This Week’s Featured Chef,Joseph MuldoonLooking for steak and seafood with seasonal attitude? Follow the incredible aromas to the 6th floor of Bally’s and The Reserve Restaurant, an exquisite Atlantic City fine dining experience.

You’ll find the flavors you crave on a menu brimming over with the finest beef, veal, pork, lamb, poultry and fresh seafood creations prepared just the way you like them. The Reserve is operated by Jersey native, Chef Joseph Muldoon, who graduated from Johnson and Wales University with an Associates in Culinary w/Honors and a Bachelors in Food Service Management w/Honors.

Let’s get to know a little more about The Reserve and the Chef, Joseph Muldoon, who makes it all “cook” together.

What makes The Reserve a transcendent dining experience? The experience is pulled from so many directions; our knowledgeable, well-trained staff will take you on a guided tour of what we have to offer. A panoramic view of the skyline from anywhere you sit and the scenes of the crowded boardwalk and lights that reflect off of the ocean are just a few amenities that you receive from just walking into the restaurant. The welcoming aura with the touch of class that although replicable, is no comparison to the food that comes with it. Because we were formerly a steakhouse, I am not limited to any specific cuisine so therefore I have the ability to present my food however I deem necessary. We have a “Private” Label, Dry Aged New York Strip – Hand Cut to specification so you can go as low or large as you like and this stuff is from the heart of the cornbelt, Ne-braska and aged for 28-35 days. You can top your steak with a foie gras maître d’ butter after it has been broiled with a mélange of toasted peppercorns – top it with house smoked tomatoes, peppers and buffalo mozzarella – crust it with our signature misoyake glaze and sesame seeds – or for those that may not want to wander too far from what they intended, top it with crabmeat and brown butter or a Wild Mushrooms ragu that would put any other attempt to shame. Our arsenal of cuts are not limited to the filet, porterhouse, ribeye or Bone-in 24 OZ Prime Rib because I am always finding dry Aged or Prime cuts to feature at our restaurant.

I have an array of seafood that is both local, and worldly. A local black bass that will soon be on every dinner table in the area once they try our preparation. Oys-ters from three different areas of this continent and fish with preparations that incorporate seasonal produce brought to the peak of its flavor.

All items in Reserve are brought to the peak of their flavor before hitting the table! What were your influences growing up that led you to pursue a culinary career? My main influence was my mother who had a spoon in my hand since I was 3 years old. She was a home-economics teacher so she instilled care and passion for preparing meals at the early ages of my life. What accolade or accomplishment given in your professional career are you the most proud of? I am most proud of my accomplishments at the Reserve and there isn’t any single moment that defines why. My team and I have come together for our most recent accomplishment and that will be our spring/summer menu. I encourage everyone to come see why this is our biggest accomplishment yet and I guarantee you will be moved. What is your signature dish at The Reserve at Bally’s? Our signature dish is our “Private” Label, Dry Aged New York Strip, but I can easily see the Sake Mari-nated Sea Bass giving it a run for its money. It marinates in a sweetened sake mixture and caramelizes in the oven when cooked. The sweetness meshes so well with the natural buttery texture of the fish. The New York Strip is the signature, but the Sea Bas is the chef’s favorite.

What is the best piece of culinary advice or cooking tip you would give to an amateur home chef? Take time to do things slowly and correctly. Some do not realize how slightly burning something in the beginning will affect the entire dish. How does Joseph Muldoon like to unwind? I like to unwind by dining at restaurants around the area. I think the culinary scene in Atlantic City is at the top of it’s game and nothing is better than having a meal cooked for you when that is all you do day in and day out. Your culinary career has taken you from South Jersey all the way to Hawaii. What techniques have you learned from both regions and put into practice with your cooking? I think techniques have been something that when I was first was exposed to a kitchen, I immediately picked up. Throughout my career I have refined techniques through repetition and different chef’s styles but the undoubtedly have always been my own. I can say that Hawaii has the best tasting fish on this earth and the Southern touch in cooking again speak to the importance each step has for the completion of each dish, Time and Care. What is one thing about yourself that most people wouldn’t know? That Italian cook-ing is my passion and I will perhaps look to pursue a concept of Italian influence in the future.

Exxxotica Expo 2013Coming to Trump Taj Mahal this WeekendThe adult industry’s premier fan event, EXXXOTICA is making its debut in Atlantic City, this weekend, April 19th – 21st, a decade after the iconic East Coast Video Show had its last meeting in 2003. The schedule includes personal appearances, live shows and seminars, as well as the inaugural EXXXOTICA Fan Choice Awards, “The Fannys” (TheFannys.com). James Deen will sign autographs and pose for fan photos at the booth of popular VOD website HotMovies.com.

EXXXOTICA Atlantic City will open its doors at the massive Mark G. Etess Arena at the world famous Trump Taj Mahal Casino and Hotel. The arena has hosted shows by such superstars as Elton John, Aerosmith, Beyonce, Dane Cook, Santana, Janet Jackson, Van Halen and many others, as well as numerous major sporting events. Now it is playing host to the 2013 EXXXOTICA Expo in Atlantic City.

“Atlantic City was one of the first cities we looked at when we started EXXXOTICA, and we are proud that our 17th show will be there,” said J. Handy, director of EXXXOTICA. “Many of our exhibitors and attendees based around there have asked us to bring a show to that area since they miss the old East Coast Video Shows from the 1990’s, and as it is with everything we do, we’re looking to do this bigger and better than it’s ever been done before with many of the trademark features of all EXXXOTICA Expos, plus a few new and exciting events.”

Those attending the show can expect a jam-packed entertainment stage with amazing shows featuring everything from nationally known musical acts to the sexiest burlesque shows and more. Informative and engaging seminars will also be taking place throughout the weekend, as will show features that have made EXXXOTICA the leading expo of its kind such as hundreds of adult’s biggest stars and premier companies exhibiting. James Deen has been an active adult performer since 2004 and has appeared in more than 3,000 adult productions. He recently won several awards at the 2013 AVN Awards, including Male Performer of the Year.
