The core of the culinary offering may come from long-established favourites but there are always new kids on the block bringing their own fresh ideas to the table.

We said ‘aloha’ to one of the proprietors of the Kua ’Aina restaurant Ed Bardos in Goodge Street and discovered the secret that gives their food that distinctive Hawaiian fl avour.

On the rocksSo how do we pronounce the name and what does it mean?It’s pronounced ‘Koo-a-EYE-na’ and it’s Hawaiian for ‘country bumpkin’.

Who’s behind the restaurant and where did you get your inspiration?My best mate Paul and I were in Hawaii and just loved the Kua ’Aina grilled sandwiches and burgers. There was nothing like them, or as tasty, in the UK, so we persuaded the owner Terry, who still runs three restaurants there, to train us, give us his recipes and let us use the name. Then we gave up our City jobs and started Kua ’Aina as a unique, independent addition to London’s fast/casual restaurant scene.

What Hawaiian specialities are on the menu?We chargrill almost everything over lava rocks which is what gives our sandwiches, burgers & salads that special taste – along with our original and secret seasonings, all homemade from scratch. The cuisine is not Hawaiian as such but we import a great selection of craft beers from Kona Brewing Company and aim to serve everyone with the warmth and Aloha spirit you get in Hawaii.

Why did you choose Fitzrovia?We had our eye on it for a while. It’s such a vibrant area with a great ‘village’ feel and changing rapidly. We thought our fast/casual food and price point would fi t in very well.

What are your favourite local places to eat, drink and shop? So many to choose from! On the rare occasion we escape from our own restaurant, we love the Bulletproof coffee at BlackSheep and a quick lunch ramen in the basement of Roka. No time for shopping!

What exactly is the Bang Bang concept?The restaurant is at the centre of a multi-platform back story. The fi rst part of a hard-boiled Film Noir narrative, involving mobsters, double crosses and a few signature Vietnamese dishes, is told on one wall of the restaurant and in fragments across the menus and napkins, with additional scenes, clues and new plot developments to be revealed on social media. The menu introduces the story and characters and the restaurant itself features in several key scenes. The inspiration comes from theatre company Punch Drunk’s work, as well as 1940s Film Noir.

And what about the food?There’s a menu of amazing Vietnamese street food The overriding theme is real Vietnamese fl avours, presented with a cool inner city edge, selected from recipes passed down through David and Jimmy’s family and encounters on their travels. With an amazing wine list from trendy independent wine merchants, Vagabond.

What makes Vietnamese cuisine stand out from otherAsian cuisines?It fi ts with current health-conscious trends, and has fresh, punchy, banging fl avours. As Vietnam is becoming more popular as a destination for travellers, more and more people are aware of the cuisine and its amazing tastes.

What specialities should we try?Our Bang Bang Baos, steamed buns with pork belly and bang spicy wings, are a fi rm favourite. And, of course, our 18-hour Pho broth is synonymous with Vietnamese cuisine and with Bang Bang, since it’s a recipe that’s been passed down through the Le Family.

Nigel Howell and Tim Luther explain how a passion for perfection has created Drakes Tabanco, one of the best places to enjoy Spanish food outside Spain, in Windmill Street.

Tapas but notas you know it

What’s the story behind the business?Tim worked in the wine industry for seven years selling predominantly Spanish wines before going into business with Nigel. After many visits to the Bodegas of Jerez and Sanlucar in Andalucia, it was clear what sort of place he was going to open.

Tell us about tapas.The word tapa literally means lid and what we now call tapas is said to have been created in Andalucia. A lid was put over a customer’s drink to keep out the fl ies. In time, a slice of jamon or a piece of bread with a small morsel on top replaced the lid and doubled as a snack. Now tapas means pretty much anything on a small plate and it’s no longer just Spanish!

So what can we expect on your menu?Not your average tapas fare. We have stayed away from the usual comfort food of patatas bravas etc. to offer a more fulfi lling culinary experience. Think smoked scallop, garlic purée & beetroot, octopus with chickpea & chorizo, deep fried caulifl ower, Manchego & pine nut salad, lamb carpaccio, rosemary yoghurt & brown garlic or braised pig cheeks with Oloroso. Classic ingredients with an inventive twist.

You’re passionate about sherry aren’t you?We believe we’re the only place outside Spain that serves ‘en Rama’ sherry from the barrel. None of our sherries have gone through industrial fi ltering or stabilisation. The result is a more rewarding, complex and tasty wine. Our sherries are from the outstanding Bodegas Rey Fernando de Castilla. Think the equivalent of 1st growth Bordeaux. Sherry is the best wine in the world for pairing with food. Just try one of our two sherry fl ights served with tapitas in our bar!

Tell us about the history of the Wild Game Co.Andy comes from a family of game butchers in the Highlands. He grew up fi shing, shooting and helping in the family business – Ardgay Game – where all of our meat comes from. We started in 2010 as a butcher stall on Broadway Market, then moved into street food and pop-up restaurants before opening full time in Charlotte Street in October 2014.

Does the decor refl ect the food you serve?We’ve chosen a very rustic and informal look. Long wooden tables, wooden fl oorboards, a meat rail and a couple of deer skins to warm the place up.

And what can we expect on the menu?Venison straight from the highlands, burgers, steaks, and seasonal sides.

Is there anything for vegetarians?Yes. We’re currently really excited about a Vegan Chateaubriand that is in the works, and a couple of new veggie dishes are on their way this spring.

Anything special happening soon?We have a whisky night coming up: four courses with matching whiskies.

Why did you choose Fitzrovia?Charlotte Street is one of the best foodie destinations in London, and the people here are the people we want to cook for. We’ve also been pleasantly surprised at the sense of community and how welcoming everyone has been.

Do you have any favourite local places to eat and drink? You can’t beat a cheeky Bubbledogs hot dog. Then it’s off to see Jamie and Jim and Rev. JW for incredible cocktails.

So what can we expect on today’s menu?Our fi sh is from sustainable sources and delivered fresh from Billingsgate every day. The fi sh and chips are fried in high quality ground nut oil (not cheap vegetable oil) and the souvlaki (kebab) is cooked in the traditional way over real wood charcoal, to give that distinctive fl avour.

Greek cuisine is healthy and Mediterranean with a hint of the middle east. Fresh grilled meats and fi sh (sea bass and bream), healthy salads and regional dips such as taramasalata, hummus and tzatziki. Plus Cypriot dishes – halloumi, loukanico, pastirma and calamari. Specials include kleftico and sheftalia and, on the British side, salmon and tuna.

Is there anything for vegetarians?Yes, we do really healthy Greek salads, vegetable kebabs and grilled halloumi platters which are very tasty!

What’s coming up over the next few months?More of the same! We continually refresh our specials and introduce seasonal fi sh throughout the year. As soon as summer arrives, we love opening up our concertina windows and doors and bringing a real al fresco dining feel to Fitzrovia.

Why are you still in Fitzrovia?We love the village feel, the creative atmosphere and the friendly spirit.

And what are your favourite local places?The Hope for its traditional ales, Montello’s in Goodge Street for the fantastic marinara and we love shopping in the independent furniture and electrical shops in Tottenham Court Road.

Who are the team behind Gigs?Aristos Papasavva and Christopher Jordan.

Tell us a little of the historyGigs was opened in 1958 by a Cypriot émigré called Gyriaokos (‘Gigs’ to his friends). He was training to be a priest at the time and went on to serve at the main Greek Orthodox church in Pratt Street, Camden, but still ran the business. In the mid-60s, he had the idea of introducing fi sh and chips to complement the traditional Greek Cypriot cuisine. It was probably the fi rst time it had ever been done but it worked.

And has very much changed?Since we took over in 2006, we have kept true to the original menu with a few tweaks. We also renovated the premises in 2010 to bring them into the 21st century.

Wind your way through Fitzrovia’s watering holes to learn where Dylan Thomas met his wife Caitlin, visit the home of the young Dickens and the workhouse that inspired Oliver Twist, see the house which Virginia Woolf and George Bernard Shaw shared (at different times), follow in the footsteps of Jerome K Jerome and hear where literary giants, such as T.S. Eliot and George Orwell, met, drank, argued and wrote.

The walks start with a quick literary pub quiz in the Fitzroy Tavern, then visit the Duke of York, Newman Arms (unfortunately now closed so you will have to go thirsty here), and Marquess of Granby before ending at The Wheatsheaf. There are also stops at The Grafton Arms and The King & Queen where Bob Dylan gave his fi rst public performance outside the USA.
