EASY CREAMY CHICKEN PASTA
Serves 4 • Preparation time 10 minutes • Cooking time 20 minutes
INGREDIENTS
1 tablespoon oil
2 chicken thigh fi llets, cut into strips
3 spring onions, sliced
¾ cup KRAFT Easy Cheese
1 cup milk
2 teaspoons seeded mustard
1 punnet cherry tomatoes, halved
400g rigatoni or penne pasta, cooked,
drained & kept warm
METHOD
HEAT oil in frypan & cook chicken for 6-8 minutes until well
browned and cooked through.
STIR through spring onions, KRAFT Easy Cheese, milk and
mustard, then simmer for 2-3 minutes. Toss in tomatoes
and cook for 1 minute until heated through.
SPOON cooked pasta into serving bowls and spoon over sauce.

asparagusTo buy asparagus is a delicate vegetable,
with crisp stems and fragile tips. look for
fresh-looking asparagus, with smooth, firm
stems. their heads should be full and tightly
formed, and all asparagus should be brightly
coloured. select bunches with spears that
are all much the same thickness, to allow
for even cooking.
Preparation Wash asparagus, then apply
gentle pressure to the bottom of each spear
until it breaks. discard the woody ends.
Use a vegetable peeler to peel away the
tough outer layer from stem.
Storage remove rubber bands or tape
from bunches then wrap asparagus in a
damp paper towel. store in a plastic bag in
the fridge for 4-5 days.

Asparagus with sun driedtomatoes & basilPrep 5 min | Cook 15 min | Serves 4
8 chicken thigh fillets
salt and freshly ground black pepper
1 tbs olive oil
60g button mushrooms
4 slices pancetta, cut into strips
2 bunches fresh asparagus, trimmed
50g semi dried tomatoes
8 kalamata olives
basil leaves, to serve
1Cut chicken pieces in half and season.
Heat half the oil in a frying pan. Cook
chicken for 3-4 minutes, until browned well all
over. Remove to a plate.
2Heat remaining oil and add mushrooms
and pancetta. Cook until golden. Cut
asparagus into thirds, add to pan. Cook for
2 minutes, shaking pan occasionally. Return
chicken to pan with tomatoes and olives. Cook
over high heat for 2 minutes. Spoon onto
plates with pan juices. Garnish with basil.
Asparagus, bean &pine nut saladPrep 5 min | Cook 15 min | Serves 4 as a
light meal or side dish
100g grated parmesan
freshly ground black pepper
2 bunches fresh asparagus, trimmed
300g baby green beans, trimmed
1 bunch rocket
100g butter
50g pine nuts
2 tbs lemon juice
1Preheat oven to 180°C. Line a baking
tray with non-stick baking paper. Scatter
parmesan over paper and grind over some
black pepper. Bake for 5-7 minutes until
golden. Remove from oven, cool and break
into shards.
2Meanwhile bring a saucepan of water to
the boil. Trim woody ends from asparagus
and cut diagonally into pieces. Trim beans.
Drop asparagus and beans into the boiling
water and cook for 2 minutes, depending
on the thickness. Drain and refresh in cold
water. Arrange rocket on a serving plate.
Drain vegetables, removing as much water as
possible and pile onto rocket.
3Heat butter in a pan until foaming, add
pine nuts and cook until golden. Cook until
butter begins to brown. Remove from heat
and add lemon juice. Spoon butter sauce over
salad and serve topped with parmesan shards.

Smoked salmon &asparagus omelettePrep 5 min | Cook 5 min | Serves 1
4 asparagus spears
3 eggs
salt and freshly ground black pepper
1 tbs butter
1 slice smoked salmon
1 tbs sour cream
sprig of dill
1Trim woody ends from asparagus, drop
into a pan of boiling water and cook for
2-3 minutes until bright green and just tender.
Refresh in cold water.
2Whisk eggs together with a pinch of salt
and freshly ground black pepper. Heat a
non-stick frying pan over medium-high heat.
Add butter and when melted, add egg mixture.
Swirl pan to spread evenly over base and cook
for 1-2 minutes, or until set.
3Place smoked salmon and asparagus on
one half of omelette. Top with sour cream
and dill. Fold over to cover and slide out onto
serving plate.
watermelonTo buyWatermelon is large and oval in shape,
with a dark green skin with lighter green stripes.
It’s flesh is pinkish red in colour, with a mixture of
black seeds and small, immature white seeds.
Watermelon has a sweet and refreshing flavour,
making it a perfect treat on hot days. Look for
watermelon with firm, smooth skin. They should
feel relatively heavy for their size, and if tapped
lightly should sound hollow.
Preparation Cut watermelon into wedges and
enjoy straight from the skin, or cut in half then
peel away the skin and remove the seeds.

Watermelon, strawberry& mint granitaPrep 20 min | Cook 5 min + freezing | Serves 8
1 cup sugar
1 cup water
8 mint leaves, chopped
250g punnet strawberries
1.5kg seedless watermelon
1Place sugar and water into a small
saucepan. Stir over low heat until sugar has
dissolved. Add mint and simmer for
5 minutes then remove from heat. Add chopped
strawberries and set aside for 5 minutes.
2Meanwhile, remove rind from watermelon
and roughly chop flesh. Place into a food
processor. Strain syrup and add strawberries
to processor with watermelon. Process until
smooth and strain through a fine sieve into a
bowl. Discard fruit pulp.
3Pour into 2 shallow metal trays and freeze
for 2 hours. Remove from freezer and flake
with a fork to create icy crystals. Return to
freezer for 2 hours then flake again. Spoon into
chilled glasses and serve garnished with mint.

blueberriesTo buy Blueberries are small, marble-sized berries,
with smooth skin ranging in colour from dark navy to
blue-black. Their skin is covered in a fine white powder
or ‘bloom’. Look for firm, plump blueberries with dark
blue skin. Avoid blueberries that feel soft or look
wrinkled.
Storage Remove blueberries from their punnet and
transfer to a paper towel-lined plate. Cover with plastic
wrap and store in the fridge until ready to eat or cook
with. Stored in this way, blueberries should be fine
for 3-5 days.

Blueberry, orange &coconut loafPrep 5 min | Cook 1 hr | Serves 6 |
Makes 12 slices
80g butter
1 cup milk
grated rind 1 orange
2 cups plain flour
2 tsp baking powder
2 cups desiccated coconut
1 cup raw sugar
2 eggs, lightly whisked
125g punnet blueberries
1Preheat oven to 180°C. Grease
and line a 9 x 19cm loaf pan with
non-stick baking paper. Gently heat
butter, milk and orange rind together in
a small pan until butter has just melted.
Set aside for 5 minutes.
2Sift flour and baking powder together
in a bowl. Stir in coconut and sugar.
Add milk mixture, eggs and blueberries
to flour and mix together lightly until well
combined.
3Spoon into loaf pan and bake for 1
hour until golden and cooked when
tested. Cool in pan for 5 minutes then
transfer to a wire rack to cool. Cut into
slices and serve spread with butter.

Poached chicken saladwith fennel & orangePrep 10 min | Cook 30 min | Serves 4
5 cups water
1 brown onion, halved
2 sprigs continental parsley
6 black peppercorns
3 chicken breast fillets
2 baby fennel bulbs
1 green apple
2 oranges, juiced
½ small red onion, thinly sliced
1 tbs snipped chives
salt and freshly ground black pepper
¼ cup extra virgin olive oil
1Place water, onion, parsley, peppercorns
and a pinch of salt in a large saucepan
over medium heat. Bring to the boil. Add
chicken and cover with a lid. Remove from
the heat and set aside for 30 minutes to
poach. Remove chicken from the liquid
and when cool, slice.
2Thinly slice fennel and apple and combine
in a large bowl. Add 2 tbs of the orange
juice to prevent browning. Add chicken, onion,
and chives, season with salt and pepper and
toss to combine.
3Whisk olive oil and remaining orange
juice together in a small jug. Drizzle
dressing over salad, add a few fennel tips
and serve immediately.
babyfennelTo buy Fennel’s white bulb, stalks
and feathery green leaves share a
distinctive aniseed-like flavour, and
can all be eaten. When cooked,
the flavour becomes sweeter and
more mellow. Baby fennel is simply
immature fennel, with small bulbs
and fewer stalks or leaves. Its
flavour is more delicate.
Best in Baby fennel is best fresh
in salads or cooked in soups and
vegetable dishes. It partners well
with fresh citrus fruits such as
grapefruit and oranges or when
cooked with prawns in a sauce.
Preparation Wash well in cold
water and remove the tough outer

of the bulb then slice as desired.

Peach and almond custard cakePrep 15 min | Cook 1 hr | Serves 8
Preheat oven to 180°C. Grease and line a 22cm cake pan with non-stick baking paper.
Process 200g almond kernels in a food processor until finely chopped. Reserve 1 tbs
for topping. Using electric beaters, beat together 125g softened butter, ½ cup caster
sugar and 1 tsp vanilla essence until pale and creamy. Add 2 eggs, 1 at a time, beating
well after each until just combined. Fold in 2 cups self-raising flour, chopped almonds
and 1¼ cups milk until just combined. Spoon half the cake mixture into the prepared
pan. Drain a 400g can peach slices and arrange over cake mixture. Spoon 1 cup thick
prepared custard over the centre area. Cover with remaining cake mixture and gently
smooth surface. Combine reserved almonds with 1 tbs extra caster sugar and ½ tsp
ground cinnamon. Sprinkle over surface and decorate centre with 6 blanched almonds
(see tip). Bake for 50-55 minutes or until a skewer inserted into the centre comes out
clean. Remove from oven and cool for 20 minutes before turning onto a wire rack.
FRESH TIP: To blanch almonds, soak in boiling water for 5 minutes then peel off skin.
almondsBest in Almonds are a versatile nut great
for cooking in both sweet and savoury
dishes. Serve with fruit and cheese, eat
as a snack or use in cakes and vegetable
dishes.
Storage Almonds keep best when
stored in an airtight container in cool and
dry conditions. Keep them somewhere
where they are away from other strong
odour producing foods, as it is possible
for the almonds to take on these odours.

t this time of year it’s
buzzing at the Select
Harvest almond
orchard just outside
of Robinvale, Victoria
– nearly all the bees
in Australia have congregated here for
the annual pollination.
“For 2.5 weeks every August the
almond trees all go into blossom so
we need to bring in 3 billion bees to
pollinate the trees so that they produce
nuts,” says Matthew Graham, Group
Manager, Sales & Marketing.
It’s a stunning sight to behold – over
38,000 acres of almond trees are in
full bloom and the constant hum of
billions of busy bees at work is an
awe-inspiring display of Mother Nature.
“It’s an exercise that needs to be
carried out with military precision,”
says Matthew. “You can only shift
bees in their hives at night otherwise
they become disoriented and they’ll
head back to where they came from.”
It’s a crucial few weeks as pollination
has a direct impact on crop size in
the upcoming harvest. “Bees are
vital as they carry pollen between
different varieties of almond blossom,”
says Matthew.

With its base on the Murray River, Select
Harvest is the largest grower of almonds
in the Southern Hemisphere. Between
February and April, the team are busy
shaking the trees to encourage the
almonds still in their husks to fall to the
orchard floor. From there the almonds are
sent to the harvesting facility where the
husk and shell is removed.
Growing almonds requires patience – it
takes three years for an almond tree to
produce its first crop and around seven
years until it reaches maturity. But they do
live to a ripe old age – almond trees can
bear nuts for between 25-30 years.
Consuming almonds is also good for
our own longevity. “They help manage
cholesterol and are incredibly good for
your heart,” says Matthew. You could say,
a handful of almonds a day helps keep
the doctor away…

rump steaks are cut to an even thickness
and across the grain to ensure this is
a flavoursome cut of meat.

leg of lambis simply that - a leg of lamb. a lamb leg
needs little preparation. simply season with
salt and pepper and roast as is or marinate
overnight in herbs and spices for extra
flavour. the surface layer of fat will keep the
meat moist during cooking. When cooked,
rest the meat for 10 minutes before carving to
allow the juices to settle and the meat will be
tender and juicy. When carving, use tongs,
rather than a carving fork, to hold the meat
steady. a fork will pierce the meat and some
juices will be lost. remember, carve across
the grain of the meat for a more tender result.

800g baby potatoes
300g frozen Woolworths Select
Broad Beans
1 bunch watercress, sprigs removed
⅓ cup toasted hazelnuts, roughly
chopped
⅓ cup olive oil
¼ cup lemon juice
2 tsp horseradish cream
salt and pepper
12 lamb cutlets
1Put potatoes into a saucepan and
cover with cold water. Place over a
high heat and bring to the boil. Reduce
heat to medium and cook for 15 minutes
or until tender. Drain and slice. Put beans
into a bowl and cover with boiling water.
Stand for 3 minutes. Drain and remove
skin from beans.
2Combine potatoes, beans, watercress
and nuts in a bowl. Whisk olive oil,
lemon juice, horseradish cream, salt and
pepper in a jug. Drizzle over potato salad.
3Preheat a chargrill or barbecue over
high heat. Season lamb cutlets
with salt and pepper. Cook cutlets for 3
minutes each side for medium-rare or until
cooked to your liking. Serve with warm
potato salad.
diced lambDiced lamb pieces are ready-to-cook lamb pieces
prepared by our in store butchers using cuts such as
leg and shoulder. Diced lamb can be used for soups,
stews and casseroles. Simply brown in a little oil, add
vegetables and herbs or spices for flavour, stock and
tomatoes and cook over low heat until tender. Great
flavour matches are mint, rosemary, lentils, chick
peas or dried fruits such as apricots and dates used
in Moroccan dishes and served with couscous.
Diced lamb is also great on skewers. Marinate in
garlic, dried oregano, lemon juice and oil.
lamb forequarter chopsare cut from the shoulder section of the lamb.
They have a small bone and an outer layer of fat
which can be trimmed or removed before cooking.
This cut of lamb is great in stews, roasted in the
oven with seasonal vegetables, in curries or on
the barbecue.
lamb mid loin chopsare an extremely versatile cut of meat. This cut comes
from the rib area of the lamb and has a small T-shaped
bone creating a large piece of meat and a smaller fillet
on the chop. Look for chops cut to an even thickness
and a small covering of fat on the back of the chop.

When buying lamb eye of loin, look for meat that is light red in
colour with an even thickness all around. This cut of lamb is from

Fetta and prosciutto cutlets withmushroom & spinach saladPrep 20 min | Cook 25 min | Serves 4
100g fetta, crumbled
2 tbs milk
¼ cup chopped continental parsley leaves
12 lamb cutlets
12 medium basil leaves
12 thin slices prosciutto
⅓ cup olive oil
300g button mushrooms, sliced
150g Fresh Cuts Salad Mix Baby Spinach
1 red capsicum, deseeded, finely diced
1 small red onion, halved lengthways, thinly sliced
2 tbs balsamic or red wine vinegar
1 tsp mild English mustard
salt and pepper
1Combine fetta, milk and parsley in a bowl until smooth. Lay
cutlets on a flat surface. Spread a little fetta mixture onto both
sides of each cutlet. Place a basil leaf on one side and then wrap
with a slice of prosciutto to enclose the fetta coating.
2Heat 1 tbs oil in a non-stick frying pan over a medium-high heat.
Add mushrooms and cook for 7 minutes or until golden. Transfer
to a large bowl. Add spinach, capsicum and onion and toss to
combine. Whisk 2½ tbs oil with vinegar, mustard and salt and pepper
in a jug. Add to salad just before serving.
3Heat remaining olive oil in frying pan. Cook cutlets for 3 minutes
on each side or until prosciutto is crisp. Serve cutlets with
mushroom and spinach salad.

salt, 1 tsp ground coriander and ½ tsp turmeric in a bowl.

olive oil in a non-stick frying pan. Add cabbage and cook, stirring for
1 minute. Add ¼ cup water, cover and cook for 3 minutes or until

Season with salt and white pepper. Transfer cabbage to serving
plates. Cut chicken into pieces and serve with cabbage.

Beef Gluten Free Sausages onto a baking tray and bake for 20
minutes. Cool and slice diagonally. Meanwhile, heat 2 tsp olive oil

1 finely chopped brown onion and cook for 3 minutes or until

I love you biscuitsPrep 15 min | Cook 15 min | Makes 21
250g soft butter
½ cup sifted icing sugar
1 tsp vanilla extract
1 egg
2½ cups plain flour
⅓ cup cornflour
Icing
1½ cups icing sugar
20g unsalted butter, melted
2-3 tsp hot water
red food colouring
milk and white choc bits
1Preheat oven to 160°C. Line 2 baking
trays with non-stick baking paper. Beat
butter, icing sugar and vanilla with electric
beaters for 5 minutes until smooth and creamy.
Add egg and beat well to combine.
2Sift flours together over butter mixture and
mix well to form a soft dough. Roll out
on a lightly floured surface until 5mm thick.
Cut out biscuits using 7mm fluted cutter and
a heart shaped cutter allowing 2 rounds and
1 heart per set. Transfer to baking trays and
bake for 12-15 minutes until pale golden.
Cool on wire racks. Remaining dough can
be re-rolled and cut.
3While biscuits cool, prepare icing. Sift icing
sugar into a bowl. Add melted butter and
enough water until smooth. Spoon ⅓ of the
icing into a separate bowl and add red food
colouring to desired colour.
4Spread the round biscuits with the white
icing and the hearts with the red icing and
decorate with choc bits as shown.

Not for the presents or
the special treatment,
but because it’s the one time of the year
where he gets a chance to stop and reflect
on his role as dad to Shae, 7 years and
Lara, 5 years.
According to the Bureau of Statistics
(ABS), almost 30 per cent of the 1.7 million
Aussie dads work 50 or more hours
each week in their employed jobs,
so juggling fatherhood and work
responsibilities is a big task.
“A lot of times it’s hard, generally
fathers work and provide for their families,”
says Paul Roos, Swans AFL Coach and
winner of the The Shepherd Centre
Australian Father of the Year in 2008.
His advice for being a top dad?
“At every opportunity try and spend as
much time as you can with your family
and kids,” says Paul.
While mums are more commonly the
parent to stay at home and look after
the kids full-time, statistics show that
dads are doing their bit to help around the
house, too. According to ABS, men are
spending more time on traditionally
‘female’ domestic activities such as
cooking and laundry.

“These ordinary ‘chores’ can be a great
way to spend time with your kids – whip
up a hearty Bolognese for dinner, make a
yummy pie and head out on a picnic or
bake a batch of cookies as a special
after-school snack. Who knows, you

that will make you brekkie in bed on

One pan spiced chicken with spinachPrep 5 min | Cook 20 min | Serves 4
1 tbs olive oil
1 onion, halved & sliced
1 garlic clove, crushed
400g diced chicken breast or thigh fillets
2 tsp Moroccan seasoning
400g can diced tomatoes
½ cup frozen peas
½ cup rice
½ cup water or chicken stock
250g frozen spinach
1heat oil in a non-stick frying pan. add onion and garlic and
cook for a few minutes until softened. add chicken and sprinkle
over seasoning. Fry until chicken is golden. stir in tomatoes, peas,
rice and water or stock.
2place the frozen block of spinach in the centre. it will defrost as
it cooks and then you can break it up with a wooden spoon.
Cover with a lid, reduce heat to a simmer and cook for 15 minutes.
Brett’s top tips:• Mixed frozen vegetables can be used instead of the peas.
• Change the spice mix - use some Chinese five spice and
add some soy sauce for an asian-style dish.
• Leave out the rice. instead add a can of chick peas and serve
with instant couscous.

This Father’s Day, give your dad the perfectstart to the day with a hearty big breakfastin bed. Pick up hash browns and bacon fromthe delicatessen at your local Woolworthssupermarket.
The big breakfastPreheat oven to 220˚C. Put 2 hash browns onto a non-stick baking tray. Cut 1 tomato in half and sprinkle
with a little finely grated parmesan cheese. Put onto tray and bake for 10 minutes. Turn hash browns and
cook for a further 10 minutes. Turn off oven. Heat 1 tsp olive oil in a non-stick frying pan over a medium heat.
Cook 2 rashers bacon and 3 halved button mushrooms for 5 minutes or until bacon is golden on both
sides. Transfer to tray in oven to keep warm. Fry 2 eggs to your liking. Transfer to a plate and serve. PHoTo

Spring into itIn springtime, almost every plant in the garden burstsinto new life and it’s action time for the gardener.
THE SPRING LAWN
❀ Spring is lawn renovation season. Fill hollows with
good quality top dressing. Use a rake to scratch
dead grass material out of the lawn. If left, this
debris (called thatch) can build up and increase
the risk of disease.
THE SPRING FLOWER GARDEN
❀ Plant out summer seedlings such as petunias and
phlox. Sow seeds of marigolds, zinnias, cosmos
and sunflowers.

It’s a moment Lilliana Taleski will neverforget – watching her four-year oldson, Stefan (pictured above withsister Isabella), being dragged from afamily friend’s pool and placed in the
recovery position by his 12-year old sister,Isabella. It was a heart-wrenching moment.
“It all happened in a split second. I justcouldn’t believe it,” says Liliana. “If Isabellahadn’t seen him bobbing in the water, itmight have been too late. She saved his life.”
Rushed to The Children’s Hospital atWestmead by CareFlight, Stefan wasadmitted to the Trauma Unit to monitor hisbreathing and oxygen intake. “The medicalteam was just fantastic, they went over andabove what was required of them, helpingStefan but also supporting us and providingguidance on how to help him recover fromthe mental trauma,” says Lilliana.
“The ordeal has had a good outcome –Stefan is still with us and is well and it’s reallymade me so aware of just how importantfunding for The Children’s Hospital is.”
A Woolworths employee at Bonnyrigg,Lilliana experienced first-hand the results ofher store’s fundraising efforts — much of theequipment used in the hospital is purchasedwith funds raised through the annualWoolworths Fresh Food Kids HospitalAppeal. “The doctors and nurses do suchan amazing job but they need extra fundsto help save children’s lives,” says Lilliana.“Every cent counts. If you can afford todonate just $2, that’s something. That’sless than the cost of a cup of coffee.”
“It doesn’t take much to make a difference.Even a little goes a long way because it alladds up in the end,” says Lilliana. “I neverimagined that the fundraising events I had

2 tbs oil
1.5kg Boneless Blade Beef
1 large onion, chopped
2 carrots, peeled and
chopped
2 celery stalks, chopped
2 garlic cloves, peeled
1 tbs flour
1 tsp dried thyme
3 cups beef stock
¼ cup tomato purée or sauce
good splash Worcestershire
sauce
1Preheat oven to 160°C.
Heat half the oil in a large
heatproof casserole pan.
Add the meat in batches
and brown all over. Remove
to a bowl.
2Add the rest of the oil and
cook onion, carrot, celery
and garlic for 5 minutes. Sprinkle
over the flour and mix well.
3Return the meat to the pan
with thyme, stock, purée
and Worcestershire sauce.
Season with salt and pepper
and mix well. Cover, place in
oven and cook for 1½ hours until
tender, stirring occasionally.
