Prepared Veg Productof the Month

In SeasonAs the warmer weather hopefullycontinues more locally grown fresh fruitstarts to become more readily available inaddition to the fresh vegetables that wehave been enjoying for the last couple ofmonths.

With many growerswithin the region Juneis a great month withlocal fruit, vegetablesand salad produce in

abundance. With this should come thewelcome news of prices easing with lesscost involved in getting produce from

field and farm to plate and also reducedfood miles.

Some of the highlights thismonth will be SouthportSamphire, Mr WinsorsRaspberries &

Strawberries, Scotch Raspberries & LocalCelery. In addition we have someexcellent prices on English Lettuces andFresh Salad Rocket for the whole of June.

Method

Firstly put your eggs in boiling water for 6minutes then refresh in cold water, thenpeel carefully

Mix the sausage meat with the blackpudding, make a ball and flatten withfloured hands then mould around egg,add more if you need to

When ball is tight and complete putthrough flour, eggwash and pankobreadcrumbs

Deep fry at 180 degrees until goldenbrown, probe and if not 70 degrees put inoven for a few minutes

Reduce cider by half then add a drizzle ofolive and season

Wash salad leaves and cut apple into thinstrips, add dressing to apple and leaves

If you have some black pudding mix leftwhy not butterfly a chicken breast add theblack pudding mix and fold over then rollin taste of the lakes sliced pancetta

Bake in the oven on 180 degrees for 20minutes or until above 70 degrees

This would also go well with the cider andapple dressed leaves
