Celebrate this St. Patrick’s Day with some

Boxty originated in the North West of Ireland in the 1600’s. It is steeped in

tradition in the region and now nationally recognized. A hidden treasure on the Irish food

trail with hand crafted style, Boxty are Irish potato griddle cakes, made from both baked

potato and raw, grated potato, they are pan fried until crisp and golden. Serve them with

butter or honey.

INGREDIENTS

½ pound potatoes, unpeeled

1 ½ cups buttermilk

½ pound potatoes, peeled and grated

1 ¾ cups all-purpose flour

1 teaspoon baking soda

Salt and ground black pepper to taste

2 tablespoons butter, as needed

DIRECTIONS

1) Preheat oven to 450 degrees F (230 degrees C). Scrub the unpeeled potatoes and

prick them several times with a fork; place onto a baking sheet.

2) Bake in the preheated oven until the potatoes are easily pierced with a fork, 50

minutes to 1 hour. Remove, cool, and peel. Mash the potatoes with the buttermilk.

Stir in the grated raw potato, flour, baking soda, salt, and pepper.

3) Melt the butter in a large skillet or griddle over medium heat. Scoop the potato

mixture into the skillet to make 3 inch cakes. Fry until golden and crisp, turning

once, about 5 minutes per side.

St. Patrick’s Day takes place each year on March 17thwhich is the traditional religious feast day of Saint Patrick. According toHistory.Com the very first St. Patrick’s Day parade took place in the UnitedStates on March 17, 1762 when Irish soldiers serving in the British militarymarched through New York City. Today there is an annual St. Patrick’s Dayparade, in New York City, in which 150,000 – 250,000 marchers take part– no floats or automobiles are allowed. Corned beef and cabbage is atraditional St. Patrick’s Day dish, lime green chrysanthemums are oftenrequested on this date and shamrocks and leprechauns are the universalsymbols of this day.

Originally, the color associated with Saint Patrick was blue. However,over the years the color green and its association with Saint Patrick's daygrew. Green ribbons and shamrocks were worn in celebration of StPatrick's Day as early as the 17th century. Of course, here atOpenWorks, “green” is one of our favorite words. We realize that greencleaning not only provides our customers with a sparkling facility buta healthy facility at the same time. Statistics show that healthyenvironments have been estimated to increase worker productivitybetween .5% and 7%. Considering an average cost of salaries andbenefits is approximately $130 per square foot, each 1% increase inproductivity translates to a savings of $1.30 per square foot – or

$130,000 in annual savings for a 100,000 square foot building.

Given these numbers it is critical that we do all that we can to help ourcustomers achieve a healthy working environment for their teams. Here aresome tips to keep in mind when purchasing your green cleaning chemicals:

Choose products that:• Contain no known, probable or possible carcinogens• Have neutral pH…products with moderate pH (7)• Are non-irritating to eyes & skin• Have no short-term (acute) or long-term (chronic)

health hazards• Are free of, or are low in, Volatile Organic Compounds• Use disinfectants only as required by state health law• Avoid fragrances (odors) and dyes• Are non-flammable• Are non-reactive. Mixing should not create toxic,

gases, fire or other violent reactions• Are not packaged in aerosol/spray cans• Are biodegradable• Can be used for more than one task (multi-purpose

cleaners)

They make fewer public decisions.In many situations the best person to make

a decision isn’t the boss, most of the time thebest decision maker is the team member clos-est to the issue. Decisiveness is a quality youwill find in a good boss. A REMARKABLE bossis decisive but in a very different way: they de-cide they aren’t the right person and then de-cide who is the right person. REMARKABLEbosses do this not to avoid making those deci-sions but because they know they shouldn’tmake those decisions.

They let their team members learn their ownlessons.

It is challenging to let your employeeslearn their own lessons – it is far easier for aboss to debrief the employee and turn a teach-able moment into a lesson learned. Keep inmind, however, that the lessons we learn onour own are the lessons we forever remember.REMARKABLE bosses don’t scold or dictate;they work with the employee to figure out whathappened and how to resolve it. Great employ-ees don’t need to be scolded or reprimanded –they know they did wrong – staying silent is of-ten the best way to ensure that they remember.
