This photographic food atlas has been developed as an aid for evaluating Kenyan adolescents’ standard food portion sizes in an urban setting. The photographic food at-las includes the most commonly consumed foods by Kenyan adolescents based on data collected from Kenyans aged 9-14 years. This data was collected in Nairobi County in the sub-counties of Langata (Nairobi West) and Embakasi Central (Kayole) representing a va-riety of families from low to middle income socio-economic backgrounds. The portion sizes in this photographic food atlas are based on weighed meals of the Kenyan ado-lescents in their households. A variety of food stuffs have been included in this atlas for it to be useful in various contexts. The weights of foods that are not included in this atlas can also be estimated by comparing them to that of similar foods found in the atlas. For purposes of wider use, the names of foods are presented both in English and Kiswahili.
This atlas is the first of its kind to be pro-duced in Kenya and will serve as a resource for researchers, dietitians, nutritionists and sociologists among other users involved in collecting information on food consumption and working with adolescents. The photo-graphic food atlas can be used as a tool to quantify food intake, facilitate dietary recall, educate and counsel on appropriate food portions, as well as achieve healthy changes in eating habits. This can be accomplished by using this photographic food atlas in combination with the Kenyan Food Composi-tion Tables to estimate nutrient intake.
FOREWORDThis photographic food atlas has been de-
veloped as a collaboration between the De-partment of Food, Nutrition and Dietetics of Kenyatta University, Kenya, and the Depart-ment of Food and Nutrition of the Universi-ty of Helsinki, Finland. It has been developed as part of the capacity-building programme, The Kenya-Finland Education and Research Alliance (KENFIN-EDURA), funded by the Min-istry for Foreign Affairs of Finland.
The photographic food atlas has been developed as part of postgraduate work of students from both Kenyatta University and University of Helsinki, supported by under-graduate students from Kenyatta Universi-ty. Researchers at both Kenyatta University and the University of Helsinki have contrib-uted with valuable insights and comments towards its development. The photography, design and layout of the photographic food atlas has been undertaken by the Kenyatta University Web Design Team.
The authors would like to thank the com-munity nutritionists and community health volunteers in Nairobi who facilitated the re-search that informed this photographic food atlas. The authors would also like to espe-cially thank the children and their parents in Nairobi who welcomed the researchers into their homes and particularly the mothers who cooked the meals seen in the pictures of this atlas.
