What is Appassimento ?
For NeroOro Grillo, we use a combination of two Appassimento methods, which have both been
used in Sicily for centuries:
1On the vineGrapes are left on the vine for longer than usual, giving the most gentle & natural appassimento
process through dehydration on the vines.
2On RacksGrapes are left to dry on racksfor 15 days. The grapes are dried until they
have lost 10-15% of their original weight.
Following a very gentle de-stemming, we leave
the wine to decant for about 24 hours and then
fermentation takes place at about 17-18C° for
about 12-15 days.
The wine rests on the fine lees for about 3-4
months before bottling.
