On behalf of the Beer Festival Committee and my-self, a big welcome to our Beer and Cider Festival,brought to you by the East London and City(ELAC) Branch of the Campaign for Real Ale(CAMRA).

We continue for the 5th year to be able to hold thisfestival in the magnificent Round Chapel, and ourthanks go to the Round Chapel trustees for hiringtheir venue to us. A place we now consider home.Particular thanks go to Laurie Elks, Patrick Hamill,and the lovely Lisa Pressland, whom I must mentionis a long suffering Spurs fan. As a Chelsea man I willsay no more, as she has a hefty punch!!

I have been told by many customers over the past4 years, that the reason they keep coming back is notonly the choice of the beers/ ciders/ perries offered,but more importantly the friendly atmosphere, andthe obvious enjoyment shown by our staff. Ofcourse that atmosphere can only be fully realised bywhat you bring to the party, and I hope that you all(returning and new customers alike) will have fun,because this is what the festival is all about.

Keen Massey, Adam Miller and Peter Gordon,have done the festival proud again in their choice of

Cask, Foreign and Bottle Conditioned beer ranges;not forgetting Mick Lewis (Leyton Orient!) whoprovides such a good and varied range of wonderfulCiders and Perries (Not Pear Cider).

COME TO THE DARK SIDE, WE HAVE COOKIES!If you dare! Previously we have had the London,and then the Hackney beer bar. These beers arenow amalgamated into the overall range on the mainbar in alphabetical order.

The Dark Side Bar will feature DARK BEERS. I know that is a shock, but there you are. The styleswill be mainly Porters, Stouts and Milds, but theremay be some dark Christmas beers and Dark IPA’s, ifwe can get them. Oh and maybe the odd cookie too.

To our main suppliers – Avalon Wholesale andBoggart Hole, who have maintained such a won-derful service over the years, and to all the breweriessupplying direct (who are too numerous to mentionindividually in this space) – a massive thank you foryour efforts and for the Festival specials you havetaken the time to produce.

To my colleagues I would like to add my personalthanks, because without their enthusiasm, hardwork and dedication, there would not be a beer fes-tival. Pig’s Ear Beer Festival is especially delighted toarrange collections on behalf of these splendidgroups. Sharon is an active CAMRA member andoften seen in past years as a Pig’s Ear volunteer. Sogive generously on behalf of one of our own!

Alzheimer’s Society has a vision of a better,fairer world for people with dementia. It believesthat people with dementia and the people who carefor them have the right to high quality services andsupport. It works to achieve this through a combina-tion of campaigning, research, awareness raising, train-ing, information provision and the delivery of services.

Within East London, Alzheimer’s Society runs avariety of local services which aim to provide thoseliving with dementia with established forms of sup-port. Some of these services include:

Dementia Advisor Service for people with dementia, their carers and family

Cafes to meet, socialize, gain peer support and information

Singing for the Brain sessions for people in theearly stages of dementia

Carers Support Groups, providing a safe spacefor information exchange, emotional and practi-cal support

Telephone Information Service where adviceand support is offered and referrals to other agen-cies where necessary

The Laburnum Boat Club is a commu-nity-based boating project by the Regents Canal insouth Hackney. It is a small charity (managed bylocal people) providing watersports activities forchildren, young people and their families from allover east London. Its services include:

An open-access Youth Club running after-school,weekends and during the school holidays. Thereis a programme of formal and informal boating activities, with regular trips-away to open andmoving water, including expeditions abroad.

A Youth Watersports Training Project equip-ping unemployed young people with coachingqualifications and finding them jobs in the water-sports world both in this country and abroad.

Narrowboating: Canal trips for youth, commu-nity, education and welfare groups - and local fam-ilies

A Family Club every Sunday, enabling kids andparents to enjoy constructive activities together.

Speaker’s CharitiesThe Speaker of Hackney chooses charities each year to support by advocacyand fundraising. Councillor Sharon Patrick has selected Alzheimer’s Society,the Laburnum Boat Club and The Sharp End.

Speaker’s Charities

Inclusion: Specific regular sessions for kids withdisabilities, leading to their inclusion in the main-stream programme.

The Sharp End is the Seniors Health and Active Retirement Project.  With a Haggeston centre, itis a healthy living project for people aged 50 and overliving in Hackney.  It offers a wide range of services andactivities to promote the health and well-being of olderpeople. An independent charity in operation since1996, it welcomes people of all ethnic, cultural and reli-gious backgrounds. The oldest member is 92!

It is kept going by volunteers and is much valuedby and works with agencies of Hackney BoroughCouncil and the Health Authority.

The overall aim of The Sharp End is to maintainand improve the health of older people. The inter-pretation of health is broad and holistic, encompass-ing all aspects of physical, mental and socialwell-being. Social isolation amongst the over 50’s isa growing concern.  The Sharp End assists them tolead a fulfilling life.

Welcome festival-goers old and new! Whilst youenjoy some of the very finest real ales and ciders thatwe have on offer at Pig’s Ear 2014, take a few momentsto read about the war being waged for London’s his-toric pubs. Over the last 40 years, largely throughthe pioneering campaigning work of CAMRA, realale has become firmly re-established as our nationaldrink. There are more breweries in the UK nowthan at any time since the First World War. In Lon-don alone, we can count 78 breweries. Real ale, andquality artisan beer is not only safe, but growing andevolving in terms of quality, style, choice and taste.

We showcase some of the best here at the festival.In the meantime, the Great British Pub is under attack like never before in our history. Pubs are closing at an alarming rate of 31 each week and London has lost over 2000 traditional boozers overthe last 30 years. Since 2010, just one supermarket(TESCO) has converted 38 viable and popular London pubs into convenience stores. Were it notfor some forward-thinking swift action on the partof Lewisham (Catford Bridge Tavern) andWandsworth (The Wheatsheaf) Councils thatnumber would stand at 40!

CAMRA is now very much focussed on savingpubs. In many branches, this is a top priority andhere in the Greater London Region, under thecharismatic leadership of our regional director,Geoff Strawbridge, we are constantly breaking newground and leading the way on pub protection. Ear-lier this year, we hosted a sell-out Pub ProtectionSeminar in a Holborn pub. At this meeting we pro-posed a regional pub protection strategy, the firstsuch policy document of its kind in any CAMRA re-gion. The strategy was formally adopted by the re-gion in July. Our strategy is to fight hard forplanning reform, in line with CAMRA’s national

Pubs Matter campaign (seewww.pubsmatter.org.uk) and to focus our cam-paigning efforts on National, Regional and LocalGovernment. In line with this aim, we wrote toevery Councillor in London this October and receivedsome very positive and supportive responses fromright across the Greater London region. We arestanding up for the rights of pub-goers, be they London residents, commuters, visitors, or tourists.We want to safeguard the use of historic pubs on established sites and we are battling against an unfairplanning system. A system too skewed in favour ofproperty developers and supermarkets and againstthose hard-working and thirsty London drinkerswho all too often find their precious pubs sold off tothe highest bidder to be converted into supermarkets,pawn brokers, betting shops or yet more unafford-able private housing. In some cases, the pub users donot even get a say in the matter due to the planningloophole of ‘permitted development’.

Our strategy recognises that as a volunteer organi-sation, we cannot be everywhere at the same time.We cannot save all of London’s remaining (rapidlydepleting!) 3600-odd pubs. Nobody wishes that wehad a magic pub-saving wand more than I. It wouldgive me far more time to spend doing what I enjoy,like drinking quality cask ale in London pubs. Instead I find myself writing countless letters toMinisters, Councillors, the Mayor of London, planning officers, Council Leaders, newspapers, online bloggers and a host of other commentatorsand opinion formers. In September this year, GeoffStrawbridge and I spent a day in the assembly chamberat City Hall in front of the Planning Inspector responsible for overseeing further alterations to theLondon Plan. We secured some additional pub pro-tection clauses and cross-references, namely in poli-cies 3.16, 4.8 and 7.1 and a specific mention of pubs,

along with a reference to the registration as Assets ofCommunity Value within the supporting justifica-tion text at 4.48A. This is precisely why we devised astrategy; so that limited volunteer resource could bechannelled to where it could be used most effec-tively.

The campaign is here to help ordinary pub userssave their pubs. That is one of our core functions.However we cannot do it for you. You need to wantit. You need passion, determination, commitment,and tenacity. Do you want it? CAMRA will adviseand support. We’ll help publicise your campaign.We’ll Tweet and spread the news. We’ll tell you howto use the planning system and how to go about registering your pub as an Asset of CommunityValue. We’ll motivate and encourage and perhapseven inspire. We cannot, and will not, do if for you.We have built up considerable planning expertise inthe Greater London Region and have a good net-work of contacts now amongst all the London bor-oughs, as well as the London Assembly and variousgovernment departments.

Why do we make such a fuss about pubs? Quitesimply because they represent over 400 years of cultural and historical evolution in British society.The bar counter at the British pub is one of the fewremaining places where it is socially acceptable, infact encouraged, to strike up a conversation with atotal stranger. Most importantly, as real ale enthusiasts,it is the very best place to enjoy quality cask ale.

Unless you are drinking real ale from a bottle (bot-tle conditioned beer) or at a beer festival like this,pubs are pretty much the only place to enjoy it.Long may they continue. Pubs are recognised as vitalcommunity social infrastructure and play a uniquerole in our culture. They are the envy of the rest ofthe world and always feature amongst the top threethings that a foreign visitor to the UK wishes toexperience. Yet, with typical British apathetic indif-ference, as a society we have stood by and watchedover one quarter of the nation’s pubs be destroyedover the last 30 years. This is cultural vandalism anda growing number of us are saying ‘enough isenough’. Around half of our London branchesdo not currently have pub protection officers. F

The Battle for London’s Pubs - continuedThis is an important committee role but one whichoften has intangible and unquantifiable results. It is alsosomething of a thankless task but it can be hugely rewarding and I firmly believe that in the London areawe are slowly beginning to make a difference.

It is sadly no longer the case that only bad pubs close.Neither is it true that if people used their pubs more,they would be OK. ALL London pubs are under threatas they are all worth more in alternative use. That’s freemarket economics. Only the planning system can safeguard the survival of London’s precious pubs.

CAMRA, working closely with campaign groups andLondon Councils, was instrumental in saving TheWenlock Arms, The Old White Bear, The Cross Keys,The Phene Arms, The Star, The Ivy House, TheWheatsheaf, The Bricklayers Arms, Simon The Tanner,The Hope and countless others. Additionally, we areengaged on fierce campaigns to secure the future ofThe Porcupine, The Windmill, The Catford BridgeTavern, The Trafalgar Arms, The Admiral Mann,Turner’s Old Star, The George, The Duke of Welling-ton, The Heathcote Arms, The Lord Rookwood andright here in Hackney, The Chesham Arms. Withoutordinary people standing up for pubs and fighting forwhat they regard as precious to their communities, allof these pubs and many more like them would be lostforever. Pubs to visit in our area

The pub scene around Hackney is more vibrant todaythan it has been for many years and there is a long list ofpubs we could recommend if you wish to explore a littlebeyond the doors of the Round Chapel.

Up by Clapton railway station you will find theCrooked Billet, 84 Upper Clapton Road, E5. This pubhas been here since at least 1731, although you would becorrect if you thought the present, large building lookedto be post-War. A great garden for the summer monthsand a good range of real ales, usually including London-brewed options. Ask nicely and you will get a CAMRAdiscount.

Pubs to visit

Heading down toward the festival venue you willfind the Clapton Hart, 231 Lower Clapton Road,E5. Antic have worked some of their magic here,bringing this pub back from dereliction to the popu-lar and extensive pub it is today. Real ales here oftencome from the best up-and-coming breweriesaround.

Just across the road from theRound Chapel is the WindsorCastle, 135 Lower ClaptonRoad, E5. Present since at least1791, I would not have recom-mended this one to anyoneeven just a couple of years ago.Refurbished in May 2013, it isnow a destination pub forboth its food and its beer, andyou might reasonably expect here to find somethingbrewed in Hackney, perhaps at Five Points.

A short stroll or a quick bus ride down to MareStreet will take you to the Cock Tavern, 315 MareStreet, E8. This may or may not be the same Cock

where Popish Conspirators gathered in 1661; but itis certainly not the same building – the present pubwent up in the 1930s. A Truman’s house in its day, itis now home to home-brewed Howling Hops Brew-ery beers and wonderful pork pies. Not to be missed.

Or you might decide to strike out in a south-east-erly direction from the Round Chapel to thePlough, 23 High Street, Homerton, E9 – if you do

go this way then go via MehetabelRoad and note the currently-closedChesham Arms, which we all hope willbe amongst next year’s recommenda-tions following re-opening. The Ploughhas been here since at least 1734 and isanother old Truman’s pub, but we’llbrush quickly over recent years to Sep-tember 2013 when it re-emerged as aproper pub. Good food here, and astrong chance of something brewed lo-cally; perhaps from Hackney Brewery.

If five pubs are not enough for you, andyou are really into your stride to wander

further distant, then seek out the London FieldsTaproom, the Pembury Tavern, the Adam & Eveor the Gun and you will not be disappointed.

Beer style & substanceWith well over 5,500 different real ales available in the UK, from morethan 1,200 breweries, real ale is a very diverse product. There is a beerout there to suit everyone’s palate. With so much beer available, here is aquick guide to some different beer styles.

BITTERBitters developed towards the end of the 19th cen-tury as brewers began to produce beers that couldbe served in pubs after only a few days storage in cel-lars. Bitters grew out of pale ale but were usuallydeep bronze to copper in colour due to the use ofslightly darker crystal malts. These are highlyhopped ales, ranging from 3% ABV to around 5.5%ABV (ABV means alcohol by volume). Definitions vary from brewery to brewery, but BestBitters and Premium Bitters tend to have higher alcohol content.

MILDAn ale of low gravity and hop rate, hence rounderand distinctly less bitter on the palate and in aromathan more highly hopped bitters. Mild is usually(but not always) darker in colour than bitter,through use of a higher roast malt or caramel. Thereare considerable variations in mild styles.

PORTER & STOUTPorter is a dark, slightly sweeter but ‘hoppy’ ale,made with roasted barley. It was the successor of ‘en-tire’ and the predecessor of stout. Originated inLondon around 1730, by the end of the 18th cen-tury it was the most popular beer in England. Thefashion for the pale ales of Burton-upon-Trentended the popularity of Porter in the mid 19th cen-tury. In recent years a number of brewers have re-vived Porter. Stout is one of the classic types of ale, asuccessor in fashion to ‘Porter’. Usually a very dark,heavy, well-hopped bitter ale, with a dry palate, thick

creamy head, and good grainy taste contributed by aproportion of dark roasted barley in the mash.

GOLDEN ALESPale amber, gold, yellow or straw-coloured; goldenales are hoppy beers with a refreshing taste. Theymay have some malt or fruit flavour but any diacetyl(a butterscotch flavour) should be minimal. Theycan be up to 5.3% ABV in alcoholic strength.

PALE ALE or IPAIndia Pale Ale (IPA) changed the face of brewingearly in the 19th century. First brewed in Londonand Burton-upon-Trent for a national market andexport, IPAs were strong in alcohol and high inhops, with a significant sulphur nose. They keptwell. Beers with less alcohol and hops were devel-oped for the domestic market and were known asPale Ale.

OLD ALEOld Ales reflect the beers available before the re-strictions on brewing introduced in the First WorldWar. Contrary to expectation, they do not have tobe especially strong; they can be 4% ABV or more.Old Ale can be full of complex flavours, rich fruitymalts, tart fruit and spicy hop notes. Darker ver-sions will have a more profound malt character withpowerful hints of roasted grain, dark fruit, polishedleather, and fresh tobacco. The hallmark of the styleremains a lengthy period of maturation duringwhich complex flavours develop. F

Beer styles - continued

BARLEY WINEBarley Wine is a strong beer, often between 7% and10% - and requires considerable time to mature andbecome drinkable. A few family brewers have keptthe traditional brew, often as a Christmas Ale, andmany small brewers now produce their interpreta-tion of the style.

Expect massive sweet malt, ripe fruit, pear drop, orange and lemon flavours; with darker fruits,chocolate and coffee if darker malts are used. Hoprates are generous and produce bitterness and peppery, grassy and floral notes.

SPECIALITY BEERSEmbrace all types of beer that contain a non-corebrewing ingredient intended to impart a distinctiveand discernible flavour or character. Examples couldbe ginger, honey, various fruits, etc. Also: wheat beers,and traditional lager. A recent trend is to use smokedmalt, a distinctive taste, not enjoyed by everyone.

BOTTLE CONDITIONED BEERThis is real ale in a bottle and the bottled equivalentof the draught real ales you enjoy in the pub. Thebeer is NOT pasteurised and contains yeast andenough fermentable sugars to allow for a slow secondary fermentation in the bottle. To distinguishthis from pasteurised bottled ales, many bottle con-ditioned beers include the logo ‘CAMRA says this isReal Ale’ on the bottle label.

Keen deals with mainly the more estab-lished/London Breweries, but obtains their newestofferings and festival specials.

For my sins, I look for the new Breweries thatmany of you would not have heard of before. Together, we continue to try and supply a goodrange across all styles, but being a winter festival, theemphasis is towards stronger darker beers. For thisreason we have the DARK SIDE Bar this year. Aswas once said by a brewery – “What’s the matterLager Boy, afraid of the dark!”.

Not to alienate anyone, of course we have a goodrange of lighter beers too as all our tastes are differ-ent. The Foreign beer bar sells continental Lagers,so we do try and cover most bases. To help you de-cide, we have a colour code scheme and the brew-eries descriptions of their beers. To give you thewidest choice, we only have one cask of each,though some are in larger casks so will last longerinto the festival.

Not all beers can be on together due to limitedspace, so please refer to the labels on the casks forwhat is available at any time. Our cellar team andBar Managers will ensure that as soon as a beer is init’s best condition, it will be on sale, and of coursereplace beers that have sold out with new beers asquickly as possible.

A suggestion for anyone new to the festival, thestrength (ABV%) of the beers vary considerably; ifyou are in for a session, I suggest you start with thelower strength beers first. Starting with thestrongest beers will no doubt have quite an effect onyour ability to walk, or even think!

Canny Bevvy 2.8% 1 x 9A full-flavoured, subtly hopped low gravity ale.

Amber Ale 3.8% 1 x 9Classic amber ale with a strong infusion of fuggles andstyrian goldings hops to balance the best quality MarisOtter and crystal malts base. Good hoppy nose and bis-cuity body. An all day "session" ale if ever there was one.

Gold 4.2% 1 x 9A golden (blonde) ale with an especially pronouncedhop character from its First Gold hops which offers cleanrefreshing flavours and aromas. With its well-structuredmalt body derived from finest Maris Otter malt, it is afull bodied satisfying drink with a hint of honey in thefinish.

IPA 4.5% 1 x 9A traditional India Pale Ale with an appealing hoppyaroma of bitter oranges to start followed by a big hoppytaste packed with bitter resins. It is nicely balanced, withjust enough sweetnesss to counter robust hops. Dry andvery hoppy to finish.

Stout 4.5% 1 x 9A traditional stout brewed with black malt rather thanroasted barley. Dark as the night and hugely satisfyingwith a familiar stout body.

Brown Ale 4.7% 1 x 9Brewed in the tradition of historic Tyne and Wearbrown ales. A beautiful deep reddish-brown, the flavouris complex with hints of dried fruit, and a lovely hop bal-ance.

Welcome to The Three Tuns, a traditional pub in the City of London EC3.

Historic PubThere has been a pub on this site since the 1700s. The old Roman London Wall runs through the beer cellar and has been preserved behinda large perspex panel. It’s rumoured that Jack the Ripper may have hidden in the pub’s cellar on several occasions by using the cellar chute atthe rear of the building in Vine Street. We have a small downstairs barwith a smoking terrace to the rear, an upstairs dining room and a ‘secret’ roof terrace in the summer months.

Cask Ale HouseFive hand pulls serving around ten different cask ales every week, includinglocal beers from a number of London’s independent micro-breweries. We are keen supporters of the CAMRA “LocAle” scheme, which supportslocal breweries and is helping to bring the brewing industry back to theheart of London. Our house ale is “Tuns Moore Beer” 4.1%, brewed byCaledonian Brewery with five malts and full-flower hops.

FoodOur food comes courtesy of our friends at Backyard Bites and is all homemade on the premises.Lunch is served Mon to Fri 12 noon – 3pm. Weekly blackboard specials are served alongsideour main menu.

Real cider is made by first crushing the apples,then pressing out the juice, and usually allowing anatural fermentation to take place, using the wildyeasts found on the skins and in the flesh. And sev-eral months later you have cider.

The bright orange, fizzy concoctions found inmost pubs are, in my opinion, a completely differentdrink. Often made with apple concentrate, they arefiltered, pasteurised and then gas put into them, andcan also have a heavy dose of water added as well.Unfortunately, these drinks account for around 90%of the UK cider market.

Perry, the companion drink to cider, is made ex-actly the same way but with pears, and in the WestCountry, perry pears are grown for making thisdrink. There are now several producers in the Eastmaking perry from other pears, and we hope to haveat least one of these. And please remember, “perry”is the real word for this drink, not pear cider!

This year we will include a range of ciders fromDorset. Many years ago, this County was a largecider producing area, but in recent years this haddwindled to almost nothing. In fact when CAMRApublished its first Cider Guide in 1987 there wereonly two. Now there are a number of producers,most of whom have only started in recent years, andwe will have a range of them here.

CIDERS:BARTESTREE (Bartestree, Herefordshire)Started by former editor of CAMRA’s Good CiderGuide, Dave Matthews in 2013. It is hoped to have aYarlington Mill single variety cider.

BOLLHAYES (Dunkeswell, Devon)Producing since 1988, their main business is sellingwine and cider making equipment.

BORDER ORCHARDS (Ross-on-Wye, Herefordshire)Small producer who started in 2012.

CIDER BY ROSIE (Winterbourne Houghton, Dorset)One of the longest-established of the newer producers inDorset, Rose Grant started commercial productionwhen she retired from her real job.

Welcome to the Cider and Perry Bar. Here you willfind probably the biggest range of real ciders and per-ries available in East London this year. In the WestCountry, cider is made from cider apples, grownspecifically for making this drink, you can’t eat orcook with them. In the Eastern Counties cider has always been made, but cider apples were not usuallygrown, so a mixture of eating and cooking apples isused, giving a completely different style of this drink.

VIRTUAL ORCHARD (Old Wolverton, Buckinghamshire)It is hoped to have a seasonal cider called Saxon Aelle.

WEST MILTON (West Milton, Dorset)Small producer, he is the man behind the yearly Power-stock Cider Festival.

WILKINS (Mudgley, Somerset)Well known from many CAMRA festivals, it is hoped tohave a single variety cider made from Morgan Sweetapples.

WOUGHTON ORCHARDS (Milton Keynes, Bucks)Small, producer using local cider apples, who has re-cently planted some perry pear trees.

PERRIES:BARTESTREE (Bartestree, Herefordshire)It is hoped to have a single variety perry made fromPainted Lady pears.
