10 Chef Apprentices – Round 2 begins

early next year so there are more

Chefs for the Year of Food.

Steps to Excellence is about to launch

Round 10 (!!!). 20% of our Managers

have now come through Steps to

Excellence, including 2 Platinum

the younger crowd or a romantic candle-lit dinner

night aimed at couples?

n We all love to treat our mums on MotheringSunday and make her feel special. Think…traditional classic food, speciality cakes, bubblyand all things pink and pretty! It is important tofocus on all the little things to make a nice andeasy family day out as well as making sure mumsfeel super special; a great day for building long- term customer relations!

ORCHID STORY OF THE MONTH!

ORCHID BIG WEEKEND SAW 4 OF OUR WELSH PUBSJOIN TOGETHER for a spectacular event to showcasesome local talent, raise money for charity, fill up thepubs with crowds and provide an exciting andenjoyable atmosphere for everyone.

Gareth from the Cedar Tree along with Chris Haydenand Chris Bryant decided on the idea of the big eventback in Early 2012, “We wanted to do something big sowe utilised what was big on TV and in society!” And ofcourse with X factor being the highlight of TV thesedays, what better than Orchid’s very own CymruFactor! But they didn’t just host an old fashionedsinging competition, they went all out… Joined 4 pubstogether, hosted auditions and semi-finals in each pub,creating a series of great events!

In order to promote the large scale event enough toreach a large amount of the public, they thought “Whydon’t we go to the big people” and spoke to the largecompanies they already liaised with which landedthem a fantastic sponsorship from Carlsberg!

Once the big final day arrived, the success of the eventwas a sure thing and the atmosphere was buzzing andexciting at the Ty Glas in Llanishen, Cardiff. We wereall impressed with the diverse set of singers, thegenuine amount of talent and most of all with theorganisation and effort of the co-ordinators and teamsfrom the 4 pubs. Not to mention the £950 raised forThe Honeypot Children’s Charity!

SO THE EVENT WAS AN UNDENIABLE SUCCESS…WHAT NEXT? Well everyone in Cardiff is definitely looking forwardto Cymru Factor 2013, but they want to take it up anotch! “More pubs should getinvolved; we could spread thecompetition across Orchid!” Are you as inspired by their successas we are? Sweet potatoand roastedcashew nutsoupA lot of us want to try and stayhealthy and fit but a bigcontradicting factor is that thisweather doesn’t exactly makeus feel like meditating under atree and eating fresh salad. We crave nice warm comfortingfood… but it doesn’t have to be unhealthy!

Here is one of my favourites, a nice and healthy soup whichwill give you that warm feelingin your belly.

Ingredients:4 sweet potatoes, sliced1 litre vegetable stock30ml butter5ml red chillies (more if you dare)15ml ginger, peeled and chopped15ml garlic, peeled and chopped2 carrots, sliced1 onion, sliced125ml plain flour170ml coconut milkA few sprigs of coriander, plus extrafor garnishSalt and white pepper to taste 250g cashew nuts, roasted

Method:Put the sweet potatoes and vegetable stock in a panand boil for 15 minutes.

Melt the butter in a large pan, add the chillies, ginger,garlic, carrots, and onions and fry over moderate heatuntil soft.

Mix in the flour with a wooden spoon.

Pour in the stock and sweet potatoes, blend in a foodprocessor until smooth.

Return to the pan and cook on low heat for 15minutes, adding the coconut milk and coriander andseasoning at the last minute.

Serve the soup with a garnish of coriander leaves

and cashews sprinkled on top.

If serving with bread, opt for Wholegrain… every littlecounts!
