Opening

1. Turn on lights at the top of bathroom stairs2. Check bathrooms (toilet paper, soap, paper towel, toilet)3. Wash hands4. Get ice for bar5. Find out what’s missing6. Polish cutlery and glasses (with dry cloth)7. Put out candles 8. Cut up lemons/lime as needed9. Lids on juice10.Quick sweep

Procedure with Customer

1. Welcome with menu2. Light candle and bring ice water3. Get order for drinks/ appetizers4. Input in system, USE APPLINE5. Food (always use APPLINE for food order)6. Print receipt7. Clean and reset table when slow

Closing

1. Reset all tables (make sure to wipe table and chairs)2. Sweep Tuesday, Wednesday, Thursday, Friday, Sunday3. Sweep AND mop on Saturday4. Wash glasses5. Polish glasses and utensils6. Clean bathroom

-wipe all surfaces-clean toilet and bowl-replace paper and soap as needed-sweep-mop on Saturday

*if floor is sticky, please mop regardless of day
