Here at Simpson’s we have tried to collect a diverse selection of wines to suit the

diverse nature of our food. With examples from both the new and old world we have

tried to ensure that each is of the best quality for the style and price.

We have laid out the wine list by grape variety starting with the grapes that produce

the lighter and more aromatic wines through to the richer and more savoury styles.

This should allow people to explore wines that may be outside their comfort zone but

not a million miles away in style.

Ruinart Champagne: Our House Champagne comes from Ruinart. They are the oldest recorded champagne house, being founded in 1729 when the then textile merchants decided that the Champagne business was doing better and was the future of the region. They have always specialised in elegant styles of Champagne with a focus on high quality chardonnay grapes particularly in their signature Blanc de Blancs.

Coravin: Fine Wines Coravin is an exciting new wine preservation system that allows wine to be removed from the bottle without removing the cork. It then replaces the air inside with inert Argon gas to prevent oxidation. This has allowed us to access some excellent fine wines and older vintages without the worry of loss of character.

Champagne:

Blanc de Blancs: Champagnes made from just white grapes; most often just the Chardonnay grape. Non-vintage examples are more fresh in style whilst the Vintage champagnes are often more complex and can be reminiscent of white burgundy with bubbles.

Champagne: Dom Perignon

Dom Perignon was a French Benedictine monk based in the Abbey of Hautvillers. Contrary to popular belief he didn’t invent sparkling Champagne. Dom Perignon was a leader in the art of blending wines to produce an exceptional product; now the backbone of Champagne production.

Older Vintages:

Dom Perignon often hold back some of their wines to be released at a later point. As a champagne matures it reaches 3 different peaks of excellence through its life, these are known as Plenitudes. The first peak is the first release of Dom Perignon. They then release the champagne again at its second and then third Plenitude. These are some of the most intense and expressive forms of champagne to be found.

English Wine:

England’s Sparkling wine history is longer than people think with Christopher Merrett, an English Scientist, who made influential changes to the Champagne Method of production in the 17th Century. However, production of quality wines is a much more recent step. Produced in the same method and from the same grapes as Champagne it can produce some excellent sparkling wines to rival its French cousins and due to climate changes our still wines are getting better all the time.

Rose Wines Rose wines are made from red grapes that have had a very short soak on the skins to add a touch of colour and a layer of red fruit whilst retaining their lighter body. They show different colours, such as delicate salmon and peach through to deep pink and light red. Colours usually have more body and a touch of structure; this is a result of a slightly longer maceration on the skin.

Sweet Wines: Late Harvest & Noble Rot: Late Harvest wines are made from grapes that have developed a natural sweetness by simply being left on the vines for additional time. In very particular weather conditions, certain Noble Rot, or Botrytis, can affect the grapes. This fungus lives on the skins of the grapes and draws the water from them, thus concentrating the sweetness and flavours. Often characterised by a marmalade note they can be fresh to lusciously sweet depending on how advanced the fungus is.

Ice Wine: These wines are made from grapes that have frozen solid. Freezing is achieved when the temperature reaches at least -8oC. This usually occurs during the night and when pressed the juice of these grapes is highly concentrated. They show wines of intense varietal character.

Orange Wines:

These are wines made from white grapes in the same manner as red wine. To produce a white wine, the skins are removed after the juice is pressed and they are discarded. However, in the case of Orange wine the skins are left with the juice to macerate during fermentation. This process adds a more unusual character to the wines and a tannic structure more akin to red wines.
