SOURCINGThis is a strictly hard bean grade coffee sourced from SMALL HOLDERS producers in the town of Boquete Located in the western province of the Chirquiri. TThis highlands provide the essential coponents of rich volcanic soil and micro climates, ideal temperatures and abundant precipitation to result in remarkable coffee.

PROCESSWashed also known as “Wet Process” which means ripe cherries are de-pulped to remove the outer skin then fermented for 12-24 hours depending on ambient conditions, after which it is fully washed with clean water in grading channels to remove the remaining mucilage.

TThe parchment is raked and turned periodically on patios to ensure a consistent drying process until the optimum moisture content of 12% has been reached to complete the process.

SHG- Strictly High Grown coffee is harvested at high altitudes, which allows the coffee cherries to mature slowly resulting in a denser and higher quality bean. EP – EP – Stands for European Preparation, an additional sorting to ensure only the finest green coffee beans are exported.
