She will take on the top job at Springston at the begin-

“I am delighted to have been appointed as your principal and am excited about begin-ning a new journey with you in term four.”

Ms Weir, who earlier this year received a National Ex-cellence in Teaching Award, finished up at Springston School last month.

Senior Sergeant Stills said at rush hour a glut of driv-ers covering the lane markings made things difficult.

He said he often saw dan-gerous driving.

“People tend to be in a hur-ry so they would take risks that they otherwise wouldn’t take,” he said.

“It’s a large roundabout so drivers think if they pull out in front of someone, there’s a fair chance they’re going to getseen.

“I would urge all drivers using that intersection to be extra careful.”

Traffic flow through the inter-section has doubled from 10,800 vehicles a day to 21,500 vehicles a day since 2012.

New Zealand Transport Agency highway manager Colin Knaggs said the intersection would change again when con-struction work on stage two of the Southern Motorway begins in late 2015.

Cyclists travelling between Spring-ston and Lincoln can look forward to a safer cycle ride after Springston residents voted in support of put-ting community funds towards a new cycleway.

A meeting held in the Springston Community Hall recently, was at-tended by 31 of the 176 residents with most of those present voting in favour of the move.

However, some residents are unhappy that money spent on the cycleway will no longer be available for subsidising rates.

The district council has agreed to fund half of the estimated $227,000 cost of the cycleway between Springston and Lincoln.

The residents’ half is to come from two community accounts.

One, which holds funds gained when Springston sold spare sewer-age capacity to the Aberdeen sub-division in Prebbleton around 10 years ago, has a balance of $62,137.

This account has been used to eliminate deficits totalling more than $400,000 from the commu-nity’s water and sewerage accounts and is still being used to subsi-dise the town’s rates. If not for the subsidy, sewerage reticulation rates would be between $410 and $470 a year, instead of the current $170.

The other, a development con-tributions account, has a balance of $694,482.82. However, only the interest component of this account, $232,676.43, can be spent on the

cycleway, where as the rest must be spent on improvements or addi-tions to the sewerage scheme.

Springston Community Com-mittee secretary Angela Wakelin said residents had long called for a cycleway, which would greatly im-prove safety for local cyclists, and most were happy that progress was being made.

However, fellow committee member Juanita Phillips said she believed many residents would not have been fully aware of how the money was currently benefiting the town and the implications of spending it.

“The rates for sewerage will need to increase sooner in coming years as there is now no top up money,” she said.

“Those on fixed incomes or with a family and mortgage may struggle

because of this. Those who wanted the cycleway chose to ignore this and not think of their neighbours, only themselves.”

She believed proponents could have waited until the district coun-cil was willing to fund it or until some money had been raised spe-cifically for the project.

However, Mrs Wakelin said where the money was coming from and what it was currently being used for had been made very clear at the meeting and also at a previ-ous meeting.

As the approximately $113,500 share was less than the amount of money still available to the commu-nity, rates could still be subsidised for the near future, she said.

A district council spokeswoman said whether interest from the de-velopment contributions account

could be used to continue subsidis-ing sewerage rates after the Aber-deen funds were used would be the subject of “further discussions with the committee.”

Mrs Wakelin said the project would be put out to tender and the district council had assured the committee that if the costs were more expensive than estimated, it would not proceed without the community being consulted again.

Two votes were taken at the meeting, with the first counting 24 people for the proposal and five against.

The second vote was by house-hold, with 29 properties voting for the proposal and six against. This vote included written and verbal votes by absent residents and multi-ple votes by one person who owned several Springston properties.

Fire spreadsA rubbish fire from three weeks ago, sparked back to life on Thursday morning, burning through 30 hay bales, destroying a small farm shed, and downing a power pole. The fire, on a rural Bankside property, was attended by firefighters from Rakaia with water tankers from Burnham and Dunsandel. The nor’west winds are thought to have carried ash from the fire to the nearby grass, shed and hay bales. The fire then burnt through the base of the nearby power pole, bringing it down and disrupting power to a dairy shed.

Latest REINZ/Fairfax Media Housing Market Report figures show house prices fell in Lincoln and West Melton but rose else-where for the April to June quar-ter, compared to the same period last year.

House prices were down seven per cent in Lincoln and five per cent in West Melton, and up four per cent in Darfield, 12 per cent in Leeston, six per cent in Prebbleton and four per cent in Rolleston.

Prebbleton had the highest

overall median house prices, at $662,500, with Darfield the low-est at $400,000.

Number of sales fell 44 per cent in Leeston, 24 per cent in Darfield and eight per cent in West Melton.

They were up 94 per cent in Lincoln, 12 per cent in Rolleston and nine per cent in Prebble-ton.

There were 91 house sales in Rolleston over the period, 31 in Lincoln, and between 11 and 14 for each of the other centres.

Mixed housing market in Selwyn

An oak tree was planted yesterday in Sheffield, commemorating the declaration of World War 1.  

The oak tree, grown from acorns taken from the Gallipoli oak, next to the Bridge of Remembrance, was planted during a service at the Sheffield War Memorial.  

Hazel Wheeler, of the Wadding-ton/Sheffield township committee, said: “This is the first of a number of events to be hosted by the Wad-dington/Sheffield township com-mittee. 

“In April 2015 we will mark the

landing on Gallipoli and, finally, one tree will be planted in memory of each of the 20 names recorded on the Waddington/Sheffield ceno-taph. That will be on November 11, 2018.”  

Christchurch’s Gallipoli oak tree was grown from an acorn sent by Lieutenant Douglas Deans to his mother while he was serving in Gallipoli. The Deans family has a long association with Canterbury and particularly with the Wad-dington and Sheffield communi-ties.

An audit of Selwyn’s 14,000 road signs, expected to begin next year, will be a major undertaking but should answer questions about whether they’re doing the job.

The district’s road safety subcom-mittee voted for the audit in March after receiving correspondence from Rolleston resident Nigel Her-ring, who oversees Armourguard’s South Island transport require-ments.

Mr Herring said many intersec-tions in the district were inappro-priately signed, having either a stop sign where there should be a give way sign or vice versa, or in many cases neither a stop or give way sign. In other places, signage should be increased or made more visible.

District council asset manager transportation Andrew Mazey said the size of the task meant the au-dit, the first for road signs in the district since 2009, meant it might have to be done in stages.

“Council is planning to conduct the audit in 2015 but this is de-pendent on first confirming an ap-propriate scope for the work that is affordable considering council has a 2400km roading network contain-ing more than 14,000 signs, 1300km of road line marking and 2600 indi-vidual pavement markings,” he said.

Intersections have been a major focus for Selwyn police since the release last year of damning statis-tics showed car crashes involving injury increased 52 per cent on lo-cal roads, excluding state highways, over the preceding five years. Dur-ing that period, 46 per cent of the

district’s crashes took place at inter-sections.

Mr Herring cited statistics from the United States and Europe in ar-guing that inadequate signage and lighting on New Zealand roads was a major contributor to local crash-es.

District councillor and sub com-mittee chairman Peter Hill said he did not share all of Mr Herring’s views but it was a good time to car-ry out an audit.

“Part of the issue with signage, particularly those stop and give

way signs, is that intersections change. Hedges grow and hedges are taken away and those kind of things change sight lines, so that is the sort of review that will be done.”

Cr Hill believed the amount of long straight roads with intersec-tions in Selwyn was a contributing factor to the district’s high number of intersection crashes.

Mr Herring also criticised police, who he said had employed a tactic of sitting out of sight at intersec-tions, collecting fines, instead of in plain view on the approach to intersections, where they could act as a deterrent and possibly prevent more crashes from happening.

Senior Sergeant Pete Stills could not be reached for comment yes-terday, however, in an email re-sponse to Mr Herring, he said that the focus of local police positioned at intersections was on reducing crashes and the number of deaths and injuries suffered.

“I am satisfied that my staff are providing services to ensure a safe and functional community exists,” he wrote.

“In your email you state that the Shands Rd/Selwyn Rd intersec-tion is such that most people can adopt a give way rule. Therein lies the problem and attitudes like that must change or more people will die as a result.”

Student starts clothing labelA former Hororata woman has launched a clothing label aimed at female rural wear, with the help of a university summer scholarship.

Fourth-year business and law student Hannah Port has launched Hawthorn Country Design, with support from Canterbury Univer-sity’s student entrepreneur hub In-novators.

The clothing website is offering quality, English-style country at-tire and accessories to customers worldwide.

Ms Port, who now lives in Am-berley, said her products had been carefully selected and designed using  raw materials such as cash-mere sourced  from inner Mongo-lia, Ethiopian lamb leather and the mulberry silk to ensure quality gar-ments.

“I have spent my whole life be-tween the farm and Christchurch, and as time has gone on I have no-ticed that there are very few tran-sitional casual options, particularly for women,” she said.

“New Zealand rural women’s wear is effectively a smaller version of the male counterparts. They are not overly feminine in shape or colour and therefore many rural women  do not feel feminine on a daily basis, nor do they feel like they can wear farm clothes into town to meet friends.”

Ms Port said that in England, ru-ral wear for men and women was considerably more stylised and acceptable in multiple situations. Men and women were seen wear-ing barbour-quilted jackets and

hunter boots everywhere from on the farm to in the city.

“There are even feature articles in UK magazines about bankers choosing to adopt the stylised ru-ral look.”

“This matter is becoming more relevant to people in places like Canterbury considering the rather dramatic outward shift into subdi-visions and lifestyle blocks post-earthquakes,” she said.

Ms Port wanted to import the

English brands, but after realis-ing many of their garments were made in China, it gave her the idea of finding a short-run supplier in China to make the garments for Hawthorn.

“I won the university summer scholarship late last year which was amazing because it allowed me to spend all summer working on this venture. Mum and I went to a buy-ing fair in Hong Kong,” she said.

“The products are very much

multi-seasonal which is fantastic for life in New Zealand, where we all know the weather is not always as the season dictates.”

She was grateful to university innovators manager Dr Rachel Wright and programme mentor Dr Nigel Johnson for their help.

Dr Wright said Ms Port was one of many entrepreneurs at the uni-versity who were expanding their ideas and growing them into com-mercial ventures.

Canter-bury’s gold award winners will now be assessed alongside others from across the country to find the national finalists, which will be announced in early September. National category winners and the Registered Master Builders Supreme Awards for Renovation of the Year and House of the Year will be announced at a gala dinner in Auckland in November.

For Jack Milligan, racing RX7s is not just a lifelong dream, it’s in his blood. The 17-year-old from Prebbleton has followed in the footsteps of both his father Dean Milligan and grandfather Allan Milligan in joining the RX7 cir-cuit.

When Jack gets behind the wheel for the first round of the South Island RX7 Racing series in Invercargill on September 21, it will be the first time that three generations of the same family have taken part in the series.

Two uncles, Jonathan Hague on his mother’s side and Grant Milligan on his father’s side, have also raced RX7s.

Jack said becoming the third generation of his fam-ily to race RX7s competi-tively was pretty special. “Basically when I was young I just travelled around with dad, who raced quite a bit himself, from when I was pretty much just a baby,” he said.

“One day dad said ‘do you want to have a go in a go kart?’ I said ‘definitely’ and I have just loved [racing] since then.”

Jack’s successes in karting included finishing sixth in the Kartsport New Zealand Na-tional Schools Championships, last year, in the 125cc rotary max light section.

He was looking forward to the challenge of racing RX7s.

“It will be a new experience and a step up from karting, that’s for sure.”

Family friend James Shand had leased Jack the car he would be driving.

Jack has worked for Neale Mo-torsport for the last two years, in the pit crew for Toyota Racing Series driver Andrew Tang.

He has also just secured a job working for the McElrea Rac-ing team in Australia during the Porche Carrera Cup series. He will fly over for several four-day stints over the ditch, starting later this month.

Jack said his ultimate goal was to race V8 supercars.

“Obviously every kid has the goal to be a supercar driver. It

will be a big push but at the end of the day I would love to make it there,” he said.

Day clubs provide companyRetired Selwyn residents are enjoy-ing spending the winter months in-doors in friendly company at a day club.

On the fourth Thursday of every month, more than 20 senior citizens get together at the Rolleston Com-munity Centre for a day of activities, board games, discussions, seated music and movement classes and a hot cooked lunch.

Day clubs are also held regularly in Darfield, Leeston and Lincoln and altogether they have around 1500 visits each year.

At 84-years-old, Thelma Flint is one of the Rolleston day club’s eldest members.

She had been attending sessions since they first started more than five years ago and said she looked forward to them every month.

“I enjoy coming to day club regu-larly and it has become part of my routine now,” Mrs Flint said.

“Not only is it a lovely place to share stories and play board games

or cards, we join in on topical dis-cussions and listen to guest speak-ers.”

It is also a great place to get to know people in the community.

“I often get lonely at home all by myself so it is nice to have a social place to go each month where I can interact with people and play a game of scrabble,” Mrs Flint said.

“Some people even bring along their cross stitch and embroidery.”

Community development officer Lisa Larkin said the day clubs helped older residents find a place to meet people of their own age.

“They are also a nice place for people to visit in cold weather to en-joy a hearty meal,” she said.

Rolleston resident Fay Taylor helped to organise many of the activities. She encouraged retired people, especially those living alone, to come along to a day club to meet new people and enjoy some fun ac-tivities.

“We are a very welcoming group

of people and there is no pressure to come each month,” Mrs Taylor said.

“We get great feedback from peo-ple’s family members saying they notice they are happier and enjoy sharing stories about what they have done at day club, which is great to see.”

Day club sessions run at the fol-lowing locations from 10am to 3pm:

Darfield Recreation Centre, the first Thursday of the month; Rolleston Recreation Centre, the fourth Thursday of each month from August to April and second and fourth Thursday from May to July;  Leeston Library, the second and fourth Tuesday of each month; and Lincoln Event Centre, the third Wednesday of each month.

A two-course meal is available at all locations for $7. People are wel-come at the day club and don’t need to book in advance. For more infor-mation, phone Lisa Larkin on 347 2755.

The Salvation Army’s Family Store in Hornby is celebrating its first birthday this month.

Since opening on August 12, 2013, the store has drawn increasing numbers of shoppers, who flock there both for the wide selection of quality merchandise and the attractive way the stock is presented.

“The feedback from customers to what we are doing has been 100 per cent positive,” store manager Terry Murray says. “The customers absolutely love it.”

Since opening, the store has been expanded with 50 sqm of extra space, and whatever people are looking for, they are almost certain to find it on the shelves and racks. Everything from clothing, shoes, handbags, books, CDs and DVDs, to all types of linen, furniture, electrical goods, kitchen utensils, crockery, toys and general bric-a-brac is on display.

Customers come not only from the surrounding areas, but also from other parts of the city.

“The word is getting out there that this is the store to come to. It’s a destination store for people from further away, and that’s very encouraging for us,” Terry says.

Terry and the staff welcome customers to come to the fresh, modern store and enjoy the experience.

“We are convinced after your visit you will become a regular,” Terry says.

The Hornby Salvation Army Family Store is located on the corner of Shands and Amyes roads, close to Dressmart, with plenty of off-street parking available. Opening hours are Monday to Friday 9am to 4.30pm and Saturday 9.30am to 1.30pm. Phone 349-4163.

Donations of quality second-hand items are welcomed at the shop or can be collected by truck. Volunteers are also invited to join the team.

Super netball with netball superstarsThat is exactly what HOT Events and House of

Travel on Victoria has organised for their netball fans who join them at Netball World Cup 2015 in Sydney.

Selwyn resident and HOT Events and House of Travel on Victoria director David Williams has been working hard behind the scenes to make sure the very best netball stars are accompanying the devoted fans who will watch the top nations battle it out for world supremacy on the netball court.

Newly retired Silver Fern Irene van Dyk has joined the ranks and will be on tour for the 11 night package. Her brilliant career has included a total of 145 test matches for New Zealand and 72 for South Africa – spanning an astounding 20 years. She was awarded Sportswoman of the Year in 2003, and was included in the 2009 Queen’s Birthday Honours List when she was appointed a Member of the New Zealand Order of Merit for services to netball.

Irene knows a thing or two about Netball World Cups, having played at five in 1994, 1999, representing South Africa and 2003, 2007 and 2011 while wearing the Silver Fern strip, so her personal insight will be invaluable for those who tour with her. She has also come on board as a HOT Netball Ambassador so you will get the opportunity to join her at many netball events.

Dame Lois Muir has attended an astounding 11 Netball World Cups since 1963 – as player, coach, spectator and tour leader. After playing in the 1963 World Cup team, she then returned to the fold as coach in 1975 continuing this job through the 1979, 1983 and 1987 campaigns. Since 1991 she has spent her time leading tour parties and spectating from the sidelines –what she doesn’t know about Netball World Cups really isn’t worth knowing. Next year she will lead our netball fanatics on the 11 night tour, fans who

thrive on the excitement as well as enjoy Lois’ insight into the game.

Tania Dalton is also excited to be joining the Silver Ferns Travel throng for the 4-night Finals Weekend package. Tania was in the Silver Ferns from 1996-2004 with another stint from 2006 to 2007. She attended the 1998 and 2002 Commonwealth Games and 1999 and 2003 Netball World Championships – the last time the Silver Ferns won the title.

The fans who attend the Silver Ferns Travel 11-night package, will also get the opportunity to catch up with the Silver Ferns team during the tournament and may get the chance for an opportunity to see another of HOT’s netball ambassadors, Maria Tutaia. Especially important to David is the investment House of Travel is making back to grassroots netball. For every package sold, a contribution will be made to the travellers region of origin, ensuring star players continue to be developed for years to come.

Over three competitions, Amy has won all three beginner classes, had the highest points as well as the most points overall to take this year’s trophy. Another young rider to watch,

Millie Thompson, has been selected to train with the region’s best up-and-coming riders as part of the Canterbury dressage training squad.

At 12 years old, she is one of the youngest riders to go into the training squad.

THIS year I’ve been busy conducting cooking classes—at farmers’ markets, fundraising events and conferences. So far, I’ve provided 10 classes using mostly local products, some of which were unusual and new to many of the attendees. • The tomatillo resembles a small green tomato and in Mexican cooking it is often referred to as such. However, the tomatillo grows encased in a paper-thin husk similar to a cape goose-berry. The fruit can be used raw or cooked and adds a distinctive flavour to Mexican and Spanish dishes. They grow well in warmer climes but tend to take over the garden. I’ve stored our summer surplus in the refrigerator and add them to casseroles and stir-fries. • The kohlrabi looks like a root vegetable but it is really a stem that swells into a turnip shape above the ground. It is a member of the brassica family. In Ger-many, kohlrabi means cabbage-turnip.

The “turnip” sprouts leaves that can be steamed or stir-fried. Peel the kohlrabi and shred and use raw in salads, steam and mash, stir-fry or add to soups and stews. • Canned crab meat has been available in New Zealand for years but it is not widely used. It has been popular for generations in the US combined with mayo in sandwiches, in salads, dips, stuffed into halved avocados, mushrooms or fish (and baked) plus in the everpopular crab cake. Canned crab meat is relatively inexpensive and is extremely versatile, adding a touch of exotic to the ordinary. • The Costata Romanesca cour-gette or zucchini is a traditional Italian heirloom variety with pale green flecks on a medium-green palette and with prominent ribs. It has great flavour—buttery and nutty— and is delicious raw or cooked. Costata Romanesca are easy to grow and they produce well. Seeds can be sown in late spring. The male flowers are large and excellent for stuffing. • Vietnamese mint (Persicaria odorata), also called hot mint or laksa leaf, is not actually a mem-ber of the mint family. It has long pointy leaves and can be added—in moderation—to vegetable and fruit salads plus Asian dishes.

WHY DO SO MANY DISHES CALLFOR AN ONION COOKED INBUTTER BEFORE THE MAINCOOKING?

For flavour. Some recipessuggest cooking untiltender but not brown,others go on until the

onions are golden orcaramelised. Either way it’sworth it if you enjoy tastyfood. You can cut theamount of fat used bycovering the pot while youronion cooks— the lidcollects moisture thatwould normally evaporate,and by returning this to theonion, it avoids burning.

Marie Antoinette made aWorldofWearable Art-type fashionstatement by parading aroundthe countryside wearing potatoblossoms on her expensivedresses.Whenmost of us think of

packet ‘‘chips’’ we tend to thinkof fatty, salty occasional treats.But I was recently pleasantly

surprised to discover amoreishrange of proper chips— 100 percent natural, gluten-free, GMO-free and hand-cooked in high-oleic sunflower oil. Ned andMina Smith, the expatriateAmerican couple who run thefamily-style Proper Crispsoperation in Nelson, brandedtheir delights ‘‘crisps’’ todistinguish them frommass-produced ‘‘chips’’. And they are

different. I just love themcrushed and sprinkled overicecream. The rapport between

the salty tang of the chips andthe sweetness of the icecream isa taste treat.The potato is certainly

common and a staple worldwide.They are cheap, hardy and easyto grow, and are high in starch,protein and vitamins. They arealso versatile.We all love thetraditional potato favourites butthis week I’m serving upsomething funky— potatoeswith icecream, in chocolatetruffles, with squid and in agluten-free pastry.

RECIPESTOFFEE & POTATOCRISPS VANILLAICECREAMProper Crisps are delicate.Perfect for coating icecream.

4 large scoops French vanillaicecream1 large cup Proper Crisps inMarlborough Sea Salt, lightlycrushed1/2 cup long thread coconut,lightly toasted4 meringue nests, optionalToffee: 1/2 cup sugar1/2 cup water

Refreeze the scoops oficecream. When hard, roll in thecrushed crisps and coconut.Freeze, until ready to serve.

To make the toffee, placesugar and water in a large,microwave-proof glass bowl.Microwave on high for 2minutes.

Stir to dissolve sugar.Continue microwaving for 3-4minutes until liquid is lightgolden. Remove — the toffeewill continue to colour onstanding.

Remove icecream fromfreezer. Place in meringuenests, if using. Drizzle withtoffee. Serve immediately.

Serves 4.

CHOCOLATE POTATOTRUFFLESThe mashed potato must befree of seasonings, cream andbutter. It should also be verywell mashed and have asmooth consistency.

1 cup dark chocolate chips1/2 cup cold cooked mashedpotatoes1/2 tsp vanilla essence4-5 pieces crystallised gingerDark cocoa powder for dusting

Place chocolate chips in amicrowave-proof bowl. Melt on50 per cent power for about 2minutes. When completelymelted, stir into mashed potatovery well.Add vanilla essence and stir wellagain. The mixture should besmooth. Chill for 30 minutes.

Cut ginger into thirds orquarters. Take a tablespoon ofpotato mixture and roll around apiece of ginger.

Repeat with remainingmixture. Place on a plate anddust with dark cocoa powder.Roll into small balls. Dust withcocoa. Refrigerate until firm.

Can be stored in fridge for upto one week.

Makes 16.

POTATO & SQUIDSALADThis is based on a PetaMathias recipe that she will bedemonstrating at theChristchurch Food Show, April4-6.

400g waxy potatoes4 eggs, free-range/organic, ifpossible1 large shallot4 tbsp olive oil1-2 tsp diced or crushed chilli100g squid rings8 pitted black olives8 anchovies, oil retained2 tbsp white-wine vinegarFlaky sea saltFreshly ground black pepperto taste

Peel potatoes. Place in cold,lightly salted water. Bring toboil. Simmer, until cooked.Don’t overcook. Slice thickly.

Meanwhile, place eggs incold water. Bring to boil.Simmer for 5-6 minutes. Cool,then peel and quarter. Sliceshallot and place in icy water tocrisp.

Heat a little of the olive oil in afrying pan. Add diced chilli.

Saute squid rings for about 2minutes, until just cooked.Combine with potatoes, shallot,eggs, olives and anchovies in abowl.

Make a dressing usingremaining olive oil, a little oilfrom the anchovies and vinegar.Season. Drizzle over salad.

Serves 8 as a starter.

GLUTEN-FREEPOTATO PASTRY450g cooked warm mashedpotato100g butter, chopped1 & 1/4 cups rice flour1/2 cup cornflour1 tsp salt1 egg, lightly beaten

Place warm mashed potato andbutter in a large bowl and mixwell. Add rice flour, cornflour,salt and egg. Mix well. Use yourhand to mix it, if easier. Wrapthe dough in a plastic bag. Setaside for 30 minutes to rest.Roll out to about 1cm thicknessor thinner. Great for pie pastryor for sausage rolls.

Makes 800g.

Banish your fear of the unknownVIETNAMESE-STYLE MUSSEL FRITTERS Makes about 12

60g bundle dried wide Asianstyle rice noodles 180g Sealord Natural Smoked mussels, finely chopped 2 tbsp each: diced shallots, chopped Vietnamese mint, com-mon mint

Finely grated rind 1 kaffir lime or common lime 2 tsp each: finely chopped garlic, grated root ginger ½ -1 tsp diced chilli 2 eggs, lightly beaten ¼ cup self-raising flour Fish sauce and freshly ground black pepper to taste 2-3 tbsp Laughing Frog Lemon Gourmet

Cooking Oil Pour boiling water over noodles in a bowl and soak until softened. Drain well and chop.

Place all the ingredients except oil in a bowl. Mix well.

Heat oil in a non-stick frying pan. Take tablespoons of mixture and fry in batches. Drain on paper towels. Excellent served with a good chilli sauce as a dip.

CRAB & WASABI DIP

170g can genuine crab meat 3 tbsp mayo or sour cream Squeeze lemon juice 1 tsp prepared wasabi

Proper Potato Crisps for serving, optional

Combine drained crab and mayo in a blender, until smooth. Stir in wasabi. Pop in a dish and serve as a dip, or pipe or dollop on to Proper Crisps. Serves about 8

Q A&HOW LONG SHOULD I COOKLENTILS?Most kinds take 30-45minutes, though split redlentils need only about 20minutes. Avoid lentilslabelled as heat-treated, asthey take ages to soften.Lentils keep indefinitely,but older supplies takelonger to cook and oftenlose their skins. Soaking

isn’t essential, but reducescooking time. Rinse wellfirst, cover with plenty ofwater and don’t add saltuntil the last 15minutes ofcooking. Small grey-greenpuy (pronounced pwee)lentils come from France,and have the best flavour.

IS IT POSSIBLE TO MAKE SUGAR-FREE JAM AT HOME?Sort of. But sugar is thepreserving agent and helpsto set jam aswell asintensifying the flavour. Sojamswithout sugar need to

be kept refrigerated andusedwithin amonth, orfrozen. Gelatine thickensfruit pulp, but the resultstend to bemore dessert-likethan jam (soften gelatine incold water before adding tothe hot fruit mixture). Youcan add extra sweetnesswith some brands ofartificial sweetener (such asSugromax), but others gobitter when heated.

Great served on steamedand buttered spinach.

Spoon the cooking juicesover fish. Garnish with orangerind.

— Serves 2.

KOHLRABI FRITTERSWITH TOMATILLOSALSAIf tomatillos are unavailable,used 3 firm tomatoes.

Fritters: 1 large kohlrabi1 courgette (CostataRomanasca preferably)1 shallot, diced1 clove garlic, crushedSalt and pepper to taste1 large egg, lightly beatenPinch fennel seeds, optional2 tbsp self-raising flour,optionalExtra virgin olive oil for fryingSalsa: 4-6 large tomatillos1 tomato, diced1 clove garlic, crushed2 tbsp lemon juiceSalt and pepper to taste1 chilli, diced, optional3-4 tbsp chopped coriander

Fritters: Peel and coarsely gratekohlrabi into a bowl. Grateenough courgette to makeabout 3/4 of a cup. Add tokohlrabi with shallot, garlic,seasonings, egg and fennelseeds and flour if using. Mixwell.

Heat oil in a frying pan. Dropheaped tablespoon lots into panand fry either side until goldenand cooked.

Salsa: Remove paper-thinhusk from tomatillos. Dice theflesh. Combine with remaining

ingredients. Serve with thefritters. — Serves 4-6.

TAMARILLO SPONGESTACKS2 ripe tamarillos, peeled andthinly sliced3 tbsp brown sugar200g prepared chocolatesponge, about 4cm deep1/4 cup Prenzel Creme deCassis

Place tamarillos in a bowl. Stir insugar. Stand for 2 hours orovernight until sweetened and ajuice forms. Alternatively, poachin a little red wine, until cooked.Cool. Using a deep stack mouldor cutter, cut out 4 rounds ofsponge cake. Cut each round inhalf horizontally.

Place one piece back into thecutter. Sprinkle with a teaspoonof cassis. Top with 2-3 slices oftamarillo. Top with anotherround of sponge and drizzlewith more cassis. Carefullyremove stack mould and repeatwith remaining sponge andtamarillos. Store stacks in thefridge, until required.

To serve, place on individualplates and spoon a littletamarillo around each stack.Great accompanied by Toffee &Potato Crisps Vanilla Ice Cream(check the recipe atwww.janbilton.co.nz/funky-potatoes). — Makes 4.

SALMON WITH ORANGE This makes an excellent brunch dish but is equally good served at dinner.

1 orange 4 boneless salmon loins (about 200g) 1 tbsp olive oil Pinch ground nutmeg Salt and pepper to taste

Finely grate rind from orange. Place aside. Squeeze orange to obtain a ¼ cup

of juice. Place salmon in a small frying pan. Combine orange juice with oil, nut-meg and seasonings. Drizzle over salmon.

Simmer for 3-4 minutes, until just cooked. Alter-natively, place salmon and juice mixture in a micro-wave dish. Cover and mi-crowave for 1-2 minutes.

Great served on steamed and buttered spinach.

Spoon the cooking juices over fish. Garnish with orange rind. Serves 2

Q A&HOW LONG SHOULD I COOKLENTILS?Most kinds take 30-45minutes, though split redlentils need only about 20minutes. Avoid lentilslabelled as heat-treated, asthey take ages to soften.Lentils keep indefinitely,but older supplies takelonger to cook and oftenlose their skins. Soaking

isn’t essential, but reducescooking time. Rinse wellfirst, cover with plenty ofwater and don’t add saltuntil the last 15minutes ofcooking. Small grey-greenpuy (pronounced pwee)lentils come from France,and have the best flavour.

IS IT POSSIBLE TO MAKE SUGAR-FREE JAM AT HOME?Sort of. But sugar is thepreserving agent and helpsto set jam aswell asintensifying the flavour. Sojamswithout sugar need to

be kept refrigerated andusedwithin amonth, orfrozen. Gelatine thickensfruit pulp, but the resultstend to bemore dessert-likethan jam (soften gelatine incold water before adding tothe hot fruit mixture). Youcan add extra sweetnesswith some brands ofartificial sweetener (such asSugromax), but others gobitter when heated.

HISyear I’ve beenbusy conductingcooking classes— atfarmers’ markets,fundraising events

and conferences. So far, I’veprovided 10 classes usingmostlylocal products, some of whichwere unusual and new tomanyof the attendees.

■ The tomatillo resembles asmall green tomato and inMexican cooking it is oftenreferred to as such. However,the tomatillo grows encased in apaper-thin husk similar to a cape

gooseberry. The fruit can beused raw or cooked and adds adistinctive flavour toMexicanand Spanish dishes. They growwell in warmer climes but tendto take over the garden. I’vestored our summer surplus inthe refrigerator and add them tocasseroles and stir-fries.

■ The kohlrabi looks like a rootvegetable but it is really a stemthat swells into a turnip shapeabove the ground. It is amemberof the brassica family. InGermany, kohlrabi meanscabbage-turnip.The “turnip” sprouts leaves

that can be steamed or stir-fried.Peel the kohlrabi and shred anduse raw in salads, steam andmash, stir-fry or add to soupsand stews.

■ Canned crabmeat has beenavailable in New Zealand foryears but it is not widely used. It

has been popular forgenerations in the US combinedwithmayo in sandwiches, insalads, dips, stuffed into halvedavocados, mushrooms or fish(and baked) plus in the ever-popular crab cake. Canned crabmeat is relatively inexpensiveand is extremely versatile,adding a touch of exotic to theordinary.

■ The Costata Romanescacourgette or zucchini is atraditional Italian heirloomvariety with pale green flecks onamedium-green palette and

with prominent ribs. It has greatflavour— buttery and nutty—and is delicious raw or cooked.Costata Romanesca are easy togrow and they produce well.Seeds can be sown in late spring.Themale flowers are large andexcellent for stuffing.

■ Vietnamesemint (Persicariaodorata), also called hot mint orlaksa leaf, is not actually amember of themint family. Ithas long pointy leaves and canbe added— inmoderation— tovegetable and fruit salads plusAsian dishes.

VIETNAMESE-STYLEMUSSEL FRITTERS60g bundle dried wide Asian-style rice noodles180g Sealord Natural Smokedmussels, finely chopped2 tbsp each: diced shallots,chopped Vietnamese mint,common mintFinely grated rind 1 kaffir limeor common lime2 tsp each: finely choppedgarlic, grated root ginger1/2-1 tsp diced chilli2 eggs, lightly beaten1/4 cup self-raising flourFish sauce and freshly groundblack pepper to taste2-3 tbsp Laughing Frog LemonGourmet Cooking Oil

Pour boiling water over noodlesin a bowl and soak untilsoftened. Drain well and chop.

Place all the ingredientsexcept oil in a bowl. Mix well.

Heat oil in a non-stick fryingpan. Take tablespoons ofmixture and fry in batches.Drain on paper towels. Excellentserved with a good chilli sauceas a dip.

CRAB & WASABI DIP170g can genuine crab meat3 tbsp mayo or sour creamSqueeze lemon juice1 tsp prepared wasabiProper Potato Crisps for

serving, optional

Combine drained crab andmayo in a blender, until smooth.Stir in wasabi.Pop in a dish and serve as a dip,or pipe or dollop on to ProperCrisps. — Serves about 8.

SALMON WITHORANGEThis makes an excellentbrunch dish but is equallygood served at dinner.

1 orange4 boneless salmon loins(about 200g)1 tbsp olive oilPinch ground nutmegSalt and pepper to taste

Finely grate rind from orange.Place aside. Squeeze orange toobtain a 1/4 cup of juice. Placesalmon in a small frying pan.Combine orange juice with oil,nutmeg and seasonings. Drizzleover salmon.

Simmer for 3-4 minutes, untiljust cooked. Alternatively, placesalmon and juice mixture in amicrowave dish. Cover andmicrowave for 1-2 minutes.

Great served on steamedand buttered spinach.

Spoon the cooking juicesover fish. Garnish with orangerind.

— Serves 2.

KOHLRABI FRITTERSWITH TOMATILLOSALSAIf tomatillos are unavailable,used 3 firm tomatoes.

Fritters: 1 large kohlrabi1 courgette (CostataRomanasca preferably)1 shallot, diced1 clove garlic, crushedSalt and pepper to taste1 large egg, lightly beatenPinch fennel seeds, optional2 tbsp self-raising flour,optionalExtra virgin olive oil for fryingSalsa: 4-6 large tomatillos1 tomato, diced1 clove garlic, crushed2 tbsp lemon juiceSalt and pepper to taste1 chilli, diced, optional3-4 tbsp chopped coriander

Fritters: Peel and coarsely gratekohlrabi into a bowl. Grateenough courgette to makeabout 3/4 of a cup. Add tokohlrabi with shallot, garlic,seasonings, egg and fennelseeds and flour if using. Mixwell.

Heat oil in a frying pan. Dropheaped tablespoon lots into panand fry either side until goldenand cooked.

Salsa: Remove paper-thinhusk from tomatillos. Dice theflesh. Combine with remaining

ingredients. Serve with thefritters. — Serves 4-6.

TAMARILLO SPONGESTACKS2 ripe tamarillos, peeled andthinly sliced3 tbsp brown sugar200g prepared chocolatesponge, about 4cm deep1/4 cup Prenzel Creme deCassis

Place tamarillos in a bowl. Stir insugar. Stand for 2 hours orovernight until sweetened and ajuice forms. Alternatively, poachin a little red wine, until cooked.Cool. Using a deep stack mouldor cutter, cut out 4 rounds ofsponge cake. Cut each round inhalf horizontally.

Place one piece back into thecutter. Sprinkle with a teaspoonof cassis. Top with 2-3 slices oftamarillo. Top with anotherround of sponge and drizzlewith more cassis. Carefullyremove stack mould and repeatwith remaining sponge andtamarillos. Store stacks in thefridge, until required.

To serve, place on individualplates and spoon a littletamarillo around each stack.Great accompanied by Toffee &Potato Crisps Vanilla Ice Cream(check the recipe atwww.janbilton.co.nz/funky-potatoes). — Makes 4.

Ready or not, spring fashion is beginning to flow in to fashion stores. Winter sales are in full swing to make way for the new season.

Colourwise, black and white is proving its staying power and featured very strongly on all of the major players catwalks in Europe. soft pastel hues especially mint green are entering the mix. While mint is the predominant pastel this season, soft pinks and even some lilac colours are making an appearance.

Vibrant pink is also a major trend and orange has remained strong.

Prints are very much in vogue with pretty florals and the introduction of tribal prints making a splash. Wearing print on print is on trend, and both matching and mismatching print seperates is quite acceptable. suits are very strong this season and wearing matching print jackets and pants creates a very European look.

in jewellery rose gold is the way to go, in accessories go bright, pastel or metallic and you cant go wrong.

in shoes, brogues are the new way to go flat and are available in both plain colours and prints. Bright colours remain very strong in footwear as do metallics and “boot shoes” which resemle boots but have the toes out are a new trend.

Dresses remain a firm favourite this season, and should be worn both casually with brogues, boots or blingy jandals and for special occassions, where fabrics that shimmer and shine are the trend. satins and brocades shine through for cocktail events and Weddings.

statement dresses are huge this season with vibrant colour blocking, prints, lace, pleats and bare shoulders being the strong trends that stand out.

Jackets should be boxy or cropped and will be available in many colours, textures and prints.

While skinny pants remain strong, the new players in pants are more floaty and relaxed and drapey in fit and come in prints and tuxedo styles (with vertical stripes down the seams).

Winter is a good time to sow a new lawn.

Always prepare the area prior to sow-ing or laying a new lawn.

The steps are the same for both. Spray the area to remove weeds, cultivate, compact and level the area to be sown. Add a layer of lawn preparation mix to the area to be sown to a maximum depth of 50mm.

Now you are ready to sow the lawn seed. Be sure to choose the correct lawn seed variety for your situation as differ-ent areas require different seed.

After applying, rake in the seed lightly and water in well. Do not letthe water puddle on the freshly sown seed.

Once your lawn is established it’s

important to keep it well fed to maintain its lush appearance.

Prevention is the best form of defence in keeping a lawn free of weeds and prickles.

If weeds do appear, act quickly by spraying. Before you begin mowing your new lawn, let the root system of the grass establish.

You can mow your new lawn when the majority of the new grass is 5cm tall. Only mow it lightly for the first few times. Once the lawn starts to thicken you can reduce the mowing height to 2.5cm.

Blunt mowers could pull out the young grass plants. It’s a good idea to use a catcher as well so the clippings don’t smoother the new seedlings. SMOOTH: Prepare your lawn first by compacting the soil with a roller.

It’s versatile, quick and has a range of uses in the kitchen. • Varieties

There are many types are avail-able, including: Round ball shaped varieties – these form tennis ball-shaped beets just under the soil surface. Ideal for shallow soils. Long root varieties – these grow long thin beets similar to a carrot. They suit deeply worked soils. Coloured

varieties – beetroot comes in varied colours from the traditional rich red through to yellow, white and pink types. •When, where and how to plant

Sow beetroot seed in early spring once the soil has warmed up and dried out. Choose a sunny posi-tion and work over well. Beetroot likes a sweet soil. Add lime prior to planting. You will find some garden centres have beetroot plants avail-able as seedlings. Make sure when

planting seedlings that the soil is deep enough to allow the roots to develop. Plant about 10cm apart. • Growing guide

Once seedlings appear or are planted, apply slug and snail bait around the plants. Apply liquid fer-tiliser each month. The crop should be ready two months from planting. • Harvest

Harvest by using a fork to loosen the soil around the beetroot when lifting. Store in a cool dark place.

Leave stalks on the beetroot until you are ready to cook. Removing them will cause the beetroot to bleed its natural dye – this make a huge mess. • How to use

All parts of the beetroot are edible. The leaves can be added to salads and stir-fries. The beet itself is ideal for roasting, bottling and preserving. The juice from the beets can be used as a natural clothing dye.

Late winter is the season when deciduous magnolias are at their best.

August seems to force these gorgeous flowers to open in a rush. The breathtaking sight of the large, tulip-like blooms perching on bare branches can send passers-by rushing to the nursery to buy something similar.

There are dozens of magnolia varieties, and making a choice can be a formidable task.

The names are confusing so it’s usually easiest to forget nomenclature and just go for the flower you like most (remembering, of course, to check the ultimate height on the label).

Most grow into small trees but, if space is tight, look for one of the shrub-sized star magnolias.

Because magnolias come from cool climates with rich, moisture-holding soil, keeping them happy through hot New Zealand summers can be a challenge. It’s important to take the opportunity to improve the soil as much as possible before planting.

Choose a spot that gets at least half a day’s sun and is pro-tected from strong winds.

Start by clearing grass or ground-covering plants from an area about 1m across, then dig plenty of manure or good compost and some longlasting fertiliser into the soil.

Because magnolias hate being dry, it can also be helpful to add some water-storing crystals into the planting area.

Create a planting hole that’s about twice the size of the pot and approximately the same depth.

Take the plant out of the pot with care (magnolias hate root disturbance) and sit it into the planting hole. Backfill, then water well to settle everything into place.

Lastly, spread a layer of or-ganic mulch. This will keep the soil moist and stop competitive grass from growing back over the root area.

Once the magnolia is well established you can plant some bulbs around the base to add extra interest in late winter and spring.

• Heavy traffic concernsI have read with interest the district council CEO’s response to my letter (July 22). Unfortunately for Mr Ward, he has to rely on what staff tell him, whereas I was actually there when a lot of what I wrote about happened.

To say that re-sealing the roads will solve the maintenance issues is not totally correct. Yes, if all roads were re-sealed then the issue may be addressed. How-ever, the cost to do this would be prohibitive. What residents want to see are the potholes being re-paired and this is not happening.

As for the investments issue I would ask Mr Ward to have a breakdown of the actual returns from all investments made public, and in this I would challenge him to show the comparative profit/loss from each of the three aspects of Sicon.

This was promised to be made available by the corporate man-ager some years ago – yet another promise not kept.

I would also ask Mr Ward to explain why repeated requests made by the Weedons Residents Association for information under The Official Information Act re the Weedons Reserve have been ignored.

Mazda3 meets expectations

The 2-litre sedan and hatchback market is important to Mazda New Zealand.

Fleet buyers and user-choosers are often restricted to cars with engines less than 2000cc. Which is why the Mazda3 has long been available here as a 2-litre option, alongside its 2.3-litre and, latterly, 2.5-litre stablemates.

Nothing has changed with the new generation Mazda3. Regular readers will recall my recent range-topping SP25 evaluation, the car in this evaluation is from the other end of the range, the 2-litre GSX sedan.

After the impression the SP25 made, I wasn’t sure if the 2-litre model would meet my expecta-tions, but it did.

It’s not only the style and pres-ence of the new ’3’ that stands out, it is the chassis and driveline, and interior detailing that puts the new model in a class of its own. I’m sure Mazda’s competition are looking at the new ‘3’ and are wondering what they can do to compete.

At $35,595 the GSX is prob-ably a couple of thousand dollars dearer than its closest rival, say Toyota’s Corolla, but there is a GLX model at $32,795 which is even more tempting. And if you take into account what you get in the new Mazda3 then that cost difference is irrelevant.

The SP25 was loaded with kit, especially for safety, yet the 2-litre doesn’t miss out on much, it still has the i-Activsense suite of safety devices, it gets an interior that is full of spec such as satellite navigation, radar cruise control, dual-zone climate control and console-mounted infotainment dial.

Not to mention the comfort and build quality that has gone into the Mazda3 in the first instance, it is a car which sets new standards.

Under the bonnet sits a four-cylinder, twin camshaft, 16-valve

engine which Mazda rates at 114kW and 200Nm, these are healthy outputs from 1998cc and it also incorporates all of the Skyactive technology which Mazda is building into its engines these days.

Skyactive is simply a pro-gramme which sets fuel economy along with performance as a key manufacturing ingredient. An idle engine stop function (i-Stop) is included across the Mazda3 range and that simply is a fuel saving measure.

In this form Mazda also claims a 5.8-litre per 100km (49mpg), combined cycle fuel usage figure for the GSX which is only avail-able as an automatic. That cor-relates well with the 7.4l/100km (38mpg) figure during my four days with the test car. Incidentally, at 100km/h the engine sips fuel at the rate of 5.6l/100km (50mpg) with the engine turning over unflustered at just 1800rpm in sixth gear.

The gearbox is a six-speed con-ventional automatic with smooth shifts along with shift protocols that adapt well to both urban and highway motion.

Interaction between the engine

and gearbox is fluid, the engine is quite peaky if requested, it will happily launch to the red-line but it isn’t short on torque and the transmission will short shift so that fuel isn’t wasted through throttle pedal pressure.

Against the clock the GX doesn’t lose a lot to its SP25 stablemate, it will launch to 100kmh in 9.4sec (7.9sec SP25) and will complete a highway overtake in 5.1sec. A lot of the GSX’s performance comes down to its lightweight of 1296kg, the Mazda3 in this form is lithe

and nimble.In all conditions the GSX pro-

vides an exhilarating road feel. Its directional accuracy in both tight and long flowing corners is remarkable given the energy effi-cient Toyo tyres are high in profile at 205/60 x 16in).

The Mazda3’s composure in the tight stuff doesn’t come at the cost of spring and damper rates overly firmed. There is a lot of compliance within the front strut/rear multiple link suspension and with the sophistication of the

fully independent set-up there is a performance-type handling feel along with the absorption needed to provide comfort on uneven road surfaces.

Mazda New Zealand has entered 2014 with renewed vigour. Its passenger car range is fresh and exciting. And if you take into account that Mazda6 which was released last year is going gang-busters along with strong interest in Mazda3 there is good reason for optimism.

The only thing the Mazda deal-ers will have to work hard with is persuading buyers that the extra few dollars will be money well spent in the long-term.
