Lavash Pizza with a Salad of Greens, Gorgon-zola and Toasted Almonds
Makes 4 (8x12-inch) lavash pizzasActive time: 20 minutesStart to finish time: 30 minutes
1/2 cup whole blanched almonds (or whole natural)1 1/2 tablespoons white wine vinegar3 tablespoons extra virgin olive oil

4 pieces lavash bread, cut into 8 x 12-inch rectangles6 ounces grated mozzarella cheese8 cups baby salad greens4 ounces Gorgonzola or other blue-veined cheese, crumbled
Preheat an oven to 350ºF. Place almonds on a baking sheet and bake until light golden (if usingblanched), 8 to 10 minutes. Chop almonds coarse-ly (this can be done several hours in advance).Increase oven temperature to 400°F.

1 package Uncle Ben’s Ready Whole Grain Medley Santa Fe 1 package precooked chicken breast(s)
sliced 1 cup Monterey Jack cheese shredded 4 each whole wheat tortillas burrito size
1. Heat rice in microwave according to packagedirections.2. Making one quesadilla at a time, heat tortilla inlarge skillet. Sprinkle 1/4 of the cheese, 4 chicken strips and 1/4 of rice over tortilla. 3. Fold tortilla in half and continue to heat on both sides until cheese has melted.

Five to ten minutes before serving, place one sheet of the lavash on a baking sheet. Bake until it just begins to take on a light golden color, 2 to 3 minutes. Remove from oven and sprinkle grated mozzarella onto the top, distributing evenly. Place lavash in oven again and bake until cheeseis melted and lavash is golden and crisp, 2 to 3 minutes.
In the meantime, toss salad greens andalmonds with the vinaigrette. When lavash isgolden and crisp, remove from oven and top withone-quarter of the salad. Sprinkle with one-quarterof the Gorgonzola onto the top. Cut into squares or rough shapes and serve immediately.

1 1/3 cups (2.8 ounces) French’s Cheddar or Original French Fried Onions 1 10 3/4-ounce can condensed cream of celery soup 1 1/4 cups milk 3 cups cooked elbow pasta (1 1/2 cups u cooked) 2 cups shredded cheddar or cubed American cheese 1 cup diced cooked ham 1/2 cup frozen peas
Heat oven to 350°F. Crush French Fried Onionsin plastic bag using hands or rolling pin.
Mix soup and milk in 2-quart baking dish. Stirin pasta, cheese, ham and peas. Top with crushedonions.
Bake 30 minutes or until heated through.
Chipotle-Honey Mustard Chicken

4 teaspoons olive oil
Halve each pita pocket.
Stuff chicken into pita pocket halves, and then add mozzarella slices, tomato slices and basil leaves.
Drizzle in balsamic vinegar and olive oil (1/2teaspoon each per pita pocket half).

White Chocolate Chip Bread Pudding with Caramel Sauce
Makes 8-10 servings.
1 (16 ounce) King’s Hawaiian Original Bread; cut into one-inch cubes2 cups heavy cream1 1/4 cups white chocolate chips1 1/2 cups sugar2 cups milk2 eggs, beaten3 egg yolks, beaten2 teaspoon vanilla extract2 cups toasted pecans, chopped
1. Cut bread into cubes the night before and leave out, allowing them to become slightly stale.2. In a medium saucepan, heat cream over me-dium heat. Meanwhile, place white chocolate chipsin large mixing bowl. When cream comes to a sim-mer, remove pan from heat and slowly pour over chips, whisking until chips melt. Whisk sugar into mixture; add milk, eggs, egg yolks and vanilla. 3. Add bread to bowl, gently stirring to coat cubes.Set mixture aside to allow bread to soak, tossingperiodically. (About 30-40 minutes or so.)4. Toss pecans into soaked bread mixture, thenpour into a baking dish. (Individual dishes can be used for single servings).5. Place in 350°F oven for about 45 minutes. Testbread pudding to make sure the top is goldenbrown and the inside is cooked (not too drythough).
Deep Dish Apple Pie
8 Servings
6 cups sliced, peeled and cored baking apples (about 6 large apples) 1 tablespoon lemon juice 3/4 cup granulated sugar 2 tablespoons all-purpose flour 1 teaspoon ground cinnamon 1 package (15 ounces) refrigerated pie crust 1 egg white, lightly beaten
Preheat oven to 400 °F. In large bowl, combineapple slices and lemon juice. In small bowl, com-bine sugar, flour and cinnamon. Sprinkle sugarmixture over apple slices; mix well to coat.
Line deep dish pie pan with pie crust; fill with apple mixture. Using apple cutter, cut out vents inremaining pie crust. Place crust over filing, crimp-ing and fluting edges. Arrange cut out pastry ontop of pie; brush crust with egg white.
Bake 45-50 minutes or until apples are bub-bly and crust is deep golden brown.* Remove piefrom oven. Cool pie in pan on cooling rack at least 1 hour before serving.
*To keep edges from overbrowning, usethin strips of aluminum foil to cover edge of pie. Remove foil during last 20 minutes of baking.
6. Remove from oven and serve with caramel sauce.Caramel Sauce
For the Caramel Sauce, use a homemade recipe, like the one found at KingsHawaiian.com, or aready-made topping from your local grocer.
