The seeds measure between 1 and 2 mm, about 1/8 inch in diameter. There are three different kinds of mustard plants – black mustard, brown Indian mustard, and white or yellow mustard. The seeds are ground, cracked, or left whole, then mixed with salt, water, lemon juice, or vinegar, along with some flavorings and spices that give the paste a sweet or spicy taste. It doesn’t become an aromatic substance until the seeds are cracked and mixed with liquid. This activates the oils in the mustard seed that gives it its taste and smell. • It’s believed that the ancient Romans were the first to concoct prepared mustard. Their blend consisted of ground seed mixed with unfermented grape juice and spices. The juice was known as “must,” and when mixed with the seeds, it became “burning must,” or mustum ardens, which was shortened to mustard. They added caraway, coriander, dill, celery, thyme, oregano, honey, vinegar, and oil. • The ancient Egyptians considered mustard seeds a symbol of good fortune. Seeds were placed in King Tut’s tomb for his next life. • Everybitof themustardplant isedible, fromtheleaves (knownasmustardgreens) to thestems tothe seeds. Just one acre of mustard produces one tonofseed,whichinturnproduces1,940lbs.(880kg)ofmustardflour,which is turned into10,490lbs.(4,758kg.)ofwetmustard,whichcanproduce47,600 jars of mustard. There are about 100,000seeds in one pound (0.45 kg) of yellowmustardseeds.

• Canadagrowsmoremustardthananyothercountryintheworld.ThetinycountryofNepalissecond,andothergrowersincludeHungary,GreatBritain,andIndia.

• Ofthemorethan700millionpounds(317,514,659kg)ofmustardeatenaroundtheworldeveryyear,Americans are the greatest consumers. InYankeeStadium alone, in one season of baseball, more than 1,600 gallons are consumed, and that’s not evencountingthe2,000,000littleindividualpackets!

• The most familiar type of mustard is yellow, amixtureofyellowmustardseed(themildestofalltypes), vinegar, water, turmeric, salt, cloves, andcoriander. It’s the turmeric thatgives themustarditsbrightyellowcolor.Spicybrownmustardusesmuch the same ingredients, but the brown seedgives the paste amuchmore pungent flavor.Hotmustard uses brown or Indian seeds, and addsallspice, tarragon, and other seasonings.

• Dijon mustard originated in Dijon, France, andblends brown mustard seed, vinegar, water, salt,and tarragon. The addition of white wine to themix is what gives this smooth-textured mustardits distinctive taste. In 1855, Maurice Grey wasproducing an award-winning Dijon mustard andhad invented a machine that increased the speed ofprojection.However, he lacked thefinances tomake it successful.AnotherDijonmustardmakerAugustePouponprovided the funds, and thepairmanufactured the first Grey Poupon mustard inDijonin1866.

• ShugartrosequicklythroughtheranksatIBMandwastransferredtotheirresearchlaboratory.In1955,heandhisteamwereresponsiblefordevelopingthefirstdiskdrive,namedtheIBMRAMAC,abletostorefivemillioncharactersofdata.Itwasreleasedcommerciallyin1959.

• In 1969, Shugart developed the floppy disk, an8-inch flexible plastic disk coatedwithmagneticiron oxide. The first “memory disk,” as it wascalled,held100KBsofdataandprovidedamethodof transferring data from computer to computer.

Make Yummy Brownies in a Waffle Iron

Looking for an easy last-minute chocolate-y dessert idea that doesn’t require heating up the oven on a hot summer day? Here’s a clever idea you and your kids will enjoy — make yummy homemade brownies in a waf-fle iron. Then top them with fresh sea-sonal fruit like raspberries, or scoop some vanilla ice cream on top. Yum!

Here’s how to make the kid-pleasing all American chocolate treat in this off-kilter way:

WAFFLE-IRON BROWNIES 3/4 cup all-purpose flour 1/2 cup unsweetened cocoa powder 1 cup sugar 1/2 teaspoon baking powder Dash of salt 1 stick (1/2 cup) unsalted but- ter, melted and cooled 2 eggs, slightly beaten 1/2 teaspoon vanilla

1. In a mixing bowl, let your kids measure and combine the flour, cocoa powder, sugar, baking powder and salt. In another bowl, combine butter, eggs and vanilla. Add the wet ingre-dients to the dry ingredients and stir with a big spoon until combined, being careful not to overmix. It will be a thick consistency.

2. Generously spray or brush a waf-

fle iron with oil and set on medium heat. When ready, an adult may spoon some of the brownie mixture on the waffle iron. I use an ice-cream scoop. Vary the amount according to the size of your waffle iron so that it doesn’t spill over the sides when closed.

3. When the batter is baked (our fam-ily likes them crispy on the outside), carefully remove the “waffle brownie” out of the waffle iron with a spatula and cool slightly on a rack or plate.

4. To serve: Sprinkle serving portions of a warm waffle brownie with sift-ed confectioner’s sugar, raspberries, a scoop of vanilla ice cream or fudge sauce. Store leftover brownies in an airtight container or in your freezer. Makes four 7-inch round waffles

Shortcut idea: Use your favorite commercial brownie mix. I used fam-ily-size Pillsbury Chocolate Fudge brownie mix for delicious results.
