It’s been quite pleasing to see the economy improving ever so steadily in Beaufort. Businesses are gaining confidence in the once questionablemarket and the hard working citizens of the sea islands are splurging a little more than they were a couple months ago. There is an over-all sense of sustainability being renewed and I sense a little more communitytogetherness, people working together towards the common goal of growth. I have always been an advocate of cross-marketing rather than competitivemarketing, and seeing the business owners and organizations working togetheris rather inspiring. That doesn’t mean I don’t have a competitive spirit,sometimes I can be downright mean! But lately I have decided to take a higher road; cutting losses a bit easierand counting my blessings repeatedly.

I am always so gracious for the faithful advertisers of Sea Island Scene because without your dedication to your businesses growth, I would not be ableto spread the word about Beaufort, South Carolina through Sea Island Scene as effectively as I can today. This is just the reason why you might find meboasting about my recent excellent meal at many of Beaufort’s fine restaurants, or talking about the wonderful new purchases or experiences I had. As much as I would love to have a hundred page magazine to fit everything I love about Beaufort into, I am limited on space, so I try to give as muchinformation that you, my fine lot of readers, will find useful as well as inspiring and entertaining.

We are now neck deep in Beaufort’s festival season and in the spirit of economic progression I would like to share some ideas of how you can celebratethis time in an economically friendly way.

I have always been the kind of person that sets aside a small amount out of my paycheck to reward myself for working so hard. Usually, I have a list ofthings I’d like to buy myself or my family, sometimes a really long list! Buying myself a perk present each pay period fulfills my womanly desire to shopwithout blowing an entire check and later having buyer’s remorse.

Sometimes when pay day rolls around you may wonder how you are going to afford to set aside even twenty dollars for yourself. You may wonder how you are going to afford to enjoy the festival without having as much cash on hand as you wish. Well friends, there’s a simple solution. Try a festivefree-style! Just because you don’t have wads of cash doesn’t mean you can’t enjoy the entertainment of the festival. There are plenty of downtownvenues that are hosting free entertainment. Don’t be disappointed if you can’t get past the ticketed gates, there are certainly swinging doors (and evenswinging chairs) downtown where you can fit in for free!

Have only twenty dollars to spare? There are several shops on Bay Street where you can pick up a new gift for yourself (or someone you love) then headdown to the water front where you can enjoy the free festival sounds, craft markets and marina entertainment. The Downtown Marina is even hostinga huge sale on July 18th and 19th where you can find up to 50% off shirts, nautical and palmetto-style items. Looking for something to tickle your taste buds? Take a walk on the Carteret side to Chocolate Tree where you will find their special caramel apples only available during the festival.Summer wouldn’t be complete without a new pair of flip-flop sandals and Finishing Touches (in the Old Bay Marketplace) has Switch-Flops! Now youcan be fashionable in these interchangeable fashion flip flops!

Every year preparing this issue puts me into a festive mood. This year though, rather than attend the same traditional events, I’ve opted to take myfamily on a two-week family reunion trip under the bright lights of Vegas. Although I’ll be missing the Lowcountry Supper where I met my better half years ago, I’ll be making up for it in the buffet aisle of as many casinos as possible! The Water Festival holds a special place in my heart and perhapsnext year I’ll find myself back on the Waterfront Park grounds enjoying the events that I attended the night I met the love of my life.

n Jan. 8, 1939 the CharlestonNews & Courier’s Beaufortcorrespondent, Chlotilde R. Martin

wrote in her column: “The little village ofPort Royal, which used to look sad anddisconsolate - perhaps in despair and losthope because its glory had departed -has snapped out of it ...”

“It is now spic and span with new paintand shining with cleanliness. Even theavenue of trees leading into the town has been given a waist-high coat ofwhitewash. In a casual drive about thecharming little place recently, there wasnot a single cheerless down-at-out heelslooking home to be seen... But somethinghas happened to Port Royal.

Chlotilde R. Martin mentioned the newbridge being built to connect the townwith Parris Island, “or perhaps of itsyoung up-and-coming -himself an immaculatelooking gentleman, Mayor Ritter?”

Born in Brunson, Hampton County onAug. 21, 1911, educated in local schoolsand attending Carlisle Military Academy,James L. Ritter came to Port Royal in1928, was employed in construction onParris Island for two years. He joined theMerchant Seaman Service for one year,

returning to Port Royal in mid-1933. He took a job with the Civil Service andthe Navy Department at Parris Island.

James L. Ritter was elected as Mayor ofPort Royal in 1936, left Port Royal in1942 to join the U.S. Marine Corps forthe duration of the war. “he was electedagain as Mayor in Jan. 1945 and hasbeen reelected for six continuous terms

after that. Since casting his lot in public life, he has fought to build bettercommunity conditions and improvements...Foremost among the projects of whichhe is most proud is the activation of thePort of Port Royal as a major Atlantic port.”

After his discharge from the U.S. Marine Corps,James L. Ritter was again elected Mayorof Port Royal and served continuouslyuntil his death, April 19, 1966. The Charleston Evening Post, in 1953,stated in an article that “During his terms,he has seen the town grow slowly from 320 residents in 1953 to afluctuating population of between 350and 500 in 1949.”

Walter Edgar’s South Carolina Encyclopediareported in 2000 Port Royal’s populationat 3,950. In its article by Gerhard Spieler,the latter wrote, quoting the 1991History of the South Carolina State PortsAuthority: “Of South Carolina’s threeports, the Port of Port Royal was the firstto be visited by European colonial powers,but it was the last of the three to decidejust what kind of a port it was suited to be.”

Wild Mushroom Macaroni Gratin

DIRECTIONS:Preheat grill. Fill a large saucepan three-fourths fullwith water and bring to a boil. Add the macaroni andreturn to a boil. Cook the macaroni until slightly tender.In a large saute pan over medium-low heat, warmolive oil. Add shallots and saute until translucent. Cut mushrooms in half. Add mushrooms and salt andpepper to taste to the saute pan and saute over mediumheat until the mushrooms are soft and slightly browned.When pasta is done, drain it immediately and add itto the saute pan holding the mushrooms. Add thechives and parsley and stir to mix. Transfer the mixtureto a flameproof 9-inch gratin dish with 2-inch sides orindividual gratin dishes. Sprinkle the Swiss cheeseevenly over top. Allow cheese to melt, about 2 minutes.Serve immediately.

Spicy Chicken Sausage Fusilli

DIRECTIONS:In a large, deep frying pan, heat the oil overmoderate heat. Add sausage and cook, turning untilbrowned and cooked through, about 10 minutes.Remove the sausage and, when it is cool enough to handle, cut it into 1/4-inch slices. Pour off all but 1 tablespoon fat from pan. Reduce heat to low. Add onion to pan and cook, stirring occasionally, until translucent. Add garlic and cook 30 seconds longer.Add wine and bring to a simmer. Add sausage, tomatoes,water, rosemary, red-pepper flakes, and 1/4 teaspoonof the salt and bring to a simmer. Cook, stirringoccasionally for 10 minutes. Stir in the parsley. In a large pot of boiling, salted water, cook fusilli until done. Drain and toss with sauce, ricotta, andremaining 1/4 teaspoon salt.

You haven’t been fishing as much as you wouldlike in years, but now that you’re retired, you’relooking forward to spending many a day fishingby the creek. You’ve heard there are some goodplaces to fish nearby, but you’re going to haveto see for yourself. Let the search for the perfectfishin’ holes begin.

Because you plan to fish often, you will definitelywant to restrict your search to the local area.What’s the point in spending more hours in the car than at the fishin’ hole? You will alsowant to determine the type of fish you’re after. Why check out trout locales if you’re after bass?

Once you have an idea where you want to go,you can startmaking a list ofpotential spots.Write down allo f t h e g o o d o n e s y o u ’ v eh e a r d a b o u t and ask friendsand family for

recommendations. Stop in at your local marinasand bait and tackle shops and ask around. The staff and clientele there should know aboutall of the local fishing spots as well as theconditions at them.

Should you come up short, don’t despair. There are other resources. Check with thepublic relations department at your state fishand wildlife agency. Conduct a search on the Web.Chances are you will come across many blogs,message boards and the like discussing the bestlocal fishing spots. If all else fails, get a map of

your area and start checking out all of the lakes,rivers and streams.

Rank the spots you come up with and pay thetop ones a visit. This will give you a chance tosee what the fishing is really like there. Don’t beafraid to approach any anglers you see and gettheir opinions of the place. Fishers in thiscommunity are usually friendly and enjoy good fishing conversation. Find out how oftenthey come to the spot and what kind of a catchthey make. Get out your pole and do somefishing of your own.

Depending upon how well known the spots arethat you choose, you may be able to hire a guidefor your first trip out. They will be familiar withthe area and provide you with loads of helpfultips and information. You will learn more thanyou would on your own in a very short time.

Finding the right fishin’ holes takes work. Be prepared to put in the time, and don’t expectto get it right the first go-around. It might take you a few trips before you find the bestspots for you, but with the many great fishingspots in Beaufort waterways, you are sure toend up with a good catch quick!

FISH TIP: The first week of July tarpon arrives to Beaufortwaterways. These can be foundon the Broad River (a hot spot)and at the mouths of Port Royaland St. Helena sound, but canalso be found at the smallerinlets and rivers.
