INGREDIENTS OF A BIG PUCHERO.

A LITTLE BIT OF HISTORYThe first years, this diverse party was only for those who brought their cattle to the exhibition in honor of the patron saint but a few years later, everyone could enjoy and take part too. January is so cold that it invites the people to try this warm and homemade dish. It is cooked very slowly with high quality ingredients and it is very healthy. This delicious dish is offered to all the visitors and, of course, to the tourists. They prepare about 7000 kg of food for around 6000 people.

DID YOU KNOW…?-The fire used to cook the puchero is made with dry broom from Teide National Park.

-Cooking the puchero will take, at least, two hours.

-Around 3000 visitors attend this festivity and most of them are tourists.

-The celebration of the puchero has even been promoted in Germany with a documentary shown on TV.

-Fairy donates its products, which are used to wash all the cooking pots of these festivities of La Florida.

PREPARATIONS FORTHE BIG DAY

-The hotels, the families and restaurants of the neighborhood contribute and provide the cooking pots which are huge and made of stainless steel. Normally, they use about 60 cooking pots which contain more than 100 kg each.

-The families, businesses and associations of the area donate the food for this big day.

-The whole neighborhood takes part in this party. Each person has a different task: washing the vegetables, peeling the potatoes, cutting the meat, etc.

JUST A LITTLE SECRETThe ingredients of the puchero are placed in the cooking pot by sections. In the bottom of the cooking pot, we will have those ingredients which take more time to cook and, on the top, those which will cook quicker. It is then left through the night to rest and on the following day, the water is changed and the pot is put on the heat.
