Why did you decide on a longer length for Helen’s hair? Once Helen had the hair fitted she couldn’t bare to have it cut, so it was her decision to leave it longer than initially planned and I’m glad we did, as it looks beautiful.

How do you feel Helen’s new hair has affected her confidence? Helen is such a lovely person anyway but she readily admits she wasn’t happy with herself prior to Marbella Makeover so I think this entire experience has really increased her confidence and her hair has topped it all off.

What has been the most rewarding part of the Marbella Makeover experience for you?Seeing Helen light up more and more as the procedures finalised bit by bit, and really feeling that we made her a happier woman.

Have you seen an increase in confi-dence in Helen since your first meeting?Definitely, she is much more confident and I think she feels like a beautiful woman again.

As a professional, what element of Helen’s surgery do you feel has changed her physical appearance most signifi-cantly?All procedures were subtle and adapted to Helens wish not to be to drastic, but I think the rhinoplasty evidently changed her face the most, as all the body shap-ing procedures only enhanced (Breasts) or redefined existing shapes, but not altered them completely. What aspect of the surgery do you think has increased her confidence the most? That is really hard to say, I think the magic really lies in the combination, but this is for Helen to answer

All I can say is that this couldn’t have come at a better time after the last four years with our son battling for his life she stood strong and never gave in but it took a major toll on her then just when we thought we turned the corner Helen became ill too for some time. Drivers on the M-40 in Madrid, the Avenida Diagonal de Barcelona or the Puente del V Centenario in Seville, must be aware of the fact that they are travelling on one of the three most dangerous urban areas in the country. This is the main conclusion of the study “Black spots: traffic accidents in Spanish capitals” carried out by Línea Directa Aseguradora in which more than 1.2 million motor vehicle accidents in

provincial capital cities in the last six years were analysed.

The main aim of the report, which has attracted a great deal of media attention, is to analyse a phenomenon causing 18% more fatal accidents than on interurban roads. According to the list of black spots, Barcelona, Madrid and Seville head the Top 15 of provincial capitals. Madrid also has three of the five most dangerous areas in the whole country.

Over the past few years I have seen marble in many applications and next year I predict marble is going to get even more attention. We are definitely moving away from traditional cream marble and leaning more towards white and off-white. Mauro Tiberi, Managing Director of Disegno Casa in Marbella, told me that 2013 will see a huge rise in marble designed to mimic hardwood flooring. Other trends will be heavily veined marble and statement walls fashioned wholly or in part from marble. MIX AND MATCHPattern will stop being so matchy-matchy and instead patterns and colours will clash to make beautiful interiors that stimulate your senses. FEELING CRAFTYThe taste for the homely and the craft-based is on the rise in interior design; think large scale knits and macramé increasingly being incorporated into decor and furniture. IN THE SPOTLIGHT Lighting has evolved from dainty to dash-ing; think functional sculptures for the home. Setting and scale are crucial when making a statement with lighting. Continuing with the trend towards strong patterns, you will notice an influx of geometric prints. Vibrant, bold, dramatic pieces are a great addi-tion to any design aesthetic. Geo-metric wallpaper used to decorate a feature wall, whether matched with minimal styling or contrasting pat-terns will definitely get people talking. To make your room sing, choose soft furnishings with geo-metric designs or a rug with abstract shapes in bright hues. Remember, a rug doesn’t have JUST to serve a func-tion but can also be an object of art for the floor.

The launch of Ambience Construc-tion unites a team of dedicated specialists in the fields of building and

design. Providing a unique service when it comes to house renovation, refurbishment or new builds, they deliver a service that pushes the limits of what should be expect-ed from the industry.This year has certainly been eventful for German born, Andrea Böck, managing director of Ambience Home Design. Not only has she just celebrated the ten year anniversary of her interior design company, Ambience Home Design S.L, but has also co-founded Ambience Construction.

Since 2006, Ambience has been heav-ily involved in project management and refurbishment. Always a perfectionist, Andrea knew that the only way to control the building side and make sure that it matched her high standards, was to offer an in-house service.

“I wanted the designer and builders to be on the same team, because too often things fall through the cracks,” she ex-plains. “Sometimes the builder will blame the designer and sometimes the designer will blame the builder, but when they are part of the same unit, no one can blame anyone else. Working from the same office allows a constant communication which is vital for avoiding mistakes and problems, which would inevitably cost time, and time costs money. This will immediately put the client at ease.”

Having worked alongside Valencia born Pablo Hernández for many years, a mutual respect soon developed. Both Andrea and

Pablo were of the same mind, being hard-working perfectionists, traits which are hard to find on the Coast, and Pablo’s love for his work made him the obvious choice to join Ambience Construction.

Pablo, who is fluent in English, comes from three generations of highly skilled builders, with a vast experience in new builds and refurbishment of residential and commer-cial properties. Having worked on site for his family’s company alongside his father since he was 15, he has more than simply passion for what he does; it is in his blood. With a keen eye for detail and strong ambitious streak it was only going to be a matter of time before he decided to start his own company.

“Currently we are working on two refurbish-ments,” reveals Pablo. “Both properties are over 30 years old, meaning they will need to be completely stripped of their walls, kitchen, bathrooms etc. Basically we will be starting from scratch. This work is extremely complex, as design and construction are undertaken over a relatively short time scale. An extensive knowledge of materi-als’ use, services, structural elements and construction has to be blended with de-sign to offer an imaginative, practical and reliable service. Our site experience is es-sential in overcoming any problems as they arise, ensuring programmes are adhered to and cost projections met.”

In the New Year, Ambience Construc-tion will be completing a 10 year old, half finished villa. The team’s creative vision and aesthetic skills, combined with flawless con-struction techniques and craftsmanship,

will be put to the test and the outcome is certain to be spectacular, so watch this space for the before and after results.

of governments to act. But the report clearly observes that measures adopt-ed so far to address the lower growth outlook have been inadequate.

Heading the IMF’s eurozone wish list is the active use of the European Stability Mechanism, the region’s new bailout fund for financially distressed nations and banks. The IMF also favours great-er integration of eurozone fiscal/budg-etary policies. In the US, the short-term imperatives for the IMF are avoiding the “fiscal cliff” (growth-threatening spending cuts and tax hikes that will automatically come into force at the beginning of 2013 under prevailing legislation) and addressing the nation’s debt ceiling. Among general issues, the IMF stresses that greater efforts are required to reduce indebtedness, tighten financial sector regulations and tackle long-term unemployment.

The International Monetary Fund’s latest World Economic Outlook, issued in October, paints a rather

gloomy picture. The IMF has reduced its growth expectations further, fore-casting global growth of 3.3% in 2012 and 3.6% in 2013, vs. previous estimates of 3.5% and 3.9%, respectively. The IMF expects most economic areas, devel-oped and developing alike, to perform worse than hitherto, with the largest impact, in nominal percentage terms, being in Brazil and India. The only data item to be revised upwards is this year’s US growth estimate, from 2.0% to 2.2% (the 2013 US forecast is cut to 2.1% from 2.3%).

The phrasing of the IMF report is typically neutral; reading between the lines, however, one detects a certain scepticism regarding the readiness

to pass new legislation, as the ruling Democrats lack a majority in the House of Representatives. This will inevitably require compromises that may ulti-mately render such legislation ineffec-tive. And, within the EU itself, recent divisive rhetoric from the UK, where the idea of exit-ing the EU is gathering support, hardly bodes well for the effective implemen-tation of pro-growth regional policies.

As the IMF report emphasises, the world’s future prosperity depends on the willingness of governments to em-brace policies that ensure sustainable economic growth. I t may well be the season of Peace and Goodwill to all Men, but believe me Christmas can be

a spiritual, emotional and financial minefield to the uninitiated. I have already written about the benefits of avoiding Christmas altogether in pre-vious issues of this publication (mov-ing to Iran seems a safe bet) and how to deal with the annual seasonal invasion of your home.

All this pales into insignificance how-ever when you consider the biggest festive mantrap for the unwary – the office Christmas party. Now I’ve never been backwards in coming forwards when there is a social occa-sion in the offing, but I try and avoid office parties whenever possible. As I may have mentioned before, the fes-tive season in general is full of ama-teurs getting out of their tiny skulls in the shortest possible time while wear-ing silly hats, and I pride myself on being a professional lunch guest. If you were looking at the one social occasion in the year that leads to relationship breakups, underlying workplace tensions to boil to the surface, unbridled Alpha male brag-ging, uncoordinated dancing as well as dry humping in the stationary cup-board, then the office party offers all this and more. And I speak from experience in these matters, trust me.In the early 90s I was working for a contract publishing firm based in the City of London. One of the distinguishing features of this par-ticular company was its “aggressive” telesales team. In reality they were a motley bunch of cut price Gor-don Gecko alikes, delusionals, coke fiends and the otherwise unemploy-able that were paid in cash each Friday evening and were normally

needing subs on Monday. (In one memorable instance one of the sales team was marched into reception by a couple of huge Yardies, who less than politely explained that said salesman had racked up a large debt in their crack house and that they were expecting payment then and there). The plain clothes drugs squad raid that followed lead to a vigorous flushing of the office toilet system on the sales floor.

So the office Christmas party was always going to be a lively affair…Just for once I’ll draw a veil over the proceedings, just to mention that the queue for the toilets was longer than the one for the bar, very few peo-ple seemed to be interested in the starters and most of us decamped to the infamous Turnmills Club and then onto the all night Smithfield Market, where you could get a pint at five in the morning if you looked like meat market traders. Which we did, if you were buying your bacon in Bogotá…One of the joys of having spent a career in the publishing industry is Christmas lunch with your printer. I’ve had lunch with Spanish printers and British printers and the remarkable similarity between them is the huge amounts of booze involved. On one infamous occasion I lunched with my printer and, a little “over-refreshed” headed back into London where I was due to attend a Christmas Cock-tail Party at the Houses of Parliament. Beaming merrily at the assembled MPs, VIPs and my managing director, all was going well until I went to lean casually on the canapés table and missed, catching the ledge of said table with elbow. My flailing weight acted as a fulcrum and shot a volley of volovents over the startled guests.

In the deathly hush that fell over the room, my managing director walked over to where I lay and, in a master-stroke of understatement said “I think you’d better leave…”

Then of course there are the office parties where someone tries to be humorous. A (now defunct) Marbella Real Estate firm once held a Christ-mas bash at a Five Star hotel, were a section of the sales force decided to do a comedy version of YMCA on the dance floor before the MD. All was fine, although they were obviously a little tipsy, until the next song, “Sex Bomb”, came on. One member of the team had to be dragged off the startled boss and a tablecloth flung over her. There were wide scale sack-ings the day after. Even worse is if your boss tries to be one of the boys and encourages you to speak freely. I still vividly remember one occasion when one salesman declared that the Irish “were a nation of tinkers” (the MD was from Cork) while an-other drunkenly sang “Deutschland uber Alles” at the table in front of the Jewish Boss. In both cases P45s were issued the next day…And then there’s sex. If you have long had the hidden hots for the re-ceptionist, then the Christmas party, when normally partners are not invit-ed, can be the catalyst for a bout of frenzied festive fumbling. My advice, learned the hard earned way, is the following. What happens on the photocopier, stays on the photocopier, un-less you’ve pressed ‘Copy’ halfway through…

The touch, feel and balance of a car’s control weights are a major part of the supercar driving experi-

ence, particularly for a hard-core enthusi-ast’s machine like the McLaren MP4-12C.

As you use the paddle shifters and steer-ing all the time, the interaction you have with these two major controls is as critical to the overall driving experience as en-gine response and the way the car goes down the road.

On the pre-production MP4-12C Coupe I drove last year, I found that the ‘trigger’ force required to initiate an up or down-shift required a bit too much conscious effort.

The actuation force required is now signifi-cantly lower and feels very smooth and intuitive to the fingertips. A good analogy would be the difference between the trigger pull of a good off-the-shelf gun versus a precision sniper rifle.

In the intervening months, the rest of the MP4-12C Coupe, and the 12C Spider, as the open version is officially tagged, has been honed to perfection in a similar way. As far as driver engagement is con-cerned, the effect of these improvements is magnified by the open version.

The steering, ride, handling and grip of any car are directly linked to its structural rigidity. Make a car rigid enough, and you don’t need as stiff a suspension, which benefits ride and handling.

With a torsional stiffness of 23,000Nm/de-gree, the 12C Spider shows no loss of ac-

tual or perceived rigidity over its Coupe sister. Both versions were developed alongside each other so that the Spider would be totally uncompromised in every aspect of its dynamic performance.

Despite its sophisticated electronic help-ers in the form of the active damping and Brake Steer system, the 12C Spider is extremely tactile on the limit in terms of how the front end talks to you through the steering wheel and the back end through the seat of your pants.

After a glorious summer, the Spanish climate decided to throw a wet morning at us on the day I drove the Spider at the Ascari Race Resort. When I first ventured out on the circuit, the tarmac was drying out quickly but it was still quite slippery.

After a lap to warm the tyres, I started to push, looking to explore the way the

car would talk to me as it neared and reached the limit of adhesion. Turn the Spider into a bend, and your fingertips re-lay exactly the same beautifully weighted and precise feedback as the Coupe.

The transparency of feedback allows you to clearly feel the onset of slip in the form of progressively increasing understeer and lightness at the helm as the front Pirellis approach the limit of their mechanical grip.

At that point, removing a few degrees of steering lock and adding a fraction more power is all that is required to balance things out and exit the corner as quickly as possible in these conditions.

If you want to be more exuberant, the Track mode setting allows you to add yet more power and bring the tail round in a power-on drift. Breakaway at the rear is so progressive, so well telegraphed compared to other mid-engined cars, you would have to be fast asleep to not catch it.

Later on, when the track was completely dry, I found the level of sheer mechanical grip to be very impressive indeed. Just as McLaren’s engineers said, there is abso-

lutely no difference in the Spider’s dy-namic abilities compared to the Coupe, which is a first for an open car of this type.

A 2013 model by the time it reaches the first customers, the 12C Spider benefits from a number of the on going upgrades McLaren will make available free-of-charge to existing MP4-12C owners.

The most significant of these is the horsepower increase. At launch, the 3.8-litre, twin-turbocharged, flat-plane crank V8 motor was rated at 592bhp at 7,000rpm and 600Nm (443 lb ft) Nm of torque between 3,000 and 7,000rpm.

Richard Farquhar, Head of Pow-ertrain at McLaren, told me that for the 2013 model year, the new big number is 616bhp (625PS) at 7,500rpm, with the peak torque of 600Nm unchanged.

“Although the power increase is at the top end of the rev range, thanks to subtle remapping of the ECU’s fuelling and ignition timing, we have also improved response through the whole rev range, and maximum boost pressure is increased by 0.1 bar to 2.3 bar, with no over-boost facility,” he explained. “The remap is a software upgrade uploaded via the diag-nostic port at an official dealer.”

Part of this remap has altered the pa-rameters in Track mode so that the aural effect of the ‘blip’ on downshifting from the Intake Sound Generator (ISG) is improved. At the same time, the driver’s

choice from a variable menu means you can even set the car in the mild Normal modes together with maximum sound

effects, or in Track mode in combination the quietest road setting for circuits

with extra stringent noise limita-tions.

Incidentally, the car has a total of 36 ECUs in its on-board CAN-BUS network. The main

engine ECU is made by Bosch, but the Powertrain Chassis

Control Unit (PCCU) system and its interface to the Bosch ECU, are

designed, built and calibrated in-house by McLaren.

The increased power almost makes up for the 40kg additional weight of the 12C Spi-der, but as its drag coefficient is marginally worse than the Coupe’s 0.32, top speed is down by 3.0 km/h.

Also, while the 0-100km/h sprint takes the same 3.1 sec as the Coupe, utilising the extra grip of the optional Pirelli Corsa rubber, the 0-200km/h sprint now takes 9.0 sec rather than 8.8 sec.

Real world performance is also helped by the McLaren’s relatively low weight. While it now tips the scales at 1,474kg, 40kg more than its Coupe sister, the 12C Spider remains about 55kg lighter than its less powerful Italian rival.

The Spider’s extra weight is made up of the pumps, motors and struts of the electro-hydraulic roof operating mecha-nism, and the steel roll-over protection

hoops, all of which raise the cars centre of gravity very slightly.

However, as the extra weight is contained within the centre mass area between the cabin and engine, the front/rear weight distribution remains 42/58 percent, with no bearing on the all-important polar mo-ment of inertia and consequent handling balance.

Just as I had found on some familiar test roads in the UK when I drove the 12C Coupe last year, the 12C Spider quickly proved its supreme abilities as a practical supercar on Spanish country roads.

Under rapidly improving skies, the al fres-co 12C was in its element. The two-piece solid roof goes from open to closed, or vice versa in 17 seconds, and can be op-erated up to 30km/h. This is fast enough for you to button up on the fly in slow moving traffic if a dark cloud decides to dump its contents on you.

Unlike other convertible cars, McLaren have built in a ‘check’ interlock mecha-nism to the system to prevent inadvertent operation. When you press the button to open the roof, a warning buzzer and an alert on the instrument cluster prompts you to press the OK button on the end of the left steering column stalk to confirm you actually want to open the roof and then clears it for operation.

With the roof stowed, and the side win-dows and rear glass up, buffeting in the cabin is very much a function of speed. This can be adjusted to some extent by the chosen height of the rear glass panel that acts as a wind deflector when the side windows are up.

This vertical heated rear glass panel can also be opened for extra ventilation with the roof closed, or if you just want to hear more of the engine’s tuneful soundtrack.

The mid-range thrust is deeply impres-sive, even if it stops short of turning the superlight alloy wheels within their tyres. But as the big rear Pirellis deuce it out with the tarmac, you definitely sense that your forward motion is a struggle be-tween rubber, tarmac, metal, driveshaft strength and a force whose intensity is barely restrained by selection of the next ratio up in the superfast seven-speed SSG gearbox.

This is far and away a more engaging physical and mental experience com-pared to the competent but rather detached one I encountered with the pre-production Coupe last year. It is everything I had hoped for from the 12C Spider, and stirs the emotions like a major league supercar should.

Our test cars had the lightweight steel brakes rather than the optional carbon-ceramics, but they are extremely effec-tive and confidence inspiring, washing off big speeds rapidly on both road and track with no signs of fade.

You do have to get used to the immedia-cy and bite of these brakes, so initially, the limiting factor is lack of driver confidence to really push the pedal down hard until you get used to their characteristics.

Their raw ability is aided and abetted by the active front damping that resists dive under braking, and the rear spoiler that shoots up to maximum extension, creat-ing down force over the rear axle to miti-gate weight transfer. All this means that you can lean on the brakes very hard indeed before triggering the ABS.

Practical issues with supercars come down to three major questions. How fresh will you be at the end of a trans-Conti-nental dash, how much luggage can you take with you, and how you avoid dam-aging the front spoiler on car park ramps and speed humps?

On the first score, the McLaren 12C Spider shares its Coupe sister’s fine ride quality, which is as comfortable as a BMW M5s on real world roads. On the second, both the 12C Coupe and Spider share the same 144-litre front luggage compartment that swallows a couple of airline carry-on bags, with space around them for small oddments.

However, the Spider has a trump card in the form of a small additional compart-ment under the roof’s rear deck cover that offers 52-litres of additional stowage space when the roof is up.

tional noises missing from the debut test cars. The throaty intake roar and deeper bass of the exhaust conspire with the twin turbochargers to make a serious supercar sound that becomes increasingly exotic as crankshaft speeds rise.

The potent torque curve means that you don’t actually need a lot of revs to move down the road rapidly in normal driving. But once you have the open road in front of you and minimal traffic, it is hard to re-sist the urge to open the taps all the way through the gears.

Drop the hammer and the deep growl of the low-end morphs into a flat plane crank V8 howl as the rev counter need passes the 4,000rpm mark, and then turns into a racecar-like scream as it ap-proaches 6,000rpm and beyond.

With the sound coming from behind your head as well as bouncing off bits of the landscape, the wind roar picks up too, and the aural experience becomes almost overwhelming.

It reaches visceral levels just as you trigger an upshift at 7,500rpm. You pick up the ‘psst, psst’ of the wastegates blowing off excess boost in the periphery of your hearing, before the motor hunkers down and resumes its upward charge.

underside cover, and these ensure that what you put into the bags will fit the available space. You also have to check that the rear glass panel will clear the full bags should you want to lower it.

Last but not least, McLaren have made full use of the capabilities of their Active Ride suspension to add in a Vehicle Lift feature that can raise all four corners of the car by 40mm to clear ramps.

I asked Richard Farquhar why his team chose to raise all four corners and not just the front axle like rival manufacturers. “The McLaren ProActive Chassis Control,

This is also significantly less than the pre-mium Ferrari requires for their Italia Spider over the Berlinetta. It is no surprise that McLaren has 12C Spiders orders com-ing in with a ratio of three to one to the Coupe.

From the point of view of theatre when you park up and get out, McLaren also scores brownie points for retaining the MP4-12C Coupe’s butterfly door configu-ration on the Spider. In comparison, the SLS AMG loses its gullwing doors in favour of a conventional solution on its Roadster. This also gives the McLaren a leg up over its rivals from Ferrari and Lamborghini.

Supercar manufacturers are well known for foisting unfinished and unresolved products on their custom-ers, supported by a brand myth that the machinery mostly does not match. In this respect, McLaren have broken the mould by showing a previously unheard of level of customer commit-ment.

It may seem ridiculous to state that the McLaren 12C Spider is good value for money in the face of the biggest financial crisis the world has ever seen. But when you look at the tremendous technical achievement this car repre-

To their credit, McLaren have been extremely receptive to comments from both owners and the press about the lack of soundtrack in the early cars, and have moved to address these points with the speed and energy expected of a World Championship F1 team.

More than that, seemingly without the ego and arrogance of their chief rival from Italy, McLaren has undertaken to upgrade all existing cars to the latest engine and exhaust spec at no cost to their owners. This free upgrade scheme includes the latest generation of sat-nav system, if specified as an option on a 2012 model year car.

A somewhat nerdy friend was recently expounding with great en-thusiasm, not to say gusto, on the

subject of ‘TAPAS’. As it was late, and at the tail end of a somewhat bibulous gath-ering, it was some time before it dawned upon the assembled company that all was not as it should be. It became appar-ent that the toothsome little edibles which constitute the average person’s concep-tion of ‘tapas’ were far from his imaginings. Further investigation revealed that he had been privileged to attend the first interna-tional conference in Rome dealing with the ‘Theory And Practice of Algorithms in Systems’, and that he was anxious to share his new found knowledge with his friends. Having thrown him into the street, the con-versation rightly turned to the all important subject so dear to the average bar-fly’s heart – Tapas.

An undeniable truth swiftly

became apparent. If you want to start an argument in a bar, simply ask “Who invented ‘Tapas’? (In the north of the country these are called “pinchos”, whether or not they are skewered, whilst in Valen-cia they tend to take the form of “montaditos” as they are served on bread rather than with it). The discussion regard-ing origins may continue for some considerable time. Was it Alfonso X (1221-1284), Felipe III (1578-1621) or Alfonso XII (1857-1885)? Alfonso X was nicknamed ‘El Sabio’ (The Wise), and perhaps showed his wisdom when he wrote “Spain is rich in honeys, abundant with fruits, teeming with fish, well provided with milk… filled with deer and game, covered with cattle, merry with good wine, happy with an abundance of bread and sugar… well stocked with oil and fragrant with saffron”. Could he also add “Covered with Tapas”? (Did you enjoy the pun?!) His constitution was such that he could not eat vast quantities of food at a sitting, and so on the advice of his doctors resorted to a “little and often” diet. Felipe III, nicknamed ‘El Piadoso’ (The Pious) was a true son of his father, the somewhat taciturn and killjoy Felipe II (of “Invincible Armada” fame), who noticed with consid-erable concern that the peasantry had a distressing tendency to return to work after

the siesta totally blotto. He therefore en-acted that no alcoholic refreshment was to be taken without some food to absorb the alcohol. Alfonso XII “El Pacificador” (the Peacemaker – educated at the Royal Military Academy, Sandhurst!) registers his claim to be the originator of this little snack on account of the fact that whilst travelling one day in the Cádiz region of Andalusia, he stopped at an inn where he was served a slice of bread with some ham to accom-pany his glass of wine. The wind, as usual, was in full strength, and in order to stop the tiny Spanish fruit flies being blown into his glass the king slipped his snack on top of it. When he ordered his second glass, he ordered a tapa (cover) to go with it. It may be that he enjoyed his bread and ham covered in fruit flies (which Cambridge

With such a provision of food and drink it is possible, as Alfonso El Sabio found, to live entirely on tapas; and the writer knows of a travelling salesman who does just this, con-suming eighteen tapas a day (he draws a delicate veil over his alcoholic intake!). Consumption of this nature is called a tapeo or chiquiteo and is a typically Span-

ish phenomenon. What could be better than a little drink, a little food, a little con-versation, before a little stroll to the next tasca to repeat the experience? Throughout Spain each “tasca” (bar) will have its own speciality, and each tends to mirror the locality (and, indeed, the micro

research has shown actually rank high in intelligence in the insect world). A coaster might have been a more practical solu-tion.

As with so much else, Sevilla likes to lay claim to being the “Tapas” capital of Spain, but nowadays the practice of auto-matically serving tapas with drinks is virtually confined to the province of Granada. Here the old tradition is zealously maintained, and the tapas can range from a few olives or salted almonds, to a small concha or cazuelita (plate) of magro con tomate or paella. In “the old days” these were served accompanied by a glass of fino sherry or the local wine. Now, however, it is just as common to find a glass of beer (caña) as an accompaniment.

Indeed, no meal or snack worthy of the name is possible in Spain with a serving of the Staff of Life! If, however, one partakes of more than one drink, it is very rare to find that one is served with the same tapa twice.

The varieties are endless. Age-old regional recipes using local ingredients and coming from differing traditions may be found. It was the Romans who introduced olives into the peninsula; the Moors followed up with almonds, citrus fruits, and spices. The Conquista-dores gave more to posterity than the easily and readily squandered gold and silver

from “The New World”. They introduced tomatoes, pimientos, chillis, beans and potatoes to their compatriots. Whilst along the immense coastline of Iberia, fisherman have been harvesting the sea from time immemorial. All these ingredients, treated simply, may be found in the composition of a tapa. One of the great advantages of the tapa from the point of view either of the private hostess or the busy bar owner, is that such snacks can be prepared well in advance and either served cold or swiftly reheated. Only fritos need to be served sizzling from the hot (hopefully olive) oil. It doesn’t particularly matter what is in it. What is important is that it is tasty – and free!

In Catalonia they maintain that Turrón was invented by a man called Pablo Turrons during the

War of the Spanish Succession (1701-1714). A nice conceit, but one totally at variance with the facts. It was the Moors, once again, who were responsible for giving to Spain the sweetmeat without which Christmas would not be Christmas. It was in the province of Valencia that Moors and Jews, living in harmony, first concocted what they called ‘halvo’ (a variant of which is still to be found in Turkey and the Near East as halva). It may be eaten in a hard crunchy form (Turron Alicante) or as a soft comforting mass (Turron Jijona). These two Valencian towns are the only places where manufac-ture of the genuine article may take place (they hold a ‘Denominación de Origen’), although other centres are to be found (even in Catalonia!). The name, Turrón, may derive from an eleventh century arab treatise which speaks of ‘turun’. On the other hand, the name may equally derive from the latin ‘torrere’ (to toast), but this is probably less likely as the Roman equivalent of ‘turron’, mentioned with approbation by several Roman poets, was known as ‘cupedia’ or ‘cupeto’. It was not until the fifteenth century that the sweet became popular, due to an increase in living standards (at least amongst the upper classes). So popular did it become that it formed the main plot of the play ‘Los lacayos

more and more restrictions, until many confectioners removed themselves to Jijona during the reign of Charles II (1665-1700). Here, free from interfer-ence, they developed a soft version of what had been, until then, a hard sweetmeat. They began to use sugar from the Americas instead of honey, and this in turn helped towards the development of the great sugarcane plantations in Andalusia. The first ex-tant recipe for turron in the sixteenth century ‘Manual de Mujeres’ calls for honey, almonds (or pine nuts or ha-zelnuts), and egg whites. In Alicante, traditionally, the honey was cooked in a double bottomed pot called a ‘mal-axadora’. Sugar and egg whites were added, then whole skinned toasted almonds. When the melero point was reached, the mixture was moulded, cut into bars, covered in wafers, and stored for a year. This method is still largely used today, although in a mechanised form. In Jijona, in order to soften the product, the cooled block of turron is ground up with almond oil into a paste, reheated in what are called ‘boixets’, and beaten for several hours with a paddle to form a smooth paste. Egg whites are then added. Nowadays it is possible to find variations on the tradi-tional mixtures, with the addi-tion of candied fruits, coconut (turron de nieve), chocolate, strawberries and cream… you name it! You may even find turron made especially for diabetics or in a

In the same century it be-came the custom in Alicante to pay part of the Christmas wages a bushel of turron (perhaps the footmen hadn’t been paid!). This practice clearly got out of hand, as the city received a stern rebuke from Philip II in 1595, ordering that nobody should receive turron or fig bread in excess of a value of fifty livres.

The Guild of Bakers in Alicante, re-sponsible for the production of turron, began to exercise greater and great-er control over the producers, with

low calorie variety; although this be-gins to stretch the traditional methods rather too far! The candied fruits used in this variety of turron come mainly from Aragon.

In 1603 Bartolomé Joly, an intrepid French traveller, found himself in Cal-atayud, a small town in that province. He had noticed the superb fruit grown (even today) in the equable climate on the banks of the local rivers. What came as a surprise to him, however, was the fact that the inhabitants of the town boiled their fruit in sugar in order to preserve it. They obtained this rare commodity from the sugar plan-tations of the Canary Islands and An-dalusia, where production flourished between the 16th and 18th centuries. The resultant ‘candied’ fruit was then given as presents at fiestas, particu-

larly Christmas. More recently the local confectioners have hit on the idea of coating such fruit in chocolate, and so ‘Frutas de Aragón’ have made their ap-pearance. This has proved so highly successful that it has been copied elsewhere, not always successfully. It is not always easy to ensure that the chocolate remains cohered to the fruit! True ‘Frutas de Aragón’ are marked with a ‘C’ (‘calidad’) to de-note their quality, and may only be made from oranges, peaches, apri-cots, figs, cherries, plums, apples and pears. No artificial colourings or preservatives are allowed, and the chocolate must be made with cocoa butter (which pre-cludes most British chocolate!).

Another Aragonese sweetmeat is, of course, guirlache, made from al-monds and caramelised sugar. It may perhaps be regarded as a regional variant of Turron Alicante, in that it is crunchy and contains whole al-monds. It has a history certainly as old as that of turron. Whole almonds are also used in the production of pela-dillas. This confection is produced in one of the centres of turron produc-tion in Valencia, Casinos. These are the sugared almonds so necessary as gifts at baptisms in Spain, Greece, and many other countries. The trade developed as a result of the vast number of almond trees to be found in the region, coupled with the import of American sugar through the port of Alicante. Canary Island sugar, already mentioned, is no longer the profitable commodity that it once was, and the trade has all but vanished, save for the production of very acceptable rum. The islands also produce ‘miel de palma’ which is not only delec-table drizzled over fried aubergines, pastries or cheese, but is also a tried and tested specific against throat and mouth infections!

The Nermans experience starts the minute you walk in the door. Per-sonally greeted by the staff and

the owner himself, we are shown to our table accompanied by smiles and welcoming words.

Tucked away in the beautiful en-clave of the Los Naranjos golf club in Nueva Andalucía, this small but perfectly formed restaurant feels like the best dinner party you have ever given. The food is described by owner Joakim Nerman as “fancy home cooking” and the intimate and welcoming setting all contribute to a real sense of belonging.

There is a palpable sense of passion here – the owner tells us that 80% of his business is repeat, always the surest in-dication that something is being done correctly. He seems genuinely de-lighted to have discovered his talented new Head Chef, Tomas Matu, only 26 years old but with an impressive CV un-der his culinary belt. After completing his training in his native Poland, Tomas went to Ireland and worked under the wonderful Richard Corrigan at Bentleys Oyster Bar & Grill in Dublin and then with Dutch chef Martijn Kajuiter at the Cliff House in Ardmore, both Michelin-starred chefs.

was presented in a cleaned and hol-lowed out bone, and we were encour-aged to use our silver marrow spoons to scoop the mixture out. This was a fun touch and redolent of 18th century European dining.

Returning to his Irish training roots, the chef had prepared a grilled fillet of Irish Angus beef for the main course. This was accompanied by beautiful bread and butter pudding fused with wild mushroom and a hint of black truf-fle. The meat had clearly been cooked with great care, something that Rich-ard Corrigan had taught him; respect the animal by cooking the meat rare and bringing out its true flavour.

The dishes were accompanied by a well-thought out selection of Spanish wines – a beautiful Chardonnay from Navarra, and two contrasting but deli-cious reds from Ribera del Duero.

There was a touch of El Bulli with the dessert; a smooth and creamy dark chocolate mousse with lemon fused olive oil drops; mini meringues that melted in your mouth revealing a surprising and beautiful taste of virgin olive oil at the end. The dish was stun-ningly accompanied by a 20-year-old Osborne Port, that was sweet and rich and the perfect companion to the light dessert.

Finally, we were presented with a cheese plate like no other. An amazing crème brulee made with Brie, a soft French Chaume wrapped in blanched leeks and a very aromatic blue cheese that had been soaked in a liquidised Madeira marinade. This was a strong and impressive fusion of taste and originality, and a real talking point at the table.

The chef joined us for a glass of Port and told us about his dedication to developing his skills– he changes the menu on a weekly basis and offers a popular tasting menu for €49 for 5 courses, 5 matching wines and a pre-dinner drink.

Nermans will be closed for Christmas but is offering a New Year’s Eve menu for €95 p.p including 6 courses and champagne. I would highly recom-mend this restaurant to anyone who loves their food and enjoys being made to feel part of the family.

Last month, over 80 peo-ple attended Garum Restaurant for lunch.They presented the new fish ‘toothfish’ as the main course, a fish that has been introduced to the market in Norway, and garum has the pleasure to be the first place in Spain serving this fish.

2012 Marbella Luxury Weekend. But this time, potential buy-

ers were really excited by the prospect of being able to drive

the world’s most spectacular new supercar for themselves.

Unfortunately the rain that had been giving the Costa Del

Sol so much grief in recent weeks had not totally gone, and

intermittent showers the next morning meant that deploying

the Huayra’s 730 hp was not an option during the test ride

and drive session.

Thankfully, the roads dried out enough for Pagani’s factory

test driver to show off some of the Huayra’s capabilities to

guests who were too timid to take the wheel themselves.

Despite the weather, the Pagani weekend ended on a high

note with a fine buffet lunch at a private villa in La Zagaleta.
