A nyone who has idled along its shores, skipped a stone across its rocky

breaks or merely took in its ma-jestic views while crossing its ex-pansive breadth, knows that the Hudson River is nothing short of inspirational.

While it’s true that inspiration

may be fleeting for most who encounter the river’s beauty and power on their morning com-mutes or who run or cycle near its shores, the Hudson River has no doubt moved many, famous or otherwise, to pick up a paint brush in an attempt to capture its allure.

Just the same, across the pond in England, the River Thames — the longest in the country — has beckoned artists to paint its mag-

nificence.In its newest exhibit, From

London to New York, The Pan-oramic River: the Hudson and the Thames, the Hudson River Museum beckons visitors to see the iconic rivers individually in all their stately glory, yet chal-lenges them to see how they are very much linked in art history.

Bartholomew Bland, director of curatorial affairs for the muse-um and co-curator of the exhibit, said one of the most fascinating aspects of the show and its fea-tured works is “the cross-cultural connection” that exists between artists of the late 18th and early 19th centuries who made the Hudson and the Thames their muses.

In the late 18th century, Brit-ish artists began using large-scale panorama, offering sweep-ing views of the Thames and the land that hugged its shores. By the early 19th century, painters like Robert Havell Jr., who came to New York from London, began to capture the Hudson River pan-oramically and influence, expand and evolve how American artists viewed landscape painting.

Among the 103 pieces — which include not only paintings, but print, scrolling panoramas, screens and even a board game — are works by Thomas Cole, known as the Father of the Hud-son River School, Jasper Cropsy, a first-generation student in the school, and John Frederick Kensett, who traveled Europe painting before setting up his studio in New York.

The Panoramic River features major loans from more than two-

dozen museums, including the Metropolitan Museum of Art and The New-York Historical Society, as well as from galleries and pri-vate collections.

The exhibit will be on display through May 19. The Hudson River Museum, located at 511 Warburton Ave., in Yonkers, is open Wednesday through Sun-day, noon to 5 p.m. For more information or admission prices, call 914-963-4550 or go to www.hrm.org.

Anyone who knows me well knows two things. One, I love to host parties. Two, I hate the cold.

Therefore, fun in February looks like this. Stay in, start a fire (ehem…or in my case, turn on the heater), cook and invite some people over.

I do however make excep-tions for friends’ birthdays and a good Super Bowl party. But what kind of dessert do you bring to a room filled with tal-ented pastry chefs who play with chocolate and liquid nitro-gen all day? A molecular mas-terpiece? I think not.

For this year’s Super Bowl, I decided to keep it simple and do what I do well. Comfort food. Using a bunch of leftover crois-sants and granny smith apples, I whipped up an easy bread pud-ding. Within an hour, my whole apartment was overtaken by an intoxicating perfume of apples, vanilla and butter.

Ideal for a Sunday brunch, a potluck or a casual buffet-style dinner, this pudding uses granny smiths, but feel free to try gala, honey crisps, rome, cortlandt or any other organic apples you can get your hands on. And don’t forget the ice cream.

APPLE CROISSANT BREAD PUDDING WITH

RUM RAISINSServes 8 to 10.

1/2 stick unsalted butter (4 Tbsps.), plus more for greasing

8 Cups cubed day old croissants

3 granny smith apples, cubed into half-inch pieces (about 4 Cups)

1 Cup sugar, plus 1 Tbsp.

pinch of kosher salt1/4 Cup raisins1 Tbsp. dark rum3 Cups whole milk4 whole eggs4 egg yolks1 tsp. almond extract1/2 vanilla bean

scraped, pod saved for other use*

Preheat the oven to 325 de-grees. Grease a 3-quart Pyrex dish with butter and add the croissants.

Heat the 4 Tbsps. of but-ter in a large sauté pan over medium heat. Add the apples and turn heat to medium high. Cook about 5 minutes, tossing occasionally until they become a bit tender. Add 1 Tbsp. of sugar and a pinch of salt. Cook another minute.

Evenly distribute the apple mixture over the bread.

While cooking the apples, cover the raisins with 1/4 Cup of boiling water and rum. Soak for 10 minutes.

Meanwhile, combine the milk, eggs, remaining 1 Cup sugar, vanilla seeds and almond extract in a blender. Pulse quickly to incorporate ingredi-ents.

Drain the raisins and scatter over the bread and apples.

Pour the custard mixture over the cooled apples and bread. Cover with plastic wrap and press down gently to sub-merge the contents of the dish in the liquid. Soak for a half hour, pressing down gently, ever so often.

Boil about 7 Cups of water.Create a bain marie or wa-

ter bath by doing the following: Lay a towel in a larger vessel than the pudding casserole

(You can use a larger Pyrex dish or even doubled up rect-angular aluminum foil contain-ers used for baking turkeys). Place the pudding on the towel and place in the oven. Pour the water into the larger ves-sel until it comes halfway up the sides of the pudding dish. Bake for 50 minutes to an hour, or until pudding sets. Do not overcook.

Serve warm, cold or at room

temperature with vanilla ice cream, if desired. Cold leftovers make for a super indulgent breakfast the next day.

*Cook’s Note: Whenever I scrape a vanilla bean, I save the pod and make vanilla sugar by combining the pod with 4 Cups sugar. This is useful for recipes that call for both sugar and va-nilla extract or to give your des-serts an added subtle scent and flavor.

Test prep offeredat Riverdale center THROUGH MARCH, the Riverdale Community Center, located at the David A. Stein Riverdale/Kingsbridge Academy, MS/HS 141, 660 W. 237th St., will host an eight-week course that prepares middle schoolers for the city’s specialized schools test, on Tuesday evenings, from 7 to 9 p.m., beginning March 5.

One course is for current seventh-grade students preparing to take the New York City Specialized High Schools Admission Test and/or Test for Admissions to Catholic High Schools. The course costs $250.

The other course, beginning on March 6, and held from 7 to 9 p.m., will be an art prep course that will assist the student in preparing for the art portion of the examinations for the special art high schools held in the fall. Emphasis will be on portfolio preparation. The course costs $250.

Theater Riverdale group stages ‘Company’ SATURDAY, FEB. 9 and SUNDAY, FEB. 10, the Riverdale Repertory Company will present the Tony award-winning musical, Company, at the Riverdale YM-YWHA, located at 5625 Arlington Ave.
