DAOU Reserve Cabernet Sauvignon showcases the excellence of westside Paso Robles as a premier region for this iconic Bordeaux variety.

DAOU Reserve Cabernet Sauvignon comes from DAOU Mountain and other standout vineyards selected and over-seen by Winemaker Daniel Daou. Daniel has worked closely with these vineyards for numerous vintages.

DAOU Mountain in the Adelaida District is regarded as one of California’s supreme terroirs for Cabernet Sauvignon, with limestone soils similar to Saint-Émilion, France and a climate that corresponds closely to the heart of Napa Valley. DAOU Mountain’s combination of remarkable geology, microclimate,a 2,200-foot elevation, and steep slopes gives it a terroirdescribed as “a jewel of ecological elements.

The other vineyards contributing to DAOU Reserve Cabernet Sauvignon are located on the coastal westside of Paso Robles as well as El Pomar District east of Templeton — the region’s other leading AVAs for Cabernet Sauvignon.

The WINE

DAOU Reserve Cabernet Sauvignon is crafted to Daniel’s exacting standards. Proprietary techniques allow for optimal phenolic character. The wine is fermented with DAOU’s pro-prietary D20 yeast and made exclusively from free-run juice to ensure purity of flavor. Finally, it is aged for 15 months in 50% new French oak.

The PROFILE

This wine’s magnificent nose is quintessential Cabernet Sauvignon, offering scents of dark chocolate, licorice, blackberries and cured meats with a touch of cedar. A silky palate is nicely integrated with hints of toasty oak, graphite, mineral and forest floor. Ripe fruits and exotic spices linger on a generous,

full-bodied finish that promises excellent

age-worthiness.
