Every Portico product has a written specification that identifies that standards and procedures involved with packing the product including the packaging.

Sysco’s Quality Assurance department inspects all details surrounding the prod-uct starting with an inspection of the plant. The plant approval process and ongoing Portico compliance monitoring consists of the following:

Evaluation of products intended for Portico brand production and distribution. In regard to imported products, review of FDA regulatory websites to confirm the facility of interest is not identified for detention of shipments or other regulatory actions

.

Review of all production, quality, GMP, and Food Safety programs and support-ing documentation. This includes such things as:

o Facility and Groundso Water Supply and Safetyo Processing Environmento Sanitationo Personnel and Hygieneo Food Quality and Safety

Physical Audit of the facility to verify all programs are implemented properly.After inspecting the plant itself the plant has to be onboard to SYSCO’S extreme high standards.Annual Unannounced Audits by third party auditing firms approved by Sysco Quality Assurance

Annual Social Responsibility Assessment (part of the approval process as well) for suppliers in designated regions of the world to ensure compliance with Inter-national, Country and Local labor laws as well as Sysco’s Supplier Code of Conduct.

Sysco Quality AssuranceAudits.

Compliance with Sysco Quality Assurance Point Source Inspection program which involves Portico product quality and safety inspections. Third party personnel trained to understand Portico quality specifications

conduct sampling and evaluation of Portico products.Third party laboratories approved by Sysco Quality Assurance conduct analysis on Portico aquaculture products to en-sure Regulatory and Portico specification compliance.

All Portico suppliers possess full trace-ability capabilities. This encompasses the ability to trace finished product to the following:o Source of raw material. o Source of ingredients. Portico suppliers are required to have COA’s or LOG’s on file for all ingredient suppliers. o Source of packaging.

All Portico suppliers producing raw and cooked products must have complete segregation between raw and cooked products. This includes the use of dedi-cated IQF freezers for raw and cooked product to prevent cross contamination. A supplier will not be approved to pro-duce Portico cooked product if they fail to have complete segregation between processes and dedicated freezers.Routine review of Regulatory websites, as identified above, to ensure Portico suppliers do not have regulatory violations.

Grilled Oysters with Grapefruit & Red Peper Relish

Citrus Salmon with Orange Relish

Ingredients Quantities

Orange Juice

Olive oil 2 tb

Thyme Leaves 1 1/2 tsp

Salmon Filet, 5 0z 4

Brown Sugar 1 tb

Paprika 1 tsp

Salt 1/2 tsp

Grated Orange Peel 1/2 tsp

Seedless Oranges,Peeled 2

Chopped Red Bell Pepper 2 tb

Honey 1 tb

Chopped Red Onion 1 tb

Chopped Fresh Parsley 1 tb

For the Salmon, mix orange juice, oil and 1 teaspoon of the thyme in small bowl. Place salmon in non-reactive container. Add marinade; turn to coat well. Refriger-ate 30 minutes or longer for extra flavor. For the Relish, mix all ingredients in medium bowl. Cover. Refrigerate until ready to serve. Preheat oven to 400°F. Mix brown sugar, paprika, remaining 1/2 teaspoon thyme and salt in small bowl. Remove salmon from marinade. Discard any remaining marinade. Rub salmon evenly with paprika mixture. Place salmon on lined baking pan. Bake 10 to 15 minutes or until fish flakes easily with a fork. Or, grill salmon over medium-high heat 6 to 8 minutes per side or until fish flakes easily with a fork. Serve salmon with Orange Relish.

For the Relish, heat oil in medium sauté pan on medium heat. Add onion and garlic; cook and stir on medium heat 3 minutes or until softened. Add 1/2 of the grapefruit segments and bell pep-per; cook and stir 30 seconds. Remove from heat. Stir in honey, basil, salt and red pepper. Set aside. Grill oysters, flat-side up, over medium-high heat 3 to 5 minutes or until oysters begin to open. (Discard any oysters that do not open.) Remove oysters from grill with spatula or tongs. Remove the top shells. (Oysters will be hot.) Loosen oysters from the bottom shells with oyster or paring knife. Top each oyster with 1 tsp. (15 mL) of the Relish and 1 of the remaining grapefruit segments. Grill oysters 3 to 5 minutes or until heated through. Sprinkle with parsley. Serve immediately.

In a sauce pan, boil salted water and cook the potatoes until fork tender. Cook the squash until tender.Split the potatoes in half, heat a pan with 1 tsp oil and roast.

In a small sauce pan, heat the cream with the orange juice concentrate and the lemon juice. Keep warm.

Smoked Seafood Terminology

Salmon—There are 5 species of Western salmon native to the Pacific Ocean: Chum ( also called silver bright), Pink (Humpback), Sockeye (Red), King (Chinook),And Coho ( Sliver). Of these, Kings are the preferred fish to smoke due to their higher fat content and generally rich red color. The Atlan-tic salmon is the one salmon native to the Atlantic. Its high fat content and peachy color make it the most sought after of all the salmonSpecies for smoking.

BrinePrior to smoking, all salmon are brined with a cure of salt and some-times sugarsAnd spices. There are two com-mon methods of brining. The first is “dry brining”, also referred to as Scottish style. It consists of us-ing a mixture of salt ad sometimes sugars, spices and other flavorings applied directly to the meat of the fish. Once the fish is dry brined for a period of time, the brine mixture is then rinsed off, and the fish is ready to be smoked. Brining times will vary depending upon the spe-cies and size of the fish. The second type of brine is called “wet brine”. Wet brined fish is place in a solu-tion of water, salt and other sugars and spices prior to smoking.

CuringA method of preserving meats and seafood which may involve brining, smoking, salting, and/ or drying.

Hot-SmokingThis term refers to the smoking process when the internal core temperature of the seafood reaches 145º F or above for a specific pe-riod of time. Seafood that is hot-smoked is generally flakey in tex-ture and does not slice thinly. Most hot-smoked seafood has burnished golden appearance when done. Hot-smoked can also be called “smoke roasted” or “kippered”.

Cold-Smoked—This is a process of smoking sea-food in a smoker where the air temperature does not exceed 90º F. Products that are cold-smoked have a similar texture of the raw product. During this process, the smoke is used to enhance the flavor of the fish rater than cook the product. Cold-smoked fish tend to slice thin.

Hard-Smoked— This is a term used to reference products that have been heavily salted and smoked. There is a very little moisture left in the fish, and it often does not require refrigeration like other smoked seafood. This smoked fish will resemble jerky.

Kippered—This term has two meanings. The first definition refers to any seafood that has been hot-smoked as previ-ously described. The second use of the word “kippered” refers to a cold-smoked herring. This usage of “kippered” is generally found in the U.K.

Lox—The Word Lox is a Yiddish translation of the German word “lachs” which means salmon. This term references a method of cur-ing salmon. Traditionally, lox has a much higher salt level and it is not smoked. Lox can be either wet or dry brined.

Nova—This term is a word used to describe a type of salmon that is cured with a milder brine than lox. Traditionally, Atlantic salmon form Nova Scotia were used for Nova, but today it can refer to an inferior brand of smoked salmon.

Gravad Lox—This Product is different form smoked salmon. Gravad Lox is salmon, which is coated with a spice mixture (it often includes dill, sugars, and spices like juniper berry). It is then weighted down to force the moisture form the fish and impart the flavorings. Gravad Lox is not smoked but can be served in a similar fashion.

Our fish is Long line caught only and bled and dressed immediately at sea!!!

PF Haddock This product is from the North Arctic Ocean in Norway. We only use long line caught fish that is bled & dressed as it comes aboard the vessel and frozen in 50 lb bags in H&G state immediately, thus the term (FAS) frozen at sea. It is then shipped to us via cargo ship. To process the H&G we first thaw it out in our fully refrigerated facility in insulated fish vats with a

constant flow of ozonated water running inside to let the fish up in a natural state. Once ready we hand cut into fillets for distribution.

PF CodThis product is from the Ber-ing Sea in Alaska. We only use long line caught fish that is bled & dressed as it comes aboard the vessel and frozen in 50 lb bags H&G state immediately, thus the term (FAS) frozen at sea. It is then shipped to us via rail car. To pro-cess the H&G we first thaw it out in our fully refrigerated facility in insulated fish vats with a constant flow of ozonated water running inside to let the fish up in a natu-ral state. Glossary of TermsCandling

A process by which fillets are placed on backlighted, translucent table that reveals the presence of parasites in the flesh.

ClipperDenotes high-quality swordfish or mahi mahi, usually caught and frozen at sea.

DorsalThe top of the fish.

FASFrozen at sea.

Finger packA term used for layer-packed shrimp.

FletchA fillet cut from large flatfish like Halibut and than further divided into boneless portions.

Green headlessRaw, heads-off, unshelled shrimp; does not indicate actual color.

GreeningA rare condition affecting shrimp, caused by thermal abuse and/or contaminants in the breading.

H&GHeaded and Gutted.

Napehe front and thinnest part of a fillet, around the belly.

P&DPeeled & Deveined shrimp.

PUDPeeled & Undeveined shrimp.

RefreshedAlso “previously frozen.” seafood that has been frozen, often blocks, than slacked out for resale.

SashimiJapanese-style raw fish cut into various forms and served with dip-ping sauces.

ScrodSize designation for cod, haddock, Pollock and cusk. Means “small,” usually under a specific pound-age. Scrod is not a species of fish; sometimes spelled schrod.

SushiThin, Japanese-style slices of raw fish placed on boiled rice, flavored with rice wine vinegar and rolled in seaweed (nori). Rolls are sliced into bite-sized portions.

The haddock Melanogrammus aeglefinus is found throughout the boreal–temperate North Atlantic Ocean from Cape Hatteras on the east coast of North America to the Celtic Sea, south of Ireland. Although it is the same species throughout this geographic range it forms a number of regional and lo-cal populations that are sufficiently isolated from other populations of the same species that they can be managed as separate stocks. The population found in the Barents Sea, north of Norway, is one such stock; for assessment and manage-ment purposes it is known as the North East Arctic haddock stock.

Pacific cod in the Gulf of Alaska are fast growing fish and reach an aver-age length of 19 cm in 1 year. By 12 years they may exceed 89 cm. The stocks are generally exploited from age 3 onwards.Pacific cod (Gadus macrocephalus) is a transoceanic species, occurring at depths from shoreline to 500m. The southern limit of the species’ distribution is about 34˚N latitude, with a northern limit of about 63˚ N latitude. Pacific cod is distributed widely over the eastern Bering Sea (EBS) as well as in the Aleutian Islands (AI) area. The resource in these two areas (BSAI) is managed as a single unit. Tagging stud-ies have demonstrated significant migration both within and between the EBS, AI, and Gulf of Alaska (GOA).
