    Ulysses S. Grant restored control o the Mississippi to the Union,

    the characters in his novels. It was unpredictable, but it

    The Flavors of the SouthO all o Americas regional cuisines, Southern may be the

    most popular. Southern classics such as ried chicken,

    barbecue, and bread pudding have become American staples.

    Southern cuisine draws upon a host o infuences. The

    Caddo, Choctaw, and Seminole Indians introduced European

    settlers to deep-pit barbecue. Arican slaves prepared the

    rst gumbo. And Cajun and Creole specialties such as

    shrimp etouee and jambalaya began with French and

    Spanish colonists in Louisiana. This multitude o infuenceshas created the ultimate American comort ood, and turned

    Southern cities such as New Orleans into one o the culinary

    capitals o the United States.

    On our cruise along the Mississippi River and the Gul

    Coast, Yorktowns ches will introduce Southern specialties,

    along with other choices, in the menus.

    Jazz was born in the Arican American community o New

    Orleans in about 1900. It draws upon ragtime, the big brass

    sound o marching bands, the hymns o Arican American

    churches, and the rhythms o traditional Arican drumming.

    To celebrate this uniquely American expression, we are pleased

    to have with us talented musicians who will not only perorm,

    but will also delve into the history and the roots o the Deep

    Souths musical tradition.

    Gary Chalmers,a seasoned percussionist, has in recent yearsevolved into an on-call session drummer or various musical

    projects, including Teaching Company recordings and live

    perormances.

    Pianist Charlie Etzel has recorded in his own right and also

    with Slide Hampton, Jimmy Heath, and Whit Williams.

    Ashton Fletcher has toured with international recording

    star Bobby Vinton, was the bassist or ten years on the NBC

    television special, Christmas in Washington, and perormed

    on the international television spectacular, Liberty Weekend.

    Most recently, Ashton opened the Fletcher Music School.

    Itinerary

    The Siege of VicksburgOn May 18, 1863, 77,000 Union troops under the

    command o General Ulysses S. Grant surrounded

    Vicksburg, trapping Conederate orces numbering less

    than 33,000 men under General John Pemberton. Ater

    several attempts to storm the citys ortications ailed,

    Grant settled down to a siege. Throughout the montho June, both the garrison and the civilian population

    endured a heavy bombardment rom Union artillery on

    land and rom Union gunboats in the Mississippi River.

    Casualties were heavy on both sides: Pemberton lost

    more than 9,000 men; Grant lost more than 10,000.

    With supplies low, casualties mounting, and no hope o

    rescue, Pemberton surrendered on July 4th.

    LAURA PLANTATION | OAK ALLEY PLANTATION, Louisiana

    The only plantation that retains its original slave cabins, the

    Laura Plantation was the location where Alce Fortier recorded

    the tales o Brer Rabbit in the 1870s. Explore the homes o the

    owners and the slaves, as well as the lovely grounds. Continue

    to Oak Alley Plantation, with its breathtaking one-quarter-

    mile canopy o live oaks that lead rom the Mississippi to the

    HOUMAS HOUSE

    Built in the early 1800s, the large Greek Revival mansion o the

    Houmas House Plantation and Gardens is surrounded by lush

    acres o gardens, ponds, and a majestic live oak alley. During

    with the colors o the season. Stroll through these exquisite

    As Yorktowncontinues along the Mississippi, we will

    explore historic Vicksburg. Its position on a bend in the

    Mississippi River made Vicksburg a bustling trade port

    the City class ironclad gunboats rom the Civil War.
