HF - High FillThe standard level for young wines or older bottles recorked at the Chateau.IN - Into NeckPerfect level for a wine of any age. Indicates very good storage conditions. Outstanding level for a wine 10 years of age or older.BN - Base of NeckGood level for a wine of any age. For wines 10 years of age or older, indicates perfect storage conditions.VTS – Very Top ShoulderAcceptable level for red Bordeaux wines around 20 years old.TS – Top ShoulderNormal for any claret 15 years old or older.HS – High ShoulderAcceptable for wine over 25 years old. Good for wine over 40 years old.MS – Mid ShoulderNot unusual for wines over 40 years old. Could indicate early signs of cork failure.LMS – Low-Mid-ShoulderUsually indicates deterioration of the cork.LS- Low ShoulderMay indicate poor storage condition and possibly an undrinkable wine.

Levels for Burgundy Bottles

The share of Burgundy bottles does not allow for a level system based on the shoulder of the bottle; levels are described in terms of centimeters below the cork.Generally, Burgundy bottles with a fill level of 2.5cm or above are considered normal for wines younger than 10 years of age. Wines more than 15 years old of age with fill levels of between 4cm to 6cm are generally consid-ered to be sound provenance, though consideration should be given to the clarity and colour of the wine in the bottle, as well as the condition of the cork.Burgundy bottles with fill levels lower than 6cm may be at risk of being damaged or undrinkable.

< 2 cm considered an excellent fill for any age< 3 cm a perfectly normal fill for wines 10 years of age or older. It is an excellent fill level for wines 25 years of age or older.< 4 cm considered a normal fill for wines more than 20 years of age and excellent for wine more than 35 years of age.On the other hand, it should be the cause for concern in wines 15 years and younger.< 5 cm not uncommom in older wines of 30 years and more. At this level some oxidation is likely to have occurred and the remaining wine may be fragile at best and not enjoyable at worst.< 6 cm a poor fill level for any wine and not recommend-ed for purchase unless extremely rare.

WINES & SPIRITS

Dear Connoisseurs,

Today, investors undoubtedly turn towards wine,

whisky, cognac, moutai and other liquid gold for

returns. However, let’s not forget that wines & spirits

are first made to be enjoyed! In this catalogue, we

have aimed to present you with a selection of wines and

spirits, all from the private collections of some of our

esteemed clients, and for most of them, ready to drink

with your friends and family in the coming warm and

pleasant autumn!

While we aim to provide you with the same expertise

and integrity that Spink is synonymous within the

world of collectables, one of our key commitments is

to make wines & spirits auction simpler. Therefore, we

maintain our concept of reasonable starting prices,

instead of estimates, as initiated in the last auction, so

that you can confidently bid for the lots that excite you.

In addition of these wines & spirits ready to drink, we

have selected some collectors’ pieces, such as some

fine bottlings of Ardbeg, Highland Park and Glen Grant

in crystal decanters, the highly sought after Pride of

Strathspey 1938, a Longmorn and a Linkwood both

aged more than 45 years, or Gordon & Macphail’s rare

Highland Fusilier 21 year old.

To provide you with an even better service, we have

moved to new state-of-the-art premises in the heart

of Hong Kong. Sheung Wan has steadily grown to

become a very vibrant area, notably in the fields of arts,

wine and dine. Never hesitate to drop by and see what

is brewing for the next auction. We look forward to

welcoming you as often as possible on our new terrace

after work to share a glass (or two)!

Should you be traveling and not able to attend the

auction, please remember we can arrange easy

alternative bidding options to help you acquiring the

bottles you desire, such as phone bidding (we call you

to participate in bidding of the particular lots you are

interested in), online bidding (you attend the auction

and bid online) or commission bidding (our auctioneer

bids for you, strictly as per the instructions you gave us

prior to the auction).

Finally, some of you might be thinking of selling some

of the bottles you have in your cellar and might be

wondering if it is the right time to do so and how to do

it best. Please do not hesitate to contact us, we would

be happy to guide you by answering all your questions

regarding auctioning and offer you a free valuation of

your wines & spirits.

Meanwhile, we hope you will enjoy the sale.

Spiritually Yours,

Your Spink Fine Wines & Spirits Team.

Property of Private Collectors

The following lots are the property of private collectors, based out of Hong Kong who acquired them directly ex Chateau or from leading wine merchants and retail stores or other trustful sources. WINES & SPIRITS

Did you know – The 1855 ClassificationStill today, Bordeaux wines are ranked in order of quality according to the Bordeaux Wine Official Classification (in French Les Grands Crus Classés) which dates from 1855. At this time, Emperor Napoléon III requested wines merchants to rank Bordeaux wines on the occasion of the 1855 Paris World Fair (“Exposition Universelle”).

Wines were ranked according to trading prices (as they were directly related to quality back then). The very best red wines were ranked in importance from First Growths to Fifth Growths (5 ranks) while the white were ranked from Superior First Growths to Second Growths (3 ranks). All classified red wines are from the extended Médoc region on the Left Bank (i.e. Médoc, Saint-Estèphe, Pauillac, Saint-Julien and Margaux), except for Chateau Haut Brion which comes from the Graves region (Left Bank as well). White wines are sweet wines (notably Sauternes).

While the classification is regularly criticized mostly on the grounds that it was price-driven and that many terroir plots have actually changed ownership since then, it has remained the same since 1855, except for very few changes, including the very polemical upgrade of Chateau Mouton Rothschild to First Growth in 1976.

While, from a drinking perspective, there are many other excellent Bordeaux wines, which are either not classified (outside and inside the Medoc region) or classified as Crus Bourgeois, the Grands Crus Classés are still most collectors’ favourites and lead the wine investment market.

BORDEAUX First Growth

Did you know? – The Bordeaux Region – Left Bank / Right BankThe Gironde river which runs through the Bordeaux region naturally divides the wine regions of Bordeaux between a “Left Bank” and a “Right Bank”. Terroirs and hence, characteristics of Bordeaux wines, hugely vary from one bank to another.

The Left Bank notably includes the following regions: Médoc, Haut-Médoc, Saint-Estèphe, Pauillac, Saint-Julien, Margaux, Pessac-Léognan, Graves and Sauternes.

The Right Bank notably includes the following regions: Côtes de Blaye, Pomerol and Saint-Emilion.

Did you know – 1956 Bordeaux Vintage The 1956 vintage will be remembered as a pivotal year for Bordeaux as it was the coldest year in history since 1709! It was marked by a terrible frost which devastated most vineyards. As a result, a huge portion of Bordeaux vineyards had to be replanted, which in turn led to much higher quality wines in Bordeaux - the basis of all the beautiful vintages we have had the chance to see since then! It is also whilst replanting in 1956-57 that Bordeaux put more emphasis on red wines by replacing lots of white vines with red ones.

Due to these extreme weather conditions, very little Bordeaux wines were produced in 1956. The few which were released are of good quality and obviously extremely rare to find today.

Very good vintage. Robert Parker's Wine Advocate Score: 98.“… A profound Leoville Las Cases, it is one of the great modern day wines of Bordeaux. This wine's hallmark remains a sur-maturite (over-ripeness) of the Cabernet Sauvignon grape. Yet the wine has retained its intrinsic classicism, symmetry, and profound potential for complexity and elegance. The black/purple color is followed by a spectacular nose of cassis, cherry liqueur, pain grille, and minerals. It is powerful and rich on the attack, with beautifully integrated tannin, massive concentration, yet no hint of heaviness or disjointedness..” Robert Parker's Wine Advocate Score April 1999

Still inky/purple, with notes of acacia flowers intermixed with wet rocks, black currants, and blueberries, the wine is full-bodied, displays no real evidence of any oak, and offers up terrific concentration, texture, and length..” Robert Parker's Wine Advocate Score June 2010波爾多葡萄酒中的千禧佳釀。

57 Château La Mission Haut Brion 1994Graves, Grand Cru.Base of Neck. Good label.1 bottle (75cl).

Starting Price: HK$ 1,350

Did you know – Graves and the classifications of 1953Graves is located on the Left Bank of the Garonne River, near the city of Bordeaux, precisely where Bordeaux vines were first planted over 2,000 years ago. Graves wines were the first one to command high prices. Strangely enough, no Graves property (except for Chateau Haut Brion) was included in the Bordeaux Wine Official Classification of 1855 – an early sign of a change-over of power from the Graves region to the Médoc.

It’s only in 1953, hundred years after the 1855 Classification, that the Graves organized their own classification by classing 16 of their top properties without a hierarchy. All classified properties were regrouped in 1987 under a same appellation - Péssac-Leognan. The only revision to this classification was in 1959 when a few white wines were added.

POMEROL

ST. EMILION

Did you know – PomerolPomerol is located on the Right Bank of the Garonne River next to Saint-Emilion. It is the smallest of Bordeaux’ main appelations. Pomerol wines are characterized by a high proportion of Merlot in their blends resulting in gentler, less tannic Bordeaux wines. Pomerol wines are usually able to be drunk relatively young for Bordeaux.

There is no classification of Pomerol wines, however Pomerol today is home to some beautiful wines and Château Pétrus and Château Le Pin are valued as high as the classified first growths.

Did you know – St EmilionSaint-Emilion is located on the Right Bank of the Garonne River next to Pomerol and around the commune of the same name.

Saint-Emilion wines have their own classification since 1878. Chateaux are divided into Premiers Grands Crus Classés A, Premiers Grands Crus Classés B and Grands Crus Classés. On the contrary to the 1855 Medoc Classification, the Saint-Emilion classification is revised around once every ten years – the latest major revision being the promotion of Chateau Pavie and Chateau Angelus to Premiers Grands Crus Classés A in 2012. There are presently 63 Grands crus classés and 18 Premier grand crus classés.

59 Château Troplong Mondot 1994Saint Emilion. Premier Grand Cru Classé B.Very Top Shoulder. Good label.1 bottle (75cl).

Starting Price: HK$ 650

Robert Parker's Wine Advocate Score: 90“A beautiful wine, with notes of tapenade, licorice, spice box, black currants, and toasty oak, this medium-bodied wine has shed a lot of its tannin and exhibits excellent purity, a real sweetness on the attack, a bit of firmness on the back end, but impressive concentration and length. Anticipated maturity: Now-2016.” Robert Parker's Wine Advocate Score January 2003

Robert Parker's Wine Advocate Score: 93“No Bordeaux estate has been making as concentrated and consistently high quality wines as has Angelus since 1988. This estate is in many ways symbolic of what heights Bordeaux can achieve when a property is managed by someone as passionate and driven as Hubert de Bouard. As I have been writing for the last decade, these are wines to buy at first release; they can only go up in price given their quality. Another inky, purple/black-colored wine, the 1994 offers up heavenly scents of smoked meats, barbeque spices, hickory wood, and plenty of cassis and kirsch liqueur. The fruit's phenomenal purity and denseness, as well as its overall balance is admirable in view of the massive, muscular personality of this huge, full-bodied wine oozing with extract. It is a tour de force in winemaking. Anticipated maturity: 2000-2020..” Robert Parker's Wine Advocate Score February 1997

64 Echezeaux, Domaine de la Romanée-Conti, 1990Grand Cru, Côte de Nuits.Pristine condition.1 bottle (75cl).

Starting Price: HK$ 11,000

"Good vintage."Robert Parker's Wine Advocate Score: 92

"The 1990 Echezeaux continues to confirm that the DRC has been successful in turning out a richer, more structured wine in vintages since 1988. The deep color (it may be the darkest Echezeaux I have seen) is followed by a bouquet with well-developed aromas of spices, plums, black-raspberries, and sweet new oak. In the mouth, the wine exhibits admirable toastiness, rich, medium to full body, moderate tannins, low acidity, and an impressive finish. Anticipated maturity: 1995-2010.

The DRC 1990s, all of which were bottled in April/May, are among the deepest colored wines from this domaine that I have tasted in the last decade. Moreover, they are firmly structured, with significant tannins from both the vintage and from the aging in 100% new oak barrels. For the fortunate few who have had the discretionary income to afford the other great vintages of the DRC from the eighties, 1980, 1983, 1985, 1988, and 1989, the question is - are the 1990s superior? I am not sure they are any better than the 1980s, 1985, and 1988s, but they undoubtedly represent a classic, concentrated, long-lived style of wine. Moreover, all of these wines should have a more graceful evolution and broader window of drinkability than the tannic 1988s, as well as potentially greater longevity than the succulent and opulent 1985s. All of these offerings are outstanding, with that tell-tale complex, exotic fragrance that the DRC routinely achieves.”

Medium-bodied and complex, this is a rich, deep, dense, and intense wine. Plump waves of white fruits, spices (including cinnamon and nutmeg), as well as honey-coated minerals can be found throughout this gem's personality as well as in its admirably long, pure, and smooth finish. "The perfection of the 1990 is based on a seamless, classic, harmonious concoction of flowers, melted licorice, blackberries, kirsch, blueberries, and Asian spices. An enormously full-bodied, sweet, expansive, amazing wine with a finish that lasts over a minute, it combines the extraordinary hedonism of the 1998 with an unbelievable intellectual appeal that makes it so hauntingly great. Did you know? The Macallan, The Single Malt & other Macallan expressions

Only one The Macallan …

“Founded in 1824, The Macallan was one of the first distilleries in Scotland to be legally licensed. Since then, The Macallan has built a reputation as one of the world's truly great single malt whiskies.” (Source: www.themacallan.com)

The Macallan distillery was founded by Alexander Reid in 1824 in Craigellachie, Moray. Noticeably, even though The Macallan is located in the middle of the Speyside region, it is labeled as a Highland malt.

The Macallan used to mature all its single malt production in sherry casks; the remaining being sold to blenders. In fact, they used to proudly boast on their labels: “For reasons not even science can wholly explain, whisky has always matured best in oak casks that have contained sherry. Due to increasing expense and scarcity, other distilleries no longer insist on sherry casks. THE MACALLAN DIRECTORS DO.'” In 2004, however, with the introduction of the range of Fine Oak casks, The Macallan did start using American bourbon oak casks to mature its single malts. Nowadays, whiskies in the old Macallan style (aged exclusively in sherry wood) are very appreciated and collected by whisky aficionados.

The Macallan was originally founded under the name of Elchies Distillery. The distillery was expanded toward the end of the nineteenth century and renamed “Macallan-Glenlivet” as a reference for the terroir in the Speyside region. It is only in 1980 that the 'Glenlivet' suffix was removed and Macallan eventually became “The Macallan”. This explains some of the different labels and names available in the market. Despite one of the biggest productions in Scotland, The Macallan malts are highly sought after and aged Macallan regularly rank at the top of the most expensive whiskies sold in auctions across the world. Old vintages command high prices and their value keep on increasing day after day, while aged casks have become a rare commodity!

… but many Macallan expressions brought to us over the years by independent bottlers.

Although they have strict trademark and nomenclature restrictions to follow, other distillers and independent bottlers – such as Gordon & Macphail, Hart Brothers, Murray McDavid, Moon Import or Silver Seal – can release special bottlings of Macallan drawn from casks they acquired from The Macallan Distillery.

Of all of them, Gordon & Macphail have by far the best stocks of Macallan, having built up their stocks over several decades going back to the 1930s. In fact, Gordon & Macphail were de facto the official bottler of Macallan as they were the first company to bottle Macallan whisky as a single malt, and this until the 1980’s, when their license was withdrawn.

Given the trademark and nomenclature restrictions, independent bottlers have come to release these different expressions of Macallan under a variety of labels such as Pride of Strathspey, Speymalt from Macallan, etc.

While there are not official The Macallan and hence, usually command lower prices, some of them have become highly collectable as they show different expressions of the truly great single malt, while often maintaining most qualities from The Macallan.

A great story to tell your friends while you are enjoying with them a bottle of the one and only The Macallan or of its multiple avatars!

Did you know? – Strathisla, Speyside Strathisla was founded in 1786 under the name Milltown distillery. Strathisla’s history is a story of many disasters, name changes, ownership changes and fraudulent business until it was acquired by Chivas Brothers in 1950 for which the distillery has become an essential component of the production of Chivas’ famous blends - including their famous 'Royal Salute'.For those reasons, bottlings of Strathisla as a single malt are rare.

Did you know? – Edradour, HighlandsEdradour was founded in Pitlochry, Highlands in 1825. It is reputed to be one of the smallest distilleries in Scotland, traditionally run by less than 3 men and producing only eighteen casks a week. As you know, these small brands are often the most interesting to watch! Since the 2000’s, Edradour successfully reinvented itself by focusing on single cask bottling and special finishes, however, whisky aficionados and collectors enjoy the element of surprise of Edradour‘s multiple expressions of the late 20th century, when its malts could drastically differ from one to another.

Noticeably, a more heavily peated expression of Edradour has become available under the name 'Balechin'.

Did you know? – Tomatin DistilleryFounded in 1897, Tomatin is located in the Monadhliath Mountains just south of Inverness, capital of the Highlands of Scotland. It is one of the highest distilleries in Scotland at 315 metres above sea level.

While Tomatin is very boutique in the world of single malts, it is one of the top 10 biggest distilleries in Scotland measured by production capacity with most of its production going to blends such as The Antiquary.

Tomatin is appreciated by connoisseurs for its delicate and mellow yet complex single malts.

HIGHLAND FUSILIER

Did you know? – Highland Fusilier by Gordon & Macphail

In 1978, to celebrate the 300th anniversary of the Regiment The Royal Scots Fusiliers, 21s of Foot, one of the two most distinguished regiments the British Army’s which form the Royal Highland Fusiliers (Princess Margeret’s personal regiment) Gordon & Macphail released a 21 year old vatted malt called the Highland Fusilier 21 Year Old.

The nectar was released under 5 different labels.

Although it was not said from which distilleries the whiskies were selected, it is rumored that the vatting probably included some 1950’s Macallan. The bottles were sold out in a few months, with most of them finding their way to Italy – one of the first whisky consuming countries in the world.

About Gordon & MacPhail

Gordon & MacPhail is an acclaimed independent bottler and distiller of scotch whisky, founded in 1895 and located in Elgin in the north-east of Scotland. With around 300 different whisky brands stored in its warehouses, it cares for some of Scotland's oldest and rarest casks.

JAPANESE WHISKIES

Did you know? – Karuizawa, the legendary ‘lost’ Japanese distilleryFounded in 1955, at the foot of Mount Asama, on the site of a former vineyard, the Karuizawa distillery began production in 1956. Despite being expanded in 1962, Karuizawa remained one of the smallest distilleries in Japan. The distillery was eventually mothballed in 2000, and closed in 2011, however, Karuizawa’s legend built up as its heavily-sherried old casks from the 1970s and 1980s have been highly acclaimed from connoisseurs around the world.

This drove the recent release of collectible whiskies by NumberOne Drinks, who acquired the last casks of Karuizawa, each release getting sold out in a few months only and immediately becoming highly collectable and extremely sought after on the secondary market as it is uncertain how much longer the stocks can last…
