1879 by her great-great grandfather, Pierre Arbinet. From 20 hectares (50 acres) of vines, the domaine produces 21 Pinot Noir, Chardonnay and Aligoté wines from 22 appellations.

The Old Ways Are BestThe domaine’s 8.3 hectares (about 21 acres) are mainly within Morey Saint Denis, Gevrey Chambertin and Chambolle Musigny villages. Parcels have been added in Nuits Saint Georges and Pommard. For viticulture, lutte raisonnée is practiced. When needed, organic compost is used and the soil turned over. No chemicals or pesticides are used. Thin, organically poor topsoil atop clay and limestone subsoils keep yields low (20-25 hectoliters per hectare) and green harvest is done when necessary. Young vines are Cordon de Royat trained to control vigor. Sélection massale is used to propagate vines, wherein a number of vines are identified and cuttings taken to preserve genetic diversity. At harvest, pickers remove bad bunches in the field before fruit goes through a sorting table. Vinification is traditional, with grapes de-stemmed, fermentation in open-top cement tanks, pigéage (punching down) done by foot to ensure extraction of color and tannins, and natural yeasts.

Soil is the Key to Great WineWinemaking methods have been revised by the newer generation. Since Laurent has taken over from his father Hubert, extended pre-fermentation cold soak is used to allow greater extraction; Hubert feels optimal extraction takes place during alcoholic fermentation. After a five-day cold soak, fermentation is 15-20 days, at temperatures to 33-34°C. Malolactic takes place in cask or sealed vat. Use of new oak for élevage (aging) is judicious; 20-30% for village wines and up to 50% for Premier and Grand Crus. Village wines are aged 18 months in barrel while Premier and Grand Crus mature 20-24 months before bottling, with no fining or filtration. In the cellar, all movement of wine is by gravity, pumping is never used. On the domaine’s approach, Hubert’s son Laurent explained, “We aspire to make authentic and sensual wines that express their own terroir.” Hubert said, “The soil is the key to succeed in making a great wine: respecting and looking after it is essential to reveal a great terroir.”

A Family Faith in TraditionDomaine Hubert Lignier Every Burgundy lover knows the reputation of Domaine Hubert Lignier in Morey Saint Denis such that an introduction is unnecessary. A benchmark for decades, this family domaine turns out honest, delicate Burgundy wines of finesse that reflect their respective terroirs and vintage, from Bourgogne to Grand Cru. Clos de la Roche Grand Cru either equals or exceeds that of Ponsot and Dujac, but even the Bourgognes are true wines of place.

Among the world’s great wine regions, it is in Burgundy that the concept of terroir is most apparent. Some winemakers have said that their wines express a specific vineyard through Pinot Noir or Chardonnay. Each year, that expression includes the character of the vintage and the winemaker’s hand. A Cantina is Founded on Strong Family TraditionsOne of eight children in a family of grape growers, Guilio Mascarello was born in 1895. After serving in World War I, he returned to Barolo and founded a winery in 1920 with a 10,000-lire loan from his father, Bartolomeo, himself a winemaker in a small cooperative winery in Barolo. Guilio’s customers were the friends he had made as a young man when he worked as a baker in Genoa before the war. Guilio patiently added parcels in Cannubi, San Lorenzo and Rué crus in Barolo commune; and Rocche cru in La Morra, all among the region’s most prized vineyards. Sadly, Giulio, who had begun working with his son Bartolo in the 1960’s, died in 1981.

“The Last of the Mohicans”Instead of making single-cru wines, Bartolo followed Giulio, making a blend of four crus. He explained, “I don’t make wines with fantasy names.

I don’t make crus, I don’t make wine in barriques, my wines don’t have perfume of vanilla and Limousin oak. I’m the last of the Mohicans… My customers appreciate that I still make my wine as the land dictates. A single site does not necessarily come good every year—especially in dry years—and Barolo to be consistently good needs the mutually compensating characteristics of different vineyards.” Fermentations were done with indigenous yeasts in concrete vats without temperature control. ‘Cappello Sommerso,’ or holding the cap of seeds and skins during fermentation, was employed rather than punching down. Maturation was in neutral botti, including ancient chestnut, and malolactic fermentation happened naturally. Over the decades before he died in 2005, Bartolo’s tireless efforts helped the winery gain global recognition. Daughter Maria Teresa has continued, faithful to the old ways, but adding a touch of finesse.

A Sign of DestinyValentino had new ideas that were not embraced by the insular world of Piedmont’s family wineries. In the early 1980s, a passionate debate began among winemakers about traditional versus modern winemaking. In 1998, the Migliorini family bought the historic Pianpolvere Soprano estate in Monforte d’Alba. Sadly, Valentino died in 2007 and his wife soon afterward. At age 32, Valentino’s son Rodolfo found himself at the helm of two properties. At Valentino’s funeral, winemaker Aldo Conterno kindly took Rodolfo aside to give advice and encouragement. Decades before, Conterno had given advice to the newly arrived Valentino. Rodolfo viewed the repeat of history as a sign of destiny. Despite receiving several offers, Rodolfo never considered selling. He explained, “My life is in the country and I love being a winemaker. I made a bet on myself that I would succeed in taking

the reins of this winery and I threw myself headlong into the adventure. Leaving would have been cowardly, and I would have betrayed the spiritual heritage of my parents.”

A Biodynamic Approach“I have adopted a biodynamic-inspired approach to farming. All work in the vineyard is done by hand: no herbicides, pesticides or any other types of chemicals. Fertilizer is made with manure from a barn that we manage. Soil treatments include fruit flour and biodynamic mixtures. In the winery, we only use new wood barrels, because it’s my opinion that a barrique, like any other wood container for wine, leaves a bad odor if it is not changed each year. When I make wine, the first thing I look for is cleanliness. I’ve recently begun using cement eggs to age the wine even further after it has aged in wood,” said Rodolfo.

A Low Profile Winery’s Spirit to InnovateRocche dei ManzoniLocated in the Barolo commune of Monforte d’Alba, Rocche dei Manzoni has kept a low profile versus the quality of its wines. Over the years, innovators like Gaja and Voerzio have become revered icons that have helped raise the global stature of Piedmont. Not as well known, yet driven by a similar desire to improve, Valentino Migliorini knew the potential of the estate’s vineyards, some of Barolo’s most prestigious crus, all in Monforte d’Alba. He and his wife purchased the storied estate in 1974. The first Langhe grower to plant Chardonnay, Valentino was the first to blend Nebbiolo and Barbera in 1976.

Old Methods Make the Finest WinesA patient perfectionist, Giuseppe aged his wines for long periods in large wood casks. In 2010, Giuseppe passed running the winery to his children, and, sadly, the global wine world marked his passing in 2012. His children and grandchildren have continued working in the same traditional ways. Three hectares (7.5 acres) have been planted to the indigenous Corvina and Corvinone, trained in Pergola Veronese, while Cabernet Sauvignon, Cabernet Franc and Merlot were Guyot-trained. Typically, all grapes are picked after several passages through the vineyards and multiple, rigorous selections. Source vineyards can vary with each vintage and some wines are not produced in less-than-stellar vintages. All red wines except Primofiore are made using the ripasso method, where dried grapes are added to enrich the fermenting must. For Rosso del Bepi, the Amarones and Recioto, the grapes

are carefully laid in wood boxes or on rush mats after harvest so that appassimento (slow air-drying of the grapes) occurs naturally.

Wine Without Compromise and Becoming a MythGiuseppe’s grandson Francesco Grigoli explained that ‘Bepi’ had “An obsessive quest for quality in the whole process of winemaking, including the packaging, the details of the corks and the caps, labels made by hand, the type of glass for the bottles. He had great patience to respect the evolution of the wine. I think my grandfather owes his success to his character and pride. He was able to hold out during the less fortunate times in history. We must understand market needs and changes in taste. But he always presented his wine without compromise, so he became a myth. We’ve seen that his method is right. As long as customers come looking for us, we can focus on doing our job. While being vigilant, we can remain true to ourselves.”

Giuseppe Creates a Reference Point Estate in the VenetoQuintarelliThere are great estates in the low, gently rolling hills of the Veneto, but when one considers Giuseppe Quintarelli, one thinks of the Latin term sui generis, literally, “of its own kind.” Carefully handwritten labels on each bottle have always been a visual cue that these are rare, artisanal, meticulously crafted wines. The winery is located in the village of Cerè near Negrar, in the heart of Valpolicella, not far from Verona. The Quintarelli family has lived here since 1924, when Giuseppe’s father was a sharecropper and the wine was exported to the U.S. in 50-liter barrels. When Giuseppe Quintarelli (‘Bepi’) took over the estate in 1950, he was one of a few growers who began to transform the concept of wines from the Veneto.

A Generation’s Shared Experience, A Clear Sense of LineageFamily winemaking is often expressed as a clear sense of lineage. From parents to children to grandchildren, the same set of values frames every decision about how to work. Winemaker Riccardo Talenti is faithfully following in the footsteps of his grandfather, renowned winemaker Pierluigi Talenti, who purchased the estate in 1980 and managed it until he died in 1999. In the early 1950’s, founder Pierluigi had fallen in love with this 40-hectare estate in southern Montalcino, so buying the property was the realization of his dream.

Applied Vineyard Work Helps Raise the Profile of a RegionThe elder Talenti built a considerable reputation at Il Poggione, one of the most consistent and reliable estates in Brunello Di Montalcino, where he worked as enologist from 1958-1999. Pierluigi constantly developed new methods to coax the most from his vines. At Il Poggione, in southern Montalcino’s drier conditions, Pierluigi found that lower—not higher—vine density (5-7,000 versus 10,000+ vines/hectare) yielded superior results. Pierluigi planted the vineyards at Talenti in this way. He developed a modified

Cordon training system so that the grapes developed better ripeness levels. Rather than plant vines from a ‘massale selection,’ in 1990, Pierluigi obtained better quality grapes utilizing a clonal selection. Pierluigi helped to develop two new clones, R5 and R6, which are now available to other Brunello wine growers from a nursery in Friuli-Venezia Giulia. This has benefitted many Brunello winemakers.

A Select Area Within Brunello Di Montalcino, Choice Holdings, Pristine Vines and BiodiversityThe Talenti estate is located in southern Montalcino near a centuries-old area called S. Angelo in Colle. Of the estate’s 40 hectares, 21 are planted to vines that produce Brunello, Rosso di Montalcino and IGT wines. Pierluigi planted the vines found on the Talenti estate today, 75% are the specific clones of Sangiovese Grosso he helped to develop. The estate includes 4 hectares of olive trees planted among the vines. Olive oil is produced using cold extraction, which preserves delicate aromas and flavors. To maintain the estate’s biodiversity, the remaining 19 hectares are orchard, forest and farmland. Ironically, in many of the world’s great wine regions, the best vines grow next to crops or woods.

In 2006, New York Magazine voted him “Best Sommelier in New York.” After joining Le Bernardin, Sohm won “Best Sommelier in America 2007” and under his direction, the restaurant won the 2009 James Beard Award for “Outstanding Wine Service.” Named “Best Sommelier in the World 2008” by the World Sommelier Association, Aldo was the first somm representing America to win this prestigious competition. Aldo has appeared frequently on television and radio.

…A Famed Wine Family’s PatrimonyGerhard Kracher is Director of the Weingut Kracher estate in Burgenland, Austria, easily among the renowned sweet wine producers in the world. Gerhard took over after the untimely death of his father, Alois Kracher Jr. (“Luis”), in 2007. Luis was one of a few winemakers whose innovative

efforts brought about a winemaking renaissance in Austria during the 1990s. Alois Kracher Sr., a gifted wine grower who passed on his intimate knowledge and love of his vines to his son and grandson, passed away in 2010. Of his region, Gerhard explained, “With our climate, there is no such thing as light, zippy wines. The wines are full, harmonious and firm.”

“You Can Taste Limestone Soils” Sohm prefers terroir-driven wines, particularly those that express grapes grown in different soils. Vineyards with limestone (calcareous rock), gneiss (metamorphic rock), loess (compacted windblown sediment) and silt soils each produce wines with vastly different profiles. Sohm explained, “Soil is the origin of the wine—where it’s from, where it’s begun. That’s the home. American somms taste on fruit, but that’s irrelevant to me. If you get warmer years, you get different fruit flavors. But it doesn’t matter whether it’s hot, you can taste limestone soils.” Vines in the Wienviertal region were chosen over the more well known Wachau, Kamptal and Kremstal due to their exceptional limestone, gravel and sandy soils.

Sohm & Kracher: A Shared Passion Becomes a ProjectSohm and KracherIn 2008, good friends Aldo Sohm and Gerard Kracher began Sohm & Kracher over lunch at a Thai restaurant in Queens, New York. Given each man’s wine knowledge and passion, the decision to work together was natural. They chose Grüner Veltliner, one of their favorite varieties and a grape they’d never worked with before.

Learning Work in the Vines, Biodynamic Farming and Recuperating Old VarietiesSeven hectares of David’s vineyards in Rioja Alavesa have been certified ecological “ENEEK” by the Basque government. David is a strong believer in biodynamic viticulture. With profound depth, finesse and elegance, his wines express their places of origin. Undaunted and patient, David has learned that difficult vineyard work is critical to grow the best grapes. David comes from a well-known winemaking family that goes back several generations in the town of Laguardia in Rioja Alavesa. At 19, he began working at renowned producers in Rioja and Ribera del Duero. David spent years earning $4.00/hour while he learned of wine growing and indigenous grapes. Later, he applied this knowledge, recuperating numerous old vineyards, particularly Graciano in Rioja and Rufete in Salamanca. For decades, Graciano had fallen out of fashion due to its finicky, difficult-to-grow nature.

Today, many top Rioja wine growers recognize that Graciano’s spicy aromas, deep color and acidity are key components in wines that age well, evident in many classic Riojas made since the 1920s that include Graciano. Indigenous to Salamanca in Castilla y León, the extremely oxidative Rufete grape had become quite scarce. From old vines planted on granite and slate soils, David produces red and white Rufete wines.

Native Grapes and A Process of LearningDavid prefers native grapes, “I don’t understand winemakers in Spain; why work with International grapes? With Garnacha, I have fruit, licorice, some spices. The way I work is to go to one area, fall in love with it, ask the wine growers about the grapes, come back the next few years, and slowly, you begin to know something. It’s a process of learning, you get to know the area and how the grapes will evolve.”

A Vigneron Begins Early on, André studied biology and then pursued cancer research, but he yearned to work outdoors. In 1982, he finished a degree in viticulture and enology and returned to Chavanay to farm his uncle’s vines. There were only two other vignerons in Chavanay and the region was in decline, but André had a steadfast belief in the potential of the local terroir. He became president of the department’s association of wine growers and created programs to encourage the planting of vineyards. He rented additional vineyards to supplement his holdings and he replanted more of his family’s land to vines. André’s efforts over the years have paid off. Today, Chavanay’s numerous passionate vignerons are thriving.

Fresh, Structured Wines That Age Well Perret works the soil rather than use chemicals. He seeks to make fresh, structured wines, neither over-oaked nor over-manipulated, made in a Burgundian style that age well. His Condrieus are reference points. André built a new cellar in 1995, but kept

his domaine’s small scale to control the quality of work in the vines and in the cuverie. Annual production is around 5,000 cases. A true vigneron, André credits his ten hectares of vines rather than accept praise himself. Holdings include the three-hectare jewel Coteau du Chéry, among the most prized vineyards in Condrieu. Vines are 25-50 years old, with good exposition, and yield around 30 hl/ha. One and two year old oak is used to age the whites. André feels new oak only mutes Viognier’s natural characters. Saint Joseph rouge is aged 12-18 months in 400-liter barrel and barrique, 20-30% new.

Wines of Aroma, Fruit and FreshnessAndré explains, “Later picking of Viognier is fine if you consider it like a pinch of salt in your dish, not too heavy-handed. I use less cask in my regular Condrieu to gain in aroma and fruit, with a pureness of violet and apricots. In 1999 and 2003, I assembled Marsanne and Roussanne before fermentation to bring greater freshness. 2005 was a good year for the whites because of their freshness.”

Chavanay’s Winemakers and Terroir Are InvigoratedAndre Perret Growing up in the northern Rhône village of Chavanay, most of André Perret’s family domaine was orchards and crops. The Perrets owned and farmed vines in Chassagne-Montrachet until World War II, when the family moved. An innate taste for terroir is in André’s lineage. Eventually, this would inform everything he would accomplish as wine grower and winemaker.

The Northern Rhône

Father-and-son Team Gérard & Jean-Louis Chave are the father-and-son team that heads the domaine. Vineyards are in seven different parcels, including Le Meal, Les Bessards, L’Hermite and Beaume. Like the northern Rhône, the Hermitage hill is notable for granitic soils that impart a marked earthy minerality to the wines. Many parcels also contain limestone and clay, which contribute finesse and power, respectively.

All Work is Done By Hand or By Horse The red Hermitage is 100% Syrah; the white Hermitage is 85% Marsanne and 15% Roussane. Vines are 15-90 years old with an average yield of 35 hl/ha. Viticulture is organic and all vineyard work is done by hand or by horse, including harvest of the steep, terraced hillside vineyards. Part of the red Hermitage is vinified in open-topped wooden casks, the rest in stainless steel tanks, with manual punching down

twice a day. To retain each soil type’s character, the seven parcels are vinified separately. After 18 months aging, a final blending integrates all parcels to express the unified essence of Hermitage. The wine is bottled without filtration.

Granite is the Main FactorJean-Louis notes the difficult conditions of his terroir; “Like with Pinot Noir in Burgundy, we’re at the northern limit at which Syrah can ripen here at Hermitage, so we have to do everything we can to achieve full maturity every year. It’s not something we can take for granted.” Gérard explains, “Les Bessards is our essential climat: you cannot make a Grand Hermitage without it. You can make a flattering Hermitage without it, if you want. Bessards is the frame around which we work. The granite is what assures good aging for Hermitage, it is the main factor. No granite, no long life.”

Traditional Wine GrowingChaveIn Hermitage, the wine world’s epicenter for Syrah, it’s as true that Chapoutier holdings are the most extensive as it is that Jaboulet’s grand vintages of La Chapelle can keep for over half a century. Domaine Jean-Louis Chave is unlike its larger negociant neighbors. As much as any domaine in France or elsewhere, this small family winery founded in 1481 exemplifies the finest traditional wine growing and winemaking. Like Rioja Alta’s R. Lopez de Heredia, Burgundy’s Hubert Lignier and the Veneto’s Quintarelli, in Hermitage, Domaine Jean-Louis Chave faithfully follows old methods, not new fashions.

Languedoc-Roussillon

Knowledge and Cuttings from MastersWinemaker Laurent Vaillé purchased land in 1989 near Aniane in the l’Hérault of the Languedoc. In the area’s hard limestone soils, organically poor, many people thought Laurent’s vineyards would not succeed. Dynamite and bulldozers helped Laurent mold his parcels, heavily laden with limestone, boulders, and glacial scree, into proper vineyards. Today, this is among the best terroir in the region. As a young man, Laurent’s teachers were Eloi Durrbach of Domaine Trévallon, Jean-Louis Chave in Hermitage and Jean-Francois of Domaine Coche-Dury in Meursault. It is through the sensibilities of these great wine growers that Laurent learned the value of his terroir and how best to express it. Indeed, Laurent used Syrah, Marsanne, and Roussane cuttings from Gérard Chave and Domaine Trévallon to plant his new vines.

Superior Acidity is a Top PriorityUnusual blends of Syrah, Mourvèdre and Cabernet Sauvignon are used to make the wines. Cabernet Sauvignon is not permitted by the Languedoc

AOC, so the wine is labeled as Vin de Pays de l’Hérault Rouge. Laurent explained, “We planted Cabernet Sauvignon because it always has superior acidity to other grape varieties, and for a well-balanced wine from the south of France, that’s a top priority. I don’t have rules. Nature gave us a partition of land. It’s up to us to interpret it.” South-facing vines have very low yields (20-25 hectoliters per hectare) and are gobelet-trained. Wine growing is by organic and biodynamic methods, without certification. Like the viticulture, vinification is kept traditional. Fermentation is in stainless steel tank. For the white, Roussanne, Marsanne and Chardonnay are blended before undergoing malolactic fermentation in barrel, then aged in large demi-muids. For the red, Syrah, Mourvèdre, Cabernet Sauvignon and Counoise are harvested and vinified separately, then aged separately in 228-liter barrels. Once maturation is complete, the wines are blended before settling and bottling. The power, finesse and overall balance of these wines gives them an ability to age and evolve for a long period in bottle.

A Reference Point Producer in the LanguedocDomaine de la Granges des PèresIn little more than a generation, this domaine has achieved cult status. On par with Mas de Daumas Gassac, a legendary producer for decades, Domaine de la Grange des Péres has played a significant role in why wine lovers the world over are paying attention to Languedoc-Roussillon in southern France, a place with a history of winemaking that extends back before Roman times. Currently, there is such demand for Domaine de la Grange des Péres in France that bottles are strictly allocated such that the wine is nearly impossible to find. The few bottles seen at auction are fetching high prices.
