Good Play, Rodney Walker!!
After more than a decade of struggling, the 1979 season proved new hope for the Eagles. Under the tutelage of Dick Vermeil, the transformation of the Eagles into a Super Bowl contender was well underway. Earlier victo-ries over the Cowboys and Steelers showed the football
world the Eagles were not a team to be messed with. Perhaps no game personified this season more than a 44-7 victory over the Detroit Lions. It was a cold dark dank dreary afternoon at Veterans Stadium and the Lions played as if they had never showed up. The cold weather did not bother barefoot kicker Tony Franklin who kicked 3 field goals. The ground game racked up 167 yards, Ron Jaworski was flawless passing for 233 yards, and the defense with 4 sacks held the Lions to just180 yards. This was only a sampling of things to come. Later the Eagles would go deep into the playoffs winning their first playoff game in almost 20 years and the following season the Ea-gles would be in the Super Bowl.
A phone call was received earlier in the week from a Guest who attended the Eagles vs. Giants game last Sunday, November 21st. The caller described her efforts trying to get into the stadium during the beginning of the game. She mentioned that during the rush of people entering the stadium, how she was having difficulty locating where she was to find her tickets for the game. Additionally, once she found her tickets, she was confused about which gate she was supposed to enter to get to her seats. She came across Rodney Walker at the Comcast gate and said he did his job exceptionally well. He was courteous, pointed her in the correct direction, and then followed up with her to see if she needed anything else. She said he was an impressive staff
member and really helped get her game day experience off on the right foot. Good play, Rodney!

This recipe will
make 8 servings.
KEY PLAYERS (Ingredients)
• 6 boneless short ribs (about 5 3/4 pounds)
• Kosher Salt
• Extra-virgin olive oil
• 1 large Spanish onion, cut into 1/2- inch pieces
• 2 ribs celery, cut into 1/2-inch pieces
• 2 carrots, peeled, cut in 1/2 length wise, then cut into 1/2-inch pieces
• 2 cloves garlic, smashed
• 1 1/2 cups tomato paste
• 2 to 3 cups hearty red wine
• 2 cups veal stock
• 1 bunch fresh thyme, tied with kitchen string
• 2 bay leaves
Eagles Edibles: Braised Short Ribs By: Chef James Hennessey
Game Plan (Directions) Season each short rib generously with salt. Coat a pot large enough to accommodate all the meat and vegetables with olive oil and bring to a high heat. Add the short ribs to the pan and brown very well, about 2 to 3 minutes per side. Do not overcrowd pan. Cook in batches, if necessary. Preheat the oven to 375 degrees F. While the short ribs are browning, puree all the vegetables and garlic in the food processor until it forms a coarse paste. When the short ribs are very brown on all sides, remove them from the pan. Drain the fat, coat the bottom of same pan with fresh oil and add the pureed vegetables. Season the vegetables generously with salt and brown until they are very dark and a thick mixture has formed on the bottom of the pan, approximately 5 to 7 minutes.
Scrape and let it reform. Scrape again and add the tomato paste. Brown the tomato paste for 4 to 5 minutes. Add the wine and scrape the bottom of the pan. Lower the heat if things start to burn. Reduce the mixture by half. Return the short ribs to the pan and add 2 cups veal stock or until the stock has just about covered the meat. Add the thyme bundle and bay leaves. Cover the pan and place in the preheated oven for 3 hours. Check periodically during the cooking process and add more water, if needed. Turn the ribs over halfway through the cooking time. Remove the lid during the last 20 minutes of cooking to let things get nice and brown and to let the sauce reduce. When done the meat should be very tender but not falling apart. Serve with the braising liquid.
