• 3 goals: environmental health, economic profitability, & social/economic equity
• Triple bottom line: thinking about the impact of choices environmentally, socially, and economically

• Food businesses have a huge impact on the environment
• Consumer concerns = emergence of organic food
• Focus on animal welfare
• Fair trade pricing: support prices to suppliers that promote longevity & avoid poverty

What does “organic” mean?
• Food grown/raised that promotes biodiversity & biological cycles
• To be labeled “organic” food has to comply with guidelines set by the USDA “Organic Rule”
• Growing trend throughout agriculture in the U.S. (i.e. graph on next slide)

Chipotle: Sustainable Food
• Chipotle Mexican Grill would be considered a “sustainable food business”
• All meat is naturally raised
• All produce is locally grown (within 350 miles of each establishment)
• No added hormones in dairy cattle

• Promotes sustainable farming
