What’s haupia? Milky white in color, smooth in texture and lightly sweet in f lavor, the simple and delightful haupia is basically coconut milk traditionally mixed with ground arrowroot starch. Modern recipes call for diluted coconut milk, sugar and salt mixed with arrowroot or cornstarch, which is then heated. Once thick and smooth, it’s chilled in a refrigerator just like you would gelatin. Authentic haupia is a staple at island lu‘au. Also look for it on the dessert menu at isle restaurants and at bakeries.

Cool off from the inside out with a true Hawai‘i–inspired treat: shave ice! Authentic shave ice is made from blocks of ice that are shaved as opposed to snow cones that are often made with crushed ice. The shaving creates a very fine ice, lightly but firmly packed into a rounded mound of ice. A good shave ice should never cave in when syrup is poured on top! Try it with azuki bean paste at the bottom and a scoop of vanilla ice cream! C’mon, give it a go!

One of the most historically significant places in Hawai‘i, Lahaina is renowned for its sunny skies, fertile plains, sandy beaches and beautiful bays. In the 16th century, Lahaina was home to the great Pi‘ilani chiefs and in the 19th century, it was the capital of the Kingdom of Hawai‘i under the reign of the Kamehamehas. Lahaina has witnessed the comings and goings of warriors, kings, whalers, traders, sugar barons, heads of state,

Lahaina Historic Trail offers dozens of interpretive signs along Front Street and at landmarks. O ftentimes, you’ll find the fruits of travel can be found in the journey to a place rather than just the destination itself. Such is the case with the drive to Hana on Hwy. 36. By necessity you’ll have to take it slow with the road’s 617 turns and 56 one-lane bridges, which takes nearly three hours to navigate—longer if you stop at the numerous sites along the way. Along the highway, discover lots to see and do: Kaumahina State Wayside Park; Keanae Arboretum; Wailua Valley State Wayside; Pua‘a Ka‘a State Wayside with small waterfalls and

pools; and 122-acre Wai‘anapanapa State Park with black sand beach, picnic area, native hala forest, cave and blowholes. Past Hana, you’ll encounter the Kipahulu section of Haleakala National Park. Stop by the visitor center for info on numerous trails. One of them is the popular Pipiwai Trail. Dominating east Maui with its summit at 10,023 feet is the majestic volcanic crater known as Haleakala (House of the Sun). One of only two national parks in Hawai‘i, Haleakala is home to endangered bird species, rare native plants and out-of-this-world landscapes. There are also many cultural and historic sites within its boundaries from the moon-like summit to the rainforest of Kipahulu accessible only from the road to Hana/Highway 360. For those who seek a path less traveled, drive up to the summit in the late afternoon and stay for sunset. The above-clouds view toward the west is awe-inspiring. At night, a telescope offers unique perspective: the stars and heavenly bodies are so dense at this high elevation that you’ll see movement in the sky. In the summit area, explore over 30 miles of hiking trails that range from just 10 minutes to multi-day overnight trips. Stop by the visitor center and ask about the weekly Waikamoi Cloud Forest Hike that begins at Hosmer Grove just inside the park entrance. Call ahead if you wish to make reservations. If you’d like to volunteer while on vacation, visit the Friends of Haleakala National Park’s website, fhnp.org, and find a schedule of service trips that will require backpacking into the crater, and possibly an overnight stay. From June to July, be on the lookout for the rare and endangered Haleakala silversword. These endemic plants can only be found in the park, growing on volcanic cinder, a dry and rocky substrate subject to freezing temps and high winds. The skin and hairs of the silversword protect it from its harsh environment. Hawai‘i’s state bird, the nene, or

Bring lots of water if you plan to hike, and a flashlight if you’re going during predawn hours or after sunset. Follow speed limits within the park so as to avoid any accidents with this protected species.Kipahulu District The coastal section of Haleakala National Park, referred to as the Kipahulu district, can only be accessed via the famous Hana Highway (Map G), and is located 12 miles past the town of Hana. The drive itself is worthy of

exploration with its waterfalls, ocean vistas and more (see page 62 for details). There are several hikes available from the Kipahulu Visitors Center. The Pipiwai Trail is a moderately strenuous, four-mile (roundtrip) hike that will take you to the spectacular 400-ft. Waimoku Falls. Rangers also offer a guided hike on this trail 10 a.m. on Sundays. The fertile volcanic slopes of Haleakala offer a dramatic change in landscape and climate from Maui’s popular coastlines. Here, in this heavenly and tranquil Upcountry area, you’ll welcome the cool breezes and outstanding views of Maui. herb and f lower farms. In upper Kula, explore an organic lavender farm and indulge in lavender botanicals. Explore the old paniolo (cowboy) town of Makawao on foot (or on horse) and visit its western storefronts filled with housewares, apparel, jewelry, arts and crafts. Hitching posts line boutiques, art galleries and restaurants. Doughnuts-on-a-stick and “heavenly” cream puffs from Komoda Store and Bakery are popular sweet treats. Nearby, Hui No‘eau Visual Arts Center features notable local artists’ exhibitions and offer ongoing workshops to the community. You’ll also find botanical gardens, upcountry golfing at Pukalani Country Club, and Surfing Goat Dairy that produces its own award-winning gourmet goat cheese. Be sure to stop by Maui Polo Club every Sunday during the spring polo season beginning in April. Make it a day for a picnic with good friends, food and watching Maui’s finest horses and riders in an exciting polo match. Tickets are $10, kids 12 and under are free, mauipoloclub.com. ‘Iao Valley State Monument is steeped in Hawaiian history and lore. Located about three miles west of Wailuku at the end of winding ‘Iao Valley Road, this park is known for its lush vegetation and crystal clear stream. The valley was the site of Kamehameha the Great’s notorious battle with Maui forces in 1790 that ended in his conquest of the island. It was said that ‘Iao Stream ran red with the blood of fallen warriors. The park features paved walkways and gardens. Towering through clouds and reaching to the heavens is Kuka‘emoku, the famous landmark ‘Iao Needle. It rises 1,200 feet from the valley f loor. One of the walkways leads up to a platform for viewing the needle and the valley out to Kahului Harbor. Signs provide a background on the area’s history. An ethnobotanical walk meanders down to the streambed. $5 entry fee; open 7 a.m.-7 p.m. daily.

Watch surfers here year-round. But when the winds whip up, see spectacular aerial feats by windsurfers and kite surfers. Ocean conditions can be rough, so unless you’re at an advanced level in watersports, it’s better to be a spectator. Map G:D3.

Maui’s coolest small town has a distinct international f lair. This north shore town melds elements of its 100-plus year history as a booming sugar plantation camp with over 30 years of recognition as the “Windsurf Capital of the World.” Pa‘ia’s thriving multi-ethnic culture began in the 1890s when laborers were imported to work in the Pa‘ia Sugar Mill or nearby cane fields. The townspeople were a mix of Chinese, Filipino, Japanese, Korean, Puerto Rican and Portuguese, who lived and worked together in harmony. A century later, the town continued to attract people from around the world once a group of young surfers discovered the perfect wind conditions at nearby Ho‘okipa Beach and developed a new sport of surfing with a sail. The result is a picturesque beach town with brightly colored plantation-era wooden buildings. Inside the vibrant storefronts you’ll find at least 40 boutiques, offering a wide selection of men’s, women’s and children’s apparel, designer swimwear, surfing, windsurfing and beach gear, jewelry and art studios along with home furnishings. Restaurants and eateries are in no short supply either. Whether you’re looking for a light snack or full meal, you can choose from bakeries, a coffee shop, fresh fish and seafood, Mexican, Brazilian,

Mediterranean, Pacific Rim, Indian or Vegan. Several restaurants feature live music nights and weekends. Laid-back during the day, Pa‘ia jams after the sun goes down. The north shore is also known for its beautiful, white sand beaches. Baldwin Beach Park is the first beach you encounter, driving from Kahului to Pa‘ia. It offers restrooms and picnic facilities. Pa‘ia Bay (referred to as Baby Beach by many of the locals) is located at the edge of town and perfect for swimming. Once you leave Pa‘ia heading east, you’ll see a sign for Ku‘au, home to the renowned Mama’s Fish House. The sandy cove in front of the restaurant and luxury homes is a quiet place to relax. MauiThe Made in Maui Trade Council of the Maui Chamber of Commerce was conceived in 1980 by a dedicated group of business people intent on making Maui a brand for products and services. Member businesses are required to produce a marketable item with at least 51% value added on Maui. Food and beverage producers, flower growers, clothing and fragrance manufacturers are just a few of the Made in Maui members who take pride in creating quality products for residents and visitors to enjoy. Look for the seal of pride. In 2014, a new trade show event, Made in Maui County Festival, was developed for local businesses to showcase their products at home to a wide audience.
