    The name Ukraine is rooted in the word oukraina (outskirts). In Ancient Rus it was thename for the part of contemporary Ukraine. This term denotes the unit similar to the ancientGermanic geographical unit marcha (border).

    Cuisie UkraieRecipes of national Ukrainian dishes

    Ukraiia brshIgrediets:2 carrots, 1 onion, 1 beet, 2 liters of broth, 300 grams of pork,3-4 potatoes, 3 tablespoons of sour cabbage, greens, sunfloweroil for frying, salt to taste.

    Methd preparati:Grate 1 carrot, chop onion. Fry onions in preheated pan untilit turns golden brown. Add some carrots. Stew them until theysoften. Add a mix of fried carrots and onions into 2 liters of theready broth. Add some salt. In 5 minutes add diced pork. Skimcontinuously. Boil until the meat is cooked. Dice potatoes andadd into borshch. Add sour cabbage. Grant carrots and beets and

    fry in a little amount of oil. Add into borshch after potatoes have been cooked. Bring to a boiland take from the heat. Sprinkle with shredded greens.

    Cutlet p-kievskiIgrediets:2 chicken drumsticks, 100 grams of butter, 1 egg, 100 gramsflour, 100 grams of bread crumbs, 200 milliliter vegetable oil,dill, pepper, salt

    Methd preparati:Separate thigh bone from meat. Tenderize, salt and peppermeat. Divide butter into 2 parts. Form the cone and sprinkle itwith shredded dill. Put into a freezer for 10-15 minutes. Put thecone of butter in the centre of the meat. Make a ro ll. Stuff skinwith the roll. Coat with flour, egg mixture and then with bread

    crumbs. Fry in boiling oil.

    Dumpligs with ptatesIgrediets:2 cups flour, 4 tablespoons milk, 1 egg, 200g of potatoes, 1 onion,salt.

    Methd preparati:Blend egg with milk. Sift flour. Pour milk into flour and kneaddough. Form a ball of dough, cover it with food wrap and leavelike that for 20 minutes. Thinly roll out the dough. Make smallcircles of dough . Cook jacket potatoes, peel and mash them.Chop onions and fry until golden brown. Add them into mashedpotatoes. Put the made filling in the centre of dough circles andstick the edges together. Put vareniki into salted boiling water.

    When vareniki come up, boil for another 5 minutes.

    Methd preparati:Take a big cabbage and remove its leaves. Put them into boilingwater for 3-4 minutes.

    Take leaves out, let water trickle down and then cool the leaves.Place leaves on the table and salt. Boil rice half ready. Boilchicken legs, separate meat from bones and mince it. Mix rice

    and meat, salt and pepper. Make stuffed rolls of the cabbage leaves. Place rolls into a deepstewing pan, pour in broth (the one you got after boiling chicken) and cook in oven.

    alm with leekIgrediets:250 grams of fresh-frozen salmon, a stalk of leek, 1 onion,1 tablespoon sour cream, vegetable oil - for frying, salt andpepper.

    Methd preparati:Wash a salmon and remove its skin. Cut the fillet into 2 pieces(for 2 servings). Rub it with salt and pepper on the both sides.Heat the pan and fry the salmon in hot oil for 10 minutes.Remove unnecessary fat (use a paper towel) and put each pieceinto a foil bowl. Spread sour cream over the salmon and put

    Methd preparati:Sauce: cut tomatoes into halves, cut peeled onion into 4 pieces.

    Put vegetables and 2 unpeeled cloves of garlic onto baking tray.Sprinkle with oil, then salt, pepper and sprinkle with basil. Cookvegetables in preheated to 180 C (356 F) oven for 45 minutes.

    Cool vegetables. Peel garlic and tomatoes. Blend into paste. Add cream cheese, yoghurt andblend once more. Season with salt and pepper. Prepare fillet of carp. Sprinkle it with lemonjuice. Put squeezed garlic and bay leaf on top. Steam cook (in steam cooker or cook in oven)for 25 minutes. Serve carp with sauce.

    Cream sup gribchekIgrediets:1 onion, 250 grams mushrooms, 3 tablespoons olive oil 4 garliccloves, 1.5 liters of milk, 100 grams of butter, 2 sprigs parsley,salt and pepper.

    Methd preparati:Cut onions into thin strips. Fry onions in preheated pan for 3minutes, then add chopped mushrooms, salt, pepper, stir andcook for another 20 minutes. Add butter. Put mushroom sauceinto a pot, pour milk in, bring to boiling and add chopped garlic.Boil on small heat for 15 minutes. Pot should be covered. Salt.

    Blend the soup. Sprinkle with parsley.

    Pacakes with red caviarIgrediets:For the pancakes: 350 ml milk 100 g flour 50 g butter, 2 eggs,salt.For the filling: 50g butter, 50g of red caviar.

    Methd preparati:Add egg mixture, milk and melted butter into flour and kneaddough. Bake thin pancakes in well preheated pan. Smear cookedpancakes with butter. Cool. Shape nests of pancakes and putred caviar on top. Serve r ight away.

    Salad with pikeIgrediets:200g fillet of pike, 1 small onion, 1 tomato, 2 eggs, a bunch ofsalad, Iceberg, a processed cheeseFor the filling: 10g mustard 50ml olive oil, juice of lemon,cream 30ml

    Methd preparati:Put cut lettuce leaves, cut tomatoes and cut onions onto a plate.Dice processed cheese. Cut hard boiled eggs. Place eggs andcheese over vegetables.

    Steam cook (or cook in oven) pike (or any other fish), slice it andadd into salad. Well mix olive oil and lemon juice, add mustardand cream. Blend the dressing to make sure all ingredients arewell mixed. Dress the salad and serve.

    Methd preparati:Rubbed on a piece of pita bread butter. Sprinkle with grated ona coarse grater melted cheese. Cut the bacon strips. And put inthe center of lavash. Twist in the roll, cut into pieces of 5-6cm inlength.

    Iceberg, a tomato, 50 g o f hard cheese, salt and pepper.For the sauce: 10g mustard 50ml olive oil, 1 egg yolk, 30mlcream.

    Methd preparati:Tear lettuce and put on a plate. Place cut tomatoes overlettuce. Tenderize chicken fillet, salt and pepper it. Cook filletin preheated to 180 C (356 F) oven for 25 minutes. Cool and

    cut cooked fillet into strips. Dice bread and ro ast it in preheated oven. Cool bread. Sprinkle withgrated cheese and strew with dried bread. Cook sauce. Whisk mustard and olive oil. Add eggyolk. Mix well. Add cream. Blend well. Dress the salad with sauce and serve.

    ake PtatIgrediets:700-900 g of cookies (you can of nuts), 1 can of condensedmilk, 200 g butter 5 teaspoons cocoa stuff a couple of almonds(or any other nuts for decoration)

    Methd preparati:Crush cookies in blender, make sure they do not become powder.Mix butter and condensed milk.Add cocoa. Add crushed cookies into mix of butter and condensedmilk. Shape cakes as if potato. Roll cakes in cocoa. It is possibleto add nuts (e.g. almonds). Put cakes into fridge for 5-6 hours.

    Little Paris Ukrainians are called so the old part of Lviv.The historical part of the city consists of old Russian andmedieval parts. The area of only about 1 20 hectares.     A pearl of Podolia (a historical region

    in the west-central and south-westportions of present-day Ukraine).

    A beautiful, picturesque park city Vin-nitsia lies on steep banks of the South-

    ern Bug r iver.History of the city comes back to 1363

    when a wooden fortress with six tow-

    ers was built on a high hill of the leftbank of the river for the purpose of

    protection against the Tatars raids. The

    One of the oldest architectural monu-

    In a small pine grove in the eight km from Vinnitsa in the yearsof World War II was built Hitler rate under the code name WER-WOLF. The rate was intended to command military operationson the Eastern Front.     Driving along the rood from Ivano Frankovsk in the Carpathianmountains it is impossible to pass a small village called Delyatin.It is situated at the altitude of 460 meters in the mountains andforests in the valley protecting it from cold winds. Like most settle-ment in the western Ukraine Delyatin has an ancient history.

    The Golden gates are the symbol of Kiev. It is an out-standing monument to the epoch of the formation of therst S stte te Kiesky Rus nd it is one of teancient models of architecture. The Golden gates of Kievwere built in 1164 when the famous Kiev prince YaroslavMudry ied. at rst gte ws ced te Soutern gtesand there were the part of the city defensive construc-tions and they practically didnt differ from other watchgates of the city. When the St. Sophia church was builtthe Great gates became the main entrance to Kievfrom the south western side.Realizing its greatness Yaroslav Mudriy ordered to build

    a small church of annunciation over the gate in order togive the tribute to the leading rle of the Christian religionin the city and in Rus.From the time chronicle springs began to call the Goldengates of Kiev instead of the Southern Gate. The width ofthe gate is 7,5 meters, the height of the passage is 12meters, the length is 25 meters.Many enemies of Kiev tried to take the city from the

    outhern side but they failed. The Golden Gates served to the city for 500 years. In the XVII century theywere destroyed. The ruins of the gate were covered with earth in order to keep them in safety for the fu-ure generation.     Khreschatik is the main street of Kiev. Its length is 1,2km, the direction from the north to the south.

    The Chersonese is the only monument to the nature at the foothills of theCrime. Ner te cost of te former ncient city of Cersonese sm pro-tected aquacomplex, the Chersonese bay, is situated which preserves theoriginal coast biogenesis and interesting underwater archaeological reserve.Nery for two mienni te town existed on te Crimen cost. It ws cedChersonese Tavrichesky. In 422 421 BC it was founded by citizens of thetown of Geraklei which was situated on the shore of the bay called nowadaysas Karantinnaya. A century later Chersonese turned into one of the largestcites of te Nortern Bck se cost. By its poitic rrngements it ws slave republic with democratic form of government but by the socio eco-nomic effect the center of trade, crafts and culture. Its population reached20 thousand people. Since the 5th century Chersonese is in Byzantine Em-pire. In 988 after the 9- month siege of the city (Russian name Korsun) wastaken by prince Vladimir. Here Vladimir accepted Christianity.

    ThE GENOESE FORTRESSThe fortress which was preserved to nowadays was built byGenoeses during the period from 1371 to 1469. They rebuiltancient defensive structures, built new once and combined allinto a single fortress. Built according to the project of Geno-ese fortictions in te best trditions of te Western Euro-pean Medieval the castle amazed by the perfect engineering. The area of the castle is nearly of 30 hectares. It is locatedon the conical hill, an ancient coral reef. From the east, thesouth, the west the fortress is inaccessible. From the north

    east the access to the fortress is blocked by a deep moat.The fortress has two tiers of defense.. The bottom tier is asolid outside wall of 6 8 metres. The wall was reinforced byfourteen 15-meter towers and the complex main gate. Mostof the towers were named after Genoese consuls who livedthere at that time.

    KhaNS PalaCE IN BaKhChISaRaY

    Khan Palace in Bakhchisaray was built as the residence of tribal

    dynasty Gera the rulers of the Crimean Khanate. For two and ahalf centuries Bakhchisaray palace served as the center of politi-cal, spiritual and cultural life of the Crimean Tatars. Of equal sig-nicnce is te Pce tody. First of it is te ntion srineof the Crimean Tatar people. It occupies a prominent place in theworld literary tradition. The Bakhchisaray Palace is the most im-portant historical monument of the era of the Crimean Khanate,he only sample of the Crimean Tatar palace architecture as well

    as unique in Europe (along with the palace Algambra in Spain andTop- Kapy in European Turkey). Bakhchisaray Khans Palace is ahistorical and cultural monument of global importance as it wasecognized in the recently started process of including the Palacen te Word heritge list of UNESCO.

    MONUMENT TO FlOODED ShIPSIt ws erected in memory of te sips wic w ere scricedto cover Sevastopol from enemy attacks from the sea. A fewmetres from the sea front of the Maritime boulevard on thethree metres cliff consisted of roughly processed granite boul-ders stands a slender Corinthian column. It is crowned by theinscription on the pedestal reads: In memory of the shipssubmerged in 1854 1855 to fence the entrance to the raid.The overall height of the monument is 16.66 metres. Againstthe monument the anchors from submerged ships are rein-forced in the wall of the sea front of the Maritime boulevard.Built in 1905 in connection with the 50th anniversary of therst eroic defense te monument ws dedicted to one ofthe sad and heroic episodes of this epic.

    The Vorontsov Palace was built according to the new architectural

    and engineering principles in comparison with classicism.
