Happy Holidays!I love this time of year. The holidays are a great time to catch up with
friends and family. Food is usually at the center of any good gathering.
Special boards display seasonal soups. Fall flavors like rosemary, sage
and thyme find their way into many dishes.

Located at the base of the access road to Sugarloaf, sits THE RACK BBQ & Pub voted ‘BEST APRES SKI BAR in North America’ by OUTSIDE MAGAZINE in 2013.
This bar idea was born in 2004 by three local ski bums who wanted to have a place to meet after a great day of skiing at Sugarloaf, one of Maine’s premier ski resorts. The three ski bums met at Sugarloaf through various ski activities. Chase McKendry (ski patroller for 26 years) and Jeff Strunk (son of country legend and Maine humorist Jud Strunk) were involved at Carrabassatt Valley Academy where they met student Seth Wescott (soon to become a two-time Olympic champion). The cosmic tumblers rolled and an idea began, a property became available and in 2005 THE RACK was born. As Chase put it “what seemed like a good idea in the midst of a momentary lapse of judgment”.
In planning the business, the three asked what do they like and what does Sugarloaf need? Sugarloaf’s ski experience was legendary so a dining place equal to the ski experience was mandatory. The owners set out to create a place to meet, have libations, dine, and tell stories of the day’s exploits. Once told, letting music entertainment put the finishing touches to a memorable day. This was how great memories are made and so it began.

The fare of choice was BBQ as this was untapped at the time and the owners liked BBQ. The hardy and spicy food along with traditional pizza and burger offerings rounded out the bar atmosphere. A younger crowd was attracted and THE RACK quickly became the “locals” hangout. With Seth’s golden exploits soon to follow, more Sugarloafers wanted to visit and feel the buzz. The trend has not let up.
Current kitchen manager Richard Hunter has been in place for the last five years. Richard learned about beef and cutting steaks out in California at a small steak house chain called Cattleman’s. Richard came back to Maine in 2005 and worked in three different establishments. In 2009, he applied to The Rack and has been there since. Richard became the kitchen manager two years ago. He used his skills acquired in California to expand the menu choices in more traditional American fare of steaks and seafood. Richard had been exposed to PERFORMANCE Food Group – Northcenter products and personnel while working in Maine. He liked what NorthCenter brought to the table with help on menu development, food costing, and rebates. With those business guidelines and exceptional product lines Richard has continued placing his trust with NorthCenter. He especially likes the BRAVEHEART Angus beef line. The fresh burgers are exceptional in flavor and the trim on the primal cuts always exceeds the commodity choices giving a better yield. This is where his signature block sirloin is born. BRAVEHEART Angus top butt hearts create the steak and it is offered in garlic rub, Au poive, and maple glazed.
THE RACK follows one of the hottest trends in the culinary scene and offers Gluten Free options on their menu. A gluten free breading can be selected to coat chicken, seafood and beef. Other gluten free choices include sandwiches, pizza, dessert, and even beer selections!

HISTORYMark Fenske and Tom Boucher, the principal
partners, both got their start in the Restaurant & Hospitality business working to support themselves while in school. Although at different times and places, both partners were drawn into the fun, excitement, and camaraderie of the restaurant business, and soon 'burgers' won out over 'books.'In the late '70s, Mark started as a line cook with TGI Friday's
in Boston. He managed TGIF for several years and came to the conclusion that working for a 'corporate chain' was a recipe of 'corporate nonsense', way too impersonal and uncaring. In 1984, he teamed up with two others to open T-BONES Great American Eatery and Drinkery in Salem, NH. Almost 30 years later, it has remained a monumental success. If you are a burger lover and you haven't tried Mark's creation, the MAF BURGER you are really missing out!The Hudson location was opened in 1986, where later Tom
Boucher took a food server position upon graduation from college. Although Tom had earned a full academic scholarship to a prestigious graduate school, he finished only the first semester, returning to T-BONES to earn a little extra cash during the holiday break. This could be called the longest holiday break ever for Tom, as he gave up his scholarship and never went back.After the 3rd T-BONES opened in Bedford (1989), Tom and Mark
collaborated to open Cactus Jack's (CJ's) in 1995 in Manchester, a 4th T-BONES in Derry in 2004 and the first 'dual' concept restaurant in New Hampshire, T-BONES and Cactus Jack's on Lake Winnipesaukee in Laconia during 2007.Dan Fraser joined the partnership in 2008 after holding just about
every position in the company for the past 20 years. Ironically Dan too was attending college at Johnson and Wales University and T-BONES was his vessel to earn money through college. In 1985 Dan decided to stay on and become a kitchen manager at only 19 years old. Dan's culinary knowledge has shaped the menus we know and love today.

These thumbprint cookies with a creamy eggnog-flavored filling will get you into the holiday spirit.
DIRECTIONS1. For the cookies, mix flour and nutmeg in medium bowl. Set aside. Beat 3/4 cup butter and granulated sugar in large bowl with electric mixer on medium speed until light and fluffy. Add whole egg, egg yolk and vanilla; mix well. Gradually beat in flour mixture on low speed until well mixed. Stir in 1/2 cup of the nuts. Refrigerate 30 minutes or until dough is easy to handle.2. Preheat oven to 375°F. Shape dough into 1-inch balls. Roll in egg white then in remaining nuts. Place about 1 inch apart on baking sheets. (Refrigerate remaining dough while baking each batch of cookies.).3. Bake 10 minutes or until edges are lightly browned. Remove from oven. Immediately make an indentation in center of each cookie by gently pressing with back of small spoon. Cool on baking sheets 1 minute. Remove to wire racks; cool completely.4. For the Eggnog Filling, beat 6 tablespoons butter in medium bowl until softened. Gradually beat in confectioners' sugar until fluffy. Beat in milk, extract and nutmeg. Pipe or spoon about 1/2 teaspoon filling into center of each cooled cookie. Sprinkle with additional nutmeg, if desired.

HOW TO PROPERLY THAW A FROZEN WHOLE BIRD TURKEYSafely thawing a turkey is one of the most important steps in preparing your meal. There are two recommended methods, depending on the amount of time available.
REFRIGERATOR THAWING is preferred and the least laborintensive but requires more time.
• Thaw breast side down, in an unopened wrapper, with enough cold water to cover your turkey completely.
• Change water every 30 minutes to keep the turkey chilled.
• Estimate a minimum thawing time of 30 minutes per pound.
• A 22 lb bird will take 11 hours to thaw using this method.
COLD WATER THAWING
• Thaw breast side up, in an unopened wrapper on a tray in the fridge.
• Allow at least 1 day of thawing for every 4 lbs.
• A 22 lb bird will take 5 days and 12 hours to thaw in the refrigerator.

Fresh Herbs . .
To ensure the freshness and high quality of our product, refrigeration begins as soon as the herbs are
hand-picked in the field. The produce is taken to cold rooms with controlled temperature and relative
humidity. The herbs remain in the farm’s cold room for a few hours before they are transported
in refrigerated trucks to our packaging facility. All this process is done within 24 hours.

Cooking With HerbsCooking with herbs requires self-control: Add too much and you’ll crush other flavors. Add
too little (or none at all) and your dish will taste bland. So start with a little and then gradually increase the amount so that you achieve proper proportions.
Stand tallChoose herbs that are erect and can be held upright without limping or drooping. Leaves ought to be vibrantly
