THE VOLCANIC WINERIES

SALINA IS ONE OF SEVEN islands in the Aeolian archipelago off of Sicily, which has been shifted, destroyed, and reborn time and time again by volcanic activity throughout the past several millennia. Many locals even refer to them as the “shape shifting,” islands; pieces of land that seem to be living, breathing, observably evolving versions of the planet we reside on.

Approaching Salina island from a distance, it is hard to imagine the tranquil, lush vegetation underneath

volcanic plumes of ash and smoke. But traveling further inward, you cannot help but notice a set of steep twin mountains, extinct volcanoes, that dominate the landscape at the center of the island.

Luckily for Salina’s 4000 permanent residents, there has not been a volcanic eruption in nearly 13,000 years on the island. And luckier still for the residents who have chosen to make a living out of winemaking on the island, those

ancient eruptions have enriched the soil here with plenty of organic and mineral substances of volcanic origin.

“Volcanic wines,” as they are sometimes referred to, have been around for centuries, but only recently have they become somewhat of a hot topic in the wine industry. The concept of terroir in general refers to the idea that a wine’s environment can be expressed in a way that is experienced in the glass, and wines

that come from volcanic soils are no exception. What these soils tend to have in common is poor fertility, physical and mineral complexity, and a porous nature that allows water to flow through them, and into root systems. While common sense may imply that lava is the reason why volcanic soils are so distinct, the complexities actually arise from ash deposits. When a volcano erupts, ash is forcefully ejected from the vent at such a high velocity that it can spread hundreds to thousands of kilometers away from the volcano itself. This ash generally consists of fragments of pulverized rock, minerals, and volcanic glass, with the largest fragments falling closest to the eruption site, and the smaller fragments being dispersed further away. Lava flows then fill the ashy soil further with minerals and nutrients as they creep along, resulting in the truly unique soil that we call volcanic.

Vines that grow in volcanic microclimates are cultivated in inherently infertile and stressful soil conditions, which causes them to produce grapes in smaller bunches and with thicker skins. The result is added complexity, structure and richness, in addition to the minerality indirectly absorbed from the soil itself. The distinctness of each microclimate creates vastly different wines region to region, but the common denominators of wines made from volcanic soils tend to be complexity, elegance, and an undeniable sense of place.

Salina is a small island in the Aeolian island chain, an archipelago of volcanic origin with stunning natural beauty. It has become a popular destination for tourists seeking a unique environment with landscape characterized by the pristine beaches, glittering sea, mysterious coves, warm sunsets, and especially for its famous nectar, Malvasia delle Lipari.

Out of all the Aeolian islands, Salina has best been able to safeguard and enhance the production of Malvasia wine. According to the ancient Greek historian Diodorus Siculus, the Malvasia vine was imported to the island of Lipari by the first Greek colonizers around 588 B.C. It is thought that the first Malvasia vines were planted in Capo Gramignazzi, Salina, near the end of the eighteenth century.

In the second half of the eighteenth century, a period of flourishing trade began from the islands to mainland Europe. Up until the first half of the nineteenth century, the cultivation of Malvasia was very extensive throughout the island of Salina and wine exports exceeded 3000 hectoliters per year, reaching destinations around the world. However, with the infiltration of phylloxera, the vineyards of Salina were destroyed, which caused a mass migration of the island's population.

In the 1950s, the Cantina Sperimentale di Milazzo, a group dedicated to ongoing vineyard experiments, was largely responsible for the recovery of Malvasia cultivation on Salina. New vineyards were planted throughout the island, and the production technique was improved.

Today, Malvasia delle Lipari is a DOP wine, and has been designated as such since 1973. It is obtained from 95% white Malvasia grapes, with the remaining 5% coming from a red grape called Corinto Nero. The viticulture style in Salina is referred by locals as "heroic," because of the treacherous steep terrains, narrow rows of vines, and relatively small plots that cover the volcanic terrain. The training systems used are primarily espalier or counter espalier, and all operations must be conducted by hand.

The bunch of Malvasia is, on average, sparse and golden-yellow

in color, with thin skin and a rich, aromatic flavor profile. The aromaticity is due to the presence of the same terpenes (aromatic organic compounds found in many plants) found in Moscato grapes, in both the skin and the juice of the fruit.

Traditionally, Malvasia grapes are left to dry on the vine in the case of a late harvest, or harvested normally, with the best bunches being laid out on racks called canizze where the bunches dry in the sun over the next 10-15 days. During the day, the canizze are exposed to the sun during the day, and sheltered in ventilated areas at night (or on rainy or humid days). When the bunches of grapes are well-dried and withered, they are destemmed and crushed. The must is then left to ferment in temperature-controlled stainless steel vats.

Colosi's cellar is surrounded by vineyards of Malvasia, which is contained by terraces made of traditional stone walls. The vineyards are located in Capo Faro and Contrada Porri. The underground cellar follows the rigid regulations that protect the environment of the Aeolian archipelago, and maintains a constant temperature for the optimum conservation of the wines. It is made up of local stones, in perfect symbiosis with the surrounding environment.

COLOSI, SALINA, and the story of Malvasia delle Lipari

The origin of the term "Malvasia delle Lipari" derives from a Christian legend at the time of Muslim domination. It tells of a farmer who was once carrying an amphora full of Moscato wine, when he ran into the Arab governor. The governor asked what was inside the amphora, and to disguise its contents, the farmer replied, "malva juice" and begged God to transform the wine. (Malva, sometimes called mallow in English, is an edible, purple-colored flower that grows in Asia, Europe, and Africa. The English word "mauve," describing a light purple color, comes from the French word for the flower.) To the farmer's surprise, his prayers were granted, and when the governor drank from the amphora, he made an expression of disgust at the bitter drink.

Colosi winery has reached its fourth generation in winemaking..

Today, Piero Colosi and his son Pietro, both enologists, follow all steps

of winemaking in order to obtain wines with strong personalities,

great freshness and with a traditional style. Piero Colosi has a magic

wand on two different circles of production in and around the island.

The tradition of the family regarding the production of the Malvasia

wine goes back to the 70’s, when Pietro Colosi bought the first

vineyard plots in Salina. Today, the winery includes 7 hectares in Salina

(a small island in the Aeolian Archipelago), in Gramignazzi, in the

borough of Malfa. This area is recognized as one of the best, both for

its exposure and for the nature of the soil, which being of volcanic

origin, is particularly suitable for vine cultivation. The planting of the

vines, difficult due the morphology of the soil, was carried out in

terraces by restoring the old dry-stone walls; “Guyot’” pruning

consists in leaving only a few buds, since, due to the impossibility

of watering during the hottest months, the plants undergo really

hard times.
