ESSENTIALGLASSWARE
1.TUMBLER—Usedforneatdrinks(straightliquor)orcocktailsservedoverice.Tumblersstand2incheshighandtypicallyhold6to10ounces.Whiskeyisthemostcommonspiritservedintumblerglasses.
2.COCKTAILGLASS—Thisglassissophisticatedaswellasfunctional.Thestemkeepstheheatfromyourhandsoffthebowl,keepingthecocktailchilled.Thewidetopallowsaromatic
compoundsinthecocktailtowaftdelicatelytoyournose.
3.STEMGLASS—Wineisthemostcommondrinkservedinastemglass.Thereareseveraltypesofstemglassesfordifferentkindsofwine(red,white,champagne,etc.).Weserveonlyasmallhandfulofcocktailsinstemglasses—themostnotablebeingaPiscoSour.
4.PINT—Atraditionalbeerglass,mostalesanddarkerbeersareservedinpints.WeservetheSchiller’ssmoothieandoureggcreamsinpintglasses.Drinkswithseveralingredientslendthemselvestothelargerpintglass.
5.COLLINSGLASS—NamedaftertheTomCollins,thistallandslimglassholds10–12ouncesofliquid,withplentyofroomforiceandmuddledfruit.WeusetheseforMojitos,Pimm’sCup,andtheCountryTime,andothersummercoolers.
6.TODDYGLASS—Anyhotbeverageshouldgointoaglasswithahandle—thispreventsyoufromburningyourhandsonthevessel.Toddyglassesaremoresophisticatedthanatraditionalmug,yetwithan8-ouncecapacity,theyarebiggerthanateacup.
7.HIGHBALL—TallerthanarocksglassandshorterthanaCollinsglass,thismedium-sizeslenderglassholdsabout8ounces.Thehighballisafavoriteforsimpletwo-tothree-ingredientmixeddrinks.Avodkasoda,forexample,wouldbeservedinahighball.

TEASTRAINER(NOTPICTURED)—Afewofourdrinksrequiredoublestraining.AHawthornestrainerandaJulepstrainerallowsmallbitsofsolidsinthedrink,soifyouwanttheflavorofthemintormuddledfruitwithoutanypieces,you’llneedtostrainasecondtimewithafinemeshstrainer.Asmallteastrainerworkswonderfullyforthispurpose.
POURTOPS(NOTPICTURED)—Onceyouhavemasteredtheartoftheperfectpour,youwon’twanttolivewithoutaspeedpourer,alsocalledapourtop.Ametalspoutwithasmalleropeningforairexchange,thespeedpourerstreamlinestheflowofliquidfromthebottle,preventsspills,andgivesyoucontroloverhowmuchliquidisreleased.Practicewithabottleofwaterandapourtopbypouringthewaterintoameasuringcupwith¼-ouncedemarcations.Countasyoupour,withonecountequaling¼ounce.Memorizethisrhythmandyouwillmastertheperfectpour.
DASHBOTTLE(NOTPICTURED)—Abottleusedtodispenseessentials(likebitters)withasmallrubberpourtop.Ithasaverysmallopeningthatdoesnotallowairtoflowbackintothebottle,enablingthebartendertopouronedashatatime.
7.MUDDLER—Amuddlergentlymaceratesfruitorherbs.Muddlingherbsisasimplewaytoreleasetheiressentialoilsintoacocktail.Becarefulnottoovermuddle,soasnottodestroythefruitorherbsbutrathertojustreleasetheflavorswithin.
ESSENTIALSPIRITS
VODKA—Vodkaisaclearneutralspirittypicallydistilledfromgrainssuchasbarley,rye,orwheat.Cornisbecomingmorepopularasagluten-freealternative,andpotatoeshavealsooftenbeenusedasabase.Chooseavodkathathasbeendistilledmanytimes;thisprocessremovesimpuritiesandresultsinacrystal-cleartaste.
GIN—Manycocktailsfromtheearlytwentiethcenturycalledforginasthebaseliquor.Ginisagrain-basedspiritdistilledwithbotanicalstogiveitanherbal,aromaticflavor.Juniperberry,orangezest,lemonrind,licorice,coriander,cardamom,andmanyotherslendginitsdistinctiveflavor.Donotskimpongin.
WHISKEY—Whiskeyisagrainspiritwithanincredibleamountofvariation.Thedifferenceinwhiskeyscanresultfromingredients,distillation,thecountryoforigin,andmanyotherfactors.Scottish,Irish,American,andCanadianwhiskeys,bourbons,andryesarethemainfour.However,thereareevenmoredistinctivevariationswithineachcategory,soweencourageyoutoexplore.
TEQUILA—TequilamustbeproducedintheMexicanstateofJaliscotobeconsideredauthentic.Theagaveplantsarecultivatedformorethantenyearsbeforebeingharvested.Theheartsarethenmaceratedandfermentedwithsomepreviouslyfermentedagave.Darktequilasgettheircolorationfromtheagingprocess.Makesurethatthelabelreads100%deagaveoryoumaybepurchasingaproductthatcontainscaramelcolororotheradditives.
BRANDY—Brandyisaspiritdistilledfromwineandagedinoakbarrels.CognacisatypeofbrandythatisproducedentirelyinthegeographicallydelimitedregionsinFranceknownas
CharenteandCharente-Maritime.
CORDIALSANDLIQUEURS—Thiscategoryofspiritgenerallyreferstoalcoholicbeveragesthathavebeendistilled,sweetened,andflavoredwithfruit,cream,nuts,orherbs.HerballiqueurswereoriginallyproducedbymonksinFranceorItalyandsoldformedicinalpurposes.
APÉRITIFS—Theseliqueursusuallyhaveappetite-enhancingpropertiesandareconsumedbeforeameal.Wine-basedspiritssuchasvermouthorchampagnearecommonlyservedasapéritifs,aswellasliqueurssuchasCampariandAperol.
DIGESTIFS—Digestifsaremadewithherbsthatwillaidindigestionandaretakenafterameal.Herbssuchaslicorice,anise,cardamom,spearmint,peppermint,valerian,wormwood,coriander,andfennelarecommonlyused,butthisisonlyapartiallist.
Rum—RumismadefromsugarcanejuiceormolassesandiscommonlyproducedintheCaribbean.Ithasalonghistorydatingbacktotheseventeenthcenturyandcanrangefromcompletelycolorlesstoadeep,richbrown,dependingontheagingprocess.
ESSENTIALMIXERS
Everyhomebarshouldhavethefollowingmixersonhand:
SODAWATER—Sodawaterisalsoknownasclubsodaorseltzer.Usesmallbottlestopreservethecarbonation.
TONICWATER—Tonicwateriscarbonatedwaterwithquinine.Again,usesmallbottlestopreservecarbonation.
GINGERALE—Useatop-qualitybrand—itwillenhancethequalityof
yourcocktail.
GINGERBEER—IfyouplanonservingaDark&StormyorMoscowMule,youwillneedgingerbeer.It’saspicy,refreshingmixer.
COLA—Colaisn’tessential,butit’salwaysgoodtohaveonhand.
LEMON,LIME,ORANGE,ANDGRAPEFRUITJUICE—Nobarwouldbecompletewithoutlemonjuice,buttheothersarenicetohaveonhandaswell.Alwaysusefreshlysqueezed.
PINEAPPLEJUICE—Werecommendusingunsweetenedpineapplejuice,whichallowsmorecontrolovertheflavorofyourcocktail.
SIMPLESYRUP—Aneutralsyrupmadefromheatingsugarinwater,SimpleSyrupisamust-haveforsweeteningcocktails.
GRENADINE—Asweetsyrupmadefrompomegranates,grenadineisanicewaytoaddcolorandsweetness.
BITTERS—Bittersareliquorsmadefromherbalessencesandplantextracts.Therearemanydifferentbitters,buttheessentialsareAngostura,Peychaud’s,andorange.
ESSENTIALGARNISHES
1.OLIVES—Theclassicmartinigarnish.Buytop-qualityolives;theytastebetterandarefirmenoughtostayonatoothpick.WeuseSpanishQueens.
2.LEMON/LIMEWEDGES—Asimplelemonorlimewedgecanaddanicecitrusflavorandaromatoanycocktail.Traditionally,lemonsarepairedwithsoda,andlimesarepairedwithtonic.Limegoeswellwithtequila,gin,vodka,orrum.Lemongoesparticularlywellwithvodka.
3.LEMON/LIMETWISTS—Acitrusrindcanprovideanicearomaticcomponenttoadrinkandismoresubtlethanawedgeofcitrus.Theessentialoilsaretuckedinsidethecitruszest,sothearomasandflavorsfaintlyseepintothedrink.
4.MARASCHINOCHERRIES—AbeautifulaccompanimenttoanAviationoraManhattan,themaraschinocherryisanotherclassicgarnish.Originally,marascacherrieswereusedandpreservedintheirnamesakeliqueur,maraschino.Thesedays,manyartificialingredientsgointomaraschinocherries,butyoucanstillfindpreservedmarascasinspecialtygourmetshops.
5.ONIONS—TraditionallyusedintheGibson,cocktailonionsprovideabrinysournessthatmanypeopleprefertoolives.
6.FRESHHERBS—Freshherbscomplementnearlyeveryspirit.Rosemaryandbasilpairwellwithvodkaorwhiskey.Mintisarefreshingcomplementtogin,cachaça,whiterum,Pimm’s,andmanyothers.Sageisnicewithwhiskeyortequila.Experiment,andyouwillfindotherflavorcombinationsthatwork.
7.CUCUMBERS—Increasinglypopularasagarnish,cucumbersprovideafresh,crisparomaandsubtleflavortogin-orvodka-
basedcocktails.
8.BERRIES—Raspberries,blackberries,andstrawberriesarecolorfulgarnishes.Weliketouseraspberriesandblackberriestogarnishanumberofdrinks,includingourRaspberryBramble.
9.PINEAPPLES—FrompiñacoladastoMaiTais,pineapplesareanicetropicalfinishingtouchandpairwellwithrum-baseddrinks.
SHAKINGACOCKTAIL
ThebestandmostcommonshakertouseistheBostonshaker,usedinconjunctionwithaheavymixingglass.
1 Toshakethecocktail,placethemixingglassonthebartopandcombineyouringredientswithapproximately10to12icecubes.Neveroverfill;itcangetmessyandyou’llwantroomforingredientstomoveinordertoefficientlychillthecocktail.
2CoverthemixingglasswiththeBostonshaker,makingsureyouhaveatightseal.Tappingtheduogentlybutfirmlyonthebarwillachieveatightseal.
3OncetheBostonshakerisinplace,inverttheshakerandmixingglass.
4Holdtheshakerfirmlyinyourdominanthand,supportingtheglasswithyourotherhand.Thenraiseyourelbowstoanangleof90degreesinrelationtoyourbodyandbeginshakingthedrink.
5Mostdrinksshouldbeshakenwellfor15to20seconds—anylongerthanthatmay“bruise”thedrink.
NOTE:Somedrinksshouldbeshakenforashorterduration—suchasawhiskeysour.Vodkamartiniscanbeshakenatouchlonger.

Somecocktailsmustbestirredsoasnotto“bruise”thealcohol.Bruising refers to dilution caused by melting ice. The mostcommonly stirred cocktails are the gin martini and theManhattan. If shaken, theybecome “bruised”and lose someoftheir complexity of flavor. This is not an issuewith vodka, sovodka-basedcocktailscanbeshaken.
1 Tostiracocktail,combineallyouringredientsinamixingglasswith10to12icecubes.Withalong-handledbarspoon,stirgently,twistingthespoonslightlyasyoudo.
2Strainthecocktailintotheglassinwhichyou’llbeservingit.(Evenifyouarestirringacocktailthatwillbeservedoverice,youshouldstrainit.Neverreusetheicethatyouusedto

3Whenstrainingdirectlyfromthemixingglass,youshoulduseajulepstrainer.
BLENDINGACOCKTAIL
Blendedcocktailsareperfectforsummerbackyardentertainingor just afterahotday.Toachieve theperfect consistencyandeven color distribution, it’s important to be patient whenblending.
1 Tocreatetherightconsistency,pourallliquorsandjuicesintotheblenderbeforeaddingtheice.
2Slowlyaddtheice,measuring1cupoficeperdrink.Itispreferabletousecrushedice,butifthatisunavailable,addtheicecubescarefully.
3Securethelidandturntheblenderonatthelowestspeed.
4Continueblending,increasingthespeedlevelgraduallytoavoidanychunkiness.
5Stoptheblenderandchecktheconsistency.Iftherearestilllargechunksapparentthroughout,continueblending.Ifthedrinkappearstoowatery,slowlyaddmoreice.
STRAININGACOCKTAIL
Aftershakingorstirringyourcocktail,youwillwanttotaketheappropriate strainer and hold it firmly in place with yourdominant hand, transferring the contents into the glass inwhichthecocktailwillbeserved.Holdthestrainerinplacewithyourindexfingerasyoupour.
WHICHSTRAINERTOUSE
HAWTHORNESTRAINER:UseaHawthornestrainerwhenpouringdirectlyfromacocktailshaker.Oftenusedinbars,thisstrainerallowsliquidtopourfreelywithsomesmallersolids.
JULEPSTRAINER:Thejulepstrainerisabowl-shapedstrainerwithahandleandholesinthecenterthatenableliquidstopassthrough.Useajulepstrainerwhenpouringdirectlyfromamixingglass.
TEASTRAINER:Ifyouhaveacocktailwithmuddledherbsand/orfruit,butyoudon’twantanysolidtraceoftheminyourfinishedproduct,youwillneedtodouble-strainthedrink.UseateastrainertofollowuptheinitialstrainingwithaHawthorneorajulepstrainer.
CHILLINGGLASSWARE
Aproperly chilledglasswillmaintain the temperatureofyourcocktailasyoudrinkit.

Theeasiestwaytochillaglassistoplaceitinthefreezerabouttwohoursbeforeyouservethedrinks.
Anothermethodistofillacoolerwithcrushediceandplacetheglassware upside down in the cooler, making sure that theentire surface area of the glass is surrounded by ice. Chill forapproximately30minutes.
If you do not have access to crushed ice, simply place a fewcubesoficeintheglassandfillitwithwater.Bythetimeyou’vefinished mixing the cocktail, the glass should be sufficientlychilled.
The best way to frost a beer glass is to submerge it in water.Invert theglass,allowingtheexcess todripoff,andplace it inthe freezer for2or3hours.Besure touse temperedglass,asmoredelicateglasswaremaycrack.
CRUSHINGICE
Crushed ice is thebestwaytochillanddilutestrongcocktails.MintJulepsarerefreshingbutaretootartserved“up”(withoutice).

Most bars have a professional ice machine that dispensescrushedice.Forthehomebartender,manyrefrigeratorshaveacrushed ice setting. Crushing ice with a blender is an easyalternative.

1 Place4or5icecubesinazip-typefreezerbagandseal.
2Foldatoweloverthebagsoitliesflatonyourworksurface.
3Withthebluntendofahammer,poundthebag8to10times,checkingtoseeiftheiceisbeingevenlycrushed.
4Removethecrushedicefromthebagandplaceitinyourglass.

Alightlydustedsugarrimprovidesadditionalsweetnessandadecorative touch for special cocktails. It’s crucial to obtain aconsistentcoatingofsugararoundtheriminordertomaintainbalanceinflavor.

Manyof thebartenders I firsthiredwere less interested in thesimplicityofclassiccocktailsthaninaddingtheirown“twists”tothem. (These were often the ones who calledthemselvesmixologists). I soonappliedmyown “twist” by firingmostofthesebartenders.Thishadasoberingaffectontheoneortwo who remained, and, not surprisingly, the drinks improvedimmediately. Oncesatisfiedwiththequalityofourclassiccocktails, Ibegantothink about a second category: experimental drinks. Slowly, Iencouragedmybartenderstochangeaningredientortwoinsomeof our cocktails. I was looking for subtle variations that wouldsignificantlyimprovethetasteofthedrinksoratleastalterthemin an interesting and pleasing way. Tinkering with freshingredientsandsmallbatchesofhomemadeinfusionsandsyrupsfiguredprominentlyintheserecipes,whichiswhytheyarelooselyclassifiedas“artisanal.”
Ninetypercentoftheconcoctionsendedupdownthedrain.Butthe10percentthatIliked,thatIwasconvincedhadawonderfullyspecial taste, I added to our cocktail list. Included here areSchiller’s originals, such as the Sloeberry Bramble (which swapsblackberries for plum-like sloeberries), Jalisco Sour (which hashintsof raspberry),andtheChaiFashioned (asimple tea-infusedtwistontheOldFashioned).Ihopeyouenjoythem!
