Hopefully by the time you read this, things willhave cooled off a bit. As I write the fall Publisher’snote, it is currently 97 degrees outside….at 8 p.m.at night in July! As much as we love the summerand all it offers, I always welcome the fall monthsand the reprieve from the heat.Fall is full of many things that are near and dear

to me: kids going back to school (two teenagerswill do that to you), less traffic, football season, andmost of all, the best weather of the year. Hit thelinks or courts in the morning, enjoy the beach in

the afternoon, and relax in the evening with a great meal.As an added bonus, fall also brings a hefty dose of outstanding festivals to the

area. These festivals are not just your mom and pop picnics, but actually regional andworld-class events. Committees and organizations spend months and monthsplanning and coordinating these festivals and they do a tremendous job.

September leads off with The Italian Heritage Festival, held at ShelterCommunity Park on September 24th from 11 a.m. until 4 p.m. Authentic Italiancuisine will be available as well as Italian wines, beers, coffees and desserts. If you’relooking for some activity to work off the calories, enter the stickball hitting contestor take up a game of bocce.

The 27th annual Chili Cook-Off kicks off October with all the chili you caneat. Professionals and amateur’s compete for Island’s Best Chili boasting rights, whilelive music and kids entertainment round out the day. The Chili Cook-Off will beheld at Honey Horn Plantation on October 8th from noon until 4 p.m. If Cajuncooking is your thing, be sure to check out the 8th annual Coastal Cajun Festival onOctober 15th at The Shelter Cove Community Park. Enjoy authentic Cajun food,live blues music, and great activities for the kids.

Last, but not least, November is the busiest month of all. Join the Island Rec.Center for the Hilton Head Oyster Festival on November 12th and 13th at theShelter Cove Community Park. Choose from a variety of oysters, shrimp, anassortment of beer and wine as well as live music and a silent auction. This is a greatevent for all ages and one not to be missed. An oldie, but goodie, The 22nd annualTaste of the Season will be held November 11th at the Hilton Head Marriott Resortand Spa. More than 35 local restaurants will be featuring their culinary talents andcompeting for the title of best cuisine.

So start marking your calendar and booking your company (or not!) for all thefabulous fall festivals. One of the beautiful things about Hilton Head in the fall isthat you can be as busy and involved as you want or you can just lie in a hammockwith a good book before visiting one of our Island restaurants. Enjoy the weather,enjoy the tastes of the fall season, and be sure to support some of our festivals that somany Islanders have been planning for months.

There’s a common misperceptionthat the sophisticated world of wine isone solely for the snobby elite. With allthe cork sniffing, name dropping andregional elitism inherent in the world ofvino, it’s easy to see why.

In short, wine can be intimidating.The rules behind which bottle to selectcan be rigid, and are strictly enforcedthrough a series of withering glances fromthose “in the know.” For a newcomer tothis wonderful world, the fear pervadesthat they may mispronounce anunfamiliar French term or forget to let thewine breathe for the proper amount oftime and thus be exposed as an amateur.

At Corks Wine Co., however, the oldtrappings of a wine bar as a place for theelite to compare different vintages orvarietals are gone. Instead, owners JoshLuman and Gabby Ferrell have created aplace where newcomers and seasonedoenologists alike can toast their healthwith a stunning array of reds, whites andeverything in between.

“We wanted to create a place that

could be a neighborhood wine bar,” saidLuman, with emphasis on the wordneighborhood. “We wanted people to beable to come in flip flops and becomfortable with wine. Too many peopleovercomplicate wine and make it toointimidating.”

And while flip flops may beacceptable inside Corks, more often thannot you’ll see patrons spruced up for asophisticated night on the town. It’s adelicate balance that Corks has treadbeautifully.

And while the two locations, theoriginal in Bluffton’s Promenade and theother in Hilton Head Island’s IslandCrossing Center, almost seem like they’vealways been there, so comfortable aretheir clientele, it was a long road to getthere. Roughly 718 miles, to be exact.

Josh and Gabby met in High Schoolin Marietta, Ohio. After Gabby finishedYoungstown State and Josh finished UDayton, “We just packed the cars up andhad nothing. No place to stay, no jobs;nothing,” said Luman. The pair made

their way to the island and quickly foundwork inside the local food and beverageindustry.

“That was the quickest way to get ajob, in F&B,” said Luman. “We met a lotof people, and got to the point where wefelt pretty comfortable.”

While working, the pair beganfermenting a plan for a new, laid-backwine bar that would take the scare factorout of uncorking a bottle. Opportunitystruck in Bluffton, and four years ago thecouple once again went feet-first intoanother leap of faith.

“It was kind of scary at first,” saidLuman. “We were the only business inthe Promenade at that point.”

But there’s no stopping a greatconcept with mere opening jitters. Corks’inviting approach to wine struck a chordwith the notoriously laid-back residents ofBluffton, and a new hotspot was born.Finally, there was a place where localscould sample the finest vintages ofCalifornia’s wine country, plus a wholeworld of imports, without feeling the

need to refresh their French classes first.The island location was the next naturalstep, opening two and a half years later.

The wine selection includes morethan 100 wines, including 25 wines bythe glass and a rotating selection of flightsfor sampling different wines together.Corks always keeps a handful of fun andhard to find special bottles tucked awayfor customers looking for somethingreally off the beaten path. They also rundaily chalkboard wine specials by the glassand circulate an ever-evolving featuresbook that keeps everyone on their toes.And for those not quite ready to ventureinto the world of wines, Corks offers aterrific selection of American Craft beersand know how to pour a great cocktail.

It doesn’t hurt that, along with awine list as long as your arm, Corks alsooffers some of the most amazingly well-crafted food in the area, with 15 menuitems rotating with the seasons.

The sole focus of the food menu isfun, fresh and something for everyone.The Corks crew has spent the last fouryears trying to source out the absolutebest ingredients around the country, andin some cases across the globe. Usinglocal and organic is a very important partof the menu.

Mouth-watering “big small plates”complement the beverage selection with

cheese plates, paninis,pizzas and even tunasashimi. And as with agood wine, the food owesas much to where it comesfrom as much as how it’spresented.

The artisan cheeseplate features assorted localartisan cheeses from FlatCreek Lodge Farms in Swainsboro,Georgia. The summer salad bursts withberries from Fossil Creek Lodge Farms.And a few of the items on the menucome from right across the street.

“We use local, organic ingredients asmuch as possible. We do a lot ofshopping at the Bluffton Farmer’sMarket,” said Luman.

The result is a menu of authenticflavors combined to perfection. And aswith the wine, Corks takes a relaxedapproach to sophistication.

“There’s nothing frou-frou about it;we don’t call ourselves tapas,” saidLuman. “There’s no teeny plates. You canmake a dinner out of it.”

And for four years, locals have indeedbeen making a dinner out of it. Corks hasbecome the go-to destination for a bite toeat with a side of great atmosphere.

“On Hilton Head, we’re serving 85percent locals and regulars,” said Luman.

“In Bluffton it’s about 95 percent.” “That gets to be pretty handy around

February,” he added with a laugh.And with this dream taking hold in

two locations in its first four years, Corksis always looking to give anotherneighborhood its own place to call home.Luman cites Savannah, Charleston andCharlotte as front runners for a thirdlocation.

“It’s a neighborhood wine bar,” he said. “And it could fit in anyneighborhood.”

For now, local patrons can be gladthat no matter how far this vineyardgrows, its roots are right here.

To long-time residents of HiltonHead, there has been no region of theisland more changed in recent years thanColigny Beach. What once was an age-worn stretch of shops fronted by ahandful of parking spaces has evolvedinto a bustling downtown. Where oncecracked and sun-baked concretesidewalks meandered toward the beach,now a lush wooden walkway traverseswell-manicured landscaping. And at itsdestination is a beachfront parktransformed. Children dance throughplayful fountains. Visitors and locals alikerest on wide wooden rockers and enjoythe breezes off the sea.

And at the very heart of Coligny inthe Beach Market Center lies a restaurantthat embodies the spirit of the area’swhole rebirth: Flatbread Grill.

“The town is putting a lot of moneyin down here. With them spending

money the way they are, they’re lookingto the private sector to put money into itand upgrade the facilities in Coligny,”said owner Bruce Kimball.

And upgrade Kimball did,transforming the former location ofHinchey’s Chicago Bar and Grill into adazzling “upscale casual” restaurant thatnot only gives beachgoers a great place tograb some food, but has introduced anentirely new dining concept to the island.Flatbread Grill draws its name from theWoodstone oven that is utilized acrossthe menu as a tasty accent to nearly everydish.

“We take the flatbread name and usepizza dough in all of our salads… wehave wraps made of pizza dough and ofcourse calzones,” said Kimball. You’lleven find flatbread points alongside thegourmet pasta dishes and as thecenterpiece to the dessert flatbread pizza

with apples and cinnamon.The flatbread points are all cooked

in the Woodstone high-temperatureoven, an expensive addition to therestaurant, but one Kimball saw asabsolutely necessary.

“It make a huge difference in theproduct,” he said. “(The oven is) a majorfinancial commitment, but it’s worth it.”Diners will most likely agree after theirfirst bite.

It’s not just the menu that draws inthe crowd, however (although, truth betold, it helps). Inside and out, FlatbreadGrill is like nothing else on the island.Inside, magnificent brick arches split therestaurant into a dining area and a bararea perfect for relaxing after a day at thebeach, while an open kitchen providesdinner and a show.

Kimball. “Especially the kids.”The wide bar inside stretches from

just next to the kitchen all the way out tothe patio, where thirsty patrons freshfrom Coligny Beach’s waves belly up forsome cool libations. According toKimball, the outdoor bar can get six toeight people deep during the summer.

The massive improvements to thespace and the unique nature of the menushow that Kimball has a knack forcreating an eatery with real character.Surprisingly, however, Flatbread Grillrepresents the Lowcountry resident’s firstforay into the restaurant business.

The former owner of a textilecompany in Orangeburg, Kimball madehis way to Hilton Head Island and soldreal estate for 15 years. For the past tenyears, he’s co-owned the Beach MarketCenter. He saw an opportunity whenHinchey’s was ready to move out.

Kimball had a concept in mind for high-quality pizza served in anatmosphere that could accommodateboth the “flip flops and sunscreen” crowdas well as those looking for a night outon the town. But before he could getstarted, he knew he’d need some help.

Kimball presented his concept of anupscale casual beachside restaurant to agroup of consultants who worked hand-in-hand with him to help create hisvision.

“They helped develop the concept,put together the architectural presenta-tion, helped with materials and recipes,and helped get equipment,” said

Kimball. “They helped me put theconcept together, so it was our concept.For example, they didn’t wanthamburgers, but I pushed.”

Anyone who has tasted the freshAngus burgers can testify that Kimballwas right to stick to his guns.

With the menu in place, Kimball setthe stage. Having built spec houses aspart of his real estate career, Kimballknew a thing or two about architectureand presentation, and it shows in everyaspect of the restaurant’s construction.The unique floor plan was his idea, withthe concept being to create a differentspace for each customer’s needs. Theoutside bar and inside bar blendseamlessly together, and the position ofthe open kitchen provides an easy view ofpizza dough being rolled, tossed and firedto nearly the whole restaurant. A sidestage accommodates live music duringthe evenings. While it was all being built,Kimball was there overseeing the day-to-day construction.

While the food is crucial and thelayout is key, nothing makes or breaks arestaurant like the staff. And Kimball hasbrought his golden touch to this area aswell, bringing in a few ringers to helpFlatbread rise.

Chris Spivey, the general manager,hails from Atlanta. Just 37 years old,Spivey has already amassed an impressive20 years in the restaurant business,including 10 years as owner of his ownplace in Atlanta.

And in the back of the house is

Dennis Hunter, who island residents willremember from the former Del Vecchio’smid-island. He brings years of experienceto the table, and long-time residents cantestify he’s pretty handy with a pizza.With all the necessary pieces in place,Kimball has created somethingextraordinary at Flatbread Grill.

It’s a cooling respite from thesummer heat of the beach, but it’s a place where the food is so good you’rejust as likely to find locals as visitorssitting down for a taste of the signatureflatbread. It’s a place where you can takethe whole family out for a meal withoutbreaking the bank, or can take thatspecial someone out for a romanticdinner. It’s also a place where you can get a slice of pizza right up until 2 a.m.,which night owls of both the local andvisiting species can enjoy. It’s a conceptthat is as simple as it is brilliant.

“People are enjoying themselves andcan have a beer and a pizza at 11 o’ clockat night,” Kimball said. “And it’sworking. And that word gets around.”

Consider the word out. LikeColigny itself, Flatbread is a beacon ofboth the island’s reputation forhospitality and its commitment toproviding something both locals andvisitors can enjoy.

Luke Visscher is the friendly guywho’s usually there at Mangiamo,making things run smoothly and makingsure the guests are having a great diningexperience.

Mangiamo is a real favorite with thelocals. The pizza and sub shop on Mainstreet on the north end of Hilton HeadIsland has an affinity for Ohio State. Theplace is packed with artifacts. Mangiamois a case study in Buckeye football legacy– a functional football museum busyingitself serving the best pizza, pasta, andsubs. Luke has been there for seven years,managing the restaurant and keeping theguests happy. He took time out of hisbusy schedule to talk with Taste aboutwhat it takes to be successful in thehospitality business.

Taste: What do you like best aboutyour job?Luke: I love serving people andproviding them with a great diningexperience. Customers expect a lot, and

when you are able to deliver, it’s a greatfeeling. I love that I’m not behind a desk.It’s a relaxed lifestyle that I absolutelylove and hope to continue working in forquite some time. Not working for acorporate business is also a big part ofloving my job!

Taste: What does it take to besuccessful at your job?Luke: It takes a great attitude all thetime! It’s our job to provide the customerwith friendly, fast and attentive service. Ifyour attitude is off, your customers cantell and their experience and your tip willreflect that. You’re not always going to bein a great mood, but the servers whodon’t show that in front of theircustomers and do put on a smile are theones who will succeed in this business.

Taste: What do you like to do whenyou’re not working?Luke: I love to golf. I enjoy boating. Ilove to go to the beach. And, believe it ornot, I enjoy yard work and having a wellmanicured yard. Working on my houseis another activity I enjoy…I stay busy!

Taste: If you could do any job in theworld, what would it be?Luke: I think if you were to ask me thisquestion a few years ago, my answerwould have been completely different. Itruly have grown to love my job andbeing in the restaurant business. Owninga restaurant in the future would be theonly thing better, and even then I wouldstill want to be actively involved and

serve the customers. I enjoy it! I don’tthink I would like working for acorporate restaurant. The only thing Iwould change in a perfect world is Iwould be working in this business on anIsland in the Caribbean. I love it downthere, but Hilton Head is a wonderfulplace!

Taste: Mangiamo is Hilton Head’shome away from home for The OhioState Buckeyes. How did it get thatreputation?Luke: It’s pretty amazing how die hardOhio State fans are. They won’t miss agame. Since more people come to HiltonHead from Ohio than any other state,having an Ohio State bar is a genius idea.Owner Brian Bambeck, an alumnus ofThe Ohio State University, openedMangiamo in 2002 with one Ohio Stateflag and one 24-inch television. Theword spread to local fans and I think tomost Ohio visitors. I hear them say thatit’s their “must stop” place when comingto HHI. They feel like they are at homeeven though they are 700 miles away.

Mangiamo has moved to a newlocation, just across the street from theold one. They have 19 HD flat screensand 2 huge projector screens. Luke is oneof the many reasons people keep comingback to Mangiamo. Stop by and sayhello.

In 1992, a 7.3 magnitude earthquakeshook Southern California early one Junemorning. The tremblor was enough to rattleArdis Matthews and her husband, Max, intotravelling across the country “to fabulousplaces, none of which were exactly right.”But, as it turns out so many times in life, theroad less traveled, led to the most adventure.

When the Matthews were in Charleston“we were sitting in a bar being friendly,”laughs Ardis. “We were talking to a nicecouple from Hilton Head about our trip toSavannah. They said Hilton Head was righton the way, just make a left and go over abridge.” The Matthews fell in love with theIsland immediately. “It reminded us of ourold home in California.”

After trading one paradise for another,and replacing surprise earthquakes withpreemptive hurricane warnings, Ardis had tofind out what to do with herself.

Ardis is perpetually jovial andenthusiastic. She is enthusiastic about

anything. Anything. Every new experience is“exciting”, “cool” or “fabulous”. Every pastexperience, even if it was less than grand, hasone little slice of humor, wisdom orcombination of the two. She is sweet, sassyand indefatigable. She doesn’t fear change,she embraces it.

“This is all learning by doing,” she saysof her extensive menu. “Except that I didhave a fabulous […there’s that word again,‘fabulous’…] opportunity to take cookingclasses with some of the greatest chefs of the

1980’s in California.” Wolfgang Puck, BertGreene and Julia Childs among them. “Itwas mostly fun. And the main thing Ilearned from these classes was, ‘I can dothis.’”

To Ardis, the best cooking she comes upwith is “looking around that kitchen andreinventing the same ingredients over andover and over again. I’m not classicallytrained, I just makes what tastes good. Andfortunately it seems to taste good to otherpeople too.” Besides food that tastes good,the good food changes all the time. “Thereare certain items I would never take off themenu. I like the classics, but then I liketotally wacky new flavors.” Ardis reflects andthen starts laughing again, “And then I likethe stuff in between! I don’t know! I likefood! Anything but beets!” You can’t help but smile in her presence.

The only things Italian that will bemissing from the Italian Heritage Festivalare perhaps a backdrop of the LeaningTower of Pisa and a gondola serenadingits way by up a Venetian canal. Thenagain, if event organizer John Pagluica hashis way, there will be an “Italian images”section at the festival so you won’t evenmiss the picturesque ambiance. “Music,food, and people…that’s our theme,”explained John. That would be Italianmusic, Italian food, and, well, Italianpeople (and everyone else who wants ataste of Italy… which is everyone, right?).

The Italian heritage is one rich inhistory and culture, unique unto itself. It’seasy to close your eyes and conjure upthoughts of what “Italian” means to you.Red Ferraris, a tubular shaped tower thatis alist, gondolas lazily gliding by, I LoveLucy stomping grapes, and of course

Italian food – all those tasty suffixes: otti’s,ini’s, oni’s, oli’s. Who can’t envision theproverbial Italian mama, yours or the onethat lived down the street, with the ever-embracing arms, apron around the waist,food on the stove 24 hours a day. Italianfriends’ homes were always a gatheringplace, certainly a welcoming beacon aspowerful as a lighthouse on a stormynight. The only rule was to never arrivewith a full belly, for you would surely gohome with one. This is a good rule toremember when packing up for theItalian festival too: Skip breakfast for aday so you can properly feast for fivehours.

So mark your calendar now for allthe sights, sounds, and sensory explosionsof Italy that will converge on HiltonHead’s own Little Italy on September24th at Shelter Cove Park from 11 a.m.

John explained,“We have limited the number ofrestaurants and are monitoring what theyserve so we have a little of everything andno duplication.” Each chef will preparehis own portion size and pricing unlikemany of the local festivals where youpurchase tickets to exchange for foodsamples. Dishes, breads, cheeses, andpastas will be first-class with freshingredients and reminiscent of mama’sSunday best. Some of last year’s offeringsinclude: Crispy Fried Seafood Ravioliwith Lobster Cream Sauce, Five PepperPenne, Swordfish Spiedini, Mahi Tuscan,Rigatoni Vodka Meatball, ChickenParmigiano, Tomato and Basil Bruschetta,Sausage and Pepper Hoagie, and GrilledOysters with Parmesan Herb Butter.Because the Italian favorite of pizza piewill be absent from the menus as it doesnot lend itself well to a festival typeshowcase, there will be a pizza wheel onhand where participants can win freeslices and pies at local pizzerias.

Italy is not only famous for its pastas,cheeses, and breads, but their beveragesand desserts are also unique and delicious.

Enjoy Italian coffees, espressos,cappuccinos, sodas, and delve into Italianbeers like Moretti and Dolmiti, andItalian wines and Chiantis. (Under greatduress, John admits that the ONLY non-Italian anything will be Coke and Bud).Your sweet tooth will have a hay-day withsamples of rich and creamy pastries and

Zeppole (fried ricotta doughnuts), éclairs,Napolians, Italian Ice and special flavorsof Gelato, tiramisu (cake), biscotti(cookies) and cannolis (to die-for tubularstuffed pastries).

Entertainment will be continuousthroughout the afternoon and includecompetitions, cooking demonstrations,Italian music and dance (can you do thetarantella?), a showcase of Italy’s fast andsleek cars, sporting events, and evenexhibits of famous Italian sights. Certainlyeveryone who ever watched I Love Lucysplit their sides open laughing at theepisode when she is in Italy stomping thegrapes to make wine. The Italian Festivalwill have their own version of this foranyone game to get their feet wet! Thecooking demonstrations (and samples forthe audience) will blow your Italiansenses: Learn how to make mozzarellaand ricotta cheeses as well as tiramisu andpasta. Do you know what a pizelle is or alimoncello? The easy answer is atraditional Italian waffle cookie and alemon liqueur. Sounds good, right? Butgo a step further than knowing what theyare and check them out being made andthen give them a try.

Aside from soccer, there arenumerous popular sports in Italy, one inparticular that every kid grew up playingout his front door. Stickball, enjoyed byboth children and adults in Italy, issimilar to baseball in that there all balls,bats, and bases, but the ball is soft (so as

not to break windows), the batis often the handle of abroom, and the bases aremanhole covers or old tires. Atthe Italian Festival, you can tryyour swing at the stickballhitting contest, or enjoy agame of bocce on one of theseveral courts that will be setup.Your children will not be

with a whole section of activities just forthem. The younger set can try their handat stickball hitting and their own smallerversion of grape stomping. And talkabout thinking outside the box, John hasorganized a Lego ™ contest to see whocan construct the best Leaning Tower ofPisa. There will be face painting, Yostiand her puppets, bouncy houses, BeanBag Bocce, Bean Bag Stromboli, BeanBag Tower of Pizza, coloring books andcrayons, and candy and bubble prizes.

Five dollars will get you in the gate atthe Shelter Cove Community Park onSeptember 24th and children under 12are free. Various events require a donationin order to participate, and food anddrinks are, of course, additional. Formonetary planning purposes, a silentauction will also be set up offering itemssuch as massages, computer services,tennis lessons, golf rounds, gymmemberships, restaurant and retail giftcertificates. John recommends that youbring your own beach chair and find yourown tree. This is one festival you don’twant to miss!

Oh… and one last thing. Knowingthat after this festival you will be ready tobook your next vacation in Italy, John hasarranged for a “travel to Italy” table,complete with brochures about tours andspecial places to visit. Here in the Lowcountry we markour seasons with flavors. Althoughautumn comes a bit later in the southand the harvest season lasts a little bitlonger, we literally bottle the scents andtastes of our seasons. Lowcountrywinemaking captures our steamysummers in the honey notes of southernMuscadine wine, the sweetvoluptuousness of our farm fresh producein peach or blackberry wine, and evenour eccentricities in elderberry ordandelion wine. As the summer heatgives way to the fall, so do the sweetpeaches and blueberries in favor of thecrisp and savory tastes of the autumnharvest. Vineyards and wineries are abuzz with the hectic pace of the crushingand pressing of freshly harvested grapes.

As the long days of summer end, thegrape wine making season commences.The grapes start coming off the vines inlate August and winemakers have days,sometimes even only a few hours, tocrush the grapes. Great wines start withfresh fruit and a master winemaker has todecide when the fruit has soaked up justthe right cocktail of sunshine, rain, andlocal terrior to make a great wine.

Harvest the fruit too early and thewine comes out too acidic – harvest ittoo late and the wine gets too flabby. Redwines are crushed and allowed to age ontheir skins to give them their deep huesand robust flavors; white wines arecrushed and immediately removed fromtheir skins then delicately pressed andpumped into tanks or oak barrels forfermentation. Winemaking is an art, ascience, a passion, and is indeed a uniquesight to behold.

Taste: How did you embark on acareer of music?Whitley: I got my first car when I was16. It was a 1963 Chevy Bel Air…it waslike riding on a cloud. It had no radioand I had to drive from Pritchardville toHilton Head High every day. So I started

singing. I would sing and sing and prettysoon I realized I could do things with myvoice other people couldn’t.

Taste: Is your family musical?Whitley: Oh yeah – We have music andrhythm. My dad was a disco dancer (myaunt said he could have kicked JohnTravolta’s butt), and my older brother,Zach, is somewhat of a musical legend.Then there are cousins, cousins twiceremoved, uncles…

Taste: What was your fist instrument?Whitley: Homemade drums. I used toget irritated because my parents keptbuying my brother new guitars. So Iwould sit down with 2 of my dad’sscrewdrivers and accompany Zach on atub and a 5 gallon bucket. That’s how Istarted playing the drums.

Taste: What defines you now?Whitley: Soul and singing. Funky pop.I’m trying to get away from the drums. Itook up guitar so I could better servebands as front man. I will get to knowmy audience and adapt to what theywant to hear. Upbeat? Motown. Slow?Ballads. My favorite artists are RayCharles, James Brown, and StevieWonder.

Taste: What is your family like?Whitley:My mom is still local and Ihave a wonderful wife and 3 kids: 11, 9,and Mr. Perfect is 15 months old. WhenI’m not playing music, I coach my kids –basketball, baseball, and softball.

Taste: What does your future hold?Whitley: Hopefully playing at weddingsand clubs. That’s where the money is.Being a musician is work. It’s not ahobby. If you’re a true artist you treat itlike a job. It’s a good job, one that makesyou say ‘oh, yes!’, but still a job. I have afamily to provide for and that is my firstpriority. I don’t know where I would beright now if my first car had a stereo.

Whitley currently plays Mondaysand Tuesdays at the Jazz Corner andweekends in Savannah or localrestaurants like Wild Wings and Corks.

Paul Stewart, (a.k.a. “Stew”)executive chef and co-owner of PalmettoBay Sunrise Café, took time out of hisbusy day to sit with Taste and answer afew questions about his love for thebusiness and what inspires him. He andhis wife and business partner, Leslie, arethere most days of the week, cooking,

serving, and making sureeveryone is happy.

Taste: How did you getstarted in the business?Paul: I began working inthe restaurant businesswhen I moved to theisland 25 years ago. In theslower months, I movedto the back of the house,or kitchen, for a steadyincome. That’s where Ilearned to cook. I met mypartner, Leslie, also in therestaurant business, a few years aftermoving here. We married several yearslater and both continued working in theindustry until we found the rightopportunity to start a business together.

Taste:What is your background?Paul: A great deal of experience and lotsof practice! Despite the lack of muchformal culinary training, I worked underseveral exceptional chefs and attribute alot of my knowledge and success tothem. In addition, it’s just in my blood. Ilove to cook.

Taste:What brought you to HiltonHead?Paul: I came to Hilton Head with afriend in 1986 from Louisville,Kentucky, and like so many other locals,just stayed.

Taste: How long have you been atSunrise Café?Paul: Leslie and I were offered theopportunity almost 10 years ago to openthe Sunrise Café with a business partner.We took a chance, left our jobs, and putour experience and love of the businessto the test.

Taste:What are your favorite dishes toprepare?Paul: I try to keep the menu fresh withadditions and changes. I put things onand take things off, but some favoritesstay in the heart of our customers, andI’ll make them on request if I happen tohave the ingredients. I like to prepare ourhomemade soups. I also like to becreative with different styles of eggsBenedict. I have used all kinds ofingredients on a Benedict, including softshelled crabs and braised short ribs.

Taste:What do you like to cook athome?Paul: In the Fall, I love roasting andbraising meats. One of my favorite dishesto prepare is Osso Bucco, veal shanksbraised with vegetables, white wine andbroth. In the warmer months, I love togrill on my charcoal pot which is a littleconcrete pot that changes the flavor ofanything grilled from delicious to

spectacular. I use it for chicken, steaks,quail, and even vegetables.

Taste:What do you like to do whenyou’re not working?Paul: I enjoy walking up and down thebeach, looking for shark’s teeth. I loveworking in the yard with flowers - tigerlilies, irises, camellias, and roses – and inour vegetable and herb garden. It’s ofcourse a constant battle with the squirrelsand the deer. I also love watchingwildlife, and there’s plenty going on here!And….I love traveling and trying newdishes in different places.

Taste:What is the best thing about beinga chef?Paul: I enjoy creating new dishes andvisiting with the customers. I really enjoyseeing the customers happy. In the slowerseason, when I have time to think, I canbe more creative and add new menuitems. The restaurant is ours; however, it

would not run without our phenomenalstaff. Our success is largely based uponthe “family” we have built in ouremployees. We are very fortunate to haveeach and every one of them, and wouldbe lost without them.

Taste:What is your favorite thing aboutliving on Hilton Head Island?Paul: Being married and happy inparadise is very rewarding. When youleave the island and come back across thebridge, you are never sad to be home.The opportunity to own my ownbusiness in this beautiful place is what Ilove the most.

Ingredients:1 lb high quality dark chocolate (either chips or shaved)1 lb butter, cut into small squares4 oz espresso¼ lb brown sugar8 eggs

Preparation:In a large bowl crack the eggs and beat together. Set aside.

Over a double boiler, melt all other ingredients until smooth.Once the chocolate mixture is smooth, pour a small amount into the eggs stirring constantly with a whip. Then pour the rest ofthe mixture continually mixing.

Pour the batter into 4 small loaf pans. Place the loaf pans ina sheet pan with high edges. Create a water bath by filling thehotel pan with about 2 inches of water, or until the water comesup half way on the sides of the loaf pans.

Bake at 350° for 20 minutes or until set in the middle.Allow to cool in refrigeration for a minimum of 2 hours.

Slice thin and serve over crème anglaise.

In the amateur category,winners were 1st place - John Safay; 2nd place - ABC Hearing;and 3rd place - Burke’s Pharmacy.

There are two types of judging for the competition. First,the general public is allowed to vote for the best chili in bothprofessional and amateur categories. A group of honorable judgesdetermine the best chili in a separate judging.

Winners of the popular vote category were 1st place - TheSmokehouse; 2nd place - Frankie Bones; 3rd place - Roast Fishand Corn Bread. In the Popular Vote Amateur Category, winnerswere 1st place - Town of Hilton Head Island Fire & RescueDivision; 2nd place - Doughtery’s; and 3rd place - Elks Lodge.One Hot Mama’s won the Showmanship Award for having thebest looking booth.

Tickets will be available in advance at several Island locationsincluding The Coastal Discovery Museum, Burke’s Pharmacy andfrom any Kiwanis member. Tickets entitle the holders to as manysamples of chili as they want. Tickets may also be purchased onthe day of the event. Proceeds from the event benefit TheChildren’s Center, Strive to Excel, The Coastal DiscoveryMuseum, Operation R&R, Marine Corps Scholarship Fund, andseveral other youth programs.
