DirectionsCover meat with cold water and add onion, one carrot, bay leaves, pepper and garlic. Bring to a boil; reduce heat and simmer for about three hours, or until meat is tender.When fork pierces meat easily, it is done. Leave in broth for an additional hour. Remove meat from broth. Broil potatoes, remaining carrots and cabbage in corned beef broth until tender, about ten minutes. When vegetables are done, serve on plate with several slices of corned beef and vegetables.Refrigerate leftover corned beef. It makes a delicious sandwich when served on rye bread, spread with mustard, horseradish and topped with swiss cheese. For a reuben add a dab of sauerkraut.

My Florida trip is coming to an end and it’s been every-thing I imagined, really more than that. I kept close to the house Julie and I rented in the Keys. But that didn’t re-ally bother me because every day the party pretty much came to me. My mom Jessie took over the kitchen, and those of you who know my mom under-stand what a treat that was. She prepared all my favorite dishes like homemade noo-dles and apple pie and loved being my personal chef. My sisters Paula and Kami spent time with us and lots of friends visited. We spent time hanging out at my fa-vorite spot Ocean View and watching football games. Iwasn’tabletogofishingwith Cooner, Sherry, Bob, Doug, Terry and Kelly, but it gave me such satisfaction to see what they caught each day – and then help them eat it. Five years ago I would have spent my days riding on
my Harley Street Glide and fishing every chance I got,trying to catch that elusive sailfish.ThistripIjusttriedto catch simple moments of joy. Being a Stein Hospicepatient has taught me that. My disease, Amyotrophic Lateral Sclerosis, has pro-gressed since I left Ohio. I am still able to walk and talk but I am physically weaker. A couple of times I hopped on an electric cart that used to belong to Julie’s dad and tooled around the bicycle paths. That felt good. Since I’ve been here, Stein Hospice has kept good tabs
on me. As always, my doc-tor has done everything he could to help me deal with my physical needs and ease my anxiety. Several times he called in prescriptions at the local pharmacy. Stein nurses have checked on me too. I’ve also had the services of a hospice in the Keys, which was arranged by Stein social workers before I left home. The Florida hospice delivered all the medical supplies I needed right to the house. And Nurse Marty, a fellow Buckeye, shared her “secret” recipe for Skyline Chili when she heard I was
from Ohio. I’ve only been able to spend short periods of time outside, mainly in the morn-ing and evening when the humidity is low. But that’s OK. The view from my back porch is amazing. Being here has been so relaxing. I will miss this. But all vacations come to an end and it will be good to get home. I have a birthday to look forward to this month, my 52nd. Right now I don’t have any plans. This trip has been more of a birthday celebration than I could have ever asked for. Thank you Stein Hospice. Will Roeder
