Yanshui Yi Noodles

“Yi noodle (also known as yi-mein)” is a kind of wheat food in Tainan. It is particularly referred to the noodles that are made from wheat flour adding more egg liquid instead of water while making the dough. Therefore, comparing with other kinds, yi noodles usually have their favorable aroma. They are also known for the bright yellow color and chewy taste.

Yi noodle is also very well-known as Yanshui yi noodle because the work to make the noodle has been passed down in Yanshui District, Tainan for hundreds of years. Now yanshui yi noodle has formally become one of Tainan’s specialties and is easily to be found on streets.

How can you resist such a bowl of gold-color noodle with appetizing odors and delicious pork slices, minced pork and bean sprouts on top of it?!

An investment in knowledge always pays the best interest.
