Method

Mix all ingredients and blend.Pour in siphon gun with two gas charges. Chill in the fridge.

MethodPlace diced fruit in the bottom of the glass. Whisk Vegetable Setting Powder into Pimms and lemonade, bring to the boil.Once boiled pour jelly mixture into glasses, on top of the fruit, and leave to set.

For the Strawberry MousseBlend together milk, Sosa Strawberry Compound, Pro-mousse and Instangel for two minutes and then add meltedwhite chocolate. Fold through the whipped cream and place in a piping bag.

For the Lemonade FoamBlend together ingredients,put mixture into espuma gun and charge with 2 gas chargers.

For the Mint CaviersWhisk together all ingredients andbring mixture up to the boil, using a syringe drop the mixture into oil. Drain, rinse, serve and decorate with Strawberry Wet Proof Crispy.

Method

Mix gin, maraschino liqueur, Moving Liquid Colour and Violet Compound in a cocktail shaker with three ice cubesand shake.

Dressing

RECIPEGin and Tonic Sphere

Ingredients

For the Gin & Tonic Base250g Gin 800g TonicMix all ingredients and blend.

For the Sphere250g Gin and Tonic base3.5g Sosa Gelespessa Product Code: SO.GELES0.55g Sosa Gluconolactat Product Code: SO.GLUCONOL0.5 Cubed fresh cucumber1ltr Water5g Sosa Alginate Product Code: SO.SODALG0.75

Decoration IngredientsSosa Freeze Dried Lemon Cress Product Code: SO.FDLEMCRE0.005

MethodBlend the gin and tonic base with the Gluconolactat and Gelespessa. Pour the mixture into half sphere moulds and place one cube of fresh cucumber inside and freeze. In a bowl combine water and Alginate and blend for 5 minutes. Once spheres are frozen place in the alginate bath for2 minutes, remove and place in a bowl of clean water to wash off the alginate solution. Pour the rest of the Gin and Tonic base into a siphon gun, also taking care to place the spheres in the siphon. Charge with 2 carbonic gas chargers and leave overnight in the fridge.

DressingRemove the gas from the siphon by gentle holding down the nozzle until all the gas has come out before opening. Carefully strain the spheres out of the remaining liquid and serve on a spoon with Freeze Dried Lemon Cress.
