From ice types and equipment to techniques and handy hints and tips, Charlie McCarthy shares his guide to everything you’ll need for mak-ing perfect summer cocktails.

Cubed Ice – Used in shaken, built & stirred drinks just like the stuff in your freezer drawer. Be aware how-ever that if you plan on making any more than three or four cocktails, the contents of a couple of ice trays will not go far.

Crushed Ice – Used in muddled or churned drinks. This can be tricky to source. The best way to make crushed ice is to take a bag of cubed ice, wrap it in a clean tea-towel and introduce it to Mr Rolling Pin for about a minute. Crushed ice cools drinks quicker than cubed ice does, but it also melts faster.

Block Ice – Used in punches. This takes a bit of forward planning. Clean an ice-cream tub thoroughly. Fill it with water and seal it. Place it in your freezer for a week. You now have a solid block of ice that melts very slowly. It will keep the contents of your punchbowl nice and cool, without diluting it too much. Effective and impressive.

Hawthorne Strainer – Once you have shaken your cocktail, hold this strainer on top of your tin to prevent ice and fruit pulp from being poured into your cocktail. A fine strainer can also be used in certain cocktails that require perfect clarity to the drink.

Bar Spoon – This elongated spoon is essential for stirring drinks. The flat end can be used to muddle (crush) berries and seeds. Also useful for churning crushed-ice drinks. If you can’t get your hands on one of these, a normal spoon will do.

The Shaker – Shakers come in a variety of shapes and sizes. Most bartenders’ favourite is the Boston shaker, consisting of a glass and a tin. Pour your ingredients into the glass, top with ice, seal the tin and shake HARD.

If you can’t lay your hands on a shaker, a large jar will do, as long as it has been thoroughly cleaned of its original contents!

Measure (Jigger) – Essential for measuring out exact amounts of spirits and juices. If you don’t have one of these available on holiday then you can always try using spoons as a rough guide.

This renowned Polish vodka is produced using extracts of aromatic bison grass, which is unique to the ancient Bialowieza forest in north east Poland. It is here that the majestic bison roam (indeed Zubr means bison in Polish). Rye vodka is infused with this unique bison grass, matured in oak casks and then bottled locally. Each bottle has a blade of the grass added by hand. The herbaceous notes are perfectly complemented by pressed apple juice. Indeed it has been enjoyed this way for over 600 years, with apple trees growing in the same primeval forest.

Method:

1. Fill a tumbler with ice.

2. Add all the ingredients and stir.

3. Garnish with a slice of apple and a sprinkle of ground cinnamon.
