RECIPESCHRISTMASCHOCOLATEROULADEThis pavlova-likemixture isrolled around a filling ofChristmasmincemeat andwhipped cream. It can befrozen for up to twomonths.

4 eggwhites1 cup sugar1 tsp each: vanilla essence,white vinegar1 tbsp each: dark cocoapowder, cornflour

Filling3/4 cup cream2 tbsp icing sugar3/4 fruitmincemeatextra icing sugar to dust

Heat the oven to 180C. Lightlygrease and line a 24cm x 30cmsponge roll tray with bakingpaper.

Beat egg whites until stiff.Gradually add sugar, beatingwell, until all the sugar isdissolved. Fold in vanillaessence, vinegar, cocoa powderand cornflour.

Spread themixture evenlyinto the sponge roll tray. Bakefor 15minutes, until set.

Sprinkle a piece of bakingpaper with extra icing sugar.When themeringue log iscooked, turn onto paper. Cool.

Whip cream and 2tablespoons of icing sugartogether, until stiff. Fold in fruitmincemeat. Spread overmeringue and roll up from a longedge, using the edge of thepaper to help. Use a longspatula to place the roll onto aserving dish. Dust with extraicing sugar and serve with freshberries. —Serves 6-8.

CHOCOLATECRUSTEDRASPBERRYCHEESECAKE2packets chocolate thins200g butter, melted500g cream cheese250g ricotta cheese1 cup caster sugar1 tbsp gelatine dissolved in1/4 cup boiling water2 cups cream, whipped2& 1/2 cups fresh or frozenraspberries

Finely crush the biscuits in afood processor. Mix withmeltedbutter. Press onto the base andsides of a 23cm cake pan.Refrigerate until firm.

Beat cream cheese, ricottaand caster sugar together. Stirin the dissolved gelatine. Fold in

cream. Lightly fold 2 cups ofraspberries through themixtureand pour onto the biscuit base.Refrigerate until set.

Top with the remainingraspberries before serving.

—Serves 12.

CHERRIES JUBILEECherries Jubilee was createdby French chef AugusteEscoffier in honour of QueenVictoria’s Diamond Jubilee.

50g unsalted butter1/4 cup caster sugar2 thinly sliced pieces orangepeel (no pith)500g dark cherries, pitted1/4 cup kirsch

Melt butter overmedium heat ina large frying pan or chafingpan. Add caster sugar andorange peel and stir a little todissolve the sugar. Addcherries. Cook until tender,about 5minutes.

Remove from heat. Addkirsch, and carefully ignite.Cook until flame isextinguished.

Great served warm overvanilla ice cream, pavlova,cheesecake or Christmaspudding. —Serves 6.

GINGERCHRISTMASPUDThis light fruit pudding can bemade a day ahead. Reheat inmicrowave or steamer.

spray oil75g butter, softened1 & 1/4 cups flour1 tbsp ground ginger1 tsp each: baking powder,ground cinnamon1/2 tsp each: salt, baking soda1/4 tsp each: ground cloves,nutmeg2/3 cup sugar3 large eggs1/2 cup each: orangemarmalade, driedmixed fruit1/4 cupmolasses or treacle

Spray the inside of a 6-8-cuppudding basin, Bundt pan orsimilar with oil. Then rub with ateaspoon of butter.

Sift flour and remaining dry

ingredients— except sugar—into a bowl.

Beat sugar and butter inlarge bowl— preferably with anelectric beater— until wellmixed. Beat in eggs, one at atime. Addmarmalade, mixedfruit andmolasses andmix, untilsmooth. Add flourmixture andmix until just blended. Pour intothe prepared pudding basin orpan. Cover tightly with foil.

Place the basin on a rack in alarge saucepan. Add hot waterto halfway up the sides of thebasin. Bring to a gentle simmer.Cover and steam the puddinguntil a thin skewer inserted nearthe centre comes out clean,about 1 and 1/4 hours. Duringcooking, addmore boiling waterif needed tomaintain the level.

Carefully remove basin fromthe saucepan. Uncover andstand for 10minutes. Run thetip of a knife around the top ofpudding and the basin to loosenthen turn onto a serving plate.

Excellent served with brandysauce or custard and lashings ofwhipped cream.

—Serves about 8.

The New Brighton Santa Parade was held last week with the market taking place afterwards. A cool southerley could not keep the crowds away as hundreds of people lined the street to enjoy the vintage cars, community groups, BMX riders and Santa Claus pass by.

cerned about it. We have got well over a million dollars invested in the clubs. We are concerned that it is up in the air where our future lies.”

For now Mr Smith said the clubs would just carry on as if nothing is going to happen to the park and have to sit tight until the final decision was made.

The Pegasus Post revealed last week the site for the new combined school will be either Burwood Park or QE II.

Mr Smith said there has been no consultation with the clubs up to this point but hoped there would be moving forward from here.

Mr Smith said the clubs were in limbo until the final decision was made which he believed would be around April.

The clubs would also want to be helped out finding a new home if the park was taken for the schools.

“I hope that would be the case. We provide volunteers and run a big social service so we would ex-pect any changes to be in good faith and we were not just left turfed out on our ear,” Mr Smith said.

Selwyn Eagle, of Dallington, said there were better alternatives than Burwood Park and it was not a smart idea.

RoadworksFrom January 12, Pages Rd from An-zac Drive to Breezes Rd will be one-way heading towards the city for the whole year. SCIRT and City Care are install-ing vacuum mains and pressure mains including five major wastewater pipes, vacuum and pressure. These will be in-stalled into two deep trenches to the new pump stations. A detour for east-bound traffic will be in place around Ottawa Rd or Bickerton St. The work is expected to be finished in November.

Light upgrades approvedThe Burwood-Pegasus Community Board gave permission to the New Brigh-ton Rugby Club to restore floodlights at Thomson Park last week. These will be upgraded for training purposes and not be used more than four times a day in winter and be turned off before 9pm. Coastal Spirit Football Club also had light upgrades approved by the Hagley-Ferrymead Community Board last week. They will replace three poles with new ones and in conjunction with Canterbury Softball will form part of a bigger upgrade to Cuthberts Green. More floodlights are planned and they will be built once the exact location for an artificial playing turf is finalised at the ground.

Softball lease renewedThe Canterbury Softball Association has had its lease of Mainland Foundation Ballpark at Cowles Stadium renewed for 20 years. The new lease was approved by the Hagley-Ferrymead Community Board last week. The existing lease ex-pired at the end of September and was being rolled over on a month by month basis. The first lease was granted in 1991 and city council staff see it as a valuable asset to Christchurch and the softball community.

A community project that went sour at the demolished site of the Bridge St shops is still simmer-ing a year on.

Last December community group Renew Brighton along with volunteers were able to get an outdoor restaurant and food caravans set up on the site but some residents complained it looked terrible and would rather have the shops rebuilt.

Recently a hate message was spray painted on a wall opposite the site directed at the former Renew Brighton co-ordinator, Rebecca May (inset).

Before this another message appeared on the wall saying “share the love” which Ms May said she did not paint.

However, someone has be-lieved Ms May painted it and de-cided to paint their own message which read: “F*** off Bec May”.

It has subsequently been removed but Ms May said it was still concerning.

Ms May said she has a fair idea who painted the message and wanted to let them know she did not paint the original “share the love” message on the wall.

“I accept that your feeling hurt about this and that this perhaps didn’t got to your plans but I’m prepared to take responsibility for it. I just wanted to let them know I’m open to criticism but

it does seem kind of ironic,” Ms May said.

She said the idea was to set

up the area as a place for the community and try to ensure graffiti would not be painted and

it was now ironic that someone has graffitied there just to abuse her.

Speed limits on Prestons Rd are set to be lowered further than first thought.

The Burwood-Pegasus Community Board has recommended to the city council the road’s speed limit be lowered from 80km/h to 50km/h.

It was originally recommended by city council staff to be lowered to 60km/h but a number of submissions that the community board received wanted it lowered to 50km/h.

Alpine View Lifestyle Village director Jeremy O’Dowd gave a deputation at the community board meeting last week and was “wrapped” the board had recommended the speed limit of 50km/h.

“The biggest concern we have is a lot of our folks are finding it hard to mange the road and the trucks going past are particularly bad.”

Mr O’Dowd said with the development in the area it was “nuts” to have the limit at such a high speed.

“Those trucks just rocket past. I’ve got to motor to just get out of our village. One day one of my folks isn’t going to make it.”

He said he was appreciative of the community board for taking his warnings seriously and recommending the lower limit.

The recommendation will now be put before the city council early next year but ultimately the New Zealand Transport Agency has the final say.

A speed decrease on Marshland Rd of 80km/h to 70km/h and an increase on Frosts Rd from 50km/h to 70km/h were also recommended.

Children suffering from cancer had something to smile about on Saturday when they attended their annual Christmas party.

The event, which was or-ganised and funded by the Smulders Family Charitable Trust, saw more than 200 people gather at Selwyn House school for three hours of carnival-themed fun.

Charlotte and Pier Smulders are the owners of The Christchurch Star Company.

Some of the fun included a merry-go-round, a bouncy castle, face painting, a visit from Santa and a number of different activities.

Santa arrived on a YikeBike and gave pres-ents to all of the children who attended.

It was the fourth year Mrs Smulders had organised the event after she took over from the late Diana and Robbie Robinson who had run the parties for more than 20 years.

Mrs Smulders said it was another fantastic and meaningful day for the children and their families.

The best part about organising the Christmas party was seeing the children smile and the enjoyment on their faces, she said.

“It’s an escape for them.”She said the Christmas party would con-

tinue to run in years to come.Selwyn House assistant principal Juliana

Rae said the event had run very well and the school would be more than happy to host it again.

“We provided the venue which we were delighted to be able to do.”

Last week Banks Avenue School farewelled its two deputy principals who both retired after a combined 80 years of teaching.

Kay Robson and Rae McDonald have both put the duster down with Mrs Mc-Donald leaving behind almost two decades worth of memories at the Dallington school.

Mrs McDonald has been deputy princi-pal in the senior school since 1995.

In her career she has taught at a number of schools including Rangiora Borough School and Leamington School in Cam-bridge.

Mrs McDonald is passionate about read-ing and literacy and it is due to her vision and hard work that Banks Ave has a stand out library and information centre.

She is also passionate about growing young teachers and has given many hours to guiding and mentoring beginning teach-ers.  

After 45 years of teaching and leadership, Mrs McDonald is looking forward to an extended holiday overseas in 2015 and the chance to relax over a coffee with friends.

Kay Robson joined Banks Ave as associ-ate principal in the junior school in 2002.

Prior to joining the Banks Ave team Miss Robson had taught in a number of schools including Russley and Riccarton primary schools.

She has led the junior team ensuring that our new pupils get a sound foundation in

literacy and numeracy.  Miss Robson has also been responsible

for introducing very successfully, family reading and maths initiatives where parents and grandparents are invited to school every term, to join in with either reading or maths activities.

Both of these dedicated teachers and leaders have worked tirelessly for the ben-efit of our pupils and staff.

They will both be missed. Staff, pupils and families thank them for all of their ef-forts and hard work over the yearsand wish them all the best in their retire-ment.

CHRISTMAS CHOCOLATE ROULADEThis pavlova-like mixture is rolled around a filling of Christmas mincemeat and whipped cream. It can be frozen for up to two months.

4 egg whites 1 cup sugar 1 tsp each: vanilla essence, white vinegar 1 tbsp each: dark cocoa pow-der, cornflour Filling ¾ cup cream 2 tbsp icing sugar ¾ fruit mincemeat extra ic-ing sugar to dust

Heat the oven to 180 deg C. Lightly grease and line a 24cm x 30cm sponge roll tray with baking paper.

Beat egg whites until stiff. Gradually add sugar, beating well, until all the sugar is dissolved. Fold in vanilla essence, vinegar, cocoa powder and cornflour.

Spread the mixture evenly into the sponge roll tray. Bake for 15 minutes, until set.

Sprinkle a piece of baking paper with extra icing sugar. When the meringue log is cooked, turn onto paper. Cool.

Whip cream and 2 tablespoons of icing sugar together, until stiff. Fold in fruit mincemeat. Spread over meringue and roll up from a long edge, using the edge of the paper to help. Use a long spatula to place the roll onto a serving dish. Dust with extra icing sugar and serve with fresh berries. — Serves 6-8

They arealso versatile.We all love thetraditional potato favourites butthis week I’m serving upsomething funky— potatoeswith icecream, in chocolatetruffles, with squid and in agluten-free pastry.

RECIPESTOFFEE&POTATOCRISPSVANILLAICECREAMProper Crisps are delicate.Perfect for coating icecream.

4 large scoops French vanillaicecream1 large cup Proper Crisps inMarlborough Sea Salt, lightlycrushed1/2 cup long thread coconut,lightly toasted4meringue nests, optionalToffee: 1/2 cup sugar1/2 cupwater

Refreeze the scoops oficecream.When hard, roll in thecrushed crisps and coconut.Freeze, until ready to serve.

Tomake the toffee, placesugar and water in a large,microwave-proof glass bowl.Microwave on high for 2minutes.

Stir to dissolve sugar.Continuemicrowaving for 3-4minutes until liquid is lightgolden. Remove— the toffeewill continue to colour onstanding.

Remove icecream fromfreezer. Place inmeringuenests, if using. Drizzle withtoffee. Serve immediately.

Serves 4.

CHOCOLATE POTATOTRUFFLESThemashed potatomust befree of seasonings, cream andbutter. It should also be verywell mashed and have asmooth consistency.

1 cup dark chocolate chips1/2 cup cold cookedmashedpotatoes1/2 tsp vanilla essence4-5 pieces crystallised gingerDark cocoa powder for dusting

Place chocolate chips in amicrowave-proof bowl. Melt on50 per cent power for about 2minutes. When completelymelted, stir intomashed potatovery well.Add vanilla essence and stir wellagain. Themixture should besmooth. Chill for 30minutes.

Cut ginger into thirds orquarters. Take a tablespoon ofpotatomixture and roll around apiece of ginger.

Repeat with remainingmixture. Place on a plate anddust with dark cocoa powder.Roll into small balls. Dust withcocoa. Refrigerate until firm.

Can be stored in fridge for upto one week.

Makes 16.

POTATO&SQUIDSALADThis is based on a PetaMathias recipe that shewill bedemonstrating at theChristchurch Food Show, April4-6.

400gwaxy potatoes4 eggs, free-range/organic, ifpossible1 large shallot4 tbsp olive oil1-2 tsp diced or crushed chilli100g squid rings8 pitted black olives8 anchovies, oil retained2 tbspwhite-wine vinegarFlaky sea saltFreshly ground black pepperto taste

Peel potatoes. Place in cold,lightly salted water. Bring toboil. Simmer, until cooked.Don’t overcook. Slice thickly.

Meanwhile, place eggs incold water. Bring to boil.Simmer for 5-6minutes. Cool,then peel and quarter. Sliceshallot and place in icy water tocrisp.

Heat a little of the olive oil in afrying pan. Add diced chilli.

Saute squid rings for about 2minutes, until just cooked.Combine with potatoes, shallot,eggs, olives and anchovies in abowl.

Make a dressing usingremaining olive oil, a little oilfrom the anchovies and vinegar.Season. Drizzle over salad.

Serves 8 as a starter.

GLUTEN-FREEPOTATOPASTRY450g cookedwarmmashedpotato100g butter, chopped1 & 1/4 cups rice flour1/2 cup cornflour1 tsp salt1 egg, lightly beaten

Place warmmashed potato andbutter in a large bowl andmixwell. Add rice flour, cornflour,salt and egg. Mix well. Use yourhand tomix it, if easier. Wrapthe dough in a plastic bag. Setaside for 30minutes to rest.Roll out to about 1cm thicknessor thinner. Great for pie pastryor for sausage rolls.

event” dessert that can beprepared ahead and somevariations can be frozen. Light

cream cheeses plus lower fatricotta cheese has helped toimprove the image. Thin sliversof cheesecake can be servedwith a fruit coulis providing amodern, light look.Trifle is the classic dessert

that has graced British tables forcenturies andwas even vouchedfor by Charles Dickens. It’s quickand easy to prepare. Cut about300g of trifle sponge into thinfingers. Place half in the base ofeight, squat drinking glasses ora large bowl. Sprinkle withabout a half cup of orange juice

or sherry. Topwith a cup ofcustard and a cup of slicedstrawberries. Repeat the layersand top with whipped cream.This temptation is best prepareda day ahead and refrigerated.Christmasmincemeat is one

of my summer standbys. It’sgreat thinnedwith a littleorange or pineapple juice,heated and poured over icecream, steamed pud orbarbecued bananas then toppedwith whipped cream.Feast on Christmas— and

enjoy.

RECIPESCHRISTMASCHOCOLATEROULADEThis pavlova-likemixture isrolled around a filling ofChristmasmincemeat andwhipped cream. It can befrozen for up to twomonths.

4 eggwhites1 cup sugar1 tsp each: vanilla essence,white vinegar1 tbsp each: dark cocoapowder, cornflour

Filling3/4 cup cream2 tbsp icing sugar3/4 fruitmincemeatextra icing sugar to dust

Heat the oven to 180C. Lightlygrease and line a 24cm x 30cmsponge roll tray with bakingpaper.

Beat egg whites until stiff.Gradually add sugar, beatingwell, until all the sugar isdissolved. Fold in vanillaessence, vinegar, cocoa powderand cornflour.

Spread themixture evenlyinto the sponge roll tray. Bakefor 15minutes, until set.

Sprinkle a piece of bakingpaper with extra icing sugar.When themeringue log iscooked, turn onto paper. Cool.

Whip cream and 2tablespoons of icing sugartogether, until stiff. Fold in fruitmincemeat. Spread overmeringue and roll up from a longedge, using the edge of thepaper to help. Use a longspatula to place the roll onto aserving dish. Dust with extraicing sugar and serve with freshberries. —Serves 6-8.

CHOCOLATECRUSTEDRASPBERRYCHEESECAKE2packets chocolate thins200g butter, melted500g cream cheese250g ricotta cheese1 cup caster sugar1 tbsp gelatine dissolved in1/4 cup boiling water2 cups cream, whipped2& 1/2 cups fresh or frozenraspberries

Finely crush the biscuits in afood processor. Mix withmeltedbutter. Press onto the base andsides of a 23cm cake pan.Refrigerate until firm.

Beat cream cheese, ricottaand caster sugar together. Stirin the dissolved gelatine. Fold in

cream. Lightly fold 2 cups ofraspberries through themixtureand pour onto the biscuit base.Refrigerate until set.

Top with the remainingraspberries before serving.

—Serves 12.

CHERRIES JUBILEECherries Jubilee was createdby French chef AugusteEscoffier in honour of QueenVictoria’s Diamond Jubilee.

50g unsalted butter1/4 cup caster sugar2 thinly sliced pieces orangepeel (no pith)500g dark cherries, pitted1/4 cup kirsch

Melt butter overmedium heat ina large frying pan or chafingpan. Add caster sugar andorange peel and stir a little todissolve the sugar. Addcherries. Cook until tender,about 5minutes.

Remove from heat. Addkirsch, and carefully ignite.Cook until flame isextinguished.

Great served warm overvanilla ice cream, pavlova,cheesecake or Christmaspudding. —Serves 6.

GINGERCHRISTMASPUDThis light fruit pudding can bemade a day ahead. Reheat inmicrowave or steamer.

Spray the inside of a 6-8-cuppudding basin, Bundt pan orsimilar with oil. Then rub with ateaspoon of butter.

Sift flour and remaining dry

ingredients— except sugar—into a bowl.

Beat sugar and butter inlarge bowl— preferably with anelectric beater— until wellmixed. Beat in eggs, one at atime. Addmarmalade, mixedfruit andmolasses andmix, untilsmooth. Add flourmixture andmix until just blended. Pour intothe prepared pudding basin orpan. Cover tightly with foil.

Place the basin on a rack in alarge saucepan. Add hot waterto halfway up the sides of thebasin. Bring to a gentle simmer.Cover and steam the puddinguntil a thin skewer inserted nearthe centre comes out clean,about 1 and 1/4 hours. Duringcooking, addmore boiling waterif needed tomaintain the level.

Carefully remove basin fromthe saucepan. Uncover andstand for 10minutes. Run thetip of a knife around the top ofpudding and the basin to loosenthen turn onto a serving plate.

Excellent served with brandysauce or custard and lashings ofwhipped cream.
