Some of the superb culinary treats to be experienced when dining at the Boulevard range from buttermilk marinated calamari to mouth watering 100 per cent Canadian raised prime rib to a creamy and fi lling bacon mac and cheese or thin-crust Neapolitan dinner pizzas, many sourced from local farms and markets. The slightly nutty scent of green tea drifts from teapots at Sushi Maru. Tiny, colourful paper art is framed and hung at each table while gentle slicing is heard from the open kitchen. Only fresh and creative cuisine is carefully prepared at Red Deer’s Japanese restau-rant, Sushi Maru. Sushi Maru serves soups, salads, tem-pura, teriyaki stir fries, noodles, rice, sushi and a small selection of western food. The restaurant specializes in sushi. Owner and head chef Justin Kang is Korean born but Japanese trained in the art of sushi creation. He is passion-ate about fresh quality ingredients and a delicious product. Justin not only serves traditional sushi but also spends time experimenting and developing innovative sushi dishes. The restaurant welcomes customer feedback and adds new menu items often. Red Deer is the second location for this restaurant brand with the original Sushi Maru opening — and still running —in Lacombe in 2009. Sushi Maru of

Red Deer has been open for just over a year and has received great reviews both online and within the community. When asked what the name meant, Kang explained that “maru” in Japanese means “round roll” and in Korean means “best” so the name translates as best sushi roll. Sushi Maru is an intimate restaurant with a large and interesting menu. It has many kinds of sushi including sashimi (raw fi sh), nigiri sushi (raw fi sh artfully layered on molded rice), temaki sushi (cone style roll) and maki sushi (rolls sliced). The sushi roll is the heart of the menu at Sushi Maru. With interesting and enticing dish names like Love Me Tender Roll, Volcano Roll, Scary Eye Roll and Sexy Crazy Roll, you will want to return to the restaurant to try them all. Many of these recipes were in-vented, and are only available, at Sushi Maru. Kang admits that the Salamander Roll (with avocado, prawn, spicy tuna, green onion, salmon, spicy mayo, and special sauce) is his favorite roll on the

menu. This writer can also personally at-test that the Love Me Tender Roll (with smoked salmon, avocado, and cream cheese) is spectacular and the Rainbow Roll (with a variety of fi sh, avocado, and egg) is also fresh and delicious. Sushi Maru also off ers sushi combina-tion plates and lunch boxes. If you are pressed for time and cannot sit at the restaurant to enjoy its charm, artful food preparation and tea, a customer can quickly buy a freshly prepared sushi plate available in a cooler near the entrance of the restaurant. Sushi Maru off ers eat in, take out and catering services. This Japanese restaurant lists several party trays available on its menu and does take reservations for small groups to be seated in the dining room. Sushi Maru’s business hours are 11:30 a.m. to 9:00 pm Monday to Saturday, Closed Sundays and Holidays and they are closed for food preparation and a small break between 2:30 and 4:30 p.m. each afternoon.- Teena Dickerson
