Corned beef and cabbage is a traditional Irish dish, and a favorite meal on St. Patrick’s Day. While the flavor combina-tions are delicious, some may want to cut back on the fat and calories. By using my tips for preparing the brisket, and my recipe for Slow Cooked Brisket and Cabbage, you can have all the flavors of this Irish dish with far less calories.

Brisket is a fat-marbled cut of beef from the front of the cow in the lower chest area. Slow cooking tenderizes this tough cut of meat. According to Bowes and Church’s Food Values of Portions Commonly Used, the lowest calorie bris-ket is the one in which all the fat is trimmed. The type of

brisket also makes a difference. The flat half brisket would have 191 calories and 6 grams of fat per 3.5-ounce serving. The same amount of the point half brisket prepared the same way has

244 calories and nearly 14 grams of fat. Whole brisket has 218 calories and 10 grams of fat. Leaving 1/4-inch trim of fat almost doubles the calories in all of the brisket cuts.

“Trimmed” brisket has almost all of the outer fat removed, while “packer-trimmed” brisket has a thick outer layer of fat. Using a few tips, you can reduce some of the fat in the less expensive, packer-trimmed cuts of brisket while saving money. Cook the meat a day ahead of time and put the pot in the refrigerator. Once the meat cools, the fat will harden and can be skimmed off.

Market-trimmed brisket is a little more expensive, but saves time because it has already been prepped for you. This type of brisket is ideal for using in a slow cooker. The meat will cook in its own juices and come out moist and tender.

Potatoes are another favorite Irish food. Potatoes are not that high in calories and have no fat, but making them with lots of butter and high-fat milk adds calories. This Slow Cooked Brisket and Cabbage recipe uses traditional ingre-dients in a flavorful, lower-fat Irish meal.

SLOW-COOKED BRISKET AND CABBAGE

1 (3-pound) trimmed, boneless beef brisket2 tablespoons Dijon or stone ground mustard1 teaspoon salt1 teaspoon black pepper2 large baking potatoes (about 1 1/4 pounds), peeled and cut into 4-inch pieces1 large onion, peeled and cut into 8 wedges4 garlic cloves, peeled and cut in half3 large carrots, cut into 4-inch pieces1 small head green cabbage (about a pound), cut into 8 wedges1 teaspoon ground ginger1 teaspoon ground cloves1 teaspoon hot red pepper flakes2 whole bay leaves1/4 cup apple cider vinegar4 to 5 cups hot water, to cover the meat by at least 1 inch

1. Rub the brisket on both sides with the mustard and 1/2 teaspoon of the salt and 1/2 teaspoon of the black pepper. Set aside on a plate.

2. Place the potatoes, onions, garlic cloves, carrots and cabbage in the bottom of the slow cooker. Season with the remaining 1/2 teaspoon of the salt and pepper, the ginger, cloves and red pepper flakes. Place bay leaves in the pot. Stir to combine. Place brisket on top of the vegetables.

3. Pour in the apple cider vinegar, and the hot water to cover the meat by at least 1 inch. Cover and cook on LOW for 8 to 9 hours, or on HIGH for 4 to 5 hours, until the meat is fork tender.

4. Remove the brisket from the slow cooker to a cutting board and let it stand for 10 minutes before slicing. Thinly slice brisket across the grain and put on a serving platter. Remove the vegetables with a slotted spoon and put them on a platter. Pour the juices from the cooker into a gravy boat and serve with brisket.

A: According to "Collecting Pens" by Edward Kiersh, if your pen was manufac-tured in 1950 and is a Lifetime Triumph with Touchdown filler, it could be worth $125 in new to excellent condition.

A: Prices depend on rarity and desirability. Although I could not find your particular waffle iron in my reference books, a rule of thumb is that the more intricate the waffle iron, the higher the price. For example, the Yum Yum waffle iron manufactured by Griswold for hotel kitchens is valued at between $500 and $1,200, depending on size and model. Most of the other simpler ones fall into the $40 to $100 range, again depending on rarity and desirability. I would think that your waffle iron might fall into that range, too.

CorporalAlvin I. RonningAugust 17,1917 - November 8, 1942

Alvin I. Ronning was born in Appleton to parents Ole and Mary Ronning on August 17, 1917. He lived his entire life in Appleton

until the time he left for service in the United States Army. He enjoyed hunting, and fishing in the area lakes and rivers and was a member of the Long Lake Lutheran Church.

Alvin left with Company M, Minnesota Army National Guard, when they were mobilized in February of 1941. He trained in various camps before being sent to North Ireland and from there into the African war zone. On November 8, 1942, he died in the defense of his country in the performance of his duties in the initial landing operations in North Africa.

At the time of his death he was survived by his parents, sisters: Inga Moen, Edna Bakken, Marlys Ronning and Opal Ronning, brothers: Hjalmer Ronning ( who was serving with the 4th Armored Division), Orwald Ronning (serving at Roswell Air Base) and Clifford Ronning.

Memorial services for Alvin were held April 11, 1943, at Zion Lutheran Church, with Rev. N. C. Renslo, pastor of Drywood Lutheran Church, officiating.

Ronning Avenue runs east and west, and is located in front of the high school auditorium.

Going Off-Leash

Welcome feathered friends to snack at feeders that you and your kids can make in minutes ... no saw, hammer or woodworking equipment required. Hang one or more of them from a post or tree branch and enjoy the reward of seeing birds peck-peck-pecking away at the treats you’ve left for them.

In the wild, birds typically thrive on a menu of seeds, nuts and fruits. Here are some ideas for making simple tweet treats.

--String peanuts in their shells using a plastic needle and about 24 inches of yarn. Tie the loose ends together and loop over the branch of a tree or bush. Peanut shells are soft enough for many birds to crack, so that they can get the nutmeat inside.

--Make ke-babs on a string or stick with chunks of stale bagels, apple halves and dates.

--Create a natural seed basket by cutting off the top third of a large fresh orange. Scoop out the fruit and eat it for a snack while you work. Poke three holes equidis-tant from each other below the rim. Slide three pieces of twine or string through the holes and knot in place. Bring the loose ends together and tie to a tree branch. Fill the hanging orange feeder with birdseed.

You also may wish to offer birds a convenient place to perch while they eat. For a perch, find a thin stick a few inches longer than the width of the orange. Cut slits on opposite sides of the orange. Slide the stick through.

Birds have hearty appetites, so fill the feeder regu-larly and enjoy their spirited songs as they come and go.

Extra idea: Observing, identifying and describing the faithful feathered friends is fascinating for children, so set out a pair of binoculars by your window and teach them how to hold and focus them: It’s one thing to spot a bird, and quite another to really look at it.

DEAR PAW'S CORNER: My puppy, "Sky," is approaching a year old, and she is still a bit ram-bunctious. I'd like to take her to a nearby off-leash dog park, but I'm worried about how she will act around other dogs and people. -- John P., Portland, Maine

DEAR JOHN: First, I want to commend you for putting so much thought into your decision to bring Sky to an off-leash park. It's im-portant to be considerate of how your dog will behave in social situ-ations. The question now is, how exactly will she behave?

My guess is that Sky has not spent a lot of time with other dogs. She's old enough now to start so-cializing, but first make sure she has had all needed vaccinations.

Start small -- schedule a play date with a friend or neighbor's dog, and gradually build the num-ber of dogs she's around. Supervise her the entire time to make sure she

gets along well with other dogs.If it isn't possible to do a lim-

ited play date, look into weekly group training sessions with a professional trainer. These will reinforce basic obedience skills with Sky with the added benefit of socializing, in a controlled en-vironment, with other dogs.

If neither option is available, slowly introduce Sky to the dog park. Pick a time when few dogs are in the park. (You'll need to scout the park on your own be-forehand.) Keep her on the leash for the first few visits, especially when she's meeting new dogs.

Tweet Treats Attract Birds to Your Yard


The Big Stone City Public School will hold its annual Early Childhood Screening on March 15th at the Big Stone City School in the preschool room from 8:00 a.m. -1:00 p.m. You will also be able to register your child for the 2013-2014 school year. Preschool screening is a current requirement for Kindergarten entrance. Children who will be 3 or 4 on September 1, 2013 are eligible for screening and registration. Screening is not a prerequisite for preschool entrance.

Your child will have a height and weight, and health records will be examined by a nurse. Teaching staff will also complete the DIAL 3 assessment. Your child will be observed in the developmental areas of language, motor, and concepts. During this screening you will also be able to receive the results of the DIAL 3 assessment, see the preschool classroom, and meet the teacher. The purpose of this screening is to identify health and learning problems or giftedness. Early identification and intervention are the keys to preventing learning and

health problems from becoming more serious. If your child has already been screened, you do not need to attend the screening, however, you are

more than welcome to come and register at this time. Preschool at the BSC School currently has two sections. The morning group is from 8:00a.m.-

11:30a.m. and the afternoon group is from 12:15 p.m.-3:20 p.m. Both sections are Monday-Thursday. Preschool focuses on school readiness, building strong relationships with peers and adults, the whole language approach to learning, and hands on activities. Students also enjoy the small groups, the incorporation of music and technology in the curriculum, and field trips that extend their learning.

Q: Kevin Sorbo has always been one of my favorite actors, ever since "Her-cules." I loved seeing him earlier this season on "Don't Trust the B---- in Apt. 23." What has been up to since? Any chance we'll see him in a comedy again soon? -- Sherri P., via e-mail

A: On March 23 at 8/7c, you can catch Kevin in the Hallmark Movie Channel's "Shadow on the Mesa," which also stars Wes Brown ("De-ception"), Gail O'Grady ("NYPD Blue") and Meredith Baxter ("Family Ties"). The movie takes place in the Old West, and Kevin plays rancher Ray Eastman, who is trying to protect his property from a land grab by a corrupt neighbor.

I asked Kevin if he'd like to do an-other comedy, and he told me: "I would love to. I've done a lot of guest spots "Dharma & Greg," "Two and a Half Men," "Just Shoot Me" ... all those dif-ferent things. I did have my own sitcom back in 2005. It was a half-hour comedy called "Bobby Cannon," where I played an end-of-the-year quarterback for the Chicago Bears.

"It tested No. 1 for ABC, but then the then-president of ABC decided not to pick it up. To this day we are shocked. There's no doubt in my mind we'd be in our eighth season right now. Oh well ... welcome to the business of Holly-wood."

• • •Q: Has CBS canceled "Vegas"? Visu-

ally and stylistically, it's different from the usual cop programs on TV, and it's a joy to watch. -- Marcia A. in New York

A: While CBS hasn't canceled the Den-nis Quaid/Michael Chiklis drama as of this writing, things aren't looking good for it. The ratings aren't as high as CBS expects from its dramas, especially one that's so expensive to produce, and CBS downgraded its episode order from 22 to 21. "Vegas" returns with new episodes on Tuesday, March 19, after a month-long hiatus.
