Tandoor food, or thandoori foods, are made using the traditional

tandoori oven. These ovens have been a staple in Indian cooking for

millennia. A tandoori oven is most simply a large clay pot with burning

charcoal at the bottom. Food is cooked by sticking it to the inside top

portion of the pot or grilled over the flames. The unmistakable charcoal

smoke flavor is loved around the world.

Thandoori chicken is marinated in traditional Indian spices and yogurt.

This dish is probably the most popular to travelers that wish to have an

Idli is a traditional breakfast food in India. Popular among those in the

Southern part of the country, idli can also be found in the North. The

South uses more rice in their cuisine as compared to the North where

wheat is more popular.

Idli is small, flattened balls of lentil and rice batter. This batter has been

fermented and shaped in molds, then steamed. A similar food is made

from the same type of batter, only flattened into a pancake shape and

fried. This similar dish is called dosa.

These two breads are used extensively in Indian cuisine. Both are

unleavened, flat bread. There are some differences, though many

people may confuse the two. Naan is a flatbread made with white flour

and then cooked in a tandoori oven. Chappati is a flatbread that’s made

with whole wheat flour and grilled on a flat pan. Both Naan and Chappati

are commonly served with dishes that have a lot of sauce.

Biryani is known by several different spellings, though they are usually

pronounced in the same manner. This dish is made with a rice base that

is highly spiced. Flavorful and aromatic spices are used in the rice and a

number of other ingredients are mixed in, such as meat and vegetables.
