We bring you all kinds of information about several different types this sweet treat, from bundt to sponge. • • Ancient Egypt was home to the world’s first large-scale bakeries, which were the first to use yeast to make cakes rise before baking them on hot stones. To the ancient Romans, cake meant a small bread, as there was no sugar, and honey was an expensive commodity. • • Cake-baking underwent a dramatic change in the mid-1800s. Previously, yeast was used as a leavening agent, but yeast was replaced with the introduction of bak- ing soda and baking powder, both of which are greater raising agents. Temperature- controlled ovens also contributed to in- creased success. • • Flour is classified by its protein content. The higher the protein, the harder the flour. All-purpose flour has a protein content of 10-11 percent and is a good choice for cookies. Bread flour’s content is much higher, 15 percent, and is not suitable for cakes. Cake flour’s protein measures 7-8 percent, and its low gluten content makes it a perfect choice for delicate cakes. • • Sponge cake uses only eggs, sugar and flour in its preparation, with no fat or leav- ening. • •AnotherSoutherncustomistheGroom’sCake,aseparateweddingcaketraditionally served to unmarried women attending the wedding. This confection, much smaller than the regular wedding cake, is taken home and placed under the lady’s pillow, with the hope that she’ll dream of her future husband.

Is It a Migraine?DEAR DR. DONOHUE: I have had headaches since I was 12. I am now 32. I hear people talk about their migraine headaches and wonder if I might have them. What makes a headache a migraine headache? I take aspirin for my headaches. It helps, but not all that much. Are there special medicines for migraines? -- K.D.

ANSWER: Yes, there are special migraine medicines, so it is important to determine if your headaches are true migraine headaches. Some of the distinguishing attributes of migraines are the following: They begin before age 40. More women have them than men. The headache starts out with minor pain but often pro-gresses to intense and incapacitating pain. The word used to describe it is “throbbing.” Nausea and vomit-ing frequently accompany it. In a little more than half of migraine patients, the headache is on one side only. Bright lights and noise intensify the pain. Sufferers try to find a dark, quiet room where they can lie down until the headache goes, and that can take four to 72 hours. Migraine sufferers can identify triggers that bring on their headaches. Stress, missing a meal, too much or too little sleep, menstrual periods, bright lights, certain odors like cigarette smoke or perfume and fatigue are some of the things that start a mi-graine. Alcohol -- beer and red wine in particular -- chocolate, some cheeses and cured meats like hot dogs, sausage and bacon are triggers for some. Aspirin, Tylenol, Midrin and naproxen alleviate mild migraines. Cafergot is a migraine standby. A group of newer drugs are especially good for migraine sufferers. Seven of them are available. Some names are Imitrex, Maxalt and Zomig. Imitrex comes as a nasal spray and as an injection, administered like insulin. Zomig also comes as a nasal spray. This is a godsend for those who become sick to the stomach along with the headache. Not all migraine headaches produce all the signs and symptoms I mentioned, but if you have more than two of these characteristic symptoms, it’s a good bet that you suffer from migraines.The booklet on headaches describes the common kinds and their treatment. Note that these are for prevention of second heart attacks and strokes.For the prevention of a first heart attack or stroke, patients should consult their doctor, who will evaluate each patient’s risk. Based on that, the doctor will recommend a regimen that’s appropriate. There are two types of addictions: Environmental and Genetic. Both types of addiction revolve around Dopamine production. In the center of our brain there is a gland called the pituitary gland. This gland is responsible for the production of dopamine. Dopa-mine is critical to how we function because it helps us process the events of stress that occur in our lives. As an example, if a loved one has a Heart Attack, the brain produces dopamine and this is what allows us to process the events of that stress in a rational order, like calling an ambulance, putting the kids in the car, and safely driving through traffic to the hospital. In es-sence, dopamine keeps us grounded and focused.

Environmental addictions are caused by manmade substances that are highly addictive. Some examples of this are cigarette additives, and synthetically structured drugs. If you stop using these substances regardless of whether or not you have a genetic predisposition to addiction, you will suffer a withdrawal effect.

The marker for genetic addictions is the A1 Allele Gene at the D2 Dopamine Gene, on the 11th Chromo-some. The A1 Allele Gene is responsible for what is commonly referred to as an Addictive Personality. The A1 Gene has a specific marker for each type of addiction; opiates, stimulants, gambling, sex, alcohol, glucose (obesity), tobacco, etc. The following chart is a visual representation of what a typical progression of Alcohol and Drug abuse may look like in a given subject. As you can see from the chart, when we use a brain altering substance it causes our transmitters and receptors to over fire. This over firing causes damage to our Neurotransmitters and Re-ceptors, reducing the natural production of dopamine. As the addiction progresses, substance use surpasses the amount of dopamine the brain is able to produce as a direct result of the damage being caused to the transmitters and receptors. Eventually the subject will reach a point where they have become totally chemi-cally dependent to produce the amount of dopamine needed for them to feel normal, using highly increased amounts of brain altering substances. The inevitable effect is that the addicted subject’s use of a brain alter-ing substance will sky rocket to dangerous even fatal levels, in an effort to maintain the feelings of normalcy they had during the totally chemically dependent stage their addiction. At this point the subject has what is commonly referred to as a Naked Brain.

Maxed Out on Your IRA and 401(K)? What’s the Next Step?

If you are contributing the maximum amount to your 401(k) or other employer-sponsored retirement plan each year, that’s good. And if you’re also “maxing out” on your Individual Retirement Account (IRA) annually, that’s even better. But what then? If you’re already fully funding

your 401(k) and IRA, can you put away even more for retirement? Should you?

The answer to this last question is almost cer-tainly “yes” — because you could spend a long time in retirement. How long? Consider these statistics from the Society of Actuaries:

A man who’s reached age 65 in good health has a 50% chance of living 20 more years and a 25% chance of living to age 92. A 65-year-old woman has a 50% chance of liv-ing to age 88 and a 25% chance of living to 94.There’s a 50% chance that at least one member of a 65-year-old couple will live to 92 — and there’s a 25% chance at least one of them will reach age 97.Because you have a reasonably good chance of spending two, or even three, decades in retire-ment, you clearly need to accumulate substantial financial resources before you retire. So, if you consistently reach the contribution limits on your 401(k) and IRA, you’re making a smart move, as both these vehicles offer the potential for tax-deferred earnings and a variety of invest-ment choices. But if you can still afford to put away more money, or if your income level pre-vents you from contributing to a Roth IRA, you may want to look at these possibilities:

Life Insurance Retirement Plan — A Life Insur-ance Retirement Plan (LIRP) is essentially a life insurance policy that can potentially help you generate tax-advantaged income during your retirement years. Until you begin taking with-drawals, the cash value of your policy has the potential to grow tax deferred. Then, when you retire, you can take tax-free payouts from your principal. (After the entire principal is paid, pay-outs are treated as loans against the contract.) And your beneficiaries will receive the balance of the death benefit income tax free, minus any loans or loan interest.Annuities — You might find that a fixed annuity can be an appropriate way to supplement your retirement income. Like a LIRP, a fixed annui-ty’s earnings have the potential to grow on a tax-deferred basis. Also, fixed annuities generally offer some type of guaranteed rate of return over the life of the annuity contract. And perhaps most importantly, you can structure your annuity to provide you with an income stream you can’t outlive. (Keep in mind, though, that annuities are generally more appropriate for investors who are at least 45 years old.)While you can certainly get some key benefits from a LIRP and a fixed annuity, you need to fully understand all aspects of these investment vehicles and make sure they are suitable for

Festive CakeThis is a delicious moist cake!!3 cups flour2 cups sugar1 tsp baking soda1 tsp salt1 tsp cinnamon1 cup chopped almonds1 tsp almond extract3 eggs1 1/2 cups vegetable oil2 cups chopped firm, ripe bananas1 8oz can crushed pineapple

Mix and sift flour, sugar, baking soda, salt and cinnamon, stir in almonds. Beat eggs slightly, combine with oil, almond extract, bananas and undrained pineapple. Add to dry ingredients, mix thoroughly, but do not beat. Spoon into well greased 10 in. tube pan. Bake 325 for one hour and 20 to 25 minutes. Remove from oven, let stand 15 to 20 min-utes, invert onto serving plate, remove pan. Cool thoroughly before frosting. Makes 12 to 16 servings.FrostingSoften 1 8 oz package cream cheese and 1/2 cup butter to room temperature. Cream together with 1 pound powdered sugar. Add about 1 tsp vanilla. Store in refrigerator.YUM!
