Pietro, ragazzo vesuviano dal sorriso aperto e spontaneo è un giovane brillante che dopo alcune prestigiose esperienze in Italia, Francia, Svizzera e negli Emirati Arabi al Burj al-Arab, alla corte di “mostri sacri” della cucina internazionale quali Ducasse e Marchesi, è tornato in Campania per aprire il suo ristorante-laboratorio del gusto.

Dal 2005 gestisce il suo ristorante“Era Ora” a Palma Campania in provincia di Napoli, un’area che, prima del suo arrivo, era tagliata fuori dal circuito della buona cucina.

Pietro hails from near the Vesuvius, a brilliant young man with a spontaneous and wide smile who, after a number of prestigious experiences in Italy, France, Switzerland and in Burj al-Arab in the United Arab Emirates, at the court of the “sacred cows” of international cuisine such as Ducasse and Marchesi, has found his way back to the Campania region to open his own restaurant taste laboratory.

He has been running his restaurant “Era Ora” (“It was about time”) since 2005 in Palma Campania, in the province of Naples, an area cut off from the circuit of good food until his arrival.

Divertente giocoliere, Pietro é appassionato di sapori e profumi legati alla sua infanzia. Il profumo del ragù della nonna Nannina, che alla domenica avvolgeva la sua casa fin dalle sette del mattino, quello delle polpette al sugo di pomodoro San Marzano. e che dire delle candele spezzate in salsa di “genovese”, vanto della cucina napoletana, ottenuta con purea di cipolla bianca e carne di vitello stufata.

Ma ciò che rende Pietro davvero speciale, é la ricerca dei prodotti di stagione, che seleziona personalmente dai suoi amici contadini, cercando di sostenere lavoratori e prodotti locali.

Pietro is an entertainer who is passionate about juggling flavours and fragrances connected to his childhood. The smell of his grandma Nannina’s ragù, which on Sundays filled his house right from seven in the morning; the meatballs in a sauce of San Marzano tomatoes, not to mention the pasta shapes called candele spezzate (literally: broken candles) in a genovese sauce: the pride of Neapolitan cuisine obtained with white onion puree and stewed veal. However, what really makes Pietro special is his search for seasonal products, which he personally selects from his farming friends, in the quest to support local workers and products.

L’asso nella manica di questo giovane “cuoco contadino” è la grande tecnica acquisita, scegliendo di applicarla ai prodotti della sua terra. Pietro, crea da prodotti poveri “a chilometro zero” un’emozione unica di sapori e profumi sempre con l’obiettivo di inserire il suo territorio negli itinerari della buona tavola. L’obiettivo di Pietro é eliminare dalle cucine i grandi selezionatori e farvi rientrare i piccoli produttori del territorio, perché “cucinare é cultura e non solo manualità”.

The ace this young “farmer cook” has up his sleeve is the great technical experience which he chooses to apply to the products of his land. Out of ‘poor’ products with zero carbon footprint, Pietro creates a unique experience of flavours and scents, with the aim to put his territory on the map of good food. Pietro’s goal is to remove the great distributors from the kitchens, and instead to let the small producers from the region in because, as he says, “cooking is culture, not just manual work.”

Al centro del mio lavoro c’è spesso il riuso di tutto ciò che in cucina viene considerato scarto. Bucce, gambi, foglie, acquistano nuova vita.Così, si fa emergere il lavoro dei produttori, insegnando una cultura profonda di rispetto verso la natura e i suoi frutti. Sono, per educazione e scuola, contrario a qualsiasi spreco, perché spesso è nelle parti meno nobili che si celano i sapori veri.

My work focuses on re-use of everything is considered waste in the kitchen: skins, stems, leaves, take on a new life.In this way, we can focus on the work of producers, teaching a deep culture of respect for nature and its fruits.For education and culture,I am against every kind of waste: often, the real flavor is hidden in the poorest parts.

Il rapporto con i “vecchi” contadini è di continuo stimolo, mi aiuta a non perdere il contatto con la loro realtà, con la loro esperienza. Girando lo sguardo ritrovo poi le persone che mi stimolano diversamente, sulla rete, o i clienti del ristorante, che mi indicano nuove strade da percorrere. Insieme, compongono la mia idea, unire passato e presente, rispettando le tradizioni, reinterpretandole con le tecniche che ho appreso e che intendo continuare a sviluppare.

The relationship with the “old” farmers is a constant motivation; it helps me to keep in touch with their reality, with their experience. Looking around I meet people who inspire me in different ways, be it on the internet or in the restaurant; they show me new directions to pursue. They are part of my idea to unite past and present, whilst respecting the traditions and reinterpreting them with the techniques that I have learned and that I intend to continue to develop.

Un filosofo sul campoNel girare campagne, incontrando uomini e donne che potessero affiancarmi nella ricerca di prodotti veri, mi sono imbattuto in un personaggio decisamente fuori dal comune, Zi’ Tore. Coltivatore di mais, scarole, cavolfiori, verze e patate…tutti prodotti che uso normalmente nella mia cucina.Di lui non sapevo molto, ma già dopo pochi minuti, ascoltando i suoi racconti, ho compreso che davanti a me c’era un vero e proprio filosofo. Zi’ Tore è un filosofo dell’esistenza e ti parla delle vite degli altri come se le conoscesse personalmente.

Pur vivendo la giornata sul campo, con gli orari del contadino, intuisce le abitudini dei consumatori di mode, il desiderio di molti di essere ingannati, nell’effimero modo di vivere di oggi, da prodotti belli e insani.Mi ha ricordato i nostri vecchi, in particolare mia nonna, risvegliando uno dei ricordi più belli della mia infanzia, oltre che certi sapori vivi della semplicità.Amavo particolarmente mia nonna Nannina quando raccoglieva le spighe nel proprio campo e poi, di ritorno a casa, non avendo in dispensa nulla per accontentare i gusti di un bambino, mi viziava lessandole o arrostendole con sale e zucchero attorno. Noi ne cuoceremo una parte per averne disponibile per le insalate o per saltarlo con dell’ottimo burro di bufala,

il restante lo essiccheremo e lo faremo macinare presso un antico mulino per ottenere della farina di grano bianco con il quale daremo vita, nobilitandola, ad una antica ricetta dei contadini. Una pizza di polenta bianca con erbe selvatiche saltate, pomodoro e primo sale grattugiato. Cibo un tempo considerato povero, oggi diventato un privilegio da gourmant. Il mio primo obiettivo è dar luce ai sacrifici di questi uomini e queste donne, dei nostri avi, diffondendo la conoscenza di metodi sani di produzione, trasformazione e lavorazione del cibo, facendo riemergere le buone tradizioni che non dovrebbero mai essere privilegio per pochi.

A philosopher in the fields

By going around in the countryside, by meeting men and women who could support me in the search for real products, I came across a character quite out of the ordinary, Zi ‘Tore (‘Uncle Salvatore). He grows corn, endives, cauliflower, cabbage and potatoes ... all products I normally use in my kitchen.I did not know much about him, but after just a few minutes, listening to his stories, I realised that I had a true philosopher in front of me. Zi ‘Tore is an existentialist philosopher and talks about the lives of others as if he knew them personally. Despite working farmer’s hours in the fields, he understands consumer behavioural trends, the desire of many to be deceived, in today’s ephemeral way of life, by good-looking but unhealthy products.He reminded me of our old folks, especially of my grandmother, and brought back some of the best memories of my childhood, as well as flavours of a simple life.

I especially loved my grandmother Nannina when she used to pick wheat ears in her fields and once back home, as she did not have anything in the pantry to satisfy the tastes of a child, she used to spoil me by boiling or grilling the ears battered in salt and sugar.We will cook some of it to have it ready for salads, or to quick fry it with tasty buffalo-milk butter; we will dry the rest and take it to an old mill to obtain white wheat flour, with which we will enrich an ancient farmers’ recipe.A white polenta pizza with sautéed wild herbs, tomato and grated soft cheese. This food was once considered poor, but nowadays it has become a privilege for connoisseurs.My main goal is to show the sacrifices made by these men and women, by our ancestors, and to spread the knowledge of healthy methods to produce and process food, by bringing back to light the good traditions which should never be a privilege for the few.
