1 TB extra virgin olive oil2 medium yellow onions halved1 pinch salt and pepper2 1/2 lb beef chuck roast1 cup chicken, beef or vegetable broth1 TB chopped fresh rosemary about 3 sprigs

Sprinkle the chuck roast with a generous helping of salt and pepper on each side. Set aside. In a large skillet, over medium-high heat, add the olive oil until hot, but not smoking. Add the halved onions and saute just until brown and translucent, about 4-5 minutes. Add the chuck roast to the center of the hot skillet and brown on each side for 3-4 minutes. Remove the skillet from the heat. Add the onions and chuck roast to the crock-pot. Pour the broth over the top and the fresh rosemary. Cook on high for 4-5 hours, or on low for 8 hours.

1/2 cup all-purpose flour2 teaspoons sugarPinch of salt1/2 cup skim milk2 large eggs, beaten2 tablespoons vegetable oil2 baking apples (1 pound), peeled and cut into 8 wedges each and the wedges cut in half1 teaspoon fresh lemon juice1/8 teaspoon cinnamon

Preheat the oven to 500°. In a medium bowl, whisk the flour with the sugar and salt. Gradually mix in the milk, eggs and 1 tablespoon of oil.

Heat the remaining 1 tablespoon of oil in a 10-inch ovenproof nonstick skillet. Spread apples in the pan, add the lemon juice and cinnamon and cook over moderately high heat until lightly browned.

Strain the batter through a sieve over the apples. Bake the pancake for 8 to 10 minutes, or until the edges are puffed and browned and the center is set.
