Vegan Jackfruit (Fish-Free) Fish FingersRecipe By ClearspringMakes 10 pieces

Ingredients• 1 Jar Clearspring Organic Young Jack-

fruit Chunks - Drained and rinsed• 2 Sheets Clearspring Japanese Sushi

Nori - Dried Sea Vegetable (Toasted)• 1 Jar Clearspring Bio Kitchen Organic /

Demeter Chickpeas - Drained and rinse• 1 Leek - finely sliced• 1 tsp Clearspring Organic Sunflower Oil• ¼ tsp Clearspring Traditional Unrefined Sea

Salt - Hand Harvested & Sundried• 50g Clearspring Organic Gluten Free Brown

Rice Breadcrumbs - Wholegrain

MethodToast the nori is a dry frying pan on a high heat until it starts to blacken and crumple. Put the nori into the chopper attachment of a hand blender or a food processor. Grind until it is small flakes, put into a large bowl. Add the jackfruit to the blender or food processor and mix until it is flakes but

not so much that it becomes mush, put this into the large bowl. Heat a little oil, fry the leeks on a low heat until soft. Add the leeks, chickpeas, salt, blend untill smooth, add to the large bowl and mix everything well. Roll out between 2 sheets of greaseproof paper, cut into 10 slices. Pour the breadcrumbs onto a plate, take one slice of the mixture, squeeze between your hands (this will hold them together more when cooking), roll in the breadcrumbs. Do this with all of the mixture. Pour a thin layer of oil into a frying pan, heat till very hot, fry the ‘fish’fingers on each side till browned and crispy. Drain on kitchen roll to get rid of any excess oil. Serve with avocado, tomato salad or an aioli dip.

Tofu Scramble, Sweet Potato & Avocado Breakfast BowlRecipe By Bonsan

Ingredients• 1 sweet potato, chopped into ½ inch

cubes• 1 tsp olive oil• ½ tsp chilli powder• 1 small red onion, diced• 1 red bell pepper, diced• 1 pack Bonsan Breakfast Scramble• 2 handfuls of spinach• 2 handfuls cherry tomatoes, halved• 1 avocado, sliced• Lime wedges to serve

Method1. Preheat the oven to 200c2. Toss the sweet potatoes in olive oil, chilli

powder and salt.

3. Arrange on a baking tray and bake for 30 minutes, until cooked through.

4. While the sweet potatoes cook, heat some oil in a non-stick pan, add the onion, peppers and tomatoes and cook for 5 minutes until soft. Add the tofu and spinach and cook for a few minutes more, until the tofu is heated through and the spinach wilted.

5. Divide the tofu scramble & sweet potato between 2 bowls, and serve with fresh slices of avocado, a handful of cherry tomatoes, and a lime wedge.

Creamy Cauliflower with Nutritional YeastNutritional yeast is a very nutrition vegan food product low in fat, high in protein, and it’s fortified with B12, an important nutrient for plant-based eaters. It adds an umami, nutty, cheesy flavor to dishes.

Ingredients• 500g of cauliflower, chopped into small

florets• 35/40g nutritional yeast• 150g celery, chopped • 320g carrots • 1 medium white onion, diced • 1 small spring onion or chive, chopped• 3 garlic cloves, minced• 1litre vegetable broth• 280g cooked rice (better if you choose wild,

brown rice), • 1 tsp each thyme• 1 lemon (juice)• 2 table spoon of olive oil• Salt and pepper to taste

Method1. Cook the rice as per pack-

age instructions and leave aside (you might want to add a bit of olive oil to avoid it becoming too sticky).

2. In a pot, add 2 table spoons of olive oil, the celery, carrot, onion, garlic and cook over medium heat for about 3-5 minutes until starting to soften.

3. Add a splash of water4. Add the cauliflower, cook for another couple

of minutes 5. Add the broth and simmer until the carrots

and cauliflower are fully tender, about 20-25 minutes

6. Add the nutritional yeast, the thyme, and ad-just with salt and pepper (about 1 tbs each)

7. If you like the soup a bit chunky, blend just half of it until smooth and creamy. If you prefer it very smooth, blend it all

8. Stir in the rice9. Serve with chopped spring onion or chives

and a squeeze of lemon juice.

Chickpea Flour Vegan FrittataThis recipe is perfect as a main dish or, if you make mini vegan frittatas, it’s great as finger food or as a snack!

Ingredients• 250gr chickpea flour (also called gram flour)• 20-35gr nutritional yeast, optional• 500ml water• 1 diced medium shallot• 1 large diced red bell pepper • 1 diced jalapeno• 30gr of chopped baby spinach• 1 teaspoon dried basil• 1 teaspoon baking powder• 1 chopped garlic clove or 1 teaspoon garlic

powder• 1 teaspoon of salt• Olive oil• Pepper to taste• Spring onions to garnish

Method1. In a large mixing bowl, combine the chickpea

flour, the nutritional yeast, baking powder, salt and the water. Mix well until it forms a smooth liquid paste.

2. In a pan with some olive oil and add the diced onion and the bell pepper and let it cook for 3 minutes.

3. Add the garlic, the jalapeno and the basil to the onion and bell pepper and let cool down

4. Add the content of the pan to the mixing bowl and mix properly

5. Add the baby spinach and mix to combine

6. Place your batter in an oven tin, greased with little olive oil

7. Place in the oven at 180 °C for 35-40 minutes (check with a knife by sticking it at the centre, if it comes out clean the frittata is ready)

8. Remove from the oven and serve with a sprinkle of spring onion on top

For mini frittatas – fill a muffin tin with the batter and cook for 30-35 minutes.

Chocolate Avocado Mousse1 avocado serves 2 people

This recipe is perfect as a main dish or, if you make mini vegan frittata is great as finger food or as a snack!

Ingredients• 1 frozen avocado • 3-4 tablespoons of dark vegan cocoa power• 6 tablespoon of dairy-free milk (we find that

the oat milk works very well with this recipe)• 3 teaspoons of vegan honey or maple syrup

or molasses• Crushed nuts, pistachios or vegan chocolate

or spray vegan cream for topping• 50g of silken tofu (optional – it adds

creaminess)

Method1. In a blended place the avocado and dairy-

free milk and blend until smooth (you might want to let the avocado to partially defrost).

2. Add the cocoa powder and the vegan honey/maple syrup/molasses, the optional tofu and blend for another minute until all ingredients are well combined.

3. Adjust by adding more cocoa and vegan honey/maple syrup/molasses to taste

4. Refrigerate for at least 30 minutes and serve cold.

5. Top with crushed nuts, pistachios vegan chocolate or spray vegan cream.

Oumph! Tikka Masala

By Oumph!Serves 4 people

Ingredients• 280g Oumph! The Chunk• 1 onion• 3 garlic cloves• 3 cm ginger• 3 tbsp garam masala• 2 tbsp tomato purée• ½ red chili• 50g of plant-based margarine• 400 g coconut cream

• 400 g finely chopped tomatoes• 1 tbsp vegetable stock powder• 4 green cardamom pods• 1 lime• 1 tomato• ½ bell pepper• To serve: basmati rice and cardamom pods,

fresh coriander

MethodPeel and chop the onion, garlic and ginger. Chop the chili. Fry the chopped ingredients with the tomato purée and spices in the margarine. Add the coconut cream, chopped tomatoes and 4 cardamom pods, crushed. Bring to the boil and simmer for 10 minutes. Season to taste with the juice of 1 lime and salt. Add Oumph! and simmer for a further 7-10 minutes. Dice the tomato and bell pepper and add them to the pan for the final 2 minutes.

Serve with e.g. rice cooked according to the instructions on the package, but add a pair of crushed cardamom pods to the cooking water. Chopped coriander is the finishing touch in “Tikka” – Namaste!
